The consumption of foods rich in TDF should not be associated with impaired mineral absorp-tion and long-term mineral status. In surveys of populations consuming high amounts of TDF e.g Third World populations and vegetarinas gross deficiencies in mineral nutrition have not been noted. If mineral status is low among these groups it is most likely caused by the inadequacy or imbalance of the diet and not by the TDF. The key word is interaction which should be inte-rpreted in dietary imbalances that produce nut-rient deficiencies. There are no strong data to support the concept that TDF inhibits mineral absorption through a binding chelation mechanism. Limited data sug-gest that positively charged groups on polymers such as chitosan and cholestyramine will decrease iron absorption in humans and animals. Because TDF does not contain positively charged groups future research should be directed at the possible role of protein consumed along with TDF and the combination of effects on mineral nutrition Phytic acid is acknowledged as a potent chela-tor of zinc. However its association with zinc and its propensity to lower Zn bioavaiability may enhance the absorption of other elements notably copper and iron. The importance of interactions among nutrients including TDF will gain addi-tional attention in the scientific community. Soluble and insoluble dietary fiber function di-fferently in the intestine. Insoluble fibers accele-rate movement through the intestine. Soluble die-tary fibers appear to regulated blood concentra-tions of glucose and cholesterol albeit by some unknown mechanism. In creased viscosity produ-ced by the SDF in the intestine may provide an explanation of how this class of polymers affects plasma glucose cholesterol and other nutrients. Employing a double-perfusion technique in the rat we demonstrated that viscosity produced by SDF will delay transfer of zinc into the circulatory system. This delayed absorption should not be interpreted as decreased utilization. A great deal of additional research is required to prove the importance of luminaly viscosity produced by SDF on slowing nutrient absorption or regulating bllod nutrient homeostasis. Increased intake of TDF in the total human diet appears desirable. A dietary intake of 35g/day should not be considered to have a negative effect on mineral absorption. It is important to educate people that an intake of more than 35g TDF/day may cause an imbalance in the diet that can adve-rsely affect mineral utilization. Acknowledgments. This study using yogurt of food in order to increase the conservativeness and stability of lactobacillus, to be deliciously flavored and give it visual differential effect, were described regarding making the preparing method of double matrix capsulation in food industries. Our study group was especially made to soft and moisture cream using 5wt% of sucrose ester emulsifier as first capsulation. Double matrix capsulation was formed with the best stabilized bead type capsules when it blended 1:3 ratio of chitosan and alginate. The bead diameter size was about 2.5~4mm (mean diameter: 3mm). Activity of lactobacillus containing cream for depending on various pH variations showed that alkalinity ($pH=10.3{\pm}0.3$) condition was higher than acidity ($pH=4.3{\pm}0.3$) and neutrality ($pH=7.12{\pm}0.2$) conditions. After a month, it also was certified to the activity of lactobacillus in incubated at $37^{\circ}C$ in culture medium. As application of food industry, we developed the containing lactobacillus capsule and 5 colored kinds of double matrix capsulation in yogurt cream. As for above mentioned those results, one of tool to stabilize the living lactobacillus, doubled matrix capsulation greatly be expected to contribute to food industry. Furthermore, it can be expected to apply the drug delivery system (DDS) to active ingredients of stabilizing technologies at drug and cosmetic industries.

Functional properties such as anti-blood coagulation, angiotensin converting enzyme (ACE) inhibitory activity, fat binding capacity, foaming properties, emulsifying properties and chemical components of sulfated polysaccharides isolated from ascidian tunics were investigated. The sulfated polysaccharide mainly consisted of sulfate, uronic acid, protein, and chondroitin sulfate, among which chondroitin sulfate showed higher concentration while sulfate and uronic acid did lower. Compositional menosaccharides were arabinose, xylose, glucose, galactose, glucuronic acid, N-acetylgalactosamine and N-acetyglucosamine. Especially, galactose content was dominant among them. And emulsifiability and foaminess of the sulfated polysaccharide was higher than the control group. Anti-blood coagulation of sulfated polysaccharide showed with respect to APTT (Activated partial thromboplastin time). ACE inhibitory activity showed about $16.7\%$.
Four kinds of N,O-hydroxypropyl chitosans (HPCTOs) with degree of substitution(DS) and molar substitution (MS) ranging from 2.47 to 2.52 and 4.9 to 7.8, respectively were synthesized, and their molecular chracteristics and thermotropic and lyotropic liquid crystalline properties were investigated. MS was exceedingly larger than DS, showing that in the later stages of reaction, propylene oxide was preferentially added to the side chains rather than the main chain. All the derivatives formed thermotropic cholesteric phases. The glass and clearing temperatures were decreased with increasing MS. The optical pitches (${\lambda}_m$'s) of the thermotropic cholesteric phases increased with temperature. However, the ${\lambda}_m$'s of the derivatives at the same temperature increased with increasing MS. Solutions of HPCTOs in water, methanol, ethanol, acetic acid, and formic acid containing more than 30 wt% polymer also formed cholesteic phases whose ${\lambda}_m$'s decreased exponentially with increasing polymer concentration. The concentration dependence of ${\lambda}_m$ of HPCTO solutions, however, highly depended on the nature of the solvent and MS. The thermotropic and lyotropic mesophase properties of HPCTOs were significantly different from those reported for hydroxypropyl celluloses. The results indicate that the secondary amino group in the C-2 position plays an important role on the formation, stabilization, and temperature and concentration dependencies of ${\lambda}_m$ of the cholesteric mesophase.

This study discusses the long-term antifungal effect and antifungal performance of Hwangtoh mortars with various natural antifungal substances on five types of mold: Chaetomium globosum, Aspergillus niger, Aureobasidium pullulans, Gliocladium virens, and Penicillium pinophilum, which can be easily detected in the indoors and outdoors of buildings in damp environments. The antifungal performances of various natural antifungal substances extracted from Marjoram, Phytoncide, Thyme, Ginkgo leaves, and Chitosan (oligosaccharide) were investigated on the five types of mold, as a basic experiment. Using the natural antifungal substances selected for the basic experiment, antifungal mortars were made, and their antifungal performance and long-term antifungal effects were also investigated. The results clearly showed that the marjoram extract and their associated mortars had excellent antifungal performance. Also, their long-term antifungal effects were outstanding and at an equivalent level to those of the mortars with organic chemical antifungal agents. The optimum addition rate of the marjoram extract in the mortar was 5% by mass of binder. It was also shown that the phytoncide extract in the mortar needed an addition rate of more than 10% according to the mass of binder, considering the long-term antifungal effect and the antifungal performance.
Chitosan is a linear polysaccharide composed of randomly distributed ${\ss}$-(1-4)-linked D-glucosamine and Nacetyl-D-glucosamine. There have been many reports on the induced systemic resistance and in vivo antifungal activities of higher molecular weight chitosans with molecular weights over 3,000 amu (atomatic mass unit), but there are few papers on in vivo antifungal activities of low molecular weight chitosans (oligochitosans) with molecular weights less than 3,000 amu. In our study, an oligochitosan sample (320.3,000 amu) showed a potent 1-day protective activity with control values more than 94% at concentrations of 500 and 1,000 ${\mu}g$/ml especially against tomato late blight caused by Phytophthora infestans under growth chamber conditions. It also displayed a moderate 1-day protective activity with control values of 67.89% at concentrations of 500 and 1,000 ${\mu}g$/ml against wheat leaf rust and red pepper anthracnose. On the other hand, it showed a 16-hr curative activity against red pepper anthracnose, but not against tomato late blight and wheat leaf rust. In field experiments, oligochitosan effectively suppressed the development of late blight on potato and tomato plants with control values of 72% and 48%, respectively. The results strongly indicate that oligochitosan can be used as an eco-friendly organic material for the control of late blight on tomato and potato plants.
The purpose of this study are to investigate the reasonable maintenance expense of golf course according to the size and management system of each golf course. The maintenance cost per hole per golfer of 29 golf courses and the maintenance cost for items and locations of 8 golf courses were analyzed. 1. As golfers per hole increased, maintenance cost per hole per golfer decreased. 2. The decisive cost factors for maintenance cost of golf course are the number of annual golfers, the total course size, the management system, and automation of course facilities. 3. Maintenance cost of golf courses contained the landscaping areas except for building and parking lots is $869^{\}/_{m^2}$ Korean won. 4. Average maintenance cost of 8 golf courses is $44,325,000^{\}/_{hole}$. 5. Labor cost marked the largest portion in the total cost. Among the items of labor cost, repair cost for green ball mark was the highest with the ratio of 26%(\4,163,000). 6. Material cost for Fairways which reaches 30% of the total area was composed of $22%{\sim}44%$ of the total cost of materials. Cost of imported fertilizers, pestcides for insects and diseases, and sands for top dressing was the highest. 7. Material cost for Green which reaches 2% of the total area was composed of $28%{\sim}36%$ of the total cost. Cost of imported products such as particle-shaped fertilizers, micro mineral fertilizers, and soil conditioners was the highest. 8. There is no difference in cost between chemical fertilizers and the environmentally friendly fertilizers even if environmentally friendly fertilizers using microorganism or chitosan materials are also expensive.
A total of 126 crossbred weanling pigs (average body weight of $6.3{\pm}0.3$ kg) were used to investigate the effect of chito-oligosaccharide (COS) on growth performance, nutrient digestibility, pH of gastro-intestinal tract (GI), intestinal and fecal microflora of young piglets. Pigs were allocated to three dietary treatments based on body weight and gender in a single factorial arrangement. Treatments were control (No COS), T1 (0.2% COS during starter (6-13 kg) and 0.1% COS during grower (13-30 kg) phases, and T2 (0.4% COS during starter (6-13 kg) and 0.3% COS during grower (13-30 kg) phases, respectively. Each treatment had 3 replicates and 14 pigs were raised in each pen. COS is a low molecular weight water-soluble chitosan that can be obtained from chitin of the crab shell after deacetylation with concentrated sodium hydroxide at high temperature and then further decomposition by chitosanase enzyme in the presence of ascorbic acid. For the starter and grower periods, there were no significant differences (p>0.05) in average daily gain (ADG) and feed to gain ratio among treatments. However, during the overall period (6-30 kg), T2 showed better (p<0.05) feed to gain ratio than other treatments. A digestibility study was conducted at the end of grower phase which showed improvement (p<0.05) in DM and crude fat digestibility in T2 over the control. At 25 kg body weight, 6 pigs per treatment (2 per replicate) were sacrificed to determine the effect of diets on pH and microbial count at different sections of the GI tract. The pH of the cecal contents in pigs fed 0.1% COS was higher (p<0.05) than in the other treatments. Total anaerobic bacterial number increased from cecum to rectum in all treatments. The weekly total bacterial counts showed higher (p<0.05) in feces of pigs fed COS than that of untreated pigs at the $8^{th}$ week. The number of fecal E. coli in untreated pigs at $4^{th}$ wk was 7.35 log CFU/g compared to 6.71 and 6.54 log CFU/g in 0.1 and 0.3% COS-treated pigs, respectively. Similarly, at $8^{th}$ wk, fecal clostridium spp. were lower in pigs fed 0.3% COS (5.43 log CFU/g) than in untreated pigs (6.26 log CFU/g). In conclusion, these results indicated that chito-oligosaccharide could improve feed efficiency in young pigs and inhibited the growth of harmful bacteria.
N-Acetyl-$\beta$-D-hexosaminidase ($\beta$-HexNAc'ase) (EC 3.2.1.52) was purified from rice seeds (Oryza sative L. var. Dongjin) using ammonium sulfate (80%) precipitation, Sephadex G-150, CM-Sephadex, and DEAE-Sephadex chromatography, sequentially. The activities were separated into 7 fractions($F_1-F_7$) by CM-Sephadex chromatography. Among them, F6 was further purified to homogeneity with a 13.0% yield and 123.3 purification-fold. The molecular mass was estimated to be about 52 kDa on SDS-PAGE and 37.4 kDa on Sephacryl S-300 gel filtration. The enzyme catalyzed the hydrolysis of both p-nitrophenyl-N-acetyl-$\beta$-D-hexosaminide (pNP-GlcNAc) and p-nitrophenyl-N-acetyl-$\beta$-D-hexosaminide (pNP-GalNAc) as substrates, which are typical properties of $\beta$-HexNAc'ase. The ratio of the pNP-GlcNAc'ase activity to the pNP-GalNAc'ase activity was 4.0. However, it could not hydrolyze chitin, chitosan, pNP-$\beta$-glucopyranoside, or pNP-$\beta$-glucopyranoside. The enzyme showed $K_m$, $V_{max}$ and $K_{cat}$ for pNP-GlcNAc of 1.65 mM, $79.49\;mM\;min^{-1}$, and $4.79{\times}10^6\;min^{-1}$, respectively. The comparison of kinetic values for pNP-GlcNAc and pNP-GalNAc revealed that the two enzyme activities are associated with a single binding site. The purified enzyme exhibited optimum pH and temperature for pNP-GlcNAc of 5.0 and $50^{\circ}C$, respectively. The enzyme activity for pNP-GlcNAc was stable at pH 5.0-5.5 and $20-40^{\circ}C$. The enzyme activity was completely inhibited at a concentration of 0.1 mM $HgCl_$ and $AgNO_3$, suggesting that the intact thiol group is essential for activity. Chloramine T completely inhibited the activity, indicating the possible involvement of methionines in the mechanism of the enzyme.

The present study was conducted to elucidate functional properties of sulfated polysaccharides from ascidian tunics, In physical properties of the crude polysaccharides, emulsion ability and foaminess were more excellent compared with chitin and chitosan, particular dye binding capacity was prominent. Anti-blood coagulation of partially purified sulfnted polysaccharides showed with respect to APTT (Activated partial thromboplastin time). Especially, active fraction $(F_4)$ obtained by DEAE-cellulose ion exchange chromatography showed highest activity, which was approximately $20\%$ of the activity of heparin. ACE inhibitory activity also similar to anticoagulant activity. Active fraction $(F_4)$ obtained by DEAE-cellulose ion exchange chromatography showed about $34\%$, in ACE inhibitory activity.
