Protein Binding Characteristics of Brazilin and Hematoxylin

In order to investigate the protein binding characteristics of braD6n and hematoxy6n to bovine semm albumin (BSA), the fluorescence probe method was adopted. Brazilin and hematoxy6n showed strong binding affinity for BSA. It was also confirmed that hematoxy6n was bound to BSA stronger than braDlin. The association constants were decreased by the elevation of concentrations of brazilin and hematoxylin. It might be due to the complex formation of the probe and both compounds or the interaction between the probe-protein complex and both compounds. The bindings between both compounds and BSA were dependent on pH and ionic strength. It seems that electrostatic force as weD as hydrophobic force is involved in the binding of braD6n and bematoxylin to BSA.
Studies on the Effect of the Extract of Eugenia Flos on Gastritis and Gastric Lesion

This study was perfonned to investigate effectiveness eness on the gastritis and gastric lesion with the methanol extract of the flower buds of Eugenio caryophyllata. The extract was fractionated with hexane, chIorofonn, ethyl acetate, butanol, followed by bioassay Oil antigastritis. The ethyl acetate and the buthanol fraction reduced significantly HCI.ethanol induced gastric lesion at the dose of 165 and 215 mg/kg, p.o., respectively. These results may indicate that remarkably.effective are ethyl acetate and butanol fractions in HCI-ethanol induced gastric lesion. Howeever, the fractions didn't exhibit any inhibition of gastric secretion and acid output. The buthanol fraction reduced significantly the acetic acid induced ulcer at a daily dose of 215 mg/Kg, p.o., given for 10 days. These result showed considerable inhibit of acetic acid induced ulcer without inhibition of indomethacin induced gastric lesion. The methanol extract showed low acute toxicity with minimum lethal dose of more than 3000 mg/kg, p.o. in mice. In conclusion, Eugenia F10s exhibited antigastric activity which might be attributable to inhibition of gastric secretion. It is indicated that activie component may be present in the buthanol fraction.
Effects of Diazinon on the Murine Host Defense System

Diazinon which is one of the most beavily used organophosphate pesticide in Korea, was examined for its effects on the murine host defense system. Immunotoxicological assay parameters adopted in this study were carbon clearance for macrophage function, susceptibility to tumor challenge, and pathotoxicological indicators, Subchronic exposure of pesticide to rodents resulted in the suppression of immune functions, enhancement of susceptibility to tumor challenge, and moderate histological changes of lymphoid organ without any significant alteration of clinical status.
disinfectant and Inhibitory Effect of Natural Antimicrobial Agent on Vibrio vulnificus in Fish

To prevent food-poisoning outbreaks by Vibrio vulnificus the antimicrobial efficacy of grapefruit seed extract (GFSE) was examined. Minimal inhibitory concentration (in vitro) for the microorganism was found to be 50∼100 ppm. Transmission electron micrographs of Vibrio vulnificus showed the biocidal action of this natural antimicrobial agent would be related to specific respiratory effect coupled with the destruction of permeable function of microbial cell membrane. After Anguilla japonica GFSE-injected to the body was incubated in the seawater contaminated by Vibrio vulnifiucs the fish meats were taken up, mixed with control diet and used as a diet in the feeding experiment. In this experiment the effect of GFSE treated with fish muscle on body weight, protein efficiency ratio, serum enzymes and serum blood components of broiler chicks was investigated. It is proved from this study that there is neither Vibriosis nor toxicity associated with GFSE itself an fish meats treated with it when it is injected to the fish body at a level of 250 ppm or less
n-3 Fatty Acids (EPA, DHA) and Health

There is increasing awareness of the devastating socio-economic cost of cardiovascular disease. As a result there have been a lot of extensive researches both on basic mechanisms involved and on the areas of epidemiology and clinical trials. Now it is being generally accepted that dietary n-3 fatty acids abundant in marine products, may reduce the incidence of cadiovascular disease. Fish oil . with its complement of n-3 fatty acids, has been shown the have diverse and sometimes potent actions on cells of the blood and vasculature, which may explain some of its positive effects on vascular disease. However, the appropriate intake of n-3 fatty acids has not been established. This may vary with desired effects, the duration of ingestion, the type of seafood or fish oil and amount of other fatty acids, especially n-6 fatty acid being consumed in the diet. Although the beneficial effects have been extensively studied, little is known about potential adverse effects with excessive intake of n-3 fatty acids. Thus, it is needed to study on the possible unfavorable effects including genetic effects.
Antioxidative Effectiveness of Methanol Extract in Galla Rhois

Free-, soluble- and insoluble phenolic acids were extracted from defatted Galla Rhois. The extracts were then dissolved in equal amounts of an soybean oil, and POV (peroxide value) of the resulting substrates, portion of the soybean oil (control) and 0.02% BHT were measured by AOM (active oxygen method) test at 97.8
for 40 hours through Rancimat method. Induction period of control, BHT, free phenolic acids, soluble phenolic acids and insoluble phenolic acids by the Rancimat method were 4.8, 10.5, 23.9 and 30.5hr. The phenolic acids separated and tentati-vely identified by gas chromatography were catechol, gallic acid, vanillin, protocatechuic acid, syri-ngic acid, ferulic acid.
Diseases of Aquaculture animals and prevention of Drug Residues

Fish pathology is one of the main scientific bases upon which this expansion in aquaculture has been dependent and requires a wide knowledge of the environmental constraints, the physiology and characteristic of the various pathogens, the responses of the host, and the methods by which they may be controlled. The primary disease and parasite problems in aquaculture animals related to viral, bacteria, fungal and protozoan epizootics. Parasitic nematodes, trematodes and cestodes are commonly found in aquaculture animals, but seldom are they present in concentrations sufficient to cause significant problems, When an epizootic does occur and chemical treatment is indicated, the appropriate chemical must be selected an properly applied. We have antibiotics, sulfa, nitrofuran and other chemicals for treatment of fish diseases, Some may be mixed with the feed during formulation, added to the pellets of feed as a surface coating, given in the form of an injection or used as a bath. Even though a drug or chemical has been officially approved for use in aquaculture, the substance should never be used unless there is a clear need, Some of the reasions for this view are as follows: (1) the constant use of antibiotics can leak to the development of resistant strains of bacteria, (2) biofilter efficiency may be impaired or destroyed by chemicals added to closed recirculating water systems, and(3) the injudicious use of chemical can have a damaging effect on the environment as well as on human.
Distributional Shape of Food Intake and Nutrition Data for Adults and Children

Food intake data from 228 persons (96 male adult ranging in age from 19 to 54, 27 female adult ranging in age from 20 to 46, 54 boys ranging in age from 9 to 11, and 51 girls ranging in age from 8 to II) were studied with respect to the shape of the underlying probablity distributions. For each menu items distributional shapes of food intake were different. Most of distributions for food intakes from normaJ distributions. From food intake data of 2 meals nutrition intake data are calculated. For each meal, energy, protein, fat, carbohydrate, fiber, calcium, iron, vitamin A, thiamin, ribofavin, niacin and vitamin C were computed and thier distributions were compared with normal distributions. Distributions for adult female showed normal distributions for some food items. For nutrient intake data from male adults, distributions for vitamin C from 1st meal and calcium from 2nd meal were marginal and the remains were differed from normal distributions. For adult female and childern, distiributions for some nutients were differed from normal distributions. It is hard to find special patterns for each nutrient distributions. Therefore the normal distributions assumptions should be verified prior to applying parametric techniques to thier data. If those assumptions are not valid, non-parametric techniques should be used to analyze their data.
Pesticide Residues in Agricultural Products and Its Countermeasures for Safety

Pesticides are regarded as one of indispensable materials used in agriculture to protect pests and to keep the agricultural productions steadily. However, food contamination arisen from their application has brought about public concerns for safety suspicion to human health. A brief presentation is given in this paper on what has been conducted against pesticide residues to evaluate and ensure the safety of agro-porducts. The commonest countermeasures to keep safety would be tile establishment of MRls and safe-use guidelines of pesticides according to good agricultural practices. Korean MRls have been established on 38 chemicals with 56 commodities and in the case of safe-use guidelines 344 formulation items have been done by the government On the other hand, no satisfactory information is still available to evalute the actual residue levels in domestic agro-products, but a cautious proposal could be suggested through the fragmentary monitoring data of pesticide residues, so that the current residue levels would be far from potent hazard enough to cause chronic impact on human. The most important thing is to have the farmers keep safe use guidelines at pesticide application for the production of safe agricultural commodities.
Benefits of Fermented Milk in Rats Fed by Hypercholesterolemic Diet (II)

This study was performed to investigate the term effect of fermented milk in drink on rats fed by cholesterol diet. 150 to 5-week-old male rates of Sprague-Dawley strain weer divided into six groups according to diet and content of fermented milk in drink. The first group served as normal control group fed by synthetic pellets of standard diet. The second , cholesterol control group, was treated with standard diet containing 1% of cholesterol and 500000IU/100g of vitamin D2. The other four groups. fermented milk groups, FM-25,FM-50 , FM 75 and FM-100 were treated with the cholesterol and vitamin D2 diet and supplied with 25%, 50%, 75%, 100% of fermented milk in drink , respectively. The animals were sacrificed for analysis in 3, 6, 9 and 12 months. Weight gain, diet intake , and drink consumption were significantly different among groups. Fermented milk reduced serum cholesterol to a significant effect (p<0.05) and significantly increased the ratio of high density lipprotein cholesterol to total cholesterol(p<0.05). Serum triglycerides were reduced to a smaller and less significant effect in fermented milk group. The aorta and liver of fermented milk showed slighter medial calcification and necrosis and milder fat degeneration than did the cholesterol control group. Supplementation of fermented milk may have a helpful effect on hypercholesteremia and atherosclerosis
Development of an Inspection Item and its Application for the Hygienic Improvement of Food service Establishments Using

The sanitation inspection is the most frequently used procedure to protect foods prepared in foodservice establishments. In order to enhance foodservice inspections and to improve post-inspection remedial measures, more practical evaluation methods for sanitation are required. The HACCP approach is based upon factors which contribute to foodborne disease rather than of factors which relate to aesthetics. Contributing factors for foodborne diseases from food service establishments reported in USA, Candada, and England were analyzed to identify potential hazards during practical foodservice operations. Hazards were classified at critical control points by risk ranking, Twenty-two observable practical indicators relating to each contributing factor were selected and adjusted to standardized procedures and hazard determiners at critical control points, The weights for each inspection item were ranked as 1, 2, 3, 4, or 5 according to the risk level of contributing factors. And also application for the inspection item in different 6 types of work procedures were suggested for the use of specialized foodservice establishment and cafeteria, and of manager's self inspection in each establishment.
