Effect of pH on the Stability of Green tea Catechins

The five main green tea catechin components such as (+)-catechin, (-)-epicatechin, (-)-epigallocatechin, (-)-epicatechin gallate, and (-)-epigallocatechin gallate were analyzed quantitatively from commercial green tea by HPLC. Amounts of catechins decreased in the following order : (+)-catechin > (-)-epigallocatechin gallate >(-)-epigallocatechin >(-)-epicatechin >(-)-epicatechin gallate. In this study, the stability of the following green tea catechins to pH in the range from 3 to 11 was studied using of ultraviolet spectroscopy : (+)-catechin, (-)-epicatechin, (-)-epicatechin gallate, and (-)-epigallocatechin gallate. This study demonstrated that green tea catechins were not stable at high pH and that the pH-, and time-dependent spectral alternatives were not reversible In conclusion, low pH is important to maintain the efficient utilization of green tea catechins.
Effect of Different Ethanol Treatments on the Oxidative Stress in Liver and Brain of SD Rats

The effect of different ethanol feeding protocols on the oxidative stress in liver and blain of rats was studied. The rats were fed 5%-ethanol solution in drinking water (5%-EtOH group) or 2.5g ethanol/kg body wt. once daily intragastrically (2.5g-EtOH group). The levels of thiobarbituric acid reactive substances (TRARS) and vitamin EI in the liver, cerebrum and cerebellum were measured. In the liver of 5%-EtOH group, the level of TBARS was not changed, whereas vitamin I was significantly increased compared to control group. In the liver of 2.5g-EtOH group, the level of TBARS was significantly increased compared to control group and the vitamin E concentration was not affected. The levels of TBARS were increased and the vitamin E concentrations were decreased significantly both in the cerebrum and cerebellum in 5%-EtOH group as well as in 2.5g-EtOH group. These results show that lipid peroxidation and vitamin E concentration in liver were varied according to the conditions of ethanol treatment, however, the vitamin E contents in cerebrum and cerebellum were affected by both ethanol intoxications used in this study.
Hygienic quality of eggs in the department food stores in the Incheon Metropolitan area

This study was conducted to Provide basic information Promoting egg qualify improvement and hygienic control by grasping of present market egg distribution system and hygienic quality. The eggs of 57 brands collected from the department food stores in Incheon Metropolitan City were examined. Eggs were kept in room temperature in all the market and 70.2% of the brands were marked the expiration date indicating that eggs would be available over 28 days after being laid. Fifty-four % of the market eggs was classified as a special or functional egg. Expiration date and date of laying were common labelling items in all brands. These items were labelled in trade mark sheet or eggs tray. Only 66.6% of the brands had the mark about net quantity of contents. The inspection about the exterior and contents of eggs has results as follows: eggshell contamination of feces and feather-9.5%, abnormal and broken eggshell -3.9%, blood and meat spots in contents -14.7% and watery whites -1.8%. Average of Haugh Unit(HU) was 56.1 and below HU 31 were 18 of 285 eggs(6.3%), in addition, more than one egg detected in 12 brands(21.1%) among 57 brands have inferior quality. Salmonella enteritidis from eggshell and antibodies directed from S. enteritidis in the yolks of eggs available in the market were not detected. Ranges of Total bacterial count (CFU/ml) on eggshell of eggs were < 10~8.2
, and isolation ratio of Escherichia coli were 4.7%. Tetracyclines were detected in 1.8% of the eggs(1 of57 brands) by CHARMII. As mentioned above, quality control and improving distribution system were required to facilitate egg consumption and improve public health by complementing labelling items and quality standards.
A Health Risk Assessment of Tributyltin Compounds in Fishes and Shellfishes in Korea.

Tributyltin compounds have been increasingly used in the form of plastic stabilizers, catalytic agents, industrial agricultural biocides, antifouling paint, and pesticides. Among these organotin compounds, large amounts of tributyltin(TBT) and triphenyltin(TPT) have been used as antifouling agents because they have a superior ability to prevent marine organism from being encrusted on ship bottoms and in culturing nets. Environmental pollution by these organotin compounds in the aquatic environment were undertaken. The international maritime Organization's established a provisional tolerable daily intake(TDI) of 1.6[micro]g TBTO/kg/ B.W. The Food and Agiculture Organization (of the United Nations)/world Health Organization's (FAO/WHO) proposed a TDI of 0.5ug TPT/kg BW/d. This study is conducted monitoring of TBT on seafoods in Korea and risk assessment for exposure on TBT in seafoods. Total hazard index(using Reference Dose : 0.3 ug TBTO/kg B.W/day) of intake exposure on seafoods is 0.04 as the 50th percentile, 0.08 as the 95th percentile. This value is estimated by Monte-Carlo simulation using Crystal Ball(Decisioneering Co., 2001).
Distribution of Hazardous Heavy Metals(Hg, Cd and Pb) in Fishery Products, Sold at Garak Wholesale Markets in Seoul

The contents [average(minimum∼maximum), Unit:mg/kg] of hazardous heavy metals(Hg, Cd and Pb) were estimated from 951 fishery products in Seoul(468 fishes,373 shellfishes, 39 crustaceans and 71 others) from January to December in 2001 by Atomic Absorption Spectrometer. Hg contents showed in shellfishes [0.033(N.D.∼0.19)]>others(0.026(N.D.∼0.11)]>crustaceans[0.026(N.D.∼0.09)]>fishes[0.018(N.D.∼0.19)], Misgurnus mizolepis(0.19) and Tegillarca granosa(0.19) were the highest. Pb content were shellfishes [0.223(N.D.∼l.38)] >fishes[0.213(N.D.∼1.68)]>others[0.15(N.D.∼0.39)]>crustaceans[0.144(N.D.∼0.444)], and Misgurnus mizolepis (1.68)>Hypomesus olidus(1.44)>Tapes philippinarum(1.38)>Anguilla japonica(1.35). Also, Tegillarca granosa(1.85) was the most Cd contents among shellfishes[0.288(N.D.∼1.85)].
Distribution of Vibrio parahaemolyticus in Fishery products, Sold at Garak Wholesnle Market and Serological Characteristics of Isolated Strains

Totally, 742 fishery products were collected at Garak wholesale market in Seoul from Jan. to Dec. in 2001. Vibrio parahaemolyticus were 12.5%(93/742). The detection ratio of V. parahaemolyticus by month was reached the maximum in summer season (July to September). The highest ratio with 22.9% were abtained from molluscs, followed by shellfishes with 15.3%, and fishes and crustaceans with about 8%. The ratio of serotypable strains were 15.2%(10/66) and identified serotyps of V.parahaemolyticus were K24, K28, K34, K42, K47 and K53
Consumer Awareness and Perception of Genetically-modified Foods in Korea;2000-2001

A two-year survey of consumers'awareness and perception of genetically-modified (GM) foods was conducted during May through September of 2000 and 2001 with a random sample of Korean consumers. More than 68% of the respondents were exposed to some information related to GM foods. The greatest benefit of the development of GM foods was thought to be the remedy for the food shortage in the future. More than 90% of Korean consumers wanted GM foods to be labeled. About 18% of the respondents would buy GM foods voluntarily, whereas over 49% would not until they found out more. Only 40% of Korean consumers were found to realize that food items originated ken plants contain genes. More consumers responded that they would not buy herbicide-tolerant GM soybean but buy vitamin-enriched GM soybean. It seemed to be that many Korean consumers do not make decisions of acceptance or rejection of GM foods not on the basis of biotechnology but on the basis of the word(5) used to describe the products, such as herbicide and vitamin. Only 4% of Korean consumers responded that GM foods were the greatest safety-threatening factor of Korean foods.
Assessment of Estimated Daily Intakes for Preservatives from Survey Data

This study has been carried out to estimate the average daily intakes of preservatives commonly used in Korea. The survey method, which is specific approach that can be applicable for Koreans has been proposed to estimate the daily intakes. The ADIS of sorbates, benzoates, and esters of p-hydroxybenzoic acid were less than 1% and judged to be safe. The EDIs of sorbates, benzoates, and esters of p-hydroxybenzoic acid were 0.39, 0.29, and 0.04 mg/kg bw/day respectively. And these data were compared with existing data. In case with sorbates, the EDI of survey data was higher than that of analytical data but much lower than that of maximum permitted level data. Also, the EDIs of benzoates and esters of p-hydroxybenzoic acid showed to be the same results. In conclusion, the EDIs of survey data lie between maximum Permitted level data and analytical data of Preservatives. The survey method could be considered as the possible alternative of refined method.
