Discrimination of Geographical Origin of Beef Using Electronic Nose Based on Mass Spectrometer

Abstract

In this study, the geographical origin of beef was studied using an electronic nose based on mass spectrometer. Domestic beef was compared with the imported beef from New Zealand and Australia. Each sample was analyzed, and discriminant function analysis was used utilized for the discrimination of geographical origin. The $R^2$ and F-value of discriminant function analysis (DFA)1 were 0.4317 and 14.18, respectively when the samples were separated by geographical origin. The $R^2$ and F-value of DFA1 were 0.8960 and 22.98, respectively when the samples were separated by part of beef.

수입산과 국내산 쇠고기의 원산지를 판별가능성을 검토하고자 mass spectrometer를 바탕으로 한 전자코를 활용하여 국내산 한우, 호주산, 뉴질랜드산 쇠고기를 부위별로 측정하였다. 쇠고기의 질량스펙트럼을 토대로 나라별 판별함수분석을 수행한 결과 나라별로 산지에 따라 어느 정도 원산지 판별이 이루어졌으며 DFA1의 $R^2$값은 0.4317, F값은 14.18이고 DFA2의 $R^2$값은 0.3012, F값은 8.05로 나타났다. 각 부위별로 15개의 그룹으로 나누어 분석을 한 결과, 각 시료간의 그룹별 분리는 매우 높게 나타났다. DFA1의 $R^2$값은 0.8960, F값은 22.98이고 DFA2의 $R^2$값은 0.7995, F값은 10.63 그리고 DFA3의 $R^2$값은 0.4872, F값은 2.53으로 나타났다. 뉴질랜드산의 경우 부위에 관계없이 한 그룹을 형성하여 호주산이나 국내산 한우와는 구별이 뚜렷하였으나 호주산의 일부는 국내산 한우와 중첩되어서 커다란 차이를 보여주지 않았다.
