Effects of Paternal Parenting Behaviors, Child-Rearing Involvement, and Father-Child Communication Perceived by Children on Their Leadership

This study examines the effects of paternal parenting behaviors, child-rearing involvement, and father-child communication perceived by children on their leadership. A total of 197 children selected from three elementary schools and their fathers participated in this study. Data were collected using a parenting behavior index, a child-rearing involvement inventory, a father-child communication inventory, and a children's leadership index and statistically analyzed using the t-test, a one-way ANOVA (
test), and a multiple regression analysis. The results show significant differences in children's leadership according to the father's education level, family income, the father's warmth/acceptance, the father's family activity involvement, and open/problematic communication between the father and the child. The child's age, the father's education level, family income, the father's warmth/acceptance, open communication, and problematic communication were significant predictors of the child's leadership. These results suggest that a child's leadership may be strengthened if the father is warmer and more accepting and has open communication with the child.
A Genotoxicological Safety Evaluation of Crude Antifungal Compounds Produced by Lactobacillus Plantarum AF1 and Lactobacillus Plantarum HD1

This study investigates the genotoxicity of crude antifungal compounds produced by Lactobacillus plantarum AF1 (L.plantarum AF1) and Lactobacillus plantarum HD1 (L. plantarum HD1) isolated from kimchi. The genetic toxicity of crude antifungal compounds was evaluated in bacterial reverse mutation in Salmonella and Escherichia spp., chromosome aberrations in Chinese hamster lung cells, and micronucleous formations in mice. In bacterial reversion assays with Salmonella Typhimurium TA98, TA100, TA1535, TA1537, and WP2uvrA, crude antifungal compounds did not increase the number of revertant colonies in both the absence and presence of the 59 metabolic activation system. In the chromosome aberration test with Chinese hamster lung cells, crude antifungal compounds showed no increase in the frequency of chromosome aberrations in the short-period test with/without the S9 mix or in the continuos test. In the in vivo mouse micronucleus assay, crude antifungal compounds showed no increase in the frequency of polychromatic erythrocytes with micronuclei. The results show that crude antifungal compounds produced by L. plantarum AF1 and L. plantarum HD1 did not induce any genotoxicity.
An Analysis of Patent Trends in Research and Development on Personal Protective Equipment in Agriculture

This study analyzes current technologies in personal protective equipment (PPE) and mechanisms that can be used in the agricultural field to provide data for research and development on PPE for farmers. There is growing awareness of the importance of PPE as part of efforts to reduce agricultural accidents, but data remain rare for developing PPE tailored to the farm work environment. In this regard, patent data on PPE can provide useful insights for facilitating relevant technologies and research. This study examines patents and utility models classified under the IPC code in Korea and other countries to analyze patented technologies and recent trends for the period from January 2003 to October 2014. Here Korea, the U.S., Japan, and Europe were considered. The results show that the number of patent applications for PPE remained steady without any sharp fluctuations. KIPO applications accounted for 43.5% of all cases, reflecting the highest proportion among the countries considered. Domestic applicants accounted for 94% of all cases. In Korea, patent applications were concentrated in safety gear for the face and eyes, indicating a high level of technology. The highest level of competition was observed for safety goggles in all countries. Some PPE technologies were dominated by a particular manufacturer. The analysis results for farming-related technologies show the current state of technologies and areas lacking technological development. This study analyzes patented technologies for PPE in Korea and other countries and recent research trends as part of the effort to develop PPE for workers in the farming and livestock industry. This study represents an early-stage effort to develop PPE for workers in the farming and livestock industry, and the results are expected to be useful for tailoring PPE to Korea's farming and livestock environment.
Effects of a Low-Calorie Raw Juice Diet on the Level of Serum Ferritin in Korean Adults

This study examines the effects of a low-calorie raw juice diet on the level of serum ferritin in adults and analyzes nutrient intake from the diet. There were significant differences between juices; the highest calorie was provided by pear juice, highest crude protein, vitamin A, and vitamin B2 levels were from green Juice 1; and highest vitamin C and vitamin B1 levels were from fruit juices. The ratio of estimated energy requirements (EER) for the participants was 56.2% from the raw juice diet. The percentages of recommended intake (RI) from the raw juice diet of protein (57.9%), dietary fiber (19.1%), niacin (6.2%), calcium (0.1%), and magnesium (0.2%) were lower than 75%. However, those of RI of vitamin A, vitamin B1, vitamin B2, vitamin B6, and vitamin C were 1796.5%, 7481.7%, 1915.5%, 30858.7%, and 7500%, respectively, exceeding the tolerable upper intake level (UL) for vitamin A, vitamin B6, and vitamin C. There were significant decreases in weight, the body mass index (BMI), body fat mass, and skeletal muscle mass in males and females. After the diet program, serum iron and SOD (superoxide dismutase) showed significant decreases, whereas RBC, hemoglobin, hematocrit, and serum ferritin showed significant increases. There were negative correlations between serum ferritin and weight and between serum ferritin and skeletal muscle mass for all participants. There were negative correlations between serum ferritin and skeletal muscle mass for males and between serum ferritin and body fat mass for females. These results suggest that a raw juice diet can supplement a regular diet to prevent excess or deficient nutrient intake.
Traditional Knowledge of Plants Used for River Fishing in Local Communities of North Jeolla Province, Korea

This study investigates traditional knowledge of plants used for river fishing in local communities of North Jeolla Province, Korea. Data were collected using the participatory rural appraisal method based on interviews, informal meetings, open and group discussions, and overt observations with semi-structured questionnaires. Field investigations were conducted at 19 sites from July 2008 to April 2010. Interviews included 37 key informants (16 men and 21 women) who lived more than 50 years in the area. The average age of the informants was 83 (range = 60 to 96). The analysis recorded seven species, namely Albizia julibrissin Durazz., Juglans mandshurica Maxim., Perilla frutescens var. japonica (Hassk.) H. Hara, Nelumbo nucifera Gaertn., Persicaria hydropiper (L.) Spach, Zanthoxylum piperitum (L.) DC., and Styrax japonicus Siebold and Zucc..
Foodservice Satisfaction of Patients over 60 according to the Type of Foodservice Operation: The Case of B Hospital

This study measures patients' meal satisfaction according to the type of operation (self-operation and contract operation) and identifies improvement areas. A survey was conducted using 183 contract operation patients and 60 self-operation patients receiving general meals. The mean score for satisfaction for the whole sample was 3.42 (self-operation = 3.51; contract operation = 3.39), and self-operation satisfaction was significantly higher than contract operation satisfaction. Mean scores were 2.98 for food, 3.26 for menu composition, 3.57 for sanitation, 3.78 for distribution meal services, and 3.50 for menu information. Self-operation showed a higher satisfaction level than the contract operation in food and menu composition. The ccontract operation showed a higher level of satisfaction than self-operation in sanitation, distribution meal services, and menu information. In terms of feeling dissatisfaction with meal services, both groups showed the highest dissatisfaction with food and menus, and both groups agreed on food and menus that required the greatest improvement. Based on the results, contract operation managers should develop and apply menus considering their preferences. Dietitians of self-operation strengthen communication between meal service staff and patients by carrying out periodic and systematic service education on self-operation.
Antimicrobial Effects on Food-Borne Pathogens and the Antioxidant Activity of Torreya Nucifera Extract

This study investigates antimicrobial effects of food-borne pathogens and the antioxidant activity of Torreya nucifera extract. The growth of food-borne pathogens including Staphylococcus aureus, Pseudomonas aeruginosa, and Candida albicans was inhibited by the extract. The antimicrobial activity of the extract was highest for Staphylococcus aureus among seven gram-positive bacteria and for Pseudomonas aeruginosa among six gram-negative bacteria. The extract exhibited slightly lower DPPH radical-scavenging activity, but its ABTS radical-scavenging activity was higher than that of
-tocopherol. The results demonstrate the extract's antimicrobial effects on food-borne pathogens as well as potent antioxidant capacity and suggest that Torreya nucifera may be used as a natural antibacterial agent and an effective antioxidant in food.
Effect of Cherry Silverberry(Elaegnus multiflora) Juice on the Quality of Sulgidduk

To evaluate the effects of cherry silverberry (Elaegnus multiflora) juice on sulgidduk, rice cakes were prepared using different quantities of cherry silverberry juice (0%, 33%, 66%, and 100%). The pH level of the control group was higher than that of other groups with cherry silverberry juice. The moisture content of the control group was higher than that of other groups with cherry silverberry juice. In terms of color, the L-value were significantly higher in the control group than in other groups, whereas the a-value and the b-value were significantly lower in the control group than in other groups (p<0.001). The hardness, springness, gumminess, and chewiness of the control group showed the lowest values. Preferences for the appearance, texture, flavor, and overall acceptability of sulgidduk with 66% and 100% cherry silverberry juice were higher than those for other groups. These results suggest that cherry silverberry juice can increase the acceptability of sulgidduk and that 66-100% cherry silverberry juice may be appropriate for making sulgidduk.
Factors Influencing Household Work Sharing and Perceptions of Equitable and Unequitable Household Work Sharing in Dual-earner Households

This study explains the differences in household work sharing and perceptions of equitable and unequitable household work sharing in dual-earner households by gender. The study also examines the effects of household work sharing and perceptions of equitable and unequitable household work sharing in dual-earner households. The sample consisted of 270 males and 349 females in their twenties to fifties in dual-earner households. Data analysis methods included frequency analysis, t-test, and multiple regression analysis methods. First, there were significant differences in household work sharing by gender. Second, there were significant differences in perceptions of equitable and unequitable household work sharing between males and females. Third, there were significant differences in perceptions of equitable and unequitable household work sharing in dual-earner households. These results verify differences in perceptions of equitable and unequitable household work sharing by gender in dual-earner households and demonstrate differential effects of factors influencing perceptions of equitable and unequitable household work sharing in dual-earner households.
General Characteristics, Self-Efficacy, and Diet Control of Hypertension Patients at a Diabetes Admission Control Center in the Jeollanma-do Area

This study investigates general environmental factors influencing hypertension and diabetes patients and their disease control methods, self-efficacy, nutritional risk, diagnosis of eating styles according to nutritional risk, accountability in eating habit instructions, and nutritional intake and provides basic data for eating habit control in hypertension and diabetes patients. For this, 70 patients who visited a hypertension and diabetes admission center were interviewed using a questionnaire. According to the results, the implementation of self-efficacy in hypertension and diabetes was higher in female subjects. The diagnosis of eating type with nutritional risk was higher in female subjects, and there was a significant difference between male and female subjects (p<0.05). Both sexes had scores above 6 in nutritional risk and were diagnosed to have a "high-risk nutritional status." In the diagnosis of eating habits with nutritional risk, diet quality was higher for female patients (p<0.05), and the nutritional intake of subjects was low for most nutrients. In particular, the intake of calcium, vitamin A, riboflavin, and folic acid was low, indicating a need to improve eating habits for the balanced intake of nutrients because of the increasing importance of eating habits for controlling chronic diseases.
A Framework and Evaluation Index Design for Establishing Agricultural Work Safety and Health Farm Certification Systems in Korea

This study establishes a safe and healthy farm certification system for Korean farmers and presents the certification system and assessment items. Existing certification systems for safety and health were compared through a review of local and international studies as well as an examination of advanced examples. Then the certification system and assessment items were objectively verified through an expert evaluation process. As a result, four domains of certification participation, implementation, certification evaluation, and post management were identified as components of the certification system. For assessment measures, 6 categories, 21 factors, and 96 items were derived. The results are expected to be used as basic data in establishing a foundation for the implementation and operation of a certification system appropriate for distinct characteristics of the Korean agricultural sector.
A Comparative Study of Dietary and Weight Control Behavior of Female College Students in Korea and China

This study examines the dietary life, weight control, perceived body image, self-esteem, and eating disorder of female college students residing in Korea and China. With approval by the IRB of Pusan National University, a survey was conducted in Korea and China. A total of 574 subjects participated in the survey, and they were divided into three groups: 153 Korean female college students residing in Korea (KSK), 180 Chinese female college students residing in Korea (CSK), and 241 Chinese female college students residing in China (CSC). The group of underweight subjects far exceeded the overweight and obese groups, but there was no significant difference (p<0.05). The CSC group showed the highest food intake frequency and eating habit scores, and the KSK group, the lowest (p<0.05). However, the KSK group showed the highest daily life habit score, followed by the CSK and CSC groups, in that order. All groups showed high weight control experience rates mainly for losing weight. In particular, the KSK group showed a much higher rate than the CSC and CSK groups. All groups wanted much thinner body shapes than their actual shapes, resulting in high percentages of body image dissatisfaction. The KSK group showed a higher self-esteem score than the CSC group. The average EAT-26 score was similar across the three groups, but the percentage of eating disorders was much higher in the KSK group than in the CSC and CSK groups.
Cold Perception Responses according to Body Parts and Wearing Behaviors of College Students

This study investigates gender differences in cold perceptions and wearing behaviors for cold adaptation. A questionnaire composed of items on cold perceptions, intentions toward wearing additional clothing, and clothing for outdoor environments, among others, was used. Each item in the survey targeted 260 male (MS) and female (FS) college students evaluated using a five-point Likert-type scale. Data were statistically analyzed using the independent sample t-test and correlations. Main results can be summarized as follows: MS subjects showed lower dependence on the thermal insulation of clothing because they felt less cold and had the better ability to cope with cold. MS subjects had higher dependence on underwear during cold seasons, and FS subjects tended to wear heavier clothing to compensate for their cold feet with insufficient insulation. In addition, it was preferable to estimate thermal effects of actual wear by taking into account gender differences in the physique. The study is limited in that the room temperature and the actual amount of clothing were not measured, which offers an avenue for future research.
