Analysis of Quality Change during Preservation by a Prototype Drink Containing a Helianthus annuus Seed Extract

해바라기씨 추출물 함유 음료의 저장기간 중 품질 특성 분석

Abstract

To explore the preservation parameters of a prototype anti-inflammatory drink containing a Helianthus annuus seed extract, we first examined sweetness, pH and color changes, and temperature effects during preservation. Over 25 days, pH rose slightly from 3.50 to 3.65. Small color changes in L, a, and b values occurred on prolonged storage. Temperature most affected storage properties, which differed considerably at $10^{\circ}C$ and $40^{\circ}C$. Microbiological safety tests showed that the prototype drink was safe; neither general bacterial contamination nor Escherichia coli growth occurred. We concluded that the prototype drink was biologically and microbiologically safe on preservation.

천식 완화용 음료의 저장 중 이화학적 특성의 변화를 관찰한 바, pH의 경우 저장기간이 길어짐에 따라 3.50에서 3.65로 약간 증가하는 경향을 나타내었다. 당도는 저장 초기값이 저장 25일째 측정한 값과 차이를 거의 보이지 않았다. 저장기간에 따른 색도의 변화는 L값, a, b값 모두 저장기간이 길어질수록 약간 증가하는 경향을 보였고, 저장 온도가 $40^{\circ}C$에서 저장한 경우 그 증가폭이 큰 것으로 나타났다. 관능적 특성의 변화에서는 저장에 따른 음료의 관능적 특성의 변화는 $10^{\circ}C$에서 저장한 경우는 약 25일간의 저장기간 동안 $4^{\circ}C$에서 저장한 대조구에 비하여 기호도 점수가 약간 감소하기는 하였으나 전반적인 기호도면에 있어 큰 차이를 나타내지 않았다. $40^{\circ}C$ 이상에서 25일 이상 저장할 경우에는 기호도면에서 상품가치의 하락이 발생하는 것으로 판단된다. 미생물학적 안전성 검증에서는 저장기간 중의 모든 시료에 대해 검출되지 않아 미생물학적으로 저장 중 안정한 것으로 나타났다. 이로 미루어 볼 때, 본 천식 완화용 음료의 저장기간 중 품질 변화에서 유통기간 중 $40^{\circ}C$ 이상의 온도에 민감함을 알 수 있었다.
