Relative Effectiveness of BHA and Ascorbic Acid in Retarding the Rancidity Development of Potato Chips Stored in Various Conditions (여러 조건하(條件下)에서 저장(貯藏)된 감자튀김의 산패(酸敗)에 있어서 BHA와 Ascorbic Acid의 상대적(相對的) 억제효과(抑制效果)에 대(對)하여)

  • In the present study, the relative effectiveness of BHA, ascorbic acid, and BHA+ascorbic acid on the rancidity development of potato chips in various conditions were examined. BHA, ascorbic acid, and their mixture (BHA 0.05%, As. A 0.1%, and BHA 0.05%+As. A 0.1% relative to the weight of the potato chips) were dissolved respectively in 95% ethyl alcohol and incorporated to potato chips in the form of atomized mist. When the potato chips were stored in a dark place at $33.0{\pm}0.5^{\circ}C$, BHA was very effective in retarding the rancidity development of the potato chips. Ascorbic acid showed some antioxidant activity, but it was less effective than BHA. When BHA and ascorbic acid were used together, the antioxidant activity of the mixture appeared to be primarily due to BHA. Irradiation of direct sunlight to the potato chips, which were covered with coloress transparent polypropylene films, reduced the antioxidant activity of BHA incorporated to them. Ascorbic acid appeared to lose its antioxidant activity completely under the same condition. BHA retained a considerable degree of antioxidant activity when yellow transparent polypropylene films were used to cover the potato chips. Ascorbic acid, however, kept little antioxidant activity even in this condition.

  • In the processing of the bailed-dried anchovy treated with BHA, caught in Chinhae Bay in Korea, the most suitable concentration of BHA was 5/10,000 (the concentration of BHA to the curing solution; g/cc). Although the concentration of BHA is high than mat of BHA 5/10,000, the effect of protection from deterioration due to the oxidation of oil did not increase. Boiled-dried anchovy treated with the concentration of BHA 5/10,000 could preserve for nine months unless the quality does not loss value of food.

  • Butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT) were tested for their effectiveness in inhibiting the growth of microorganisms. Among the test microorganisms, the growth of three yeasts (Saccharomyces cerevisiae, Kloeckera apiculata, Cryptococcus hungaricus), three bacteria (Bacillus subtilu, Lactobacillus cases, Escherichia colt) and two molds (Aspergillus oryzae. Penicillium sp.) was progressively decreased as concentrations of BHA were increased. A. oyzae was completely inhibited with 100ppm of BHA and a majority of the test microorganisms (S. cerevisiae, K. apiculata. C. hungaricus, B. subtilis, A. oryzae) were completely inhibited by 150 ppm of BHA. The growths of L. casei, E. coli and Penicillium sp. were not affected as much as those of other microorganisms by BHA. Final cell yiedls were becoming lower as the concentration of BHA increased. The growth of C. hungaricus and L. casci was slightly inhibited by BHT. Other microorganisms were not effected by the test concentrations of BHT.

  • The present study was undertaken to examine the effect of butylhydroxyanisole (BHA) on the lead poisoning in Wister female rats. All experimental rats except normal group were fed with diets formulated by adding BHA in a range of 0.1% to 3.2% and aqueous solution of 1% lead acetate ad libitum through the experimental period. The results obtained are summarized as follows: 1) Lead sedimentation in kidney tissue was decreased with increasing experimental period and BHA level of lead plus BHA-treated groups in comparison with that of lead-treated control group. 2) The weights of lung, spleen and left/right (L/R) kidney were significantly decreased in comparison with those of lead-treated control group after 2 weeks of experimental period, but no difference was shown with those of normal group. 3) The weights of lung, spleen and L/R kidney were increased in lead-treated control group as compared with normal group after 2 weeks of experimental period, but no difference was shown with increasing experimental period. 4) Water intake was remarkably decreased in lead-treated control group as compared with normal group, but water intake by increasing BHA level of lead plus BHA-treated groups showed no significant difference from that of normal group. 5) These results suggest that BHA is effective for reducing the toxic effect of lead in rats.

Stability of Polyunsaturated Fatty Acids in Storage of Sardine Oil Extracted with BHA added Solvent (BHA 첨가추출 정어리유 저장중의 고도불포화지방산의 안정성)

  • The storage stability of sardine oil and the effect of BHA on the oxidation of fatty acids especially, highly unsatureted fatty acids like EPA and DHA were investigated. The sardine oil was extracted from round sardine, with chloroform-methanol(2:1 v/v) solvent with/without addition of BHA, and then stored at $30^{\circ}C$. The deterioration of oil was examined periodically by measuring acid value(AV), peroxide value(POV), carbonyl value(COV), and oxygen absorption. The changes in fatty acid composition during the storage was determined by GLC analysis to elucidate the oxidative stability of individual fatty acid. Formation of free fatty acid increased rapidly according to the storage time elapsed in the BHA free oil while it was obviously inhibited in the BHA added oil. Peroxides and carbonyl compounds were formed very rapidly at the beginning of storage of BHA free oil. But in the oil extracted with BHA, formation of peroxides was somewhat inhibited and formation of carbonyl compounds was very strongly inhibited. Principal fatty acids of sardine oil were $C_{16:0},\;C_{16:1},\;C_{18:1},\;C_{20:5}\;and\;C_{22:6}$ acids, and $\omega_33$ polyunsaturated fatty acid $(\omega_3\;PUFA)$ content was very high as much as $23\%$ of the total fatty acid content. The oxidative degradation of fatty acids was enhanced at PUFA especially $C_{20:5}$ ana $C_{22:6}$ acid in BHA free oil. However, the oxidation was fairly retarded in the oil extracted with BHA and the both $C_{20:5}$ and $C_{22:6}$ acids remained at the end of a month storage.

Protective Effects of 2(3)-tert-Butyl-4-hydroxyanisole on cis-Dichlorodiammineplatinum Nephrotoxicity in Rats (2(3)-tert-Butyl-4-hydroxyanisole의 cis-Dichlorodiammineplatinum 신장독성에 대한 억제효과)

  • cis-Dichlorodiammineplatinum(cisplatin) is one of the most effective antitumor agents currently available for cancer therapy. However, its clinical use has been limited by its severe side effects, especially nephrotoxicity. So, to evaluate the effects of 2(3)-tert-butyl-4-hydroxyanisole(BHA) on cisplatin nephrotoxicity in rats, both compounds were given intraperitoneally. Remarkable protective effects of BHA against nephrotoxicity of cisplatin were observed when BHA was administered to rats 1hr after cisplatin injection. On the other hand pretreatment with BHA 1hr prior to cisplatin did not reduce weight loss, blood urea nitrogen and creatinine levels. Hepatotoxicity induced by combination treatment of cisplatin and BHA was evaluated by measuring serum glutamic pyruvate transaminase and serum glutamic oxalate transaminase. Combination treatment did not affect the levels of SGPT and sGOT except 1hr pretreatment. The present results indicate that BHA may provide protection against cisplatin nephrotoxicity, when it is given 1hr after cisplatin.

Effects of Light and Water Soluble Proteins on the Lipid Oxidation of Meat Emulsion Model System during Refrigerated Storage (광 조사 및 차단 조건에서의 고기모형 유화물의 지방산화에 미치는 수용성 단백질의 효과)

  • Meat model emulsions ware prepared with salt-soluble protein and soybean oil. Effects of water-soluble protein (WSP) on the meat model emulsion treated with/without BHT during 8 day storage $5^{\circ}C$ under both dark and light illumination were studied by measuring POV and TBA. An emulsion without BHA and WSP was used as a control. Under light storage, there was no significant difference in peroxide values between the control and the sample treated with BHA except the 2nd day of storage. However, TBA values of the sample treated with BHA were significantly (p<0.05) lower than those of control except the 4th day of storage. TBA and POV of the samples treated with WSP and WSP + BHA were higher than control after 4th day of storage under light. That is, water soluble protein, which was composed mainly of myoglobin, increased lipid oxidation under light storage. The similar trends were also shown in the samples stored under dark. These results suggested that acceleration of lipid oxidation of the meat model emulsions by water soluble protein (WSP) under both light and dark might not be due to the singlet oxygen formation, but due to superoxide anion formed.

  • The effect of EDTA or BHA pretreatment upon the color preservation of canned surf clam meat during canning and storage was studied. The steamed surf clam meat was soaked in BHA solution, $0.1\%$ BHA in $5\%$ salt solution, or EDTA solution, $0.5\%\;Na_2$ EDTA in $5\%$ salt solution, for 30 minutes. The pretreated surf clam meat was packed in a round enameled can that is 223.2 ml by volume and sterilized for 75 minutes at $110^{\circ}C$. The canned products were stored for one year at room temperature. The EDTA treatment of surf clam meat appeared effective on color preservation during processing. After three month storage, the samples showed little color change comparing with those right after processing. After one year storage, EDTA or BHA treated samples showed better color preservation as compared with control.

  • The natural antioxidants such as ${\alpha}-tocopherol$, NDGA, proply gallate and sesamol, and synthetic antioxidants, BHA were used to compare antioxidative effects of those antioxidants from tile physico-chemical properties and fatty acid composition changes in the soybean oil during storage. The oils were stored at $25^{\circ}C$ for 2 weeks after heat treatment. Natural antioxidants were less effective than BHA but effect of ${\alpha}-tocopherol$ was very similar to that of BHA. The order of antioxidative effect was BHA, ${\alpha}-tocopherol$, NDCA propyl gallate and sesamol. The relative contents of linoleic acid and linolenic acid was decreased as the degree of oxidative rancidity was increased. whereas content of oleic acid and palmitic acid was increased. The content of linoleic acid and linolenic acid did not decreased by addition of BHA and ${\alpha}-tocopherol$.

  • The effect of the dehydration method and EDTA or BHA treatment upon the pigment degradation and water re-absorption of the dehydrated meat of the surf clam Mactra Sulcataria REEVE was studied. Sun drying Produced a realer decrease in pigment content as compared to that produced by hot-air dehydration. The hot-air dehydrated product which was treated with BHA showed little pigment loss in comparison with the pigment of the fresh surf clam meat. The BHA treatment upon the dehydrated surf clam products had an outstanding effect on the pigment retention and the EDTA treated one had a weak effect on it. The hot-air dehydrated products more rapidly re-absorbed water than the sun dried one. It could be seen that there was tittle difference among the rate of rehydration of the BHA or EDTA treated product and untreated one.
