The Browning Reaction and Inhibition of Apple Concentrated Juice (사과농축액의 갈변현상 및 그 억제)

  • The study was conducted to investigate the effect of the browning inhibitors such as PVPP(polyvinylpoly-pyrrolidone), A.A.(ascorbic acid) on nonezymatic browning factors [free sugar, total amino acid, organic acid, A.A., HMF (hydroxymethylfurfural)] and enzymatic browning factors [PRO (polyphenoloxidase) activity, polyphenol compounds] in concentrated apple juice during 90 days storage. Considering color value (L value, $\Delta$E), absorbance at 420 nm, concentrated apple juice during 90 days storage. Considering color the effect of browning inhibition. According to the storage period, the changes of nonenzymatic factors in concentrated apple juice added with browning inhibitors were similar to those in control (concentrated apple juice without browning inhibitors), which were the decreased of sucrose(0.24~0.35% at 90 days), the slight increase of glucose and fructose, the decrease of total amino acid (530.4~573.1 mg/10g at 90 days), same value of A.A. at 90 days (38.5~78.6 mg/100g), and the increase of HMF (27.8~30.6 mg/100g at 90 days). On the contrary, enzymatic browning factors were significantly inhibited in concentrated apple juice added with PVPP, judging from the slow increase of PRO activity and the significant decrease of initial value in polyphenol compounds (especially chlorogenic acid). These results suggest that PVPP plays an important role as enzymatic browning inhibitor, that is, a scavenger of polyphenol compounds by adsorption in concentrated apple juice.

Browning Inhibition and Quality Characteristics of Minimally Processed Mushroom (Agaricus bisporus Sing) Using Extracts from Natural Materials during Storage (천연 추출물을 이용한 최소가공 양송이버섯 (Agaricus bisporus Sing)의 갈변저해 및 저장 중 품질특성)

  • Various quality characteristics of minimally processed mushroom were measured to select appropriate browning inhibitor. The treatment of extracts from Asparagi radix, cassia and kiwi on mushrooms have a high effectiveness like ascorbic acid or cysteine, known as a good chemical antibrowning agent. As a results of physical quality characteristics of minimally processed mushroom during storage, 1% cysteine and Asparagi radix were highly effective on degree of browning. Total phenol content and polyphenol oxidase activity showed slight differences among the mushroom treated with each browning inhibitors, but it has gradually increased during storage. Thus, these results suggest browning inhibitors from natural materials can be alternatives to prevent browning on mushrooms instead of chemical browning inhibitors including ascorbic acid or cysteine, has been widely used for antibrowning agent.

  • Antimutagenicity profiles of the enzymatic browning reaction products(EBRP) were investigated. The rec-assay with Bacillus subtilis strains $H17(rec^+)$ and $M45(rec^-)$ was carried out using their spores. The biological activities were evaluated for seven different enzymatic browning reaction products, which resulted from the reactions of seven polyphenols with polyphenol oxidase isolated from Ginkgo biloba leaves. In the spore $rec^-$ assay, most of the polyphenolic compounds tested were positive, whereas their enzymatic browning reaction products were tested negative. The mutagenicity of enzymic browning mixtures of the polyphenols and the enzymes obtained from Ginkgo biloba leaves showed negative results in the mutagenicity test using Bacillus subtilis strains $H17(rec^+)$ and $M45(rec^-)$. In the case where polyphenol oxidase inhibitors were added in the enzymatic reaction mixtures with polyphenols, the polyphenols showed mutagenic effect in the spore $rec^-$ assay. This suggests that the activity of polyphenol oxidase is decreased.

  • Major components affecting nonenzymatic browning in stored ginger paste were investigated using five synthetic model solutions. The model systems were stored at $40^{\circ}C$ for 30 days and analyzed for browning, in addition the contents of sugars, organic acids, ascorbic acids, amino acids and gingerols were determined. Among the chemical components, fructose, asparagine and ascorbic acid were the main contributors to the browning development of ginger paste, while gingerol compounds were browning inhibitors.

Quality characteristics of fresh cut apples during storage according to processing steps and browning inhibitor treatment

  • We examined the changes in the physicochemical quality characteristics and antioxidant activity of fresh-cut Fuji apples (Malus pumila) during processing and storage after treatment with browning inhibitors. The primary aim was to elucidate processing suitability and storability. We observed that in the processing stage of slicing fresh Fuji apples, there were no significant differences in 1,1-diphenyl-2-picrylhydrazyl (DPPH) and 2,2'-azinobis (3-ethylbenzothiazoline-6-sulfonic acid (ABTS) radical scavenging ability and ferric-reducing antioxidant power (FRAP). However, after NaClO treatment, total flavonoid and total polyphenol contents decreased. When freshcut Fuji apples were treated with browning inhibitors and stored at 4℃, the L value and hardness decreased; however, the weight loss rate increased based on the storage period of all fruit groups treated with Citrus unshiu Markovich (CuM), calcium ascorbate (CA), and ascorbic acid (AA). The pH increased after 2 days of storage in 1% CuM and after 6 days of storage in 1% CA; however, no changes in pH were observed during the storage period in 1% AA. The DPPH radical scavenging activity was generally good under storage conditions of 1% AA at 4℃ and 1% CA at 20℃. Furthermore, FRAP remained relatively constant under storage conditions of 1% CA. The quality characteristics and antioxidant activity of fresh-cut fruits during processing and storage can be used as basic data for industries. Furthermore, we can gain confidence in quality improvements by improving the production and distribution environment of fresh-cut agricultural products.

Effects of Processing Temperature and Browning Inhibitor on Quality Properties of Fresh-cut Burdock Roots (가공 온도 및 갈변 억제제가 신선절단 우엉의 품질 특성에 미치는 영향)

  • Fresh-cut burdock roots were processed at 4 and $25^{\circ}C$, respectively. The fresh-cut burdock roots were treated with different browning inhibitors (3% citric acid, 3% sodium chloride, 0.3% cystein, and 3% sodium acetate solutions), and the changes in their quality and browning characteristics were investigated. The respiration rate and browning index of the cut roots prepared at $4^{\circ}C$ were lower than those of the cut roots prepared at $25^{\circ}C$. The soluble solid content was higher in the cut roots prepared at $4^{\circ}C$ than in those prepared at $25^{\circ}C$. The weight loss and flesh firmness were not affected by the processing temperatures. Among the browning inhibitors, 0.3% cystein showed the best browning-retarding effect. There was no difference in phenolic compound content between the browning-inhibitor-treated roots and the nontreated roots, but the PPO activity was higher in the latter than in the former. Therefore, the processing temperatures of fresh-cut burdock roots affected their quality and browning development, and the combination of a low processing temperature and the use of the proper browning inhibitor should be applied for the higher quality of the produce.

Quality Characteristics of Minimally Processed Sweet-pumpkin during Storage (최소가공 단호박 (Cucurbita maxima Duchesne) 제품의 저장 중 품질 특성)

  • The objective of this study was to investigate the effect of browning inhibitor and vacuum packaging on minimally processed sweet pumpkin. The browning inhibitor were lo/e of ascorbic acid, citric acid, NaCl, MgCl$_2$and their combination. For the minimal processing, sweet pumpkin was sliced and strip-cut followed by dipping in the solution of browning inhibitor. Effective browning inhibitors fer slice sweet pumpkin were ascorbic acid, NaCl and MgC1$_2$, and those fer thin strip were combination and ascorbic acid. The hardness of minimally processed sweet-pumpkin repeated increasing and decreasing and decreased in the final of storage. However the change pattern of hardness was different according to cutting method. Magnesium chloride treatment was generally high grade on sensory characteristics. Sweet pumpkin treated with citric acid was distinguished on carbon dioxide generation and oxygen exhaustion.

Effect of Browning Inhibitors on Quality Property of Fresh-Cut Strawberries (갈변억제제 처리가 신선 절단 딸기의 품질 특성에 미치는 영향)

  • The effect of browning inhibitors on quality properties of fresh-cut strawberries was investigated. Half-cut strawberries were treated with dipping solutions alone and with combinations of 1% ascorbic acid, 1% citric acid, 1% sodium chloride, and 1% magnesium chloride, were packaged with low density polyethylene bags, and were kept for 24 hours at $4^{\circ}C$. The levels of oxygen and carbon dioxide in the packages of the samples treated with the combined solutions were the highest and the lowest, respectively. The loss of L value and flesh firmness of fresh-cut strawberries was retarded by the combined solutions than by the dipping solutions alone. The soluble solids and pH were not affected by the browning inhibitor. These results suggest that mixture of ascorbic acid, citric acid, sodium chloride, magnesium chloride may prevent browning and softening of fresh-cut strawberries.

Changes in postharvest quality of Pleurotus eryngii treated with different shelf temperature and browning inhibitors (큰느타리버섯 유통온도 및 갈변억제처리에 따른 품질 변화)

  • Pleurotus eryngii is one of the main export items in Korean mushroom industry. Whole mushrooms were packed with 30 um polypropylene anti-fog film without trimming. The range of package weight and oxygen permeability of film were 400 g and 2000 $c/m^2$, 24 h,atm, respectively. The anti-browning treatments were sprayed by 0.5%(w/w) solution of Sporix Sporix(Sodium polyphosphate and $ClO_2$ gas The weight loss ratio was increased with increasing shelf period and temperature. There were no big differences in weight loss ratio according to browning inhibitors. In case of $ClO_2$ treatment, the hardness and lightness of stem was showed higher than other treatment for shelf period. As results of freshness, the optimum browning inhibitor of P. eryngii was $ClO_2$ treatment and the shelf life was extended 36days at $10{\sim}15^{\circ}C$.

Effects of Antibrowning Agents on the Browning Reaction of Enzymatic Garlic Hydrolyzate (마늘가수분해물의 갈변반응에 미치는 항갈색화제의 영향)

  • The antibrowning effcts of cysteine, citric acid and ascorbic acid on the browning reaction of enzymatic garlic hydrolyzate were investigated at 37$^{\circ}C$ for 12 days. Cysteine was the most effective antibrowning agent followed by citric acid. The antibrowning effects of cysteine and citric acid were greater as concentrations increased, and the optimal concentration of both cysteine and citric acid as antibrowning agents was 0.3%. Ascorbic acid itself contributed to the browning reaction and showed an accelerating effect as the concentration increased. The addition of 0.1% ascorbic acid as synergist either to 0.3% cysteine or 0.3% citric acid did not enhance significantly the antibrowning effect of cysteine or citric acid. When stored at 3$0^{\circ}C$, 4$0^{\circ}C$ and 5$0^{\circ}C$, the browning reaction was accelerated as the temperature increased, especially at 5$0^{\circ}C$. Even though the effects of citric acid and cysteine as inhibitors on the browning reaction decreased as temperature increased, cysteine was more effective in decreasing browning reaction than citric acid.
