A Study on Dietary Intake of Korean Diabetic Men

This research aims to find the information concerning nutritional status and food intake in Korean dirt betic men. Thus, the survey was made on 202 NIDDM patients over 35 age at University Hospital. The data were analysed using F-test and mutiple comparison in SAS package program. Main results were as follows : Incidence of diabetes is high in their forties and fifties. Most of them are salary men, administrators, and professionals in middle class, who reside in metropolitan area including Seoul. They used to take light exercise and were founded NIDDM by subjective symptoms. 36.6% of them have other diseases simultaneously such as hypertension, cancer, etc. Food intake pattern prior to incidence was that intake frequency of grains, sugars, protein foods, and liking foods was higher than of processed foods. Amounts of calorie intake were shown to be lower than normal persons, so that it seemed to be controlled by doctors. In addition, the calorie ratio derived from fat was lower than RDA. Thus protein and carbohydrate ratio was relatively higher than RDA. Total moan fatty acid intake was 32.15g and it is no significance among weight groups in various fatty acid intakes. With respect to the physical standards of the diabetic men, weight, PIBW BMI, BMM, 757, arm circumference, and waist /hip ratio were higher than in normal. Therefore it seemed that these factors would be related to the diabetics. From now on, it is required to research the correlations of fatty acid intakes on the diabetes and their influence to serum lipid profiles.
Production of NADP by Immobilized Brevibacterium ammoniagenes and ATP- regenerating System of Acetate Kinase

For the conversion of WAD to NADP, Immobilized Brevibacterium ammoniagenes cells with NAD kinase was coupled with ATP-generating system by acetate kinase. The membrane permeability of B. ammoniagenes was improved by toluene treatment of cells. The toluene treated B. ammoniagenes cells were immobilized for stable enzyme activity. Partially purified acetate kinase was used in the reaction system. The optimum conditions for the efficient conversion of UAD to WADP by energy-coupled system were investigated. B. ammoniagenes cells treated with toluene for the Improvement of membrane permeability showed 4.5 fold improved permeability in the conversion of NAD to NADP compared with Intact cells. 3% k-carrageenan as the immobilization matrix of B. ammoniagenes showed the best efficiency for the conversion of NAD to NADP The optimum conditions for the WAR to WARP conversion reaction coupled nth ATP-generating system were 10mM acetylphosphate, 5mM ADP 200mM inorganic phosphate, 10mM MgCl2, 250mg/ml Immobilized cells, 49.3mUnit/ml acetate kinase, pH 7.5 and 37
. Under the optimum conditions, 72% of 5mM(340mg/ml ) NAD was converted to UADP In 12 hours.
Production of Glutamine by Glutamine Synthetase and Acetate Kinase of Escherichia coli

The conversion of glutamate by glutamine synthetase Is the endergonic reaction that demands ATP as its energy source. In order to supply efficiently ATP that is demanded in the conversion of glutamate to glutamine, the ATP- generating system by acetate kinase partially purified from Escherichia coli K-12 was coupled with glutamine synthetase partially purified 5. coli K-12 Pgln6. The optinum conditions of the coupled reaction were investigated. As the result, the highest conversion of glutamate to glutamine was shown In the reaction mixture containing 100mM glutamate, 100mM NHtCl, 50M acetyl phosphate, 5mM ADP, 40M MgCl2, 300mM potassium phosphate buffer (pH 7.5), 5mM MnCl2, Under this condition, the most effective concentrations of enzyme were 70unit/ml glutamine synthetase and 99unit/ml acetate kinase. Under the optinum conditions, 98% of 100mM glutamate was converted to glutamine within 6 hours.
Physicochemical Properties of Rice Extrudate with Added Ginger Powder by the Response Surface Regression Analysis

This research was attempted to investigate changes in physicochemical properties of rice extrudate with added ginger powder extruded by single screw extruder. Graphic three dimensional analysis on response surface regression was used to evaluate effects of extrusion variables on quality factors of the extrudate according to two independent variables, ginger consent 0∼12%, moisture content 14∼26%. The summarized results are as follows : 1) Regarding proximate composition of rice extrudate with added ginger powder, as ginger powder content of raw material Increased, crude tat, crude protein, crude ash and crude fiber increased, while soluble nitrogen free extract decreased. 2) Graphic three dimensional analysis on response surface regression was conducted for each dependent variable which revealed statistically significant relationship with independent variables, 0∼120A ginger and 14∼26% moisture content. Expansion ratio had a critical point as moisture content changed. As ginger and moisture content Increased, bulk density, break strength and water absorption Index Increased, while water solubility Index decreased. The predicted maximum degree of gelatinization in 6.15% ginger and 15.56% moisture content is 88.27%, and lightness decreased as ginger content Increased. According to the microstructure for the cross section of extrudate obsorbed with image analyzer, air cell number and perimeter revealed saddle point, meanwhile total area and fractarea of air cell had critical points as moisture content changed. In view of the results, quality of rice extrudate with added ginger powder was optimum when rice flour was fed to the extruder with 2∼7% singer powder and 15∼20% moisture content.
The Effect of Medium-Cooked Rice on the Production of Korean Traditional Yakju

This study was carried out to investigate the effect of medium-cooked rice on brewing of yakju which was a traditional rice wine in Korea. The influences of cooking temperature of rice on hydrolysis of rice starch and rice protein were tested, and experimental brewings were done according to the traditional brewing method of Bangmunju in which some medium-cooked rice was used. The results obtained were as follows The hydrolysis of starch and protein in medium-cooked rice at 60~
was easier than that of full-cooked rice at 80~10

The amounts of saccharides, total amino acids and extracts In Yakju brewed with the combined use of medium-cooked rice and full-cooked rice were twice as much as those brewed with full-cooked rice only. The results of sensory test of Yakju brewed with the combined use of medium-cooked rice and full-cooked rice were better in taste, color and flavor than those brewed with full-cooked rice only. It was thought that our ancestor's traditional brewing method of Yakju in which medium cooked rice and full-cooked rice were used combinedly was excellent Judging from zymological point of views.
Isolation and Identification of Trichoderma sp. HK 47 Producing Avicelase

In order to obtain a good microorganism capable of degrading microcrystaline cellulose (avicel), the screening test was carried out from soil and brown-rot wood. 8 strains which had good avicel-hydrolyzing activity were isolated. Among them, HK 47 which exhibited the highest avicel hydrolyzing activity was identified as Trichoderma sp. HK 47. Maximum avicel-hydrolyzing enzyme production from Trichoderma sp. Effect of Heating Temperature on Viable Yoghurt Culture and
-Galactosidase in Yoghurt

In order to know the influences of heat treatment of yoghurt on pH,
-galactosidase and viable cells, yoghurt sample was made by general method with Lactobacillus bulgaricus and Streptococcus thermophilus, and the changes in pH,
-galactosidase-activity and viable cell-count were determined during heating at 55
. The pH of yoghurt was not changed when the yoghurt was heated at 7
, but at 55
it decreased slightly. The stability of
-galactosidase was not affected markedly by heat treatment at 55
, but was rapidly inactivated at 7
. The heat treatment of yoghurt at 55
had the halb of viable cell in 1 hour, but the heat treatment at 7
had considerable effect on viable cell in 5 minutes.
The Relationship between Lead Intake and Calcium Status in Korean Rural Adult Men and Women on Self-Selected Diet

This study was carried out to estimate the dally intake of lead and the relationship among dietary In take, serum level, and urinary excretion of calcium In 30 healthy adults living In rural area of Korea (12 males and 18 females). Analyses for the nutritional status of the subjects were performed by 3-day dietary intake record, duplicated diet collection, 24-hour urine collection, and venous blood sampling. The results were as follows The mean daily intake of energy was 2,176.3kcal and 1,613.9kcal in males and (tamales of 20∼49years, and 1,914.8kcal and 1,517.9kcal in males and females of 50∼59years, respectively The ratio of carbohydrate : fat : protein was 73.4:13.6:13.0 in males and 76.4:10.3:13.3 In females. The mean daily intake of lead was 277.2Pg in males and 192.0ug in females. The mean daily intake, serum level, and urinary excretion of calcium were 491.1mg, 8.9mg/dl, and 80.7mg in males and 426.7mg, 8.8mg /dl, and 80.3mg in females, respectively. No significant correlation was found between the daily lead intake and the dietary intake, serum level, and urinary excretion of calcium. It was concluded that the daily lead intake was lower than the acceptable daily lead intake of FAO/WHO but a little higher than that of other investigations. And the daily lead intake was not level that relate to calcium status seriously.
Aging and Gasroenterrogi Changes

This research aims to study the changes In gastrointestinal function attributed to aging In human. The thresholds for recognition and detection of flavors became elevated and salivary gland acinar cells decreased in the old age. But most esophageal function remained relatively Intact. Although gastric emptying time has been slowed with aging, the total intestinal transit time did not differ. Atropic gastritis due to H. pylori in old man decreased secretion of acid and Intrinsic factor and absorbability of calcium and iron. Pancreatic secretion is droned in older persons. Prevalence of gallstones rised with age. Liver size and portal blood flow decreased significantly with age. Mucosal surface area has been reported to be slightly diminished in the aging man. Glucose transporters decreased and Insulin tolerance Increased. Absorption of aromatic amino acid is diminished with age. Dietary protein In that aging human increased fecal nitrogen excretion. Vitamin A tolerance increased. Vitamin D receptor concentration decreased and resistance to 1,25-(OH)2D3 action increased. Permeability of aging small Intestine Increased. Zinc balance dirt not differ Copper absorption appeared not to be significantly affected by age. Neurotensin secretion decreased thus slowed colonic peristaltic movements and Intestinal mucosal growth.
