Correlation of Lipid Soluble Compounds of Colored Rices and its Mutagenicity, Antimutagenicity and Antioxidativity (유색미 지용성 성분들의 변이원성.항변이원성.항산화 효과에 대한 상관관계)

  • The fractions extracted with methylene chloride from colored rice seeds of 19 cultivars were prepared to examine the correlationties of both antimutagenicity and antioxidiativity with physiological functionalities. The data revealed a positive correlation of the antimutagenicity with the content of $(3.{\beta},22Z)-Acetate-stigmasta-5,22-dien-3-ol$, 24-Oxocholesterol acetate, 6(E),8(E)-Heptadiene, and Eicosane. For antioxidativity, electron donating ability to DPPH radicals exhibited a positive correlation with the content of (24R,25S)-Aplysterylacetate, however, negative correlations were found between scavenging activity toward hydroxyl radicals and the content of either Tetradecanoic acid or Methyl ester-hexadecanoic acid, $(3.{\beta},24S)-Stigmast-5-en-3-ol$, respectively. In addition, a positive correlation was detected between the inhibitory effect of the fractions and the content of $(3.{\beta},24S)-Stigmast-5-en-3-ol$, however, a negative correlation with the content of 3',3'-Dimethylspiro [acridane-9,1'-indane], $(3.{\beta})-24-Methylene-9,19-cyclolanostan-3-ol$, and some other compounds was observed, respectively.

  • Four 5,8-epidioxy sterols were isolated from the marine sponge Plakortis simplex. Their structures were completely determined by an extensive NMR analysis and comparison with NMR data of similar compounds for absolute stereochemistry of the side chain. The compounds were assigned as 5,8-epidioxy- (24S)-ethylcholesta-6,22(E),25-trien-3-ol(1), 5,8-epidioxy-(24S)-methylcholesta- 6,22(E)-dien-3-ol(2), 5,8-epidioxycholesta-6,22(E)-dien-3-ol(3) and 5,8- epidioxycholesta-6-en-3-ol (4).

  • Effects of electron beam (EB) irradiation on the mechanical strength of Cu (conducting sheath) and Nb (diffusion barrier) of Cu/Nb/MgB2 superconducting was investigated. Wire- and tape-type Cu/Nb/MgB2 samples were irradiated at E-beam energy of 2.5 MeV and 5 mA and a maximum E-beam dose was 5×1017 e/m2. The hardness value of Cu and Nb region was measured by the Vickers micro-hardness method. In the case of the wire sample, the hardness of Cu and Nb increased proportionally as the dose was increased up to 5×1017 e/m2, whereas in the case of the tape sample, the hardness increased up to a dose of 0.5×1017 e/m2, and decreased slightly 5×1017 e/m2. The hardness increase of Cu and Nb is believed to be due to the decrease of the deformability of Cu and Nb due to the defects formed inside the materials by E-beam irradiation.

Enterobius vermicularis Infection in Kindergarten Children in Taegu and Kyongbuk Area (대구 및 경북지역 일부 유치원생들의 최근 요충감염상)

  • Recent patterns of Enterobius vermicularis infection in some kindergarten children was per-formed in Taegu and Kyongbuk Area from June 1, 1993 through August 30, 1995. A total of 1,087 children (male 611 and female 476) were examined by Graham's scotch tape method. Of 643 urban children,62(9.6%) were infected by E. vermicularis, and of 444 rural children,45(10.1%)were infected. Of 354 male children in urban area 40(11.3%) were E. vermicularis positive and of 257 male children in rural area,28(10.9%) were E. vermicularis positive. Of 128 children in the age of 7 years old in urban area,7(5.1%) were E. vermicularis positive but of 87 children in the same age group in rural area,21(24.1%) were E. vermicularis positive (P〈0.01). Of 354 male children in urban area,40(11.3%) were E. vermicularis positive and of 289 female children in the same area 22(7.6%) were infected by E. vermicularis. The E. vermicularis infection rates in the children in the age group of 4,5, and 6 were 6.3%, 8.4% and 19.3% respectively, and the rate for 7 year old children was 5.5% (P 〈0.01). In rural area, 28(10.9%) of 257 male children had E. vermicularis and 17(9.1%) of 187 female children had E. vermicularis. The E. ver-micularis infection rates in the age groups of 4, 5, 6 and 7 were 2.3%, 7.0% 9.8% and 24.1% respectively and the difference in rates were statistically significant (P 〈0.01).

  • Chlorella vulgaris (C. vulgaris) is a spherical unicellular green algae and the diameter ranges from 2 to $10{\mu}m$. C. vulgaris possess nutritional excellence because it contains various functional materials including high protein contents, chlorophyll, carotenoid, and chlorella growth factor (CGF). In order to study effects of mutagen, ethyl methane sulphonate (EMS) was used as a chemical mutagen and some mutants could be obtained. We named 2 type mutants as E14 and E24 obtained after treating with EMS. In the cell growth, growth patterns of mutants were similar to those of the wild type. Chlorophyll contents of E14 and E24 increased up to 99 and 52%, respectively compared to those of the wild type. The carotenoid content of E14 increased to 7%, but the value of E24 decreased 5% compared to that of the wild type. For the lipid contents E24 increased to 23%, while E14 decreased 12% when compared to those of the wild type. As a result, there is no difference between the mutants and wild type in the cell growth, but considering that mutants contains more physiological materials than those of the wild type, we can expect the mutants of C. vulgaris could be used as important high added-value materials.

Effects of Atmospheric Annealing on the Densification and Electrical properties of Ca-doped $CrO_3$ (분위기 열처리가 Ca-doped Y $CrO_3$의 전기적 특성에 미치는 영향)

  • The effect of atmospheric annearling on the densification and electrical poperty of the Ca-doped $YCrO_3$were investigated. In order to study the densification and elecrical properties of $Y_{0.7}Ca_{0.3}CrO3$ the sample sintered at $1700^{\circ}C$ for 12hrs were subsequently annealed at $1400^{\circ}C$ under various atmospheres($O_2$, Air, $N_2$)as a function of time. The density of $Y_{0.7}Ca_{0.3}CrO3$ was $4.5/cm^3$ before annealing. Under the $N_2$ annealingm the bulk density of $Y_{0.7}Ca_{0.3}CrO3$ was increased to $4.9g/cm^3$ at 24hrs and then remained unchanged at 48hrs. When $Y_{0.7}Ca_{0.3}CrO3$nwas annealing at $1400^{\circ}C$ for 12hrs and 24hrs under $O_2$ activation energies were about 0.16eV at 12hrs and 24hrs, and showed 0.167eV below 400K, and 0.24eV over 400K at 48hrs.

Ab Initio Study of the Complexation Behavior of Calix[5]arene Derivative toward Alkyl Ammonium Cations

  • The structures and complexation energies of penta-O-alkylated 1b and penta-O-tert-butyl ester 1e of p-tert-butylcalix[5]arene and their simplified structures (2b and 2e) toward a series of alkyl ammonium guests have been calculated by a semi-empirical AM1 method. For AM1 calculations, complexation efficiencies of the simplified host 2e are very similar to the values of host 1e. The complexes of simplified host 2e with alkyl ammonium ions also have been optimized by ab initio HF/6-31G method. The calculated complexation efficiencies for 2e by ab initio method have been found to be bigger in magnitude than the values obtained by AM1 calculations for linear alkyl ammonium guests. Calculation results show that all of the calix[5]aryl derivatives investigated in this study have much better complexation ability toward ammonium cation without alkyl group compared with other alkyl ammonium guests. Ab initio calculations also well duplicate the molecular discriminating behaviors of calix[5]arene derivative 2e between butyl ammonium ions: $n-BuNH_3^+\;>\;iso-BuNH_3^+\;>\;sec-BuNH_3^+\;>\;tert-BuNH_3^+$.

Influence of Age at Weaning on Caecal Content Characteristics and Post-weaning Performance and Health of Rabbits

  • This study chiefly aimed to ascertain the effect of age at weaning on caecal content characteristics, post-weaning performance and health of rabbits. A secondary aim was to study the effect of dietary restriction on performance and health of rabbits. After delivery, 30 litters of 8 pups each, were housed in separate cages. Fifteen litters were weaned 24 days from birth (group W 24) while the other 15 were weaned at 28 days (group W28). After weaning, 53 rabbits of group W24 and 56 of group W28 were fed ad libitum (group LIB), while 53 rabbits of group W24 and 57 of group W28 were restricted (group RES). All the rabbits were kept in individual cages. Fourteen other rabbits of groups W24 (7 fed ad libitum and 7 restricted) and 7 of group W28 were sacrificed to obtain data regarding caecum weight and caecal content. Age at weaning affected neither the state of health nor the final live weight. In comparison with those of group W28, the rabbits weaned at 24 days had a lower daily gain until 35 days of age but gain was higher subsequently. From the 28th day, however, the feed intake and the feed conversion ratio of the group W24 rabbits were always better than those of W28. The restricted diet until 42 days resulted in a lower weight both at 42 days (1,078 vs. 1,164 g) and at 70 days (2,192 vs. 2,294 g). Indeed, from the 42nd day, despite receiving feed ad libitum the rabbits of the restricted group continued to ingest less feed (120.8 vs. 127.2 g) than those of the ad libitum group, and had a slightly lower daily gain (39.8 vs. 40.3 g). The measurements carried out on the caecum highlighted significant differences among the groups in caecal content (33.1 vs. 31.7 vs. 25.3 g respectively for groups W24LIB, W28 and W24RES), for total volatile fatty acids (53.2 vs. 50.6 vs. 44.5 mmol/l respectively for groups W24LIB, W28and W24RES) for ammonia (7.0 vs. 7.2vs 8.8 mmol/l respectively for groups W24LIB, W28 and W24RES), for propionate (5.7 vs. 6.3 vs. 8.1% respectively for groups W24LIB, W28 and W24RES) and for propionate/butyrate (0.33 vs. 0.36 vs. 0.49 respectively for groups W24LIB, W28 and W24RES).

Rapid Fermentation Starter Enterococcus faecium of Soybean for Soy-Sauce Like Product (간장태 신속 대두발효 종균으로의 Enterococcus faecium)

  • To produce rapidly the traditional Kanjang soy sauce-like product with rich flavors, lactic acid bacteria of Enterococcus spp. isolated from Chungkukjang was used as one of starter cultures. Among 119 Enterococcus spp., eight strains were selected by protease-secreting activities and identified as four E. faecium, three E. faecalis, and one E. gallinarium. The strains showed low resistances toward eight antibiotics and had no resistant genes to the vancomycin. Especially, E. faecium O24 was cultivated well on 5% NaCl medium that was selected for further study as the starter. E. faecium O24 grew well on the steamed soybean and the counts increased by ten times overnight, which produced mostly 80 mg% glutamic acid and aspartic acid as the seasoning amino acids on the product. Various organic acids including principal lactic acid were also produced. Flavors of maltol and guaiacol, typical soy-sauce flavor, were produced in the mixed cultures of Zygosaccharomyces rouxii and Candida versatilis. Therefore, E. faecium O24 could be a starter of soybean fermentation for soy sauce-like product with rich flavors rapidly.

Comparison of Pork Quality by Different Postmortem pH24 Values (돈육의 사후 24시간 pH 수준에 따른 육질 특성)

  • Meat quality of the domestic pork loins(n=537) classified by 3 groups(5.31-5.50, 5.51-5.70 and $\geq$5.71) according to pH at 24hr post-mortem(pH24) was investigated. In proximate chemical compositions, protein was highest and fat was lowest in the pork loins of pH24 5.31-5.50 group. Water holding capacity increased as pH24 increased, whereas purge loss and cooking loss decreased as pH24 increased. Meat color values(CIE L*, a*, b*, Chroma, Hue and $\Delta$E) decreased as $pH_{24}$ increased. In texture traits, hardness and chewiness were lowest and fat hardness was highest in the pork loins of $pH_{24}{\geq}$5.71 group when compared to the other $pH_{24}$ groups. However, Warner-Bratzler Shear force, springiness and cohesiveness were not significantly different among the pH24 groups(P>0.05). In sensory properties, juiciness and tenderness were highest in $pH_{24}{\geq}$5.71 group. From the results of this study, pork quality was highly related to $pH_{24}$. Therefore, the factors affecting the post-mortem pH, such as stress before slaughter, slaughtering methods, and cooling condition slaughter must be properly controlled and improved to produce high quality pork.
