Dietary Status of the Elderly from the Low Socioeconomic Group on the Suburbs of Jeonju - Focussed on Integration of Family Planning -

The purpose of this study was to assess dietary intake and food habits of low-income person aged 60 years or eldary. The hundred fifty persons from the suburbs of Jeonju were surveyed between August 1 to 20,1979. Results were as follows: Family environment Approximately 90% of elderly persons surved, lived with their children and grand-children: 5.2% together as a couple; and 4.4%, widowed, lived alone. Nearly 40% of the households has a average monthly incomes of W40,000 to W100,000. Average food expediture accounted for 50 to 70% of total monthly income, thus indicating that the subject families belonged to the lowest socioeconomic level. As pocket money, 74.5% of male subjects had more than W5,100 per month. whereas, 51.4% of female had less than W5,000. Anthropometric measurements: 97.6% of subjects has heights greater than 90% of the Korean standard for their age group, whereas 45.2% of the subjects were 60 to 89% of standard weight. 88% had an arm circumferences only 60 to 89% of the standard. Nutrient intake: Intake of the majority of nutrients was below the recommended allowances, especially for energy, protein, calcium and iron. The energy input ratio of carbohydrate: protein: fat was 73.1-80.9. 13.3-15.8: 4.5-11.5, showing very heavy dependence on carbohydrates for energy needs. The contribution of animal protein was 24.3% of total protein intake, indicating an improper protein diet. Other factors influenced on the nutrient intake: Poor teeth, illness, and poor appetite were always associated with inadequate intake of energy and nutrients. The larger the family size, the lesser intake of nutrients was observed among those elderly.
Studies on the Extraction of Seaweed Proteins Extraction of Water Soluble Proteins in Unexploited Seaweeds

In this study, two species of algae, Ecklonia stolonifera, Sargassum thunbergii and one species of marine plant, Zostera marina(rhizoid and stem) were collected and extamined to determine the extractability of water soluble protein and the influences of various factors including extraction time, temperature, ratio of sample vs solvent and pH upon the extractability were tested. The effects of precipitation treatments for isolation of algal protein from the extracts(TCA treatment, methanol treatment and pH control) were also tested. Amino nitrogen and total nitrogen of purified samples made by obtained optimum conditions were estimated. The effect of the ratio of sample vs solvent on extractability differed from species to species which was enhances at 1:100(w/v) in Sargassum thunbergii and Zostera marina while 1:150(w/v) for Ecklonia stolonifera. The effect of extraction time and temperature was revealed differently in all species which might be considered to be caused by differences in the constitution of algal tissues. But in case of TCA insoluble nitrogen, it was showed the maximum extractability at
for 1 hour extraction. The optimum pH for the ext action of total nitrogen was 9-12 while the optimum pH was 6-7 for TCA insoluble nitrogen. And the pH control appeared to be most effective in the influence of precipitation treatment for isolation of algal protein.
The Taste Compounds in Fermented Entrails of Clupanodon Osdeckii

This study was attempted to establish the basic data for evaluating taste compounds in fermented entrails of Clupanodon Osdeckii. The changes of such compounds as amino acids, nucleotides and their related compounds, betaine, TMAO and TMA during fermentation were analyzed. IMP, AMP, ADP and ATP were decreased, while hypoxanthine was increased during the fermentation. The content of hypoxanthine in fermented entrails of Clupanodon Osdeckii after 50 days was increased to about 2 times of that in raw entrails. In the free amino acid composition of raw entrails, abundant amino acids were lysine, glutamic acid, valine, alanine, threonine, serine, leucine and glycine in order. Such amino acids as arginine, tyrosine and phenylalanine were lower than 2.0% of total free amino acid, and proline and cysteine were detected in trace amount. The changes in free amino acid composition of the extract in entrails of Clupanodon Osdeckii during fermentation were not observed. Such amino acids as lysine, glutamic acid, valine, serine and leucine were especially abundant in both raw and fermented products. The content of total free amino acids in fermented entrails of Clupanodon Osdeckii after 50 days were increased to about 12 times of that in raw. The content of betaine nitrogen were about 14.5 (moisture and salt free base) after 50 days of fermentation. TMAO nitrogen was decreased during the fermentation. It is believed that lysine, glutamic acid, valine, serine, leucine and hypoxanthine play an important role as taste compounds in fermented entrails of Clupanodon Oseckii.
Microbial Changes on Storaged Temperature and Time in Lactobacillus Fermented Products

This experiment was investigated for purpose of the clearfying the proper temperature and time needed to preserve the lactobacillus fermented products. Effect of dietary vegetable oil on the Growth and Blood Glucose Level of Rabbit

The effect of dietary vegetable oils on the growth and blood glucose level of rabbit was examed. This study was carried out to observe the nutritive effect of feeding vegetable oils for a period of weeks. The experimental diets were prepared on the basis of isocaloric and isonitrogenous diet. The Experimental animals were fed on 5 kinds of diets such as control (Basal), group A(Basal + sesame oil), group B(Basal + perilla oil), group C(Basal + soybean oil), and group D(Basal + rice bran on diets for 4 weeks. The results obtained are summarized as follows: 1. The gain in body weight of rabbit was higher for perilla oil fed group than any other group gained. 2. Liver weight of the control group, group A, group B, group C, and group D were 30.35 or 37.35 or, 37.25 or, 38.25 gr, 31.05 gr, and 39.54 gr, respectively. The reletionship between liver and body weight were 3.25, 3.99, 4.33, 4,15, and 4.57, respectively. It showed that to liver weight of group D which was fed rice bran oil was heavier than any other group showed. 3. The content of total protein and glucase level in serum of animal blood were 5.72 mg% 40.34 mg%, 5.65 mg%: 22.37 mg%, 5.95 mg%: 77.0 mg%. 5.62 mg%: 28.60 mg%, and 5.63 mg%: 34.10 mg%, respectively. As shown above, the group B was the most heaviest one. 4. It may be concluded from the above results that linolenic acid which was included in vegetable oils have an effect on interconversion among three caloric elements such as cabohydrate, protein, and fats.
Studies on the Myofibrilar Protein from Korean Duck Muscle

Myofibrilar Protein from Korean Duck Muscle was extracted and ATPase activities were studied. The results were as follows: 1. The Content of Minerals in Algae

Sixteen species of algae (4 species of green algae, 5 species of brown algae and 7 species of red algae) were collected from the coast of Chungmu, Gyeongnam, from June to October, 1976. The content of minerals in algae were analyzed by Atometic Absorption Spectrophotometer. The results were as followed 1) The content of Iron and Nickel in green algae were abundant, and those of Lead, Nickel and Manganese in brown algae were low. 2) The content of Cadmium were in the range of 0.58-1.04ppm (average: 0.85ppm) in green algae, 0.32-2.10ppm (average: 1.08ppm) in brown algae and 0.54-1.70ppm (average: 1.04ppm) in red algae. The content of Cadmium were in the range of 0.3-0.6ppm in laver, Porphyra tenera, sea mustard, Undaria pinnatifida, and tangle, Laminaria japonica, but its content was lower than those expected. 3) The content of Lead were in the range of 0.67-1.40ppm (average: 1.03ppm) in green algae, 0.60-1.00ppm (average: 0.82ppm) in brown algae, 0.56-2.40ppm (average: 1.28ppm) in red algae and its content in algae were lower than in fish and shellfish. 4) The content of Copper were in the range of 10.8-24.2ppm (average: 18.95ppm) in green algae, 7.4-24.6ppm (average: 18.16ppm) in brown algae, 6.4-31.2ppm (average: 19.94ppm) in red algae and those content were considerably abundant except for some algae. 5) The content of Nickel were in the range of 5.4-16.6ppm (average: 9.1ppm) in green algae, 1.0-4.4ppm (average: 2.32ppm) in brown algae and 0.7-4.6ppm (average: 2.59ppm) in red algae. 6) The content of Iron were in the range of 686.4-1159.0ppm (average: 916.5ppm) in green algae, 131.0-499.2ppm (average: 310.16ppm) in brown algae and 156.0-530.4ppm (average: 248.2ppm) in red algae. Especially, that of Iron in green algae showed higher value than in any other. 7) The content of Manganese were in the range of 48-221ppm (average: 157.25ppm) in green algae, 12-65ppm (average: 41ppm) in brown algae and 72-162ppm (average: 121ppm) in red algae. Especially, that of Manganese in brown algae showed lower value than in any other. 8) The content of Zinc were in the range of 191.3-451.1ppm (average: 290.05ppm) in green algae, 89.9-374.2ppm (average: 202.64ppm) in brown algae and 106.4-281.4ppm (average: 188.93ppm) in red algae. 9) The content of Magnesium were in the range of 0.48-1.83% (average: 1.27%) in green algae, 1.04-1.71% (average: 1.21%) in brown algae and 0.42-1.24% (average: 0.097%) in red algae. 10) The content of Fluorine were in the range of 29.2-92.7ppm (average: 53.03ppm) in green algae, 33.3-43.5ppm (average: 39.18ppm) in brown algae and 32.4-59.0ppm (average: 44.84ppm) in red algae.
Studies on Adenosine Triphosphate - Creatine Phosphotransferase from Muscle of the Snake Bungarus fasciatus

A detailed procedure was described for the isolation of cratine kinase (ATP-Creatine phosphotransferase, E. C. 2. 7. 3. 2.) from the muscle of the snake Bungarus fasciatus. The original isolation procedure of Kuby et al. for the rabbit muscle enzyme has been modified and extended to include a chromatographic step. The properties of the enzyme have been investigated and kinetic constants for the reverse reactions determined as the followings: 1) A molecular weight of the enzyme was determined by gel filteration on Sephadex G-100 and by electrophoresis on SDS-polyacrylamide was 86,000. 2) Two reactive sulphydryl groups were detected with dithiobis nitrobenzoic acid (DTNB). 3) The nucleotide substrate specificity in the reverse reaction was determined as ADP*2'-dADP＞GDP＞XDP＞UDP with magnesium as the activating metal ion. 4) The order of the metal specificity in the reverse reaction Mg>Mn>
was determined with ADP as substrate. 5) A detailed kinetic analysis was carried out in the reverse direction with
