  • The expansion of the transportation card, and the popularity of smart phones has been increasing social concern about the NFC technology. Has been focused on the use of e-commerce, most of the NFC, fulfilling the security problems or technical topic for this, but the reality is that the current debate on the new value added contents industry and a nonexistent connection.   • This study applied Q methodology to consumers who have experience using food trucks to understand subjective perception of food truck customers. The purpose of this study is to characterize the perceptual structure of food truck customers, to describe characteristics of the types and to suggest some implications. The results of the type analysis are as follows. The first type (N = 10): Food truck zone accessibility preferred type, the second type (N = 8): Complex entertainment experience type, the third type (N = 9) = 3): Fast food preference type. Future research on food trucks, restaurants, and tourism will be based on a variety of literature and empirical studies, and will be revised and supplemented with more detailed Q methodological questions and analytical techniques to analyze the various opinions of respondents in a more concrete and objective manner.

A Study on the Development of Food Truck Concept based on Demographic Characteristics (인구통계적 특성에 기초한 푸드트럭 컨셉개발에 관한 연구)

  • This study aimed to develop food truck concept based on demographic characteristics by using conjoint analysis. This study investigated the attributes importance and attributes level based on gender, age and income. Results of the research were following. First, as a result of analyzing the attributes importance and attributes level of gender, age, and income, it found that the price was more important than the type of food. The shape of food, a design of the truck and service are the following features of the attributes importance. Second, in the entire of market analysis, packaging was the most important factor next to the price and the food shape. Third, according to gender analysis, male and female prefer Korean style with price range of 5,000~7,000 won. Men prefer take - out menu such as plastic packaging and traditional truck design. Also, the study showed that women prefer having a meal at restaurant, paper packaging style and modern design. Fourth, according to the age analysis results, all of ages group prefer the price range of 5,000~7,000 won except for people who are 60s and beyond. Also, in the food type, people prefer Western style in their 20s, Japanese style in their 30s and Korean style in their 40s, 50s, 60s. Fifth, according to income analysis, Western menus with income of 4,000,000~5,000,000won are preferred a price range of 7,000~10,000won and Japanese menus with income more than 5,000,000won are preferred a price range of 7,000~10,000won.

  • Background: The poultry industry suffers losses from problems as pale, soft and exudative (PSE), and dark, firm and dry (DFD) meat can develop in meat as a result of short- and long-term stress, respectively. These abnormalities are impacted by pre-slaughter animal welfare. Methods: This work evaluated the effects of open vehicle container microclimate, throughout the $38{\pm}10km$ journey from the farm to the slaughterhouse, on commercially turkey transported during the Brazilian winter season. The journey was initiated immediately after water bath in truck fitted with portable Kestrel anemometers to measure air ventilation, relative humidity, temperature and ventilation. Results: The inferior compartments of the middle and rear truck regions showed highest temperature and relative humidity, and lower air ventilation. In addition, the superior compartments of the front truck regions presented lower temperature and wind chill, and highest air ventilation. The breast meat samples from animals located at the inferior compartments of the middle and rear truck regions and subjected to with water bath (WiB) treatment presented highest DFD-like and had lowest PSE-like meat incidence than those from animals located at other compartments within the container. Lower incidence of PSE-like meat was observed in birds without water bath (WoB). Conclusions: Assessment on turkeys transported under Brazilian southern winter conditions revealed that breast meat quality can be affected by relative humidity, air ventilation, temperature, and transport under subtropical conditions promoting color abnormalities and the formation of simultaneously PSE-like and DFD-like meat.

Status and Needs Assessment on Nutrition Management and Meal Service for Elementary·Middle·High School Athletes among Athlete's Parents (보호자를 대상으로 한 초·중·고등학교 운동선수를 위한 영양관리와 급식지원 실태 및 요구도 파악)

  • Objectives: Young athletes require adequate nutrition to maintain their athletic performance, growth and health. This study examined the status and needs of nutrition management and meal services for student athletes among the athlete's parents. Methods: The subjects were parents of elementary, middle, and high school athletes (n=323) from 18 schools participating mainly in the Sports Food Truck. The questionnaire included general characteristics, status and needs on nutrition management and meal service for student athletes, and satisfaction with the Food Truck. The survey was done during 2018. The data were analyzed according to the school groups using a ${\chi}^2-test$ or ANOVA. Results: Approximately 45% of subjects had difficulty in the nutrition management of athletes, and 87.1% had not received nutrition education. Approximately 74% wanted nutrition education held for athletes, and mainly wanted topics on nutrition management for health and eating for athletic performance. The preferred methods were lectures and cooking activity. The responses on the necessity of nutrition education for athletes, desired education topics, and desired times for education differed significantly according to the school groups (p<0.05). Most subjects also wanted nutrition information mainly through SNS. In the athlete's meal, breakfast and snacks were highlighted as the meal to supplement. Approximately 90.3% responded that providing a meal service is necessary. The subjects preferred snacks before/after exercise and dinner if a meal service was provided. They preferred Korean food, followed by snacks, and a dish meal. As the meal type, the subjects wanted the Food Truck and packed meal. The responses on necessity of a meal service (p<0.05), preferred food (p<0.001), and meal type (p<0.001) in the meal service differed significantly according to the school groups. Approximately 43% were satisfied with the Food Truck and 50.8% responded as average. They made suggestions for the Food Truck in terms of foods, operations and frequency. Conclusions: Based on the study results, nutrition education and meal service may support nutrition for student athletes considering the needs of the parents according to the school groups.

Establishment of Distribution System by Individual Packaging of Live Todarodes pacificus (활오징어(Todarodes pacificus)의 개별 포장 유통시스템 확립)

  • A packaging and distribution system for transferring individual live squids at low temperature was developed and compared to a conventional bulk container system. Ten live squids in individual packages were stored in a large container at low temperature ($0{\sim}10^{\circ}C$). Live squids in individual packages at $6^{\circ}C$ showed a survival rate of 84% up to 72 hours, after which the survival rate decreased. However, the survival rate remained at 60% up to 120 hours. Further, the squids survived up to a maximum of 7 days. Optimum temperature was $5^{\circ}C$, and the survival rate of the packages was 70% when stored at $5^{\circ}C$ for 96 hours. A distribution test was carried out using a refrigerator truck at $5^{\circ}C$, and the results showed a 100% survival rate up to 16 hours and over 90% survival rate after 20 hours. A rectangular container was the most favorable when loading the container into the refrigerator truck. In testing the required volume of supplied seawater, 100% survival rate was observed over 15 hours with 20 L of sea water or more. Therefore, a single squid needed 2 L of seawater. After refrigerator truck transportation, optimum temperature for fish tank storage was $5^{\circ}C$, at which the survival rate was over 90% up to 72 hours. Using a refrigerator truck at $5^{\circ}C$, live squids survived up to 7 days, maintaining marketability.

  • Today's rapid industrialization and population concentration in cities lead to a vast economic growth, and consequently, people's increased desire of spending demands abundant and diverse food. As a result in Korea, annual food waste is 4.1 million tons (24.6% of household waste) and daily food waste amount to 11,397 tons which is equivalent to 1,400 loads of 8-ton truck. It is best to recycle toed waste as manure, forage, and fuel than reclamation but separate collection of food waste is very difficult by reason of water content. So only a little portion of food waste from large-scaled restaurants and cafeterias that handle food waste relatively well. requirement for recycling food wastes into forage and manure needless to say, reduction activity is best way. Therefore, large-scaled restaurants and cafeterias need to seek plans to minimize food resource waste thus reducing the cost and waste processing cost by implementing appropriate reduction program.

  • The purpose of the study is to analyze the travel characteristics of freight trucks in metropolitan areas, focusing on activity generation, destination choice, and trip chaining behaviors. The results showed that the number of service companies at departure areas has a primary influence on the activity generation pattern and destination choice behavior of trucks in metropolitan areas. The number of trips within a trip chain is largest, in case where the prevailing industry in destination areas is wholesale or retail and the shipment item is food or beverage. These results imply that for the reasonable estimation of truck travel demand both the trip chaining behaviors and the industrial compositions in departure and destination areas should be separately considered for each type of commodity.

  • As the largest source of food waste is housing, and the food waste properties are good enough to recycle, the proactive approach to conventional food waste disposal is highly regarded. This research is to examine food waste management in the Seoul Metropolitan Area (SMA) and non-SMA and to analyze the public inclination to disseminate zero-food waste system (ZFWS) with fermentation and extinction technology in multifamily housing estates. The self-administered questionnaire survey was conducted and the collected data were statistically analyzed. The main findings are summarized as follows: food waste in multifamily housing estates were retrieved by refuse truck and largely recycled for compost and forage. Also, many local governments were in favor of ZFWS, and unwilling to invest in it due to financial constraint. It's found that logistics of ZFWS is likely to be influenced by important features such as a considerable amount of cost saving, effective energy recovery, and efficient operation/management.

Effect of Supplemental Chromium Levels on Performance, Digestibility and Carcass Characteristics of Transport-stressed Lambs

  • A trial was conducted to study the effect of supplemental chromium (Cr) levels from a Cr-yeast source on performance, digestibility and carcass characteristics of transport-stressed lambs. Forty-eight Naemi lambs (avg. BW 31.7 kg) were transported by truck for a distance of 1,450 km. On arrival day, the lambs were randomly allocated to four groups receiving diets supplemented with 0.0, 0.3, 0.6 or 0.9 ppm Cr. Each group consisted of four separately housed replicates of three lambs each. The lambs were fed their respective diets ad libitum for 84 d (21 d stress period, followed by 63 d growing period). Road transit of lambs resulted in a decreased (p<0.001) live body weight of 8.5%. Supplementation of Cr-yeast did not alter the performance of lambs during the stress period. Linear and quadratic increases (p<0.05) were observed in DMI and ADG, respectively, with increasing supplemental Cr levels in the diets during the growing period. Values were greater (p<0.05) by 14.7% and 20.8%, respectively, for lambs fed 0.3 ppm Cr compared to control, while those fed on the other two levels were intermediate. Over the 84-d feeding period, a trend was noted towards a slight increase in loin eye area and a decrease in body wall fat thickness for lambs fed Cr supplementation compared to the control group. This study suggests that the supplementation of Cr-yeast, especially at 0.3 ppm level, is beneficial for improving the performance of growing lambs whether the animals are stressed or not.
