The Study for Uniforms of Traditional Korean Restaurant
Journal of the Korean Home Economics Association , volume 29, issue 4, 1991, Pages 13~23
The importance of tourism was recognized through the olympiad of 1988. Especially visual impacts like uniform make it more important to develop proper service system. Thus, the object of this study is to provide a renewal uniform policy of Korean restaurant. Here, the theoretical knowledge is applied into actual conditions, and found many problems as a result. 1. There are no recognition of the importance of uniforms. 2. No effort has been made in creating image suitable for traditional restaurants. 3. There has been no uniqueness and utility. 4. The uniform colors have not been coordinated working environments. 5. There have been some problems concerning uniform managements. These problems led to an idea of making new uniforms, and actual products has been producted as a part of the study. The products have focused an functional utility and tradition of Korean costumes. I hope my endeavor will be helpful for traditional Korean restaurants and developing of uniform design.
Changes of the Physicochemical Characteristics of Korean Peanuts with Roasting and Storaging(I)
Journal of the Korean Home Economics Association , volume 29, issue 4, 1991, Pages 25~35
This study was carried out to determine the proximate composition, amino acids and fatty acids contents and changes of physicochemical characteristics of each oil extracted from Spanish and Virginia type peanuts grown in Korea roasted at 110, 120, 130 and 14
for 2 minutes. 1. The moisture contents of raw Spanish and Virginia type peanuts were 6.5~6.8% respectively. The crude ash and reduced sugar contents of raw Spanish and Virginia type peanuts were 2.3% and 16.5% and the crude protein content was 27.0% in Spanish type peanuts and was aproximately 1% higher than in Virginia type peanut. The protein content was 25.7%~26.7% in Virginia type peanut roasted at 110, 120, 130 and 14
. The crude fat content of Virginia type peanut was 46.0% which was aproximately 1% higher than that of Spanish type. But four kinds of oils content were 51.3%~51.8% in Spanish type peanut roasted at 110, 120, 130 and 14
, which was about 2% higher than those of Virginia type. 2. Amino acids existed in peanut were glutamie acid, arginine, aspartic acid, leucine, glycine, phenylalanine, proline-lysine, tyrosine, valine and isoleucine, etc mainly. But methionine and threonine contents were very low. The content of glutamic acid was the highest in 71.6-81.7mg among amino acids. Glutamic acid content of Virginia type peanut was about 12% higher than that of Spanish type peanut. Total amino acid content was 441.8mg/g in Virginia type peanut and that was 16% higher than that of Spanish type peanut. The lysine content of Spanish and Virginia type peanuts roasted at 14
were 24% and 13%, these were lower than those of peanuts roasted at 11
. 3. Main fatty acids of raw Spanish and Virginia type peanut oils were oleic(40.99-46.58%), linoleic(33.21-38.82%) and palmitic acid(9.72-11.58). Linoleic acid content of raw Virginia type peanuts was 5.6% higher than that of raw Spanish type peanut. And the oleic acid content of Spanish and Virginia type peanuts roasted at 11
was 50-53% and 41-43% respectively. Linoleic acid content of Spanish and Virginia type peanuts roasted at same temperatures as the former was about 28-31% and 37-38% respectively. That linoleic acid content of roasted peanuts was lower than that of raw peanuts. Linoleic acid content of raw and roasted Virginia type peanut, were higher than that of Spanish type peanuts. 4. Acid value and peroxide value of oils extracted from roasted Spanish and Virginia type peanuts were much higher than those of oils extracted from raw peanuts. The maximum AVs of oils extracted from Spanish and Virginia type roasted peanuts were samples roasted at 12
and those AVs were 0.50 and 0.63 respectively. And the maximum POVs of oils extracted from Spanish and Virginia type roasted peanuts were samples roasted at 12
also and those POVs were 26.8 and 32.8 meq/kg. oil respectively. Acid value and peroxide value of oils extracted from roasted peanuts were increased with increasing the roasting temperatures from 11
, then decreased, while TBA values were increased continuously with increasing the roasting temperatures.
Oxidative stability of crude wheat germ oil
Journal of the Korean Home Economics Association , volume 29, issue 4, 1991, Pages 37~43
Oxidative stability of crude wheat germ oil (WGO) was determined by the active oxygen method(Rancimat, hrs at 98
). The induction time of crude WGO was 7.6hrs as compared to 23.7hrs of crude soybean oil. However, the induction time of WGO could be extended by 2-3 times with 300ppm of mixed tocopherols and 200ppm of organic acids. The antioxidant effect of organic acids increased in the order of L-ascorbic acid > tartaric acid > citric acid > malic acid. Especially, the induction time of WGO could be extended by ca. 38hrs with 500ppm of L-ascorbic acid. This antioxiative effect of 500ppm L-ascorbic acid with mixed tocopherol(100, 200, 300 or 500ppm). It seems that the synergistic effect of L-ascorbic acid was due to the high content of tocopherols(0.4%) in WGO.
The Analysis of Image by Cognitive Map of residents in apartment housing
Journal of the Korean Home Economics Association , volume 29, issue 4, 1991, Pages 45~64
Each of us has personal and unique "Mental Images" of environment that are the results of a two-way process between an observer and his environment. By understanding of people's image on their physical settings through cognitive maps, congruent with their design environment. In this context, this study is to fine out the characteristics of the resident's image in apartment housing that are modern housing. This paper is theoretically based on Appleyard's cognitive maps types, Lynch's the components of image, Harrison and Howard's image enhancing factors and Applyard's image enhancing factors of buildings. For the purpose of this study, two-instruments were used. One was sketch mapping, that told of visual aspects of cognitive map. Another was verbal questionnaire, which was composed of nonvisual aspects of image components and image enhancing factors. For the methods of research analysis, Percentage, Frequency, and Chi-square test were used. The results of this study are as follows. Firstly, as for the types of cognitive maps, the rate of sequential maps and spatial maps are nearly same. Secondly, as for the components of images, landmarks and districts are significant elements in apartment housing, and edges, nodes and paths are rare element. Thirdly, with regard to image enhancing factors, landscaping is shown to be most effective at landmarks and districts. And finally, in examing the differences of images between various social groups, significant variables are years of living and housing size. Age and income are the next. In this study of image, we can learn about manner in which individuals come to see, understand, and cope with the environment at a personal level. So, user-oriented approach is useful in environmental design, and particularly, it is useful in the apartment housing of the future life space.

This study has attempted to establish the korean sex-role identity inventory in line with the theory and methods of the androgynous perspective, In a prelinminary study 450 judges rated the desirability of 156 personality characteristics for males and females in Korean society. Following Broverman's procedure for item selection, male-oriented traits(20 items), female-oriented traits(20 items), and neutral traits(10 items) were selected. Sex-role identity inventory were administred to 982 judges. Compared to the translated versions of foreign sex role inventories or the masculinity-feminity scales of the traditional personality tents which do not correspond with androgyny theory, the results of this study have various advantages for sex-role reserach in Korea.
