Major emphases of The JOURNAL OF FOOD HYGIENE AND SAFETY are placed on studies dealing with (a) causes (microorganisms, chemicals, natural toxicants) and control of all forms of food borne illness; (b) hazards (microorganisms, allergens, chemicals),contamination (feces, insects, rodents) and their control in raw foods and in foods during processing, distribution, preparation, and service to consumers; (c) causes of food spoilage and its control through processing (low or high temperatures, preservatives, drying, fermentation, irradiation, pressure, and other innovative technologies); (d) microbiological food quality and methods to assay microbiological food quality; and (e) wastes from the food industry and means to use or treat the wastes.
