Effects of Maesil Extract on the Quality Characteristics of Yellow Layer Cake(II) - Quality Characteristics of Cake - (매실 엑기스 첨가가 Yellow Layer Cake의 품질 특성에 미치는 영향(II) - 케이크의 품질 특성 -)

  • The principal objective of this study was to assess the effects of maesil extract on yellow layer cake made with medium and cake flour. After making yellow layer cakes with maesil extract, water activity, hardness, Max G, springiness and crumb color were evaluated. During storage, the Aw of the yellow layer cakes prepared with maesil extract did not retain its consistency. The hardness, Max. G. and springiness of the yellow layer cakes prepared with maesil extract were all lower than that of the controls. With regard to the color of the yellow layer cakes, the L values were reduced, but the a and b values were increased with the addition of maesil extract. The micrographs of the yellow layer cakes prepared with maesil extract evidenced slightly higher porosity than was observed in the controls. This meant that the cake batter prepared with maesil extract could be used to create yellow layer cake with good volume and good quality.

Comparison of Filtration Resistances according to Membrane Cleaning Methods (막표면의 케이크층 세정 방법에 따른 여과 저항값 비교)

  • The resistance in series model has been frequently used for determination of various filtration resistance to correctly understand the membrane fouling behaviour in MBR (membrane bio-reactor) for wastewater treatment. The cake layer resistance ($R_c$) which is commonly determined by calculation of flux dataset that are obtained empirically before and after removing the cake layer on membrane surface. However, the calculated Rc values are very dependent on the cleaning methods adapted for removal of cake layer. This study investigated how the various cleaning options affect $R_c$. Seven different cleaning methods were employed: i) ultrasonication (100 W, 10 min), ii) ultrasonication (200 W, 60 min), iii) ultrasonication (400 W, 120 min), iv) water rinsing in a shaker (100 rpm, 10 min), v) water rinsing in a shaker (300 rpm, 60 min), vi) water rinsing, vii) sponge scrubbing. For the hydrophilic PES membrane, the cake layer removal efficiencies ranged from 64% to 10%, indicating that the removal of cake layer was highly dependent on the cleaning options. For the hydrophobic PVDF membrane, the cake layer removal efficiencies ranged from 79% to 97%. Consequently, a standardized method for cake layer removal to determine cake resistance ($R_c$) is needed for correct interpretation of the fouling phenomena.

  • Physicochemical qualities and consumer acceptability of chocolate layer cake were studied with varied levels of rosemary powder at 0, 0.2, 0.4 and 0.6%. The ash content of the cake increased from 2.30 to 3.10%, as the amount of rosemary powder increased from 0 to 0.6%, and the carbohydrate content of the cake decreased as the addition of rosemary powder increased. There were no significant differences in moisture contents and pH values among the samples and the pH values of all samples were within the typical pH range of 7.5-8.0 for chocolate layer cakes. Water loss from the control cake was greater than that from the cakes with rosemary powder supporting the suggestion that the addition of rosemary powder to the chocolate layer cake could increase moisture retention of the cake. Consumer acceptability of all the samples showed higher preferences of more than 7 points. Rosemary aroma, mint flavor and after taste were highly positively correlated with the fat content. Fat and ash content of the cake, which tended to increase in proportion to the rosemary powder content, were negatively correlated with acceptance of herb flavor, sweet taste, moistness, softness and intensity of softness but positively correlated with intensity of herb flavor. With the results above, trials on chocolate layer cake using rosemary powder were successfully performed within the ranges tested.

A Study on the Characteristics of Yellow Layer Cake with Added Buckwheat Flour (메밀 가루를 첨가한 Yellow Layer Cake의 특성에 관한 연구)

  • The purpose of this study was to investigate the properties of yellow layer cake with added buckwheat flour. The physical properties of the cake flour with added buckwheat flour were tested by RVA, farinogram, and alveogram, and then, after making the yellow layer cake, the samples were analyzed by rheometer. We found that the pasting temperature decreased with the addition of buckwheat flour in the cake flour, but peak viscosity, holding strength, and final viscosity increased. For the farinogram, the flour containing buckwheat showed increases for consistency and water absorption, but stability was decreased. The $P_{max}$ of the alveogram was not consistent according to the addition of buckwheat flour to the cake flour. The L- and G-values showed decreases, but they were not significant. After making the yellow layer cakes with added buckwheat flour, crumb softness was analyzed with storage for 7 days. The hardness and Max. G of the yellow layer cakes with buckwheat flour increased, and the highest values were after 1 day of storage. However, springness decreased with the addition of buckwheat flour as compared to the control, and showed the highest value at 7 days.

Safety Evaluation on Mutagenicity of White Layer Cake Containing Gamma-Irradiated Egg White (감마선 조사된 난백 함유 White Layer Cake의 돌연변이원성 평가)

  • Mutagenicity of white layer cake including 20 kGy-gamma irradiated egg white manufactured as a research on the practical approaches of gamma irradiation for the reduction of egg allergy was evaluated by Salmonella typhimurium reversion assay (Ames test). The water-soluble and organic solvents mixture of methanol: chloroform (2 : 1)-soluble fractions of the white layer cake including 20 kGy-gamma irradiated egg white were examined in S. typhimurium TA98 and TA100. Both with and without metabolic activation, the number of revertant colonies were not increased in each extract compared with negative controls. No significant difference in the formation of the colonies was observed at the non-irradiated and 20 kGy-irradiated samples. The results indicate that there is no evidence of mutagenicity in white layer cake including 20 kGy-gamma irradiated egg white.

A Study on the Characteristics of Yellow Layer Cake Made with Bamboo Leaf Powder (죽엽을 이용한 Yellow Layer Cake의 특성에 관한 연구)

  • The purpose of this study was to investigate the properties of yellow layer cake made with bamboo leaf powder. Physical properties of the medium and cake flour with bamboo leaf powder were tested by falling number, farinogram, alveogram and after making yellow layer cake, which were tested by rheometer and water activity etc. We found that falling numbers increased with addition of bamboo leaf powder and adding bamboo leaf powder to the flour decreased peak viscosity, holding strength, final viscosity etc. The p value of the alveogram increased for the flour containing bamboo leaf powder increased, but development time and stability decreased. The water activity of the yellow layer cakes made with bamboo leaf powder decreased during storage, but they did not show significant differences. The results of the sensory test showed that the 3% of addition of bamboo leaf powder had the best scores.

Effects of Emulsifiers on the Properties of White Layer Cakes Prepared from Geurumil Flour (그루밀가루의 White Layer Cake 적성과 유화제 첨가 효과)

  • A domestic wheat variety (Geurumil flour) was evaluated for the properties of white layer cake, and compared to a commercial soft wheat flour. Geurumil flour contained more protein, ash, and lipid contents than commercial soft wheat flour. Very little difference in cake batter pH was observed between soft wheat flour and Geurumil flour, and the addition of emulsifiers tended to decrease the pH of Geurumil cake batter The specific gravity of the cake batter was lower in Geurumil flour than in soft wheat flour, and decreased effectively by the addition of emulsifiers due to batter aeration. Specific loaf volume was influenced by the addition of emulsifiers and demonstrated the highest values at the level of 1 ~ 2%. Addition of Ester-400 (monoglyceride) showed better cake properties in terms of volume, symmetry and uniformity index than sucrose-fatty acid ester did, and thus appeared to be more effective in improving baking performance. The changes in firmness of cakes during storage at $25^{\circ}C$ were observed, and Ester-400 showed some Positive effects on retarding cake staling.

Quality Characteristics of Yellow Layer Cake Containing Yacon Powder (야콘분말 첨가 옐로우 레이어 케이크의 품질 특성)

  • This study carried out to investigate the effects of yacon powder on yellow layer cake made with weak flour. After making yellow layer cake with yacon powder, water activity, crumb texture, crumb color, and sensory characteristics were investigated. After 1 day of storage, Aw value of control cake with weak flour did not show any significant differences, whereas those with 2, 4, and 6% yacon powder showed a significant increase in Aw. During storage, the Aw values of yellow layer cakes containing yacon powder decreased. Hardness and gumminess of yellow layer cakes containing yacon powder decreased compared to those of control, whereas springiness and cohesiveness of yellow layer cakes increased compared to those of control. Hardness, springiness, cohesiveness, and gumminess all increased with storage time. Further a higher percentage of yacon powder was associated with lower L and b values as well as a higher a value. The micrographs of yellow layer cakes with yacon powder showed slightly coarser porosity than that of control. The results of the sensory test showed that the overall acceptability of 2% yacon powder cake was the highest.

Physical and Sensory Characteristics of Low-Calorie Layer Cake Made with Maltodextrin (Maltodextrin이 첨가된 저열량 레이어 케이크의 물리적 및 관능적 특성)

  • This study was carried out to investigate the effect of maltodextrin on the characteristics of low-calorie layer cake. Different levels of maltodextrin were added to the cake formula based on the weight of shortening. The specific gravity of cake batter was decreased by increasing the level of maltodextrin, whereas the viscosity showed an opposite trend. The microstructures of cake crumb observed by the scanning electron microscope showed the decrease of the number and size of air cells, and those of fat particles were also decreased by increasing the level of maltodextrin. The texture profile analysis of layer cake showed statistically significant differences according to the levels of maltodextrin. Hardness, gumminess and chewiness of the cake batter were decreased by adding maltodextrin, while springiness, cohesiveness and resilience increased. According to the sensory evaluation, the scores of taste and texture were decreased by adding maltodextrin, but the scores of appearance, color, flavor and overall preference of the layer cake increased. Overall results suggested that the addition of 35% maltodextrin could be the best replacing ratio for the low-calorie layer cake.

Development of a Numerical Model for Cake Layer Formation Process on Membrane (멤브레인 케이크 레이어 형성 과정 모사를 위한 수치 모델의 개발)

  • Membrane filtration has become firmly established as a primary process for ensuring the purity, safety and efficiency of treatment of water or effluents. Several researches have been performed to develop and design membrane systems in order to increase the accuracy and performance of the processes. In this study, a lattice Boltzmann method for the cake layer has been developed using particle dynamics based on an immersed boundary method and the cake layer formation process on membrane has been numerically simulated. Case studies including various particle sizes were also performed for a microfiltration process. The growth rate of the cake layer thickness and the permeation flow rate along the membranes were predicted. The results of this study agreed well with that of previous experiments. Effects of various particle diameters on the membrane performance were studied. The cake layer of a large particle tended to be growing fast and the permeation flow going down rapidly at the beginning. The layer thickness of a small particle increased constantly and the flow rate was smaller than that of the large particle at the end of simulation time.
