가공 후 폐기되는 수산가공부산물의 이용성을 높이고, 식품첨가물로서의 식품 산업 적용에 대한 가능성을 조사하기 위하여 잉어 및 연어의 두부를 이용하여 열수추출물을 제조하고 이들의 기능특성을 검토하였다. 제조된 열수추출물은 모두 천연항산화제인
