Preparation and Properties of Colostrum-Containing Chewable Tablets

초유 함유 츄어블 태블릿의 제조 및 특성

Abstract

In this study, chewable tablets containing colostrum were manufactured, and the physicochemical properties of the tablets, such as antioxidant activity and hardness, were investigated according to the changes in the contents of colostrum powder and citrus concentrate. The hardness of the chewable tablet increased as the moisture content of the granules for tablet manufacturing increased and decreased as the particle size increased, but there was no change in the hardness of the tablet according to the changes in the contents of colostrum powder and citrus concentrate. The DPPH radical scavenging activity and ABTS radical scavenging activity of pure colostrum powder and citrus concentrate were insignificant, but when colostrum powder and citrus concentrate were added separately, both DPPH radical scavenging activity and ABTS radical scavenging activity increased due to the interaction with the components constituting the chewable tablet. In particular, chewable tablets containing both colostrum powder and citrus concentrate showed greater DPPH radical scavenging activity and ABTS radical scavenging activity as well as an enhanced effect of NO production. As the content of citrus concentrate increased, regardless of the content of colostrum powder, the ABTS radical scavenging activity increased. However, when the content of citrus concentrate was constant, there was an optimal content of colostrum powder at which the ABTS radical scavenging activity was maximized.

본 연구에서는 초유 함유 츄어블 태블릿을 제조하고, 초유 분말과 감귤 농축액의 함량 변화에 따른 항산화능, 경도 변화 등의 태블릿의 물리화학적 특성을 조사하였다. 츄어블 태블릿의 경도는 태블릿 제조용 과립의 수분함량 증가에 따라 증가하였고 입도 크기가 증가함에 따라 감소하였으나, 초유 분말과 감귤 농축액의 함량 변화에 따른 태블릿의 경도변화는 없었다. 순수한 초유 분말과 감귤 농축액의 DPPH radical 소거능과 ABTS radical 소거능은 없었으나, 초유 분말과 감귤 농축액이 각각 첨가될 때, 츄어블 태블릿을 구성하는 성분들과의 상호작용으로 DPPH radical 소거능과 ABTS radical 소거능이 모두 증가하였으며, 특히 초유 분말과 감귤 농축액이 함께 함유된 츄어블 태블릿에서는 보다 더 큰 DPPH radical 소거능 및 ABTS radical 소거능뿐만 아니라 NO 생성의 증진 효과가 있었다. 초유 분말 함량과 관계없이 감귤 농축액의 함량이 증가할수록 ABTS radical 소거능은 높게 나타났으나, 감귤 농축액 함량이 일정할 때는 ABTS radical의 소거능이 최대가 되는 최적의 초유 분말의 함량이 존재하였다.
