참당귀 추출물을 첨가한 쿠키의 품질 특성 (Quality Characteristics of Cookies Containing Powder of Extracts from Angelica gigas Nakai)

  • The principal objective of this study was to develop processed food with the effect of extract from Angelica gigas Nakai by assessing the quality characteristics of cookies. Cookie samples were prepared with shredded extract from Angelica gigas Nakai at varied levels of 0, 1, 3, and 5%. The pH of dough decreased significantly with the added extract from Angelica gigas Nakai and the density increased significantly in the 5% added group(p<0.05). The spread factor decreased significantly as the added extract from Angelica gigas Nakai increased(p<0.05). The Hunter color's L value in cookies significantly decreased and the a, b values in cookies increased(p<0.05). The hardness of cookies significantly increased added extract from Angelica gigas Nakai increased(p<0.05). The acid value and peroxide value were lower in added Angelica gigas Nakai extract groups than in the control group as the storage period of cookies passed. The results of sensory characteristics demonstrated that 1% added Angelica gigas Nakai extract showed the highest degree of preference among all the items of added Angelica gigas Nakai extract(color, odor, taste, hardness, crispness and overall quality) and the added Angelica gigas Nakai extract indicated possibilities for developments of Angelica gigas Nakai extract cookies.

당귀 추출물의 궤양성 대장염 억제 효과에 대한 연구 (Inhibitory Effects of Angelica gigas Nakai on Ulcerative Colitis in DSS-induced ICR Mice)

  • The purpose of this study was to examine the effects of Angelica gigas Nakai on ulcerative colitis. Mice were divided into 5 groups: Control group, DSS group, 5-ASA group, 50mg/kg Angelica gigas Nakai group, 100mg/kg Angelica gigas Nakai group. Four groups, excluding the control group, were fed a 5% solution of dextran sulfate sodium(DSS) in water for 7days to induce ulcerative colitis. Each water extract was administrated orally for 7 days in 5-ASA group, 50mg/kg Angelica gigas Nakai group and 100mg/kg Angelica gigas Nakai group. 5 groups were evaluated by weight, length of intestine, weight of spleen, disease activity index(DAI), amount of cytokine IL-6 production, thickness of bowel wall and degree of inflammatory cell infiltration and intestinal tissue damage. Comparing to DSS group, 100 mg/kg Angelica gigas Nakai group showed significant suppressive effect of weight loss until 4th day of experiment while 50 mg/kg Angelica gigas Nakai group showed no significant effect of suppression. Decrease of intestinal length, enlargement of spleen, intestinal tissue damage and thickening of bowel wall were significantly suppressed in both 50 mg/kg and 100mg/kg Angelica gigas Nakai group. Also disease activity and cytokine IL-6 production were inhibited significantly. Based on this result, Angelica gigas Nakai seemed to have anti-inflammatory effect and also seemed to suppress histological changes and aggravation of ulcerative colitis.

당귀분말 첨가 파운드케이크의 품질특성 (Quality Characteristics of Pound Cake added with Angelica gigas Nakai Powder)

  • Physicochemical and sensory characteristics of pound cake prepared with various levels of Angelica gigas Nakai powder were investigated. The pH of batter prepared with Angelica gigas Nakai powder ranged between 7.17 and 7.30 and that of the control was 7.34. The moisture content and pH of pound cakes was found to decrease with increasing Angelica gigas Nakai powder content. The specific volume of the control cake was 1.793 ml/g, that of pound cakes prepared with Angelica gigas Nakai powder was 1.806~2.026 ml/g. The baking loss rate of the control was 11.33% and that of pound cakes prepared by adding Angelica gigas Nakai powder was 10.29~6.66%. DPPH radical scavenging activity of the control group was 23.58%, whereas pound cakes prepared by adding Angelica gigas Nakai powder ranged from 38.77~77.60%. The a value of redness was increased, but L and b value were decreased significantly by the addition of Angelica gigas Nakai powder. The hardness and brittleness of the pound cakes were increased significantly by the addition of Angelica gigas Nakai powder. Sensory evaluation scores in terms of flavor, taste and overall preference for pound cakes were higher for the 2% substituted sample group than for any of the others. The results of this study suggest that the addition of 2% Angelica gigas Nakai powder was the best substitution ratio for pound cake.

당귀 분말을 첨가한 식빵의 품질특성 (Quality Characteristics of White Pan Bread by Angelica gigas nakai Powder)

  • 한약재인 당귀 분말을 첨가한 기능성 빵을 제조하기 위하여 당귀 분말을 $0{\sim}10%$ 첨가하여 제조한 식빵의 일반성분과 제빵품질 특성과 관능검사를 조사하였다. 일반성분의 수분, 조단백질, 조지방 및 조회분 함량은 모두 대조구가 낮게 나타났고, 당귀 분말 첨가량이 증가할수록 모두 증가하였다. pH는 대조구와 당귀 분말 첨가 시료 간에 유의적인 차이를 나타내지 않았다. 식빵 무게는 대조구가 가장 낮았고, 당귀 분말 첨가량이 증가할수록 증가 하였으며, 부피는 감소하였다. 빵 색도 측정 결과 crust와 crumb의 색도는 대조구보다 당귀 분말의 첨가량이 증가할수록 L값은 낮아졌으며, a값과 b값은 증가하였다. 조직감에서는 당귀 분말 첨가량이 증가할수록 경도(hardness), 점착성(gumminess), 씹힘성(chewiness)은 증가하였고, 부착성(adhesiveness), 탄력성(springiness)과 응집성(cohesiveness)은 감소하였다. Crumb softness 측정에서는 1일과 7일 경과 시 당귀 분말 2% 첨가구가 가장 높게 나타났고, 탄력성은 당귀 분말 5% 첨가구가 가장 낮게 나타났다. 빵의 저장중 수분활성도는 3일 경과 후 당귀 분말 2%와 3% 첨가구가 가장 높았으며, 7일후에는 모두 조금씩 감소하는 경향을 보였다. 관능 평가에서는 맛, 향미, 전체적인 선호도의 경우 당귀 분말 0.5%와 1% 첨가구가 가장 높게 나타났으며 당귀 분말 첨가량이 증가할수록 색, 외관, 입안에서 느낌, 질감에 대한 기호도는 점점 감소하였다. 이와 같은 결과로 생각할 때 당귀 분말을 $0.5%{\sim}1%$ 정도 첨가는 기능성 빵으로써의 개발 가능성이 있다고 판단되어진다.

  • A report is given of microscopic study of the root Angelica gigas Nakai comparing with Ligusticum acutilobum S. et Z.(=Angelica acutiloba Kitagawa). The following characteristics are outstanding. 1. Angelica gigas Nakai is more tender and softer than Ligusticum acutilobum S. et Z. 2. Both Angelica gigas Nakai and Ligusticum acutilobum S. et Z. are alike in the form and arrangement of fundamental parenchyma in cortex and xylem. 3. No mechanical tissues are present but the substitute fibers in the Angelica gigas Nakai and Ligusticum acutilobum S. et Z. 4. The intercellular space are more numerous and larger in Angelica gigas Nakai than in Ligusticum acutilobum S. et Z. 5. Secretory tissue in Angelica gigas Nakai consists of numerous canals while in Ligusticum acutilobum S. et Z. very few.

강원도산 참당귀와 일본산 일당귀의 생리 활성 성분 탐색

  • The ethanol extracts from Angelica gigas Nakai and Angelica acutiloba Kitagawa were fractionated to diethyl ether and aqueous partitions. Both partitions had strong antimutagenic effect on the MNNG (N-methyl-N-nitro-N-nitrosoguanidine) by Ames mutagenicity test. Diethyl ether fractions exhibited the greatest antimutagenic effect suppressing the mutagenicity of MNNG with inhibition of 78-80%. The ethanol extracts from both species showed the inhibitory effect on the growth of several human cancer cell lines. Especially, the diethyl ether fraction from ethanol extracts was most effective on human hepatocellular carcinoma cells, inhibiting 90-95% of cell growth. However, the aqueous fractions had least inhibition activity on many cancer cells. There was little cytotoxicity on human normal liver cell by ethanol extracts. Diethyl ether fraction from Angelica gigas Nakai ethanol extract had cytotoxicity less than 20% on human normal liver cells, compared with that from Angelica acutiloba Kitagawa ethanol exract. The adding of 0.5 (g/l) of diethyl ether fractions of Angelica gigas Nakai or Angelica acutiloba Kitagawa increased immune activity by enhacing human B and T cells up to three to four times. It was proven that diethyl ether fraction (0.7 g/1) from Angelica gigas Nakai could control blood pressure by suppressing angiotensin converting enzyme activity up to 98%. From TLC, it was appeared that both of diethyl ether partitions had umbelliferon, known to one of active substances from Angelica gigas Nakai and Angelica acutiloba Kitagawa.

당귀분말을 첨가한 쿠키의 품질특성 (Quality Characteristics of Cookies Prepared with Angelica gigas Nakai Powder)

  • 연구는 당귀분말을 첨가한 쿠키의 품질특성과 관능특성을 평가한 것으로써, 당귀분말 첨가 쿠키 반죽의 pH는 6.13~6.26의 범위였으며, 반죽의 밀도는 0.99~1.15의 범위였다. 당귀분말 첨가의 증가에 따라 쿠키의 퍼짐성은 작아졌으며, 명도와 황색도의 감소, 적색도의 증가로 인해 전반적으로 쿠키가 어두워지고 진해지는 경향을 나타내었다. 기계적 조직감의 특성은 강도와 경도가 당귀분말의 첨가비율에 따라 높아지는 경향을 나타내어 쿠키 제조에 있어 당귀분말의 첨가는 쿠키를 단단하게 하는 역할을 하였다. 관능 선호도에서는 색, 냄새, 조직감, 맛, 전반적인 선호도의 항목에서 당귀분말 무첨가 쿠키보다 일정 범위의 당귀분말을 첨가한 쿠키의 선호도가 높아졌으며, 그 중에서도 쿠키의 전체 재료 배합량 대비 1.5%의 당귀분말을 첨가하는 것이 가장 이상적인 것으로 평가되었다.

당귀의 첨가 식이가 흰쥐의 지방대사와 알콜대사 및 간기능에 미치는 영향 (Effects of Angelica gigas Nakai diet on lipid metabolism, alcohol metabolism and liver function of rats administered with chronic ethanol)

  • 당귀(Angelica gigas Nakai)의 첨가 식이가 만성적인 알콜 투여시 흰쥐의 지방대사, 알콜대사 및 간기능에 미치는 영향을 조사하기 위해 Sprague-Dawley 수컷 쥐를 대조군(증류수 투여), 에탄올 투여군, 당귀 첨가 식이군, 에탄올 투여 와 당귀 첨가 식이군의 4그룹으로 나누어 30일간 에탄올 및 증류수는 경구 투여하였고, 당귀는 AIN-76 식이에 첨가하여 섭취하도록 하였다. 그룹간 혈중 알콜대사 변화를 조사하기 위해 21째 날에 13% 알콜을 모든 군의 쥐에 경구 투여한 후 혈중 알콜농도 변화를 5시간 동안 조사하였으며, 그 결과는 다음과 같다: 1) 당귀 첨가 식이군의 혈중 알콜농도가 정상식이군에 비하여 알콜투여 후 2시간부터 유의적으로 감소하였다; 2) 만성적인 알콜섭취와 동시 당귀 첨가 식이군의 알콜 투여 직후의 혈중 알콜 산화 속도는 정상식이군 혹은 당귀 첨가 식이군에 비하여 전반적으로 빠르게 진행되었다. 또한 30일 후에는 각 그룹의 쥐를 희생시켜 혈중 및 간장 중의 지방성분 및 혈중의 간장 관련 효소의 활성을 측정하였으며, 그 결과는 다음과 같다: 1) 당귀 첨가 식이는 혈중 LDL-콜레스테롤 함량을 비첨가 식이군에 비하여 유의적으로 낮추었다; 2) 당귀 첨가 식이는 알콜투여로 증가된 간장 중의 중성지방 및 총지방 함량과 혈중 ${\gamma}-GTP$의 수준을 유의적으로 낮추었다. 이상의 결과로부터 당귀 첨가식이가 만성적인 알콜 섭취로 야기될 수 있는 질병에 대한 개선 효과가 있음을 제안할 수 있겠다.

곰취 분말 및 당귀 열수추출물의 생리활성을 활용한 기능성 냉면의 제조 (The Development of Functional Cold Buckwheat Noodles Using Biological Activities of Hot Water Extracts of Ligularia fischeri and Angelica gigas Nakai)

  • Some biological activities such as an electron donating capacity, the contents of total polyphenol compounds and flavonoids, fibrinolytic activity and $\alpha$-glucosidase inhibitory activity have been detected in hot water extracts of Ligularia fischeri and Angelica gigas Nakai. To increase the usefulness of the functional ingredients for prevention and improvement of some metabolic disorders, ethanol-treated hot water extracts of Angelica gigas Nakai were prepared. A hot water extract of Ligularia fischeri has 92% of electron donating capacity, 39.4 mg/g of total polyphenol compounds, 24.8 mg/g of flavonoids and 29.8% of $\alpha$-glucosidase inhibitory activity, but no fibrinolytic activity. A hot water extract of Angelica gigas Nakai has 94.7% of electron donating capacity, 5.8 mg/g of total polyphenol compounds, 2.6 mg/g of flavonoids, 0.48 plasmin units of fibrinolytic activity and no $\alpha$-glucosidase inhibitory activity. However, with partial purification using cold ethanol treatment, the $\alpha$-glucosidase inhibitory activity of Angelica gigas Nakai was increased to 70.5%. Thus, we expected a more useful effect with the use of the addition of a cold ethanol-treated Angelica gigas Nakai extract. The L, b values of cold buckwheat noodles using a mixture of 0$\sim$3% of Ligularia fischeri powder and 0.5% of an ethanol-treated hot water extract of Angelica gigas Nakai were decreased with the addition of an increasing amount of Ligularia fischeri powder. Among the mechanical qualities, only adhesiveness was significantly higher in 3% Ligularia fischeri noodles. From sensory evaluation data, it was determined that these two functional ingredients did not ruin the color, texture, and overall acceptance of the cold buckwheat noodles. A higher amount of the extracts improved the quality of the product with little added cost.

Microbial Decontamination of Angelica gigas Nakai Using Electron Beam Irradiation

  • This study evaluated the use of electron beam irradiation for decontamination of the Korean medicinal herb, Angelica gigas Nakai. Herb samples were irradiated at doses of 2, 8, and 16 kGy, respectively. Populations of microorganisms in Angelica gigas Nakai decreased by 2$\sim$3 log cycles at 8 kGy irradiation. Electron beam irradiation caused negligible changes in Hunter color L, a, and b values. Sensory evaluations of Angelica gigas Nakai confirmed that irradiation caused no significant changes in the organoleptic properties of the samples. These results suggest that electron beam-irradiated herbs retain a better microbial safety and sensory qualities, compared with the non-irradiated.
