콩나물의 재배기간에 따른 NDF에 결합된 미량 무기질의 변화와 추정이용률

Change and Estimated Availability of NDF Binding Trace Minerals in Soybean Sprouts Depending on Cultivation Periods

초록

본 연구는 한국인이 많이 섭취하는 채소류의 하나인 콩나물을 재배기간 1, 3, 5일에 따라 자엽과 배축으로 분리하고 cell wall에 결합된 Cu, Fe, Mn, Zn의 함량을 측정하여 간과 하기 쉬운 미량 무기질의 이용률을 추론하고자 실시하였다. 자엽의 NDF에 결합된 미량 무기질은 Mn을 제외하고 모두 5일째에 가장 적게 결합되어 있었고, 배축에서는 Cu와 Mn이 5일째에 많이 결합되어 있었으며 Fe과 Zn은 재배기간이 증가할수록 결합 정도가 유의적으로 감소하였다. 또한 자엽과 배축에서의 추정이용률을 보면 자엽에서 Cu, Fe 및 Zn은 재배기간이 증가할수록 높은 이용률을 보였고 Mn은 1, 3, 5일째 모두 99% 이상의 매우 높은 이용률을 보여 콩나물자엽에 있어서 특히나 Mn 자원으로서의 그 이용이 기대될 것으로 판단되었다. 배축에서는 Cu와 Fe이 다소 낮은 이용률을 보였지만 Mn과 Zn은 3일째에 95% 이상으로 추정이용률이 높았다.

This study was conducted to determine contents and estimated availabilities of trace minerals (Cu, Fe, Mn, Zn) in soybean sprouts depending on culture periods such as 1, 3 and 5 days. The proportional changes of Cu estimated availability in cotyledon were between 57.31 and 98.34%, between 63.69 and 82.56% for Fe, 99.19 and 99.82% for Mn and 48.60 and 94.56% for Zn, respectively, based on dry matter. The estimated availabilities of Cu, Fe, Mn, and Zn in hypocotyl were between 34.63 and 56.0%, 20.74 and 40.33%, 86.5 and 95.88%, and 96.11 and 96.61%, respectively, on dry matter basis.
