청국장에서 분리한 Bacillus spp. 균주의 혈전용해능 및 면역증강활성

초록

혈전용해 활성과 면역세포 활성능이 우수한 청국장을 제조하기 위하여 청국장에서 분리된 220개의 세균으로부터 단백질 분해능과 점질물질 생성능이 우수한 13개의 Bacillus 균주를 선별하였다. 이들 13개 Bacillus 균주들의 fibrin plate 방법을 이용한 혈전용해 활성과 RAW 264.7 cell line을 이용한 cytokine 생성능력 (NO 생성능, Interlukin-1${\alpha},\;TNF-{\alpha}$) 검정에 의한 면역세포 활성능 측정실험을 수행하였는데, Bacillus 균주들을 TSB(Trypticase soy broth)에 키운 시료와 콩에 접종하여 제조한 청국장시료와 같은 두 가지 상이한 시료를 이용하여 혈전용해능과 면역세포 활성능을 측정한 결과, 혈전용해능과 면역세포 활성능이 가장 우수한 세 균주가 최종 선발되었다. 선발된 세균주의 동정결과 두 균주(CHKJ 1249, CHKJ 1326)는 Bacillus licheniformis로 그리고 CHKJ 1339 균주는 Bacillus subtilis로 동정되었다.
