Quality standard of Pleurotus eryngii for production of customized-type and high quality mushroom

Abstract

This study was carried out to provide standardization for mushroom production of high quality at farmhouse. The standardization does much to improve merchantable quality, distribution efficiency and fair dealings by shipping of the standard agricultural products. Therefore, modification of these standards is required to fit farmhouse situations. The standardization for production of Pleurotus eryngii of high quality follows like this. A grades were above 90 g at average weight, more 50 mm at stipe thick, 1.6~1.7 at stipe length/stipe thick rate and 1.1~1.2 at pileus diameter/stipe thick ratio. B grades were more 45 g at average weight, above 40 mm at stipe thick, 1.8~1.9 at stipe length/stipe thick ratio and 1.2~1.4 at pileus diameter/stipe thick ratio.

유통 중인 큰느타리버섯과 재배농가에서 출하되고 있는 버섯의 등급별 품질규격을 조사하여 농산물표준규격의 내용을 개선하고 재배농가에서 고품질의 큰느타리버섯 생산을 위한 품질관기 기준을 제시하고자 하였다. 가락동시장에서 구입한 큰느타리버섯의 경우 A등급(특품)의 평균개체중은 91.2 g, 갓 직경은 60.1 mm, 대 길이는 88.3 mm였으며, B등급(상품)의 개체중은 68.5g, 갓 직경은 63.8 mm, 대 길이는 86.6 mm였다. A등급(특품)의 경우 대길이/대굵기 비율이 1.7, 갓직경/대굵기 비율이 1.1~1.2였으며, B등급(상품)의 경우 대길이/대굵기 비율이 1.9~2.1, 갓직경/대굵기 비율이 1.4~1.7였으나, C등급(보통)의 경우는 서로간에 상관관계가 없었다. 농가에서 구입한 큰느타리버섯의 경우 A등급(특품)으로 분류된 버섯의 평균개체중은 101.8 g, 대굵기는 53.8 mm, 대길이/대굵기 비율은 1.6~1.7, 갓직경/대굵기 비율은 1.01.2였으며, B등급(상품)의 경우 평균개체중은 77.8 g, 대굵기는 45.3 mm, 대길이/대굵기 비율이 1.8~1.9, 갓직경/대굵기 비율이 1.2~1.4였다. 따라서 고품질의 큰느타리버섯 생산을 위하여 농가에서 활용 가능한 품질관리 기준을 다음과 같다. A등급(특품)의 기준은 평균개체중은 90 g 이상, 대굵기는 50 mm 이상, 대길이/대굵기 비율은 1.6~1.7, 갓직경/대굵기 비율은 1.1~1.2이 되어야 하며, B등급(상품)은 평균개체중은 45 g 이상, 대굵기는 40 mm 이상, 대길이/대굵기 비율이 1.8~1.9, 갓직경/대굵기 비율이 1.2~1.4가 될 경우 가락동시장에서 특품과 상품으로 판매가 가능할 것으로 판단된다.
