Microbiological Quality Control of Cooked Rice by Aseptic Process Using Heat Shock Treatment (열쇼크방식 살균에 의한 무균 취반의 미생물학적 품질관리)

  • Newly introduced aseptic process for cooked rice was optimized by evaluating the process parameters. The optimal conditions were as follows: ratio of washing water to rice, 3:1 by weight; steeping at 20oC for 20min; heat shock at 140oC for 7sec with 8 repetitions; addition of 0.2% glucono lactone solution; cooking at 103oC for 30min. The final products were incubated at 37oC and 50oC for 8 weeks and no spoilage was occurred at both temperatures. Furthermore, any significant losses of sensory and physicochemical qualities were not observed.

Testing a Small Scale Aseptic System for Milk in Plastic Bottles

  • The objective of this study was to develop and assess the performance of an aseptic system for liquid milk contained in plastic bottles, from a small-scale production standpoint. Commercial sterility tests conducted on the bottled milk were utilized in our assessments of the system, via the identification and monitoring of the principal points of the process. Four 150 L batches of milk with pH values of approximately 6.7 were heat-processed at between 137 and $143^{\circ}C$ for 10 see in a plate heat exchanger, and then aseptically transferred to 500 mL high-density polyethylene (HOPE) bottles, in an ISO class 7 clean room. The aseptic condition of the bottles was achieved via 10 see of rinsing with a mixture containing 0.5% peracetic acid and 0.8% hydrogen peroxide at $30^{\circ}C$, followed by another rinse with sterile water. Of the 4 batches processed, 2 were determined to exhibit commercial sterility, on the basis of the physical-chemical and microbiological criteria adopted. It was concluded that some adjustment of the processing line was required in order to achieve full commercial sterility for all processes. The aseptic system developed and assessed in this study was demonstrated to have great potential for the processing and transferring of milk into plastic bottles, from a small-scale production standpoint.

  • Hazard Analysis and Critical Control Point (HACCP), a systematic process that identifies, assesses, and controls hazards, has been developed as an effective alternative to conventional end-point analysis for food safety control. The importance of HACCP has been emphasized recently due to the development of new food processing technologies and the increase in international trade demanding worldwide of food product safety. This paper provides a review of HACCP and a generic HACCP template for its implementation for aseptic processing of a juice drink.

Sensory Characteristics and Consumer Acceptance of Frozen Cooked Rice by a Rapid Freezing Process Compared to Homemade and Aseptic Packaged Cooked Rice

  • Descriptive analysis and consumer acceptance tests were conducted with frozen (FCR), homemade (HCR), and aseptic-packaged (ACR) cooked rice products from two cultivars-IM and SD. FCR was prepared using a rapid freezing process, which may provide consumers with a quality similar to that of HCR. The intensity of the flavors of roasted, glutinous rice, rice cake, and rice starch and the textures of glutinousness, moistness, chunkiness, adhesiveness, and squishiness were all greater in the FCR as compared to the HCR and ACR (p<0.05) in IM and SD cultivars. The differences in sensory characteristics between the FCR and ACR were larger than the equivalent differences between the FCR and HCR. Overall consumer acceptance ratings for FCR in overall aspect, appearance, aroma, and texture were not significantly different compared to those for HCR (p>0.05); however, in most cases these factors showed significant differences when compared with ACR (p<0.05). From partial least square regression analysis, cooked rice was positively related to sweet, transparency, glossiness, roasted, glutinousness, chunkiness, moistness, glutinous rice, adhesiveness, rice shape, rice starch, and squishiness attributes but negatively related to raw rice, old rice, old rice aroma, a particle feeling, off-aroma, white color, scatteredness, slickness, size of cooked rice, and firmness attributes.

[ Sr2+ ] Stimulation of α-amylase and RNAse in Wheat Aleurone Layer

  • To measure an effects of strontium on secretion of ${\alpha}$-amylase and RNase, wheat aleurone layers were isolated after the pre-incubation in a solution with or without 10 mM $SrCl_2$ or $CaCl_2$ for 3 days at $25^{\circ}C$ in the dark under aseptic conditions. The secretion of ${\alpha}$-amylase reached a maximum at 72 h after incubation. $Sr^{2+}$ induced more effectively secretion of ${\alpha}$-amylase than $Ca^{2+}$. The ${\alpha}$-amylase secretions by $Sr^{2+}$ or $Ca^{2+}$ ware about $2 (Ca^{2+})$ to $2.5 (Sr^{2+})$ fold higher than it without divalent ions, When aleurone layers were incubated without divalent ions, however, the ${\alpha}$-amylase was remarkably retained in the tissues. Total ${\alpha}$-amylase synthesis (ie. tissues + media) was slightly lowered by 10mM $SrCl_2$ addition. It seemed that the RNase secretion begins at 18 h after incubation. This meaned that the RNase secretion may process slower than ${\alpha}$-amylasee secretion. $Ca^{2+}$ effect on RNase secretion is stronger than $Sr^{2+}$ unlikely to ${\alpha}$-amylase. The secretion process is likely to be suddenly induced between 72 hand 96 h. These results suggested that the secretion was enhanced after the accumulation in aleurone layers.

  • The carton for liquid products are divided into 'gable top carton' and 'aseptic carton'. Currently, these packages are being recycled in the toilet tissue manufacturing process. The recycling of the carton aluminium laminate is the most important problem facing the recycling procedure of the carton packages due to the reduction in quality of recycled materials. The polymer structure with synthetic resins being used mainly in beverage packaging is also one of the important factors for the procedure for its recycling. The objective of this study was to investigate the package material and structure of the carton for liquid products through marketing research and suggest the supplementation in the work processes of production, use, and recycling. The results represent to improve the recycling profit and the quality of recycled materials when a laminated aluminium of carton for liquid products is replaced to the transparent polymer film. The improvement of the sorting and recycling process may help their recycling efficiencies. In addition, the limited use of synthetic resin molded packaging and increase of wood-pulp collection rate will provide the improvement of the recycling profit and the quality of recycled materials.

A Study on Heavy Metal Concentrations in Waste Water Produced in the Casting Pickling Process at Dental Technical Laboratories (치과기공소 주조체 산세척과정에서 발생하는 폐수내 중금속 농도)

  • Objectives: This study set out to measure the heavy metal concentrations in waste water produced in the casting pickling process at dental technical laboratories and examine the actual state of its treatment. Methods:The investigator measured the concentrations of each heavy metal at 55 dental technical laboratories using an inductively coupled plasma optical emission system. Results: The annual usage of electrolytes was under 10 L in 50 (90.9%), and was 10L or more in five (9.1%) laboratories. Among the laboratories, 15 (27.3%) commissioned the treatment of waste,12 (21.8%) treated the waste with general sewage,and 28 (50.9%) treated the waste in aseptic tank. The arithmetic $mean{\pm}standard$ deviation and the geometric mean of chrome(Cr) were $75.3{\pm}50.9$ and 58.3 mg/L; those of cobalt (Co) were $112.3{\pm}106.7$ and 66.1 mg/L; those of nickel (Ni) were $62.9{\pm}83.5$ and 8.9 mg/L; those of molybdenum (Mo) were $17.1{\pm}13.4$ and 12.0 mg/L; those of iron (Fe) were $31.5{\pm}44.1$ and 6.2 mg/L; those of lead (Pb) were $0.3{\pm}0.3$ and 0.3 mg/L; those of beryllium (Be) were $3.6{\pm}3.6$ and 2.0 mg/L. The hydrogen ion concentration was under pH 2 across all the samples. Conclusions: The findings show that the dental technical laboratories were not doing well with the separation, storage, collection, and treatment of the electrolytes they discarded, and that most of the electrolytes were introduced through the general sewage or aseptic tank. The causes of this include alack of perception among the practitioners at dental technical laboratories and contracted companies avoiding collection for economic reasons. There is a need for education to improve the perceptions of waste water treatment among the practitioners at dental technical laboratories. Environment-related departments should be stricter with legal applications in the central and local governments. It is also required to provide proper management of commissioned treatment.

  • The roots of Aristolochia elegans Mast.(Aristolochiaceae) are widely used in Mexican traditional medicine as a remedy for scorpion venom. Current experimental evidence supports its purported antidote properties. However, collection from the wilderness has lead to local extinction of natural populations. In order to contribute to species preservation, cultivation, and standardization of morphological and pharmacological properties, a micropropagation method was developed. This includes in-vitro germination of seeds to produce aseptic plantlets, induction of multiple budding, and acclimatization. The treatment with benzylamino purine(10 ${\mu}M$) induced the highest number of buds(3.1 on average) in both types of explants. On the other hand, indolebutyric acid(1.5 ${\mu}M$) caused the highest root index(11.8) per explant. One hundred percent of the micropropagated plantlets developed vigorously after the acclimatization process.

  • Demand for cosmetics with functionality and eco-friendliness has increased dramatically due to recent aging, well-being trends, and increased interest in beauty. Cosmetics production in 2014 was 8,970.4 billion won, an increase of about 50% compared to 6,014.6 billion won in 2010. In the midst of this, similar companies in intense competition are pursuing differentiated strategies and innovation activities to solve quality, price and delivery problems. In particular, cosmetics packaging work is getting more difficult due to the increasing bill of materials (BOM) and difficult assembly methods. Therefore, in this study, the following problems were identified and suggestions for the improvement of the packaging Many research laboratories such as biotechnology, chemistry, and pharmaceuticals, which are undergoing various studies, are equipped with ready-made laboratory safety equipments such as bio-safety workbenches, aseptic bases, and exhaust workbenches. However, most researchers are disadvantaged in using existing safety equipment. This is because existing safety equipment can not take into account all of the unique characteristics of the research. For this reason, researchers are demanding the development of customized safety equipment that is well suited to their research needs. process of Company C, which is facing difficult situation to respond to the customer 's delivery due to the 52 - hour work week. First, we used the stopwatch to find the difficulty process in the packaging process and show ways to improve it. Second, to improve the efficiency of line balancing in the packaging process, we integrate processes, improve work methods, and perform simple automation. As a result, the prepare loss for replacement was reduced by 1 minute from 5 minutes, resulting in a 23% increase in productivity from 112 ea./hour to 137ea./ hour per person. At this time, the LOB of the packaging process was improved from 70% to 82% by operating one more production line through one person per line, total 9 people saving.
