Elder-berries are economical plants and grown commercially in the United States. Most of the crop is sold to processors and made into natural colour, jellies, jam, port wine or elder berry wine, elder berry juice or used to manufacture of pie mixes. Processors are showing increasing interest in cultivation elder berries. In the present study was wish to find the effect of various factors and practical methods on the processing for the true fruit colour made from fresh elder berries juice as the clearing by the treated pectinase, added sugar, vaccum concentration, extraction of anthocyanosid powder and its property with used prospects. In this study obtained results can be summarized as follows. 1. Pectinase is useful and effected to make clear juice from fresh elder berry juice treated on the $34{\sim}45^{\circ}C$. 2. P.V.C. drum is most useful stored without unfading for clearing elderberry juice and its exposed redish dark purple colour. 3. Clearing elderberry juice stored in the stainless steel drum, changed colour from redish dark purple to dark violets during the stored at the room temperature. 4. Added sugar (Brix $48{\sim}53^{\circ}C$) to the fresh elderberry juice is useful and suitable prospects for to make home juice and wine. 5. The elderberry juice of vaccum concentration is change colour from dark purple to black brown colour during the stored at the room temperature. 6. Its possible to make anthocyanosid powder extracted made from fresh elderberry juice 7. Property of anthocyanosid is an follows. 1) The spectrum of elderberries juice is $523{\sim}530m{\mu}$ 2) The colouring stability is less than $pH_4$ 3) The colouring stability by the heating is less than $pH_4$, and then the more than $pH_4$ is changed colour from redish dark purple to dark brown. 4) By the light colouring stability is less than $pH_4$ 5) The colouring most stability in the pH is $pH_3$ 8. In the future, natural colour made from elderberry juice on the useful prospects is suitable used to make natural fruit juice, ice cream, candy, commercial and home wine, gum, and manufacture of jelly jam, pie maxes, ect.
Almonds are one of the oldest sources of food and oil for man as used the ice cream, candy, roast, salting, chocolate, breads, backed, cookies, and flavoring ect. So, we wish to plant Almond in our country at the most parts of mountains. In this purpose we must be find out of both root stock of more compatibility and new techniques of grafting was rather simples as compared with the many steps of machinary involved today. This investigation has been carried out to reveral compatibility and practical controls of environment effectives involved in the occurence of each difference combination results in interspecific grafting of Almonds on the root stock of Prunus mandshurica and Prunus persica as materials during the 9 months period from March to November in 1978. With these selected scions were 4 varieties of Almond employing as the Hal1's hardy, Nonpareil, and Thompson grafted in the polyethylene green house with almost identical provision made for effective controls of automatical supplying to heating and mistsprayers as the $22{\sim}25^{\circ}C$ of temperature and 70~90% humidity. Following results have been obtained. Those environmental controls were more effective and practical to grafting unions and success by means veneer-grafting at the green house. 1. Hall's hardy Almond grafted on the root stock of Prunus persica was more compatibility than Prunus mandshurica. 2. The survival percentages as follows of the 95.33% of Hall's hardy/Prunus persica and 92.66% of Hall's hardy/Prunus mandshurica. And those were no significant between root stock of both species. 3. The 3 varieties of sweet Almond grafted on the root stock of P. mandshurica. And those were no significant between root stock of both species. 4. And the survival percentages as fellows. Thompson 92.66%, Nonpareil 90.66% and Kapareil 89.33% those grafted on the root stock of Prunus persica. 5. And then the survival percentage of interspecific grafts on the root Prunus mandshurica as follows of the materials of Thompson 89.66%, Nonpareil 87%, Kapareil 85%. 6. The analysis of variance were no significant among the interactions between 3 varieties Almond and 2 species of root stock plants. 7. And the growth of interspecific grafts of the high 161cm, diameter 12.3mm and length of roots 21.5cm growth as the Hall's hardy Almond grafted on the root stock of Prunus persica. 8. The root stock plants of Prunus mandshurica more effected to 6~8 days early developed leafing of scions and dark green colour than the Prunus persica. 9. The identical provision of automatic systems was more effective to graft unions and grafting process. 10. The veneer-grafting method at the green house was more effective and practical method for the mass production of Almond grafts.
The present study seeks to find the effect of oral health status that parents recognized, oral health habit and food intake on existence of decalcified teeth and decayed teeth. Participants were 293 infants aged 18-24 months who visited C dental clinic in Kyungki province between January and December 2010. Questionnaires and oral exam results were used and statistically analyzed by the SPSS program. Fisher's Exact and chi-square test were used to analyze the data. The 18-20 month-old age group had the highest rate of decalcified teeth with 36.4% while the 23-24 month-old age group had the highest rate of decayed teeth with 37.0%. Bottle feeding showed correlation with decalcified teeth, and decayed teeth. Parents were able to recognize decayed teeth and decalcified teeth. Group 2 food(soda/soft drinks/sugared fruit juice) was related to decalcified teeth and decayed teeth(p<.001). Group 4 food (cake/cookies/doughnut/dried fruit/banana) and group 5food(caramel/candy/chocolate bar) were both related to decalcified teeth(p<.001). As the result of dental examination, dental treatment was highly needed for the 21-22 month-old age group(89.3%), and preventive treatment and plaque control were highly needed for the 18-20 month-old age group(94.5%). The results concluded that 18-24 months was the critical period for children's oral health, therefore organized oral health education for parents is necessary.
The increased number of elderly in Korea presents great challenges for community nutrition programs. Strategies to enhance elderly nutrition are needed, as well as dietary advice that are reality-based and tailored to the need of the elderly. The purpose of this study was to evaluate the overall effectiveness of an elderly nutrition improvement program(ENIP), by assessing changes in nutrition knowledge, attitudes, and behavior after program completion. ENIP was conducted in Suwon for 4 months in 1998 at 5 centers for the elderly. The program provided individual nutrition counseling and brief biweekly group education sessions. To stimulate participation and motivation, the elderly in two centers were served free milk packs(200ml) three time a week during the program(milk+education group), and the elderly in 3 other centers were served yoghurt on the program day(education group). Altogether, 102 subjects finished the program(milk+education group 67 ; education group 35). Data about nutrition knowledge, dietary attitudes, diet records(24 hour recall) and dietary habit was collected before(baseline) and after the program(follow-up). The Drop-out rate for the milk+education group(2.9%) was significantly lower than that for the education group(30.0%)(p<.001). The Nutrition Knowledge fo females milk+education group increased significantly after the program, but no significant differences were observed in other groups. Over 60% of all the elderly showed positive responses to the healthy eating attitudes. Energy, protein, vitamin A, riboflavin, Calcium and Potassium intakes improved in the male milk+education group. The Vitamin C intake improved in the male education group. Energy and vitamin A intakes improved in the female milk+education group and energy, vitamin A, thiamin, riboflavin, niacin, Ca nad P in the female education group. A stepwise multiple regression analysis was performed to examine the effects of food intake changes on overall nutrient quality. For all elderly, the fish intake explained 12.6% of the variance, followed by candy intake and vegetable intake(model $R^2$=19.6%). Dietary habits such as meal time regularity and salty food reduction were markedly improved in both groups. Sixty-one percent of the milk+education subjects stated their participation was voluntary and active, while 51% of education subjects did. Sixty four percent of the subjects stated their interest on diet increased remarkably through program participation. Considering the results, it is conjectured that ENIP had a great impact on nutrient intake, dietary attitudes and habits. Milk supplement showed no direct effects on elderly nutrition improvement, but it encouraged the program by reducing drop-out rates and inducing voluntary participation. Therefore milk supplement could enhance the community nutrition education program. Moreover it is strongly suggested that the ENIP be expanded to other communities.

This study was carried out to measure the amount of daily intake on three synthetic food red colors (Amaranth: R2, Erythrosine: R3, Allura Red: R40) in foods by Korean. Analysis of three synthetic food red colors was conducted by HPLC with the foods including bread, confection, candy, alcoholic beverage, soft drink, ice cream, chocolate, and chewing gum. Recovery rates from the known concentrations of three standard food red colors which were spiked into foods were ranged from 85.1 to 100.4 (%) for each foods. Total Estimated Daily Intake (∑EDI) was from 0 to 1.632 mg/kg bw/day for each food item and from 0.512 to 7.281 mg/person/day for ages (1∼over 65 years old). The data of average food intake for each food item per person per day were obtained from the report of Korean National Nutrition Survey conducted by the Korea Ministry of Health and Welfare in 2001. Total EDI of each red colors per person per day were showed as follows; 0.742 mg/kg bw/day for R2, 0.391 mg/kg bw/day for R3 and 2.018 mg/kg bw/day for R40 as total amount respectively, and the ranges of these values were 0.5∼7.1% of FAO/WHO's Acceptable Daily Intake (ADI) values. Therefore, the amount of daily intake of three synthetic food red colors in Korea was regarded as safe.
Aiming to investigate nutrient intake and food habits influenced by smoking for female college students in Seoul, the questionnaire survey for 763 students was carried out. The results of the survey was summarized as follows: 1. 9.7% of students were found as the current smokers and 18.9% of students had experienced of smoking, however stopped smoking at present(experienced smokers) respectively. 2. In the current smokers, they started smoking with friends at the first (58.9%), alone (27.4%), and with seniors (11.0%) respectively. The psychological frustration (52.2%), curiosity (28.4%) respectively motivated smoking behavior at the beginning. The most had smoking usually at the entertaining place such as restaurant. Only 6.4% of current smokers consumed more than 10 cigarettes daily, and 55% of current smokers inhaled deeply into the lung while they smoked. Even 26% of current smokers explained their intention of not smoking after marriage, and also about 95% of current smokers explained to stop smoking in the case of pregnancy. 3. It was found as the fact that the school age, economic status, and parental smoking affected their prevalence of cigarette smoking. The higher their schoolage, the higher smoking showed; the more their money spent and the lower father smoking showed ; the more their money spent and the lower father's educational level, the higher smoking showed; the more drink, the higher smoking showed. 4. The value evaluation of cigarette smoking also affected the prevalence of cigarette smoking. Of the students recognized advantageous parts of smoking, the prevalence of cigarette smoking was higher. 5. Logistic regression analysis was to determine the most effective factor which determined prevalence of cigarette smoking. The most effective factor was value evaluation of cigarette smoking. The order of effective factors was health value of cigarette smoking, their drinking capacity and the value evaluation of change in body weight due to smoking and smoking's advantages. 6. Cigarette smoking showed signs of affecting to food habits. In the case of smoking, the missing rate of taking regular meals was higher, and the frequency rate of taking regular meals was lower. Also, smokers took meals less regularly. Even the smokers took less candy than non-smokers, however, smokers liked to take more coffee, alcohol, and hot tasting food than non-smokers. 7. Smoking seemed to affect the nutritional status. It was found that smokers took many kinds of nutrients insufficiently, therefore their calory intake by age was not reached to RDA.
Objectives : The purpose of this study was to correlation between the index of dental caries in primary teeth and the habits of diet and snack which are expected to influence on the index. The subjects of this study were 165 parents of the children who visited a pediatric dental hospital located in Gyeong-gi do from Jun. 15th to Sep. 26th, 2009, and the self-report questionnaire survey was performed. Methods : A questionnaire used in a previous study was revised and completed for this study and it consisted of 15 items on general characteristic, nine items on dietary habit, and five items on snack intake habit. The collected data was analyzed using SPSS program and findings are as follows Results : 1. The index of dental caries in primary teeth by ages was that children of four years old has 4~5 with 27.5%, children of five years old has 2~3 and 4~5 with 33.3% and children of six years old has 1 and 8~9 with 25.6%, showing a statistically significant(${\chi}^2$=37.72, p<.01). 2. The frequency of brushing teeth was found to have statistically significant negative correlation with the number of primary teeth with dental caries (${\chi}^2$=61.20, p<.001). 3. The frequency of taking snack was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=51.42, p<.001). 4. The desirability of dietary habit was found to have statistically significant negative correlation with the number of primary teeth with dental caries (${\chi}^2$=36.51, p<.001). 5. The frequency of taking biscuit was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=67.74, p<.001). 6. The frequency of taking bread was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=29.63, p<.01). 7. The frequency of taking caramel and candy was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=38.85, p<.001). 8. The frequency of taking soft drinks was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=52.92, p<.001). 9. The frequency of taking ice-creams was found to have statistically significant positive correlation with the number of primary teeth with dental caries (${\chi}^2$=75.07, p<.001). Conclusions : Those findings show that the children with undesirable dietary habit and higher frequency of taking snack have higher index of dental caries in primary teeth, therefore, it is considered that the regular brushing teeth and establishment of desirable dietary habit are very important for keeping health oral cavity. It is recommended that the continuous concern and repeated learning are needed in house and group of rearing infants so that the children take foods of fruits which have function of self-purification than the food of carbohydrates which has high adhesion and level of sweetness.
This paper reports the empirical results of comparing the willingness to pay(WTP) for health risk reductions and the willingness to accept(WTA) for risk increases using experimental market methods in the first time in Korea. Health risks were defined as probabilities of premature death from exposure to one of As, Pb, and THM in tap water. A total of six experimental markets with 15 participants in each experiments were held using 20 repetitive Vickrey second-price sealed-bid auctions. To compare the effects of market experiences, trading a marketed good, candy bar, was introduced before the trading the non-marketed good, drinking water risks. Moreover, an objective risk information was provided after the first 10 trials to incorporate learning processes. Regardless of marketed or non-marketed goods, the mean of WTA exceeded the mean of WTP at the first auction trial. As experimental trials proceeded, the disparity between WTA and WTP for marketed goods disappeared. However results for non-marketed goods were rather mixed to the extent that WTA for health risks from As (relatively high risk leves) were significantly larger than WTP, while there were no significant difference between WTA and WTP for health risks fro Pb and THM (relatively low risk levels). On the other hand, participants seemed to respond in a 'rational' manner to the objective risk information provided, with positive learning effects of market-like experience(especially in the WTA experiments).

This Study has been carried out to develop a method of analysis of 8 permitted synthetic food colors [including Brilliant Blue FCF(B1), Indigocarmine (B2), Fast green FCF(G3), Amaranth (R2), Erythrosine (R3), Allura red (R40), Tartrazine (Y4), Sunset Yellow FCF (Y5)] in Korean foods by HPLC. After adjusting to 0.5% HCl, each of the food colors extracted was eluted by Sep-pak $C_{18}$ cartridge. Eluates were then determined by high performance liquid chromatograph with a UV-VIS detector. Recoveries of the 8 synthetic food colors were found to be 81.2-98.0% for soft drinks, 80.6-96.1% for candy, 79.8-96.3% for chewing gum, 76.5-91.7% for cereals, 79.9-93.8% for ice cream and 78.6-94.7% for jelly, respectively. The detection limits were $0.05-0.1{\mu}g/g$.
The objective of this study was to investigate the relationship among snack consumption patterns, Socio-Economic Status(SES) and oral health behavior in Samcheok-si children. We surveyed oral health behaviors, SES, and snack consumption patterns of children from guardians of three kindergartens in Samcheok-si. There were 148 representative samples who completed the survey sheet. Chi-square test and logistic regression were conducted by SAS 9.2 survey data analysis procedure. The result of relationship between sugar snack intake frequency and house income, and caregiver's education years were significantly different (p<.05). Also, Soda consumption frequency and mother's age, and house income were significantly different (p<.05). The relationship between toothbrushing children by caregiver and fruit consumption frequency were significantly different (p<.05). Fruit consumption and caregiver's education years were associated. Also, soda intake frequency and candy reward were associated with caregiver's age and education years respectively. We found that snack intake behavior of the Samcheok-si children was not associated with their oral health behavior.
