Casein, a milk protein is used in food, paper, leather and textile industries. The milk casein fiber was developed 1935 first. The strong point of milk casein fiber, the contraction is fewer the wool when washing and damage of harmful insect is smaller than wool.[1] But proteins are the major category of natural polymers that are difficult to be processed into fibrous forms. This is because of their complex macromolecular and three-dimensional structures as well as strong inter- and / or intra molecular forces.[2] (omitted)
The present paper focuses on the application of commercial acid dyes and wool reactive dyes to casein protein fabric. Nine acid dyes and six wool reactive dyes were compared their dyeing properties as well as color fastness. The exhaustion yields were higher than 80 % which dramatically increased at pH 3. Excellent wash fastness was obtained with metal-complex acid and wool reactive dyes. Both light and rubbing fastness were overall good, but perspiration fastness was comparatively poor.
This study wa performed to investigate the effects of dietary protein and fiber on the lead and protein metabolism in lead poisoning rats. Seventy male rats of Sprague-Dawley strain weighing 172$\pm$2g were blocked into 14 gropus according to body weight. Protein(casein) was given at levels of 15 or 40%, and fibers(pectin, cellulose and CMC) were given at levels of 0, 4 or 10%. The results are summarized as follows: 1. Food intake, weight gain and food efficiency ratio(FER) in groups fed high protein diets were higher than those in low protein groups. Liver weight in groups fed no dietary fiber was higher than that of animals fed fiber. Kidney and femur weights were greater in high protein groups. Tibia and femur lengths, and tibia weight were not significantly different among groups. 2. Hemoglobin content and hematocrit values showed no significant differance with dietary factors. 3. Total protein contents of serum and liver showed no significant difference, but tended to increase with increasing dietary protein level. Both daily urinary and fecal nitrogen excretions in high protein groups were higher than those in low protein groups. Especially daily fecal nitrogen excretions in high dietary fiber groups were significantly high. Body nitrogen absorption rate was the highest in animals fed no fiber. 4. Pb levels in blood, liver, kidney and bone tended to decrease with high dietary protein and fiber levels. Especially Pb level of kidney was high in all groups. Daily urinary Pb excretion showed no significant difference with dietary factors, but fecal Pb excretion increased significantly in high protein and fiber groups.
It is known that a key limiting factor to the use of ultrafiltration membranes is that of membrane fouling, which has been a major cause of permeate flux reduction. In this work, the effects of several factors (operating time, protein concentration, temperature and pH, etc.) influencing permeate flux during ultrafiltration of gelatin, casein and bovine serum albumin using a hollow fiber membrane(M. W. 10,000 cut off) reactor have been examined. The permeate flux of gelatin solution was maintained almost constant during the operation up to 6 hours, but those of casein and albumin solutions were decreased to 50% and 43% of initial value after an operation time of 60min. The permeate flux with increasing concentration and temperature of protein solutions increased, but the permeate flux showed a minimum value near the isoelectric point of proteins. The permeate fluxes of protein solution were enhanced by a temperature increase and pH control. Also, it is proposed that fouling can be decreased by the pretreatment of insoluble proteins with enzymes.

In vitro digestibility of filefish, protein was substantially decreased by fiber constituents in the follow-ing order : pectin (9.97%), gum karaya (7.03%), sodium alginate (6.12%),and cellulose (1.52%). The order of reduction by fibrous residues from vegetables ranked as follows : sea tangle (12.36%), Ro-maine lettuce (11.12%), perillar leaf (8.96%), and green pepper (5.15%). The inhibitory effect of the dietary fibers towards filefish protein digestion, expressed as soybean trypsin inhibitor equivalents, in-creased with added levels, but the inhibition differed with the sources of dietary fibers. Sea tangle and sodium alginate were most active in decreasing the concentration of essential amino acid from filefish protein hydrolysis. Sodium alginate exerted an inhibitory effect on the activity of trypsin, but the other fiber constituents did not have an inhibitory potency on trypsin and bacterial pretense (Streptomyces griceus). Results supported that dietary fiber components may reduce protein digestibility through the interaction of dietary fiber components with filefish protein.
A laboratory study was made to develop a simple and economic model method for the systematic determination of functional properties of 'Soy Protein Isolates (SPI)' prepared from defatted soybean meal. These are required to evaluate and to predict how SPI may behave in specific systems and such proteins can be used to simulate or replace conventional proteins. Data concerning the effects of pH, salt concentration, temperature, and protein concentration on the functional properties which include solubility, heat denaturation, gel forming capacity, emulsifying capacity, and foaming capacity are presented. The results are as follows: 1) The yield of SPI from defatted soybean meal increased to 83.9 % as the soybean meal was extracted with 0.02 N NaOH. 2) The suitable viscocity of a dope solution for spinning fiber was found to be 60 Poises by using syringe needle (0.3 mm) with 15 % SPI in 0.6 % NaOH. 3) Heat caused thickening and gelation in concentration of 8 % with a temperature threshold of $70^{\circ}C$. At $8{\sim}12\;%$ protein concentration, gel was formed within $10{\sim}30\;min$ at $70{\sim}100\;^{\circ}C$. It was, however, disrupted rapidly at $125\;^{\circ}C$ of overheat treatment. The gel was firm, resilient and self-supporting at protein concentration of 14 % and less susceptible to disruption of overheating. 4) The emulsifying capacity (EC) of SPI was correlated positively to the solubility of protein at ${\mu}=0$. At pH of the isoelectric point of SPI (pH 4.6), EC increased as concentration of sodium chloride increased. Using model system$(mixing\;speed:\;12,000\;r.p.m.,\;oil\;addition\;rate:\;0.9\;ml/sec,\;and\;temperature\;:\;20{\pm}1\;^{\circ}C)$, the maximum EC of SPI was found to be 47.2 ml of oil/100 mg protein, at the condition of pH 8.7 and ${\mu}=0.6$. The milk casein had greater EC than SPI at lower ionic strength while the EC of SPI was the same as milk casein at higher ionic strength. 5) The shaking test was used in determining the foam-ability of proteins. Progressively increasing SPI concentration up to 5 % indicated that the maximum protein concentration for foaming capacity was 2 %. Sucrose reduced foam expansion slightly but enhanced foam stability. The results of comparing milk casein and egg albumin were that foaming properties of SPI were the same as egg albumin, and better than milk casein, particularly in foam stability.

The study was carried out to observe some fundamental effect of spices on tenderization of beef, particularly round muscle part. The study has been investigated analytically in terms of histological and sensory test to compare the tenderizing effect of the spices with respective effect of commercial meat tenderizer and mechanical tenderizer on beef. The results of formal titration assay using casein as a substrate were that garlic, radish and ginger were stronger in protein hydrolysis than the other spices. Beef with spice treatment produced partial degradation of muscle fiber and connective tissue. Connective tissues and muscle fiber were generally degraded conspicuously by the treatment of commercial meat tenderizer. A general disruption and severing of muscle fibers and severing of connective tissue were seen in the area of blade penetration. The results of sensory test on the texture were that F-value of 11.27 is significant at the 1% of the sample. Beef treated with spices was significantly tenderer than beef without treatment at 5% level.
The aim of this study was to examine the effects of Capsosiphon fulvescens extract (CFE) on levels of essential amino acids in serum and the rate of protein digestion. CFE contains approximately 68% carbohydrate as fiber, 17% crude ash, and 14% crude protein. Experimental rats were divided two groups, one group receiving a normal diet and the other a normal diet containing 5% CFE. To analyze the absorption of essential amino acids into the hepatic portal vein, blood from the hepatic portal vein was collected between 10 a.m. and 5 p.m. for 10 days. In vitro protein digestion was decreased in the group fed 5% CFE; these data indicated that CFE affected protease activity. We measured the absorption of essential amino acids in the serum of the hepatic portal vein, at 30-, 60-, 90-, and 120 minutes after feeding. Although there was no difference in the concentration of total essential amino acids between the two groups, the 5% CFE-fed animals had a decreased rate of absorption. Absorption of Lys and Thr into the hepatic portal vein was lower in the CFE-fed group than in the control group. The rate of absorption of Met was delayed nearly 50% in the CFE-fed group compared to the control group. On the other hand, the rate of absorption of Leu, Ile, and Val was increased; Phe showed the same. Therefore, we suggest that CFE could affect protein metabolism by increasing or decreasing the absorption rate of essential amino acids.
Effects of silkworm powder addition on rheological properties of dough and quality characteristics of bread were investigated. Protein content of silkworm powder was 53,98%, much higher than 12.46% of wheat powder, Crude fiber, fat, and pretense contents of silkworm powder were higher than those of wheat flour, Acid analysis revealed glutamic acid content was highest 4,046.16 mg thus, significant depreciation of breadmaking was expected due to weakened gluten structure or dough. Addition of silkworm powder(optimum at 2%) with pretense inactivated by heat treatment resulted in significant improvement of volume and bread quality, with external and internal scores close to those of the control.
