Relationship between the Characteristics of Consumers, Purpose of Dining-out and Dining-out Behavior (외식 소비자의 일반적 특성 및 외식 목적에 따른 외식 행동)

  • Due to the increasing income of married working couples, people have become accustomed to dining out and spending more money when doing so. As a result, various restaurants are operating and new concept restaurants are emerging to meet the needs of customers. The purpose of dining-out depends upon who the companion is and the choice of restaurant and spending seems to be affected by the purpose. In addition, characteristics of consumers influence their dining-out behaviors. This study explored the relationship the between characteristics of consumers and their reasons for eating-out purpose, choice of restaurant, spending habits and preferred restaurant type.

Study on the Attitude toward Money by MAS(Money Attitude Scale) and the Dining-out Behavior of Undergraduates (HAS에 의한 대학생의 금전에 대한 태도와 외식 행동에 관한 연구)

  • The purposes of this study were to examine the attitude of undergraduates toward money and the differences in dining-out behavior among three groups of subjects divided by attitude toward money. Self-administrated questionnaires were completed by 387 undergraduates and data were analysed by frequency analysis, chi-square, t-test, one-way ANOVA, factor analysis, reliability analysis, duster analysis and discriminant analysis. Results of study were as follows. There appeared six different attitudes of money among the undergraduates investigated: money as a means of seizing power, money as a life pursuit, money as a tool for rational consumption, money as a barometer of success, money as a cause of anxiety, and distrust. The undergraduates showed several different attitudes of money according to gender, major, age and pocket money. Cluster analysis divided subjects into three groups by attitude toward money : low dependent group, moderately dependent group and high dependent group. Three groups of subjects classified by attitudes of money were different from one another in dining-out behavior as well. The low money-dependent group mainly spent less than 5,000 won on a dining-out, and relied on their own experience and recommendation from others on a dining-out information. In contrast, the high money-dependent group spent 20,000 won or more on dining-out, and the distribution of subjects acquiring dining-out information from various channels in that group was significantly higher than other groups.

A Study on the Eating Behaviors and Characteristics of Consumption Propensities on Dining out as Perceived by Silver Generation in Seoul (서울지역 실버고객들의 외식식습관과 소비행동 속성에 관한 연구)

  • This study concentrated on the dining out consumption behaviors, dining out selection attributes, and changes in eating habits of silver generation. Total 216 residents in metropolitan area were employed for statistical analysing. The results are as follows. First, as the result of t-test and ANOVA showed that female and higher academic background tended to regularly take high level of fruits, vegetables, meat, and fish eating habits. These results identified that dining out culture and dietary lifestyle are closely linked. Second, as the result of difference in dining out consumption attitudes on eating habit of silver generation, consumers who have better eating behaviors tended to consider the physical environment, variety of menu, and service quality when they choose a restaurant. Third, as the result of analysis on changes in dining out consumption behavior based on eating behavior of silver consumers, groups differences were found from only the source for information on dining out business and standard variable in selection of dining out business. Fourth, physical environment, variety of menu, business quality, and service were indicated as significant selection attributes of dining out among silver peoples. Fifth, dining out consumption behaviors of silver consumers were developed through newspapers, magazines, and previous visiting experiences. In conclusion, the results of present study showed that silver consumers tend to select a restaurant based on word-of-mouth and various factors related to experiences. Hence, various promotional activities are necessary for the business succession.

A Study on the Dining Out Consumption Behavior of Working Women Based on Lifestyle - Focused on Daejeon City - (라이프스타일에 따른 직장여성의 외식소비행태에 관한 연구 - 대전지역을 중심으로 -)

  • The purpose of this study is to analyze dining out consumption behavior of working women based on their lifestyle. To do this, demonstrative research was conducted on studying how the behavior of working women differs according to their lifestyle. The questionnaires developed for this study were distributed to 350 working women living in Daejeon City. A total of 310 copies of the questionnaire were used for analysis, and the statistical analysis was completed using SPSS(ver 12.0) for descriptive analysis, factor analysis and cluster analysis. A total of 4 factors were generated by factor analysis: Financial technology style, pursuit of dining out style, pursuit of popularity style, pursuit of brand style. The result of analyzing the difference between the consumer behavior by lifestyle of working women showed there were significant differences in 5 factors except time required for meal. To sum up, lifestyle of working women plays an important role in dining out consumption behavior. Therefore, marketing strategies about demographic characteristics and dining out consumption of working women are urgently needed.

Relationship between BMI and the Dining Out Behavior of University Students in the Seoul Area (대학생들의 BMI 지수에 따른 외식 식행동 - 서울지역을 중심으로)

  • A survey was conducted to determine the relationship between BMI and the dining out behaviors of 316 university students in Seoul area for May and September, 2006. The subjects included 114 males and 202 females. General characteristics and BMI determined that of the students 56 (17.7%) were underweight, 222 (70.3%)were normal, 23 (7.3%) were overweight, and 15 (4.7%) were obese. There were differences in BMI according to age, sex, and major. Students majoring in natural science and engineering were 58.3% and 51% normal weight, respectively, and the next most common weight class was overweight. The non smoking group showed had primarily normal weight subjects followed by underweight-subjects, but the smoking group had primarily normal weight subjects followed by overweight subjects (P<0.001). The frequency of dining out for breakfast significantly correlated with BMI (P<0.05). The group that frequently dined out for breakfast were primarily of normal weight followed by overweight subjects, but the group that rarely dined out for breakfast were primarily of normal weight followed by underweight subjects(21.4%). Groups whose criteria for selecting dining out meals were flavor and price showed a higher percentage of underweight subjects than other groups. The group whose motivations for choosing dining out meals were convenience and habit showed a higher percentage underweight subjects than other motivations. The group that selected the Western food menu for dining out showed a higher percentage of underweight subjects than other food menu groups. And, the groups that selected Japanese and Korean food were primarily of normal weight followed by underweight subjects, but the result was not significant.

  • The Dining-out industry should catch up with the rapid change of economic environment actively and achieve the objectives of the company. Therefore, the management of Dining-out industry should be focused on the customers' changeable behavior, which is the center of economic environment, and make customers satisfied as the first factor. The purpose of this study is to find out the relation between the customers' content and the growing of selling in Dining-out industry, to compare with the merit and the demerit of the Dining-out industry objectively, and finally to contribute the increasing of selling in Dining-out industry.

A Study on Pattern of Dining Behavior based on Dining-out Expense (외식비 소비지출에 따른 성인의 식행동 양상에 관한 연구)

  • Through a questionnaire survey of 607 respondents over 20 years old currently residing in Seoul, general conditions, items and amount of daily diet, preference of dining-out and instant food, and concern for health were surveyed and the results are as follows. A large portion of respondents, at 36.2% of all respondents, were 20 years old, 57.7% of them graduated from high school or over, and most of them(61.9%) were over middle-class level of living standard. More than half (50.9%) of whom paid less than 10% for dining-out took breakfast as a rule, and 38.3% of whom regularly took meals and 37.3% of them took their regular daily routines. But among whom spent more than 31% for dining-out 46.2% of them took snacks between meals every day. Also, among whom spent more then 31% for dining-out, about 25.6% of them usually dined out every day. On concerns for health, among whom spent less than 10% of dining-out expense, 53.9% of them took exercise almost every day and 32.8% for 30 minutes, and 34.6% of them were generally healthy and 67.5% of them had normal blood pressure. But among whom spent more than 31% for dining-out expenses, 10.3% of them were not healthy, 15.4% had higher blood pressure and 20.5% had lower blood pressure, thus those portion were relatively higher compared with the former group. From those research results, therefore, group who spent lower dining-out expenses were older people with lower educational and living level but regularly took breakfast and exercise. Thus, their daily schedules were routine and took regular meals with healthy condition. The group with lower dining-out expense took right food pattern and kept healthy condition, and, therefore, it implied that dining-out gave significant influence to food pattern of grown-ups. Therefore, nutrition education for grown-ups might be necessary again and our foods as a diet should be re-evaluated and re-highlighted. To formulate the practical nutrition education in early childhood, practical, systematic, and continuous nutrition education might be required and effective and multidimensional education programs should be developed. In addition, various menus of breakfast with diverse materials, wide range of nutrition, and being convenient and time-saving must be studied in the near future.

  • The family life cycle is a useful indicator of consumer behavior, as well as the family life cycle concept utilizes a combination of demographic and socioeconomic variables that best explains the changes in the construct of the family. The family decision-making research has frequently examined role relationship between husband and wife across stages and sub-decisions. The objective of this research is to measure children and parents' perceptions of the influence of the decision-making process for a family dining-out experience, and to determined the customers' choice behavior of restaurants according to isolated factors underlying the important attributes of the restaurants, and finally authors applied a market segmentation approach by capturing customers' preference of restaurant attributes in family dining-out situation and to investigated influence of the family decision making for family dining out in family life cycle. For practitioner, marketing implications are provided and recommendations for future research are also discussed.

The Study on Dining-out Behavior Ethnic Restaurants by Food-relateds of Undergraduate Students (대학생의 식생활 라이프스타일에 따른 에스닉 레스토랑의 외식행동 및 이용만족도)

  • The purpose of this study was to investigate dining-out behavior at ethnic restaurants and its relationship with ethnic restaurant satisfaction based on the food-related lifestyle (FRL) of undergraduate students. A total 306 of questionnaires were analyzed using SPSS ver. 12.0 package. The data were analysed using frequency, chi-square, one-way ANOVA, factor analysis and multiple regression analysis. According to the results of factor analysis, the FRL of undergraduate students categorized into health factor, taste factor, convenience factor and ethnic restaurant satisfaction was influenced by four elements: service & hygiene, food quality & convenience, atmosphere & image and unique culture. In addition, visiting frequency and visiting motivation of all dining-out behaviors at ethnic restaurants were significantly different and the FRL groups had differences in the influence of food quality & convenience, atmosphere & image and unique culture. Futhermore, the health factor of FRL was influenced by all elements of ethnic restaurant satisfaction. The findings indicate that ethnic restaurant owners should provide food with healthy ingredients in addition to unique culture and atmosphere to customers.

A Study of Female College Students' Behavior and Ideal Breakfast Types -II. Dining-out Behavior of Breakfast and Preference on Breakfast Menu- (여대생의 아침식사 실태와 이상적 아침식사 유형을 위한 연구 -II. 아침식사 외식양상과 아침식단에 대한 기호도-)

  • This study was carried out to investigate the dining-out behavior of breakfast and preference on the menu of female college students. 500 questionnaires were distributed and 417 were used for statistical analysis(SAS program). This survey was conducted from June, 2000 to October, 2000. 72.8% of the respondents thought there were problems in eating breakfast. The problems were 'skipping breakfast frequently(33.1%)', 'short eating time(20.9%)', 'simple menu(18.8%)'. Preference of dining-out breakfast menus were 'bread & milk(43.8%)', 'conventional menu(34.7%)', 'snack(15.5%)', soup or 'porridge(6.0%)'. A general preference of breakfast menus were conventional (63.7%), 'bread & milk(21.1%)', 'milk and breakfast cereal(8.7%)', 'soup or porridge(6.5%)'. Increase on the amount of monthly allowance decreased the preference of conventional type of breakfast(P<0.05). The questions about the breakfast were 'what is the best menus for breakfast(49.2%)', 'alternative to rice(17.1%)', 'the amounts of breakfast(12.1%)'. But there was no significant difference among these variables. In conclusion, development of convenient & well-balanced breakfast model and nutritional education are needed to increase the nutritional status of female college students.
