민들레의 서식지와 부위별 항산화 및 항균 활성 연구 (Antioxidative and Antimicrobial Qualities of Different Pare of the Dandelion Plant (Taraxacum officinale) from Different Habitats)

  • To classify the physiological activity by habitat and part of Dandelion (Taraxacum officinale), antioxidative and antimicrobial activities were investigated from methanol extracts of Dandelion. Dandelion was taken from Uiryeong (in Kyungnam province) and from Seoul, and antioxidative and antimicrobial activities were measured for three different parts of the dandelion: the flower, leaf and root. Antioxidative activities of methanol extracts from Dandelion were examined by a DPPH test, and antimicrobial activities were examined against 5 microorganisms: Bacillus subtilis and Bacillus cereus as G(+) microorganisms, and Salmonella typhimurium, Staphylococcus aureus and Eschrichia coli as G(-) microorganisms. No significant differences were found in terms of antioxidative and antimicrobial activities between the dandelions in Uiryeong and the dandelions in Seoul. Antioxidative activity, however, was higher in the flower of the dandelion, irrespective of habitat. Further research with other physiological factors (besides antioxidative and antimicrobial activities) is necessary to shed light on dandelion physiological function and to enhance the utilization of dandelion.

민들레를 첨가한 절편의 항산화 활성 및 품질특성 (The Effect of Added Dandelion on Antioxidative Activity and Quality Characteristics of Jeolpyon)

  • This study was conducted to investigate the effect of the addition of dandelion on color, texture, and antioxidant activity in Jeolpyon. Jeolpyon was prepared with varying amounts of dandelion ranging up to 20%. They were stored for 3 days at room temperature, and the color and texture were analyzed at different time intervals. L and a values decreased with increasing dandelion concentration while b values increased with increasing dandelion concentration in Jeolpyon. From texture analysis by Rheometer, the hardness and chewiness seem to be affected dramatically by the addition of dandelion in Jeolpyon. During storage, the control Jeolpyon without dandelion displayed greater than two fold increase in hardness, chewiness and brittleness, while the Jeolpyon with added dandelion had only slight increase during storage. The addition of dandelion in Jeolpyon also increased antioxidant activities such as DPPH radical scavenging activity, ABTS radical scavenging activity and reducing power. The antioxidant activities increased linearly with increasing dandelion concentration in Jeolpyon. The increase of antioxidant activities in Jeolpyon with the addition of dandelion may be attributed to the polyphenols in dandelion since the amount of total polyphenols increased with increasing amounts of dandelion in Jeolpyon. In sensory evaluation, the panels of twenties, thirties, and forties gave high scores to Jeolpyon with dandelion containing 10% 15%, and 20%, respectively in overall evaluation.

Rheological Properties of Concentrated Dandelion Leaf Extracts by Hot Water or Ethanol

  • Basic rheological data of dandelion leaf concentrates were determined to predict processing aptitude and usefulness of dandelion leaf concentrates as functional food materials. Hot water and 70% ethanol extracts of dandelion leaves were concentrated at 5, 20, and 50 Brix, and their static and dynamic viscosities, and Arrhenius plots were investigated. Most concentrated dandelion leaves extracted with hot water and 70% ethanol showed flow behaviors close to Newtonian fluid based on power law model evaluation. Apparent viscosity of concentrated dandelion leaves extracted with hot water and 70% ethanol decreased with increasing temperature. Yield stresses of concentrated dandelion leaves extracted with hot water and 70% ethanol by Herschel-Bulkley model application were 0.020-0.641 and 0.017-0.079 Pa, respectively. Activation energies of concentrated dandelion leaves extracted with hot water and 70% ethanol were $2.102-32.669{\times}10^3$ and $1.657-5.382{\times}10^3\;J/mol{\cdot}kg$ with increasing concentration, respectively. Loss modulus (G") predominated over storage modulus (G') at all applied frequencies, showing typical flow behavior of low molecular solution. G' and G" of concentrated dandelion leaves extracted with hot water slowly increased with increasing frequency compared to those of concentrated dandelion leaves extracted with 70% ethanol.

  • In order to develop a Korean traditional liquor using dandelion, alcohol fermentation condition was investigated. Etha-nol was produced maximally when 10% dandelion and 5% nuruk were added in cooked rice and fermented by S. cerevisiae at $25^{\circ}C$ for 10 days. The taste and nutraceutical properties of dandelion liquor with different concentra-tions(1%, 5%, 10%) of dandelion petal were compared. The dandelion-petal liquors which was brewed by addition of 1% dandelion petals into mash showed the best acceptability and its angiotensin-converting enzyme inhibitory activity was also high.

민들레 잎과 뿌리 분말을 첨가한 설기떡의 품질 특성 (Quality Characteristics of Sulgidduk Containing Different Levels of Dandelion (Taraxacum officinale) Leaves and Roots Powder)

  • 민들레 뿌리와 잎을 식품에 이용하기 위하여 민들레 뿌리와 잎의 첨가 수준을 각각 0, 1, 2, $3\%$로 달리하여 민들레 설기떡을 만들고 설기떡의 물리적, 관능적 특성을 통하여 바람직한 첨가수준을 알아보았다. 민들레 분말의 첨가수준이 중가될수록 L값과 a값은 감소하였고 b값은 증가하며, L3와 R3가 가장 어두운 색을 나타내는 것으로 보였다. 수분함량도 민들레 분말 첨가 수준이 증가될수록 감소하였으며 민들레 뿌리 첨가 수준이 0, $3\%$일 때 수분함량은 각각 $38\%$, $36\%$이었으며, 민들레 잎 분말 첨가 수준이 0, $3\%$일 때 각각 37, $35\%$인 것으로 나타났다. 조직감 측정결과 민들레 뿌리, 잎의 첨가 수준이 높아질수록 경도, 부착성, 탄성, 응집성, 씹힘성, 검성이 증가하는 경향을 보였다. 관능평가 결과 민들레뿌리와 잎의 첨가 수준이 각각 $3\%$$2\%$인 L1과 R2가 색과 향, 경도, 씹힘성, 바람직한 정도가 유의적(p<0.05)으로 좋게 평가되었다.

흰민들레와 서양민들레 추출물의 세포독성 및 항산화 활성 비교 (Cytotoxic and Antioxidant Effects of Taraxacum coreanum Nakai. and T. officinale WEB. Extracts)

  • Some studies of dandelion have been carried out on bioactivities, however, no comparative analysis on antioxidant and cytotoxic activities in the Korean dandelion (T. coreanum NAKAI.; KD) and dandelion (T. officinale WEB.) have been reported. In this study, the extracts of KD and dandelion analyzed relative phenolic contents and free radical scavenging, antioxidant enzyme and cytotoxic activities. The extract of Korean dandelion leaves (KDL) exhibited a higher phenolics content ($368{\pm}11.5\;mg/l00\;g$) and a strong free radical scavenging activity ($RC_{50}$value;87.89 ug/ml) than other parts and BHT (120.12 ug/ml), synthetic antioxidant. At ascorbate peroxidase (APX) activity, the dandelion root (DR) had a greater (38.8 U/mg protein) antioxidant enzyme compare to the dandelion leaves (12.2 U/mg protein). The catalase (CAT) and superoxide dismutase (SOD) followed higher enzyme activity in Korean dandelion root (KDR) than other parts. In a cytotoxic activity against human cancer cell, the extracts of KDR was found to be active against Calu-6, HCT-116, and SNU-601 cell lines, with $IC_{50}$ values of 522.34, 532.74 and 614.85 ug/ml, respectively. These results suggest that KD and dandelion would be an alternative antioxidant source, based on natural plant resources.

흰민들레 추출물의 생리활성 및 볶음시간에 따른 흰민들레 침출차 제조에 관한 연구 (Biological Activity of Korean Dandelion (Taraxacum coreanum) Extracts and Preparation of Korean Dandelion Tea by Roasting Time)

  • This study was conducted to investigate the antioxidative and antimicrobial activities of Korean dandelion (Taraxacum coreanum). Water extracts, ethanol extracts and methanol extracts were used to examine the free radical scavenging activity, total flavonoid content, total polyphenol content and antimicrobial activity. The free radical scavenging activity, total flavonoid, total polyphenol and total antioxidant activity of the water extracts were higher than those of the other extraction solvents. The antimicrobial activties of Korean dandelion extracts were examined on several food borne illness microorganisms using the paper disc diffusion method. Inhibition zones were observed on Staphylococcus aureus subsp. aureus, Listeria monocytogenes, Bacillus subtilis, Bacillus cereus and Escherichia coli in ethanol extracts. Inhibition zones were also observed on Listeria monocytogenes in water extracts. The physico-chemical properties of Korean dandelion tea according to the roasting time and soaking amount of tea were studied. The pH of the dandelion tea significantly decreased while the soluble solid contents significantly increased with increased roasting time (p<0.01). The lightness of the dandelion tea decreased and the turbidity increased with increased roasting time. In sensory evaluation, the sensory scores for the color, flavor and total acceptability were highest in the 40 min roasted tea. These results suggest that the water extract of Korean dandelion could be used as an antioxidative and antimicrobial functional food source. The optimum roasting time for Korean dandelion tea was 40 min at $200^{\circ}C$.

민들레 잎분말 첨가에 따른 기능성 식빵의 품질특성 (Quality Characteristics of the Bread Added Dandelion Leaf Powder)

  • 민들레 잎분말 첨가에 따른 기능성 식빵의 품질특성을 분석하기 위하여 반죽수율, 반죽의 미세구조, 빵부피 및 비부피, 식빵 단면의 air cell 분포상태, 제빵수율, 기계적 및 관능적 품질특성을 분석하였다. 그 결과, 민들레의 잎분말 첨가는 글루텐 형성이나 효모의 발효 등에 크게 영향을 미치지 않아 빵 용적의 부피감소를 초래하지 않고 비교적 고른air cell을 형성하여 제빵적성이 우수한 것으로 판단된다. 특히 관능적 품질특성에서 전체적인 기호도면에 부합되는 기능성 식빵을 제조한다면 민들레 잎분말을 0.5% 첨가한 제품을 상용식품으로 개발하는 것이 적당할 것으로 생각된다.

Effects of dandelion (Taraxacum sp.,) supplements on lactation performance, antioxidative activity, and plasma metabolome in primiparous dairy cows

  • Objective: This study evaluated the effects of dandelion supplements on lactation performance, circulating antioxidative activity and plasma metabolomics in primiparous dairy cows. Methods: A total of 60 mid-lactation dairy cows (milk yield = 34.29±0.34 kg/d; days in milk = 151.72±2.36 days) were divided into 4 treatment groups randomly, comprising the addition of dandelion at 0, 100, 200, 400 g/d per head. The experiment lasted for 8 weeks with an extra 10 days' pre-feeding period. Milk and blood samples were collected, and plasma samples were selected to perform metabolomics analysis. Results: Supplementing 200 g/d of dandelion increased the yield of milk and lactose (p≤0.05). The milk somatic cell counts (p≤0.05) were lower in all dandelion groups than those in the control group. The activity of glutathione peroxidase (p≤0.05) and superoxide dismutase (p≤0.05) were increased and plasma malondialdehyde (p = 0.01) was decreased when cows were fed 200 g/d dandelion. Plasma metabolomics analysis showed that 23 hub differential metabolites were identified in the 200 g/d dandelion group. These metabolites such as ribose, glutamic acid, valine, and phenylalanine were enriched in D-glutamine and D-glutamate metabolism (p = 0.06, impact value = 1), phenylalanine, tyrosine, and tryptophan biosynthesis (p = 0.05, impact value = 0.5), and starch and sucrose metabolism (p = 0.21, impact value = 0.13). Moreover, correlation analysis showed that circulating ribose, mannose, and glutamic acid were positively related to milk yield. Conclusion: Dandelion supplementation could improve lactation performance and elevate the plasma carbohydrate and amino acids metabolism and antioxidative activity. Supplementation of 200 g/d dandelion is recommended for lactating dairy cows.

서양민들레가 Streptozotocin으로 유발한 당뇨 횐쥐의 뇌조직 중 유해 활성산소 생성 및 제거 효소계에 미치는 영향 (Effects of Dandelion on Oxygen Free Radical Generating and Scavenging System of Brain in Streptozotocin-Induced Diabetic Rats)

  • 뇌조직에서 고혈당으로 인한 산화적 스트레스에 대한 민들레의 유해 활성산소 생성과 제거효소계에 미치는 영향을 알아보고자 streptozotocin으로 당뇨를 유발한 Wistar계 횐쥐에게 민들레의 잎과 뿌리의 분말과 열수추출물을 각각 4주간 급여하였다. 실험결과 유해 활성산소 생성효소계인 시토크롬 P450 함량, aminopyrine N-demethylase, aniline hydroxylase 및 xanthine oxidase 활성은 당뇨를 유발한 대조군에 비하여 서양민들레 잎과 뿌리 급여군 모두 감소되었다. Superoxide dismutase, catalase와 glutathione peroxidase 활성 역시 서양민들레의 분말과 열수추출물 급여시 대조군에 비하여 유의적인 감소를 나타내었으며 민들레의 부위에 따른 차이는 관찰되지 않았다. 반면 뇌조직 중의 glutathione S-transferase 활성과 GSH 함량은 대조군에 비 하여 서양민들레 급여시 유의적으로 증가되었으며, 과산화지질 함량은 당뇨 대조군에 비하여 서양민들레 급여군 모두 유의적인 감소를 보였다. 이상의 결과에서 서양민들레의 잎과 뿌리의 급여는 당뇨로 인한 횐쥐의 뇌조직 중 유리기 생성과 지질과산화로 인한 합병증 예방에 효과적일 것으로 사료된다.
