A Study on the Differences in the Dietary Habits, Nutrient Intake and Health Status of Vegetarian (Lacto-Ovo Vegetarian) and Non-Vegetarian Korean Elementary School Children

초등학생의 Vegetarian(lacto-ovo vegetarian)과 Non-Vegetarian의 식습관, 영양소 섭취 및 건강습관 차이에 관한 연구

Abstract

The objective of this study was to investigate the effects of vegetarian (lacto-ovo vegetarian) and non-vegetarian diets on dietary habits, nutrient intake, and health status. The vegan subjects were 22 children. Among them, 54.5% of the subjects had a specific religion, 36.4% had been vegetarian since weaning, and 9.1% had become vegetarian to prevent obesity or atopy. The percentages of excessive eating by the vegetarian children were lower compared to the non-vegetarian children. The rates of intake of vegetables (42.2%) and fruits and fruit juice (55.9%) by the vegetarian children were higher compared to non-vegetarian subjects. Non-vegetarian children consumed more milk, dairy products, as well as meat, fish, eggs, soybean, and tofu than the vegetarian subjects. Vegetarian children ate more bread, potato, and fruits as snacks than non-vegetarian children. Furthermore, non-vegetarian children consumed more carbonated beverages and ice cream than the vegetarian subjects (p<0.05). Generally, the subjects' energy intake was lower than standard values, and vegetarian children's calcium intake was deficient. Non-vegetarian children's fiber intake was deficient, and they consumed fat, vitamin $B_2$, calcium, and cholesterol excessively (p<0.05). Nutrition tablet intake was higher among non-vegetarian children; however, the rate of fatigue among subjects was higher among vegetarian subjects than non-vegetarian subjects. Among the vegetarian subjects, 19.6% reported that they had a cold. Consequently, for the purpose of attaining balanced physical development and growth among children, an education program that emphasizes complete diets should be prepared.

본 연구는 초등학교 12~13세(5~6학년) 어린이를 대상으로 채식주의군(lacto-ovo vegetarian 포함)과 비채식주의군으로 나누어 식습관, 영양소 섭취 상태 및 건강상태에 미치는 영향과 그 차이를 알아보기 위해 실시하였다. 본 연구에서 채식주의군과 비채식주의군의 식습관은 통계적으로 유의한 차이는 보이지 않았다. 전체 아동들의 간식 횟수로는 하루에 한번이 가장 높은 비율(66.5%)을 차지하였으나, 하루에 간식을 두 번 섭취하는 비율은 비채식주의군이 34.0%로 채식주의군에 비해 횟수가 높은 것으로 조사되었다. 채식주의군이 섭취하는 간식으로는 과일류가 55.9%로 가장 높았으며, 비채식주의군은 탄산음료와 아이스크림의 섭취비율이 채식주의군에 비해 매우 높게 조사되었다(p<0.05). 식생활 평가에서 보면, 채식주의군은 과일(1개)이나 과일주스(1잔)를 매일 먹는 비율이 55.9%로 비채식주의군에 비해 높게 조사(p<0.05)된 반면에, 비채식주의군은 우유나 유제품(요구르트, 요플레 등)의 섭취, 육류.생선.달걀.콩.두부 등으로 된 단백질 음식을 끼니마다 섭취, 튀김이나 기름에 볶는 요리를 주 2회 이상 섭취 및 아이스크림 과자 케이크, 탄산음료 등을 섭취하는 비율이 높게 조사되었다. 완전 채식주의 아동도 외식이나 학교 근처에서 간식을 통해 우유 및 유제품, 튀김 식품 등을 섭취하는 것으로 조사되어 실제로 초등학교 아동이 완전 채식을 하는 것은 현실적으로 어려움이 있다고 사료된다. 영양소 섭취상태에서는 전체 조사 아동의 열량(채식주의군 남아 73.6%/여아 88.6%, 비채식주의군 남아 81.4%/여아 94.4%)은 기준치(20)에 비해 절대적으로 부족하게 조사되었다. 채식주의군 중 남아의 경우 열량, 비타민 $B_2$, 비타민 E, 엽산, 칼슘 및 식이섬유가 기준치(20)에 비해 낮았으며, 여아는 열량, 엽산, 칼슘 및 식이섬유가 기준치(20)에 비해 낮았다. 비채식주의군에서는 남아와 여아 모두 열량, 엽산, 식이섬유의 섭취가 부족한 반면에 지방, 비타민 $B_2$, 칼슘 및 콜레스테롤의 섭취를 과잉으로 하는 것으로 조사되었다(p<0.05). 식이섬유의 경우 두 군 모두 기준치(20)보다 낮게 조사되었지만, 채식주의군($22.5{\pm}11.0$ g)은 비채식주의군($19.5{\pm}10.2$ g)에 비해 식이섬유소의 섭취가 유의하게 높게 조사되었다(p<0.05). 식사평가의 만족도는 두 그룹(채식주의군 79.4%, 비채식주의군 84.0%) 모두 세끼 식사 중 저녁식사에서 식사의 질과 양에 만족하는 비율이 높았다. 영양제 복용율은 비채식주의군(45.7%)에서 높았고, 복용하는 영양보충제의 종류로는 채식주의군은 한약(34.5%), 비채식주의군은 종합영양제(53.5%)를 가장 많이 섭취하고 있는 것으로 조사되었다. 아동의 건강상태가 양호하다고 답한 응답자는 비채식주의군이 높았으며, 아토피피부염 발생 아동은 채식주의군이 18.6%로 조사되어 아토피피부염으로 인해 채식을 하고 있다고 답하였다(p<0.05). 본 연구 결과에 의하면, 조사 대상 아동은 종교적인 이유와 아토피성 피부염 등의 질병완화를 위해 채식을 선택한 경우가 많았으며, 그로 인해 열량, 엽산, 칼슘 및 식이섬유 등의 부족으로 영양의 불균형을 초래할 수 있는 것으로 사료됨에 따라 아동의 균형적인 신체 발달과 성장을 위해서는 여러 종류의 식품을 골고루 섭취하고 부족한 영양소를 보충할 수 있도록 올바른 식품선택이 필요하다. 또한 지루하기 쉬운 식단을 먹고 싶은 식단으로 만들기 위해 식품에 대한 다양한 조리법이 개발되어야 하며, 올바른 식품선택을 위한 영양교육의 필요성이 요구된다. 비채식주의 아동들의 경우 영양과잉이 되지 않고, 섬유소 섭취를 증가시키는 식사관리를 해야 할 것으로 사료된다.
