Effects of Processing Conditions on the Protein Quality of Fried Anchovy Kamaboko Engraulis japonica

The effects of processing and frozen storage conditions on the quality of anchovy Engraulis japonica fried surimi gels were investigated. Protein content decreased after surimi gel processing from 19.6% (raw meat) to 12.1% (kamaboko) due to the added ingredients and change in water content. Lipid content decreased from 2.8% (raw meat) to 1.3% in minced and 0.5% in surimi, but fried kamaboko showed a 6.9 % lipid level. Thiobarbituric acid values and thiobarbituric acid reactive substances levels were highest in kamaboko samples, 89.5 and 1.9 mg/g solid, and increased gradually with storage time to 101.8 and 4.6 mg/g solid, respectively. In vitro protein digestibility increased from 79.2% in raw anchovy to 88.5% in kamaboko samples. Levels of trypsin inhibitor decreased gradually with processing and during storage time from 2.43 in raw anchovy to 0.31 mg/g solid in the kamaboko sample after 60 days of frozen storage. No noticeable changes in total essential amino acid was observed during processing conditions. Computed protein efficiency ratio for kamaboko was highest (2.59) compared with whole anchovy (1.96), minced (1.94) and surimi (2.50). Fresh fried anchovy kamaboko showed similar values of hardness, springiness, gumminess and chewiness to commercial surimi gel, but a higher values were seen for fracturability and adhesiveness, and lower values for cohesiveness and resilience. The frozen and thawed anchovy kamaboko showed higher values for all of these rheological parameters compared with fresh and commercial kamaboko. Anchovy kamaboko showed the lowest lightness (62.9) and redness (0.16) and similar yellowness (11.9) compared with commercial kamaboko. Frozen storage and vacuum packaging were effective maintaining the shelf life of anchovy kamaboko within 30 days, but were not effective after 45 days due to fat oxidation.

at different temperatures and pressures. The extracted oil was analyzed by gas chromatography to determine the fatty acid composition. According to our results, the SC-
extracted oil was high in eicosapentaenoic acid and docosahexaenoic acid. In addition, the SC-
extracted oil showed greater stability than n-hexane extracted oil based on the peroxide value and acid value. Thus, the quality of yellow croaker oil obtained by SC-
extraction was slightly higher than that of oil obtained by n-hexane extraction.
Fractionation and Enzymatic Characterization of Endoprotease and Exopeptidase from Crude Extracts of Cuttlefish Sepia officinalis Hepatopancreas

This study examines the optimal fractionation method and conditions for the isolation of endoprotease- and exopeptidase-active fractions from crude extracts of cuttlefish hepatopancreas (HP) using four fractionation methods: ammonium sulfate fractionation (ASF), polyethylene glycol fractionation (PGF), ion exchange chromatography (IEC), and gel filtration chromatography (GFC). Total endoprotease activity highest in the fraction II (concentrate of fractions 34-42; 842.60 U) of GFC, followed by fraction III (40-60% ammonium sulfate fraction; 670.25 U) of ASF, fraction I (concentrate of fractions 8-12; 436.89 U) of IEC, and fraction II (10-20% polyethylene glycol; 307.31 U) of PGF. Total exopeptidase activity of these fractions was highest in fraction II (2,704.70 U) of GFC, fraction III (2,110.50 U) of ASF, fraction III (1,605.60 U) of PGF, and fraction II (concentrate of fractions 38-44; 1,196.22 U) of IEC. These results showed that fraction II of GFC had the highest activity toward both exopeptidase and endoprotease, with exopeptidase activity being 3.21 times higher than of endoprotease. These results suggest cuttlefish HP could be used as a potential source for the extraction of exopeptidase, an enzyme capable of catalyzing the cleavage of N- and C-terminal amino acids in polypeptides, Like endoprotease, the most efficient method for separating exopeptide-active fractions was GFC.
Effects of γ-Aminobutyric Acid (GABA)-Enriched Sea Tangle Laminaria japonica Extract on Lipopolysaccharide-Induced Inflammation in Mouse Macrophage (RAW 264.7) Cells

-Aminobutyric acid-enriched sea tangle extract was obtained from the fermentation of Lactobacillus brevis BJ-20. The fermented sea tangle extract (FST) was separated into three fractions by molecular weight: FST I (greater than 10 kDa), FST II (1-10 kDa), and FST III (less than 1 kDa). The anti-inflammatory characteristics of the FST fractions were investigated by measuring the production of nitric oxide (NO) and the expression levels of inducible nitric oxide synthase (iNOS) in lipopolysaccharide (LPS)-induced mouse macrophage (RAW 264.7) cells. Both NO production and iNOS expression levels were significantly inhibited by FST treatments in a dose-dependent manner. FST III was the most effective inhibitor of processes. This demonstrates that the effect of FST on LPS-induced inflammation might be closely correlated with the inhibition of inflammatory cytokine expression.
Histological Observations and Regeneration of Barbels in Juveniles of the Chinese Longsnout Catfish Leiocassis longirostris

Barbel structure and regenerated barbel length in the juvenile Chinese longsnout catfish Leiocassis longirostris (G
nther), were evaluated. The barbles consisted of an epidermis, a dermis, and a central rod. The epidermis harbored taste buds, granular cells and epidermal cells. The taste buds were basophilic and situated along the distal portion of the epidermis. The dermis was composed of loose connective tissue containing blood vessels pigment cells. The innermost central region was cartilage enclosed within layers of muscle layers. After 30 days, the regenerated barbel length measured
(regenerated growth curve: y = 0.5085x + 4.0678,
= 0.9654, where y is regenerated length and x is experimental period in days),
(y = 0.1806x + 4.808,
= 0.9822), and
(y = 0.0914x + 4.9918,
= 0.9944). Fifteen days after amputation, the regenerated length was significantly longer at
than at 15 or
(P < 0.05). The barbels of the Chinese longsnout catfish was the tender and flexible type, and our experimental findings provide evidence of temperature-dependent regeneration. Additional investigation of the behavior and physiology of the Chinese longsnout catfish is needed, particularly histological studies of regenerated barbels and the measurements of the numbers of taste buds per barbel under various environmental conditions.
Compensatory Responses of Nile Tilapia Oreochromis niloticus under Different Feed-Deprivation Regimes

We investigated compensatory growth of Nile Tilapia Oreochromis niloticus in structural size and live weight in response to different deprivation periods and refeeding. Four treatments were assigned randomly to fish in 12 glass tanks, with each treatment performed in triplicate. The control group was fed to satiation three times a day throughout the experiment. The other three treatment groups were starved for 1 week (S1), 2 weeks (S2), or 4 weeks (S4) and then fed until the end of the experiment. After the experiment, no significant differences were observed among S1, S2, and the control group in average weight or length, whereas the weight and length of S4 were significantly reduced. Relative condition factors of the three starved groups decreased significantly until the end of the restricted period but recovered rapidly after refeeding. The specific growth rate in weight (
) of the three restricted groups recovered quickly upon refeeding and were significantly higher than the control group, but these differences disappeared gradually until the end of the experiment. No significant difference in specific growth rate in length (
) was noted between the control group and the three restricted groups after refeeding. All three groups showed hyperphagia for a short period upon refeeding, and no statistical differences were observed in feeding efficiency among the four groups.
Two Unrecorded Species of the Snapper (Perciformes: Lutjanidae) Collected from Jeju Island, Korea

Two unrecorded species of the snapper, Lutjanus malabaricus (296.0 mm standard length [SL]) and L. stellatus (350.0 mm SL) belonging to the family Lutjanidae, were first collected from the western coastal waters of Jeju Island, Korea. L. malabaricus is characterized by having a dark marking on the upper half of the caudal peduncle, a band of vomerine teeth that does not protrude posteriorly at the middle, and nine anal soft rays. Compared to its Korean relative, L. malabaricus is distinguishable by having rows of scales that run obliquely in the dorsal-posterior direction above the lateral line (vs. parallel to the lateral line in L. argentimaculatus). L. stellatus can be identified by the absence of wavy blue lines on the head (vs. many blue lines in L. rivulatus) and presence of a white spot above the lateral line (vs. a black blotch on the lateral line in L. rivulatus). We propose new Korean names, "Jin-hong-tung-dom" and "Huin-jeom-tung-dom," for L. malabaricus and L. stellatus, respectively.
Molecular Characterization of Cytoskeletal Beta-Actin and its Promoter in the Javanese Ricefish Oryzias javanicus

We characterized the cytoskeletal beta-actin (
-ACT) gene (actb) and its 5'-upstream regulatory region in the Javanese ricefish Oryzias javanicus. The gene and protein structures were deduced from amino acid sequences of the actb gene and conserved in the teleost lineage. The O. javanicus actb gene has common transcription factor binding motifs in its regulatory region found in teleostean orthologues. Following quantitative reverse transcription-PCR, actb gene transcripts were detected in all tissues examined; however, the basal expression levels were different. During early development, O. javanicus actb mRNA levels showed a gradual increase and peaked between late somitogenesis and the heartbeat stage. Microinjection of O. javanicus embryos with the actb gene promoter-driven red fluorescent protein (RFP) gene reporter vector showed a ubiquitous distribution of RFP signals, although most exhibited a mosaic pattern of transgene expression. A small number of microinjected embryos displayed a wide distribution of RFP signals over their entire body, which resembled the expression pattern of endogenous actb. Data from this study provide a basis to develop a transgenic system with ubiquitous expression of foreign genes in O. javanicus.
Genomic Organization, Intronic Duplications, and Promoter Characteristics of the Fast Skeletal Myosin Light Chain-2 Gene (mlc2f) from Javanese Ricefish Oryzias javanicus

The present study characterized the fast skeletal myosin light chain-2 gene (mlc2f) in the euryhaline Javanese ricefish (Oryzias javanicus: Beloniformes). Coding nucleotide and deduced amino acid sequences of Javanese ricefish mlc2f were well conserved in the vertebrate lineage. Javanese ricefish mlc2f showed a typical seven-exon structure, and its promoter exhibited transcription factor binding motifs common to most muscle-specific genes. However, Javanese ricefish mlc2f also displayed tandem duplications of intronic sequences in both intron 1 and intron 3. Based on quantitative reverse transcription-polymerase chain reaction, the mlc2f transcripts were highly predominant in skeletal muscles of adults and were differentially modulated during embryonic development. Microinjection of the mlc2f promoter-driven red fluorescent protein (RFP) reporter construct successfully exhibited heterologous expression of the fluorescent reporter, primarily in muscular areas of hatchlings, although the distribution pattern of RFP signals was not uniform due to the mosaic nature of the introduced transgene. Data from this study indicate that the Javanese ricefish mlc2f gene has undergone "intra-intronic" duplication events in a species-specific manner and that the mlc2f regulator may also be useful in heterologous expression assays of the skeletal muscles of this species.
Efficiency of the Korean Bottom Survey Trawl for Snow Crab Chionoecetes opilio

The Korean bottom trawl survey was conducted using a trawl designed by the National Fisheries Research and Development Institute (NFRDI). The capture efficiency and size selectivity of this trawl for snow crab Chionoecetes opilio was investigated by experimental tows. An auxiliary sampling net (underbag) was attached beneath the trawl net to capture crabs escaping under the trawl footrope. Experimental tows were made by the same vessel speed (3.4 knots) as in the bottom trawl survey, but toing time was shortened from the standard 30 min to 10 min to reduce possible trawl distortion due to the high catch rate of mud and debris in the underbag. In averaged over 17 tows conducted between 110-383 m depth, trawl efficiency of both males and females combined increased from about 10% at 20 mm (carapace width) to about 70% at 100 mm, with a width of 50% capture equal to 78 mm.
Catch Predictions for Pacific Anchovy Engraulis japonicus Larvae in the Yellow Sea

To predict catches of Pacific anchovy Engraulis japonicus larvae, anchovy eggs were collected in the coastal waters off Gunsan, Korea, in the Yellow Sea during the main spawning season (June to July) from 2003 to 2009. A ring net was repeatedly towed vertically at 10 stations during the daytime to sample eggs. Catch data estimated by auction sales were obtained from the Fisheries Cooperatives Union of Gunsan City and daily water temperature data in the outer harbor of Gunsan City during the survey periods were obtained from the National Oceanographic Research Institute. A significant relationship was found between anchovy egg density from June to July and larval catch from July to October in the same year. Catch of anchovy larvae in Gunsan were also high when optimal growth temperatures were recorded in the coastal waters off Gunsan in July. Although the recruitment success or failure of anchovy larvae can be predicted from variability in egg density, we suggest that mean daily water temperature is a more efficient indicator for predicting variability in catches of larval anchovy in the Yellow Sea.
Age and Growth of Barbel Steed Hemibarbus labeo in Goe-san Lake in Korea

Age and growth of Hemibarbus labeo caught from Goe-san Lake in South Korea from March to November, 2011, were studied. A total of 201 specimens was collected, ranging from 110 to 580 mm in total length (TL). Males and females made up 47.9% and 52.1% of the sample, respectively. Marginal increment analyses showed that vertebral increments, each composed of one opaque and one hyaline zone, were deposited annually. Opaque edges were prevalent from June to July. The relationship between TL and vertebral radius was linear, with equations of R = 0.008TL - 0.208 (male) and R = 0.009TL - 0.272 (female). Regression equations between TL and total weight (TW) were
(combined sexes), according to the von Bertalanffy growth equation. Back-calculated TL was expressed using the von Bertalanffy equation as follows:
for females, and
for the sexes combined. The growth performances were 4.526, 4.536, and 4.544, respectively.
Study on UV Absorption Materials Derived from Red Algae Gloiopeltis fucatas and Mazzaella sp. in Russia

We investigated ultraviolet (UV) absorption materials from Russian seaweeds. First, the UV absorptivities of five seaweeds Gloiopeltis fucatas, Mazzaella sp., Mastocarpus pacificus, Laminaria cichorioides, Saccharina japonica were evaluated by a UV spectrometer. Of these seaweeds, Gloiopeltis fucatas and Mazzaella sp. showed high levels of UV absorption. Column chromatography of active 50% aqueous ethanol extracts from Gloiopeltis fucatas and Mazzaella sp. resulted in the purification of two known compounds. Spectroscopic techniques identified their structures as shinorine and palythine. These materials exhibited UV absorptive capabilities at wavelengths of 333 and 320 nm, respectively. These results suggest that Gloiopeltis fucatas and Mazzaella sp. may be useful as natural cosmeceutical sources.
