Abstract

To investigate the effects of conjugated linoleic acid added diet feeding on CLA accumulation and quality characteristics of manufactured press ham using CLA accwnulated pork loin meat. The CLA used to add in diet was chemically synthesized by alkaline isomerization method with com oil. Pigs were divided into 5 treatment groups(4 pigs/group) and subjected to one of five treatment diets(0, 1.25% CLA for 2weeks, 2.5% CLA for 2weeks, 1.25% CLA for 4weeks and 2.5% CLA for 4weeks, CLA diets; total fed diets) before slaughter. Pork loin were collected from the animals(110kg body weight) slaughtering at the commercial slaughter house. Manufacture press ham using CLA accumulated pork loin meat were vacuum packaged and then stored during 1, 7, 14, 21 and 28 days at 4$^{\circ}C$. Samples were analyzed for general compositions, physico-chemical properties(pH, color, shear force value), TBARS. pH value of CLA treatment(T4) was increased significantly than that of oontrol(P<0.05). pH of control and CLA treatments were increased significantly as the storage period passed(P< 0.05). Crude fat content of CLA treatment groups was significantly higher than the control pork (P<0.05). Meat color(CIE $L^*$, $a^*$$b^*$

실험동물에서 항안성, 항산화성, 동맥경화 억제, 면역성 증강, 콜레스테롤 저하, 당뇨병 예방 및 치료효과가 있다고 알려진 conjugated linoleic acid(CLA)를 비육돈에 급여하여 비육돈 체조직내에 CLA를 축적시키고, CLA가 축적된 돈육을 이용하여 프레스햄을 제조한 후 저장성 및 품질특성에 대한 연구를 수행하였다. CLA는 alkaline isomerization 방법으로 식용유를 이용하여 전체 CLA 이성체가 56%인 CLA를 화학적으로 합성하였다. 대조구는 80${\sim}$110kg 까지는 일반사료회사에서 생산하는 사료를 급여하였으며, 처리구 1은 출하(출하체중:110kg) 2주전부터 일반사료회사에서 생산하는 사료에 CLA를 1.25%첨가하여 급여하였으며, 처리구 2는 출하 2주전부터 사료 함량에 CLA를 2.5% 첨가하여 급여하였다. 처리구 3은 사료 함량에 1.25% CLA를 첨가하여 4주간 급여하였으며, 처리구 4는 2.5% CLA를 4주간 급여하였다. 급여기간이 끝난 후 일괄적으로 함양도축장에서 도축하여 좌.우도체의 등심부위를 발골. 정형하여 제조 원료로 사용하여 프레스햄을 제조한 후 진공포장하여 냉장온도(4$^{\circ}C$)에서 1, 7, 14, 21 및 28일간 저장하면서 일반성분 및 저장기간에 따른 이화학적 특성분석(pH, 육색, 전단가) 및 지방산화 등을 조사하여 CLA가 축적된 프레스햄의 저장기간에 따른 품질 특성을 규명하고자 실시하였다. 함유수분 함향은 CLA를 4주간 급여한 T3, T4 처리구가 대조구와 T1, T2 처리구에 비하여 유의적으로 낮은 수분함량을 보였다(P<0.05). 조단백질 함량은 대조구와 T1 처리구에 비하여 T2, T3, T4 처리구가 유의적으로 낮은 조단백질 함량을 보였다(P<0.05). 조지방 함량은 CLA 급여 처리구간에는 유의적인 차이가 없었지만 2.5% CLA 급여 처리구(T2, T4)가 1.25% CLA 급여 처리구(T1, T3) 보다 높은 조지방 함량을 보였으며, 대조구와 CLA 급여 처리구간에는 대조구에 비하여 CLA 급여 처리구가 유의적으로 높은 조지방 함량을 보였다(P<0.05). 조회분 함량은 2.5% CLA를 4주간 급여한 T4 처리구가 다른 처리구에 비하여 유의적으로 높은 조회분 함량을 보였다(P<0.05). pH는 처리구간의 비교에서 전 저장기간동안 2.5% CLA를 4주간 급여한 T4 처리구가 다른 처리구에 비하여 유의적으로 높은 pH를 보였다(P<0.05). 저장기간에 따른 프레스햄의 pH 변화는 전 처리구가 저장기간이 경과함에 따라 유의적으로 증가하엿다(P<0.05). 명도, 적색도, 황색도는 처리구간에 유의적인 차이는 인정되었지만 뚜렷한 경향이 없었으며, 저장기간의 경과에 따른 변화에서도 뚜렷한 변화가 없었다. 처리구간에 전단가를 비교한 결과 전 저장기간 동안 뚜렷한 경향이 없었으며, 저장기간에 따른 변화에서는 전 처리구가 저장기간이 경과함에 따라 전단가가 높아지는 경향을 보였다. 지방산화는 전 저장기간동안 대조구에 비하여 CLA 급여 처리구가 낮았으며, 특히 저장 28일째는 유의적으로 낮은 지방산화를 보였다(P<0.05). 저장기간에 따른 지방산화 값의 변화는 대조구와 CLA 급여 처리구 모두 저장기간이 경과함에 따라 유의적으로 높게 나타났다(P<0.05). 이상의 결과 프레스햄 제조시 CLA가 축적된 돈육의 이요은 이화학적 특성에 영향을 미치지 않고, 제품의 저장기간을 연장시키며 CLA 축적이 가능하여 고급 육제품 생산이 가능하다고 사료된다.
