We investigated the effects of dietary lipid sources on growth and fatty acid composition of juvenile Chinese longsnout catfish. Triplicate groups of fish (initial average weight, 3.8 g) were fed four diets containing either fish oil (FO), soybean oil (SO), linseed oil (LO) and lauric acid (LA) for 10 weeks. There were no differences among the groups in body weight, feed intake, feed efficiency, protein efficiency ratio, and body proximate composition of fish fed the diets containing different lipid sources (P > 0.05) during the study. However, fatty acids compositions of the whole body were influenced by dietary lipid source. Fish fed the SO diet had high concentration of linoleic acid, whereas those of fish fed the LO diet were rich in linolenic acid and arachidonic acid. Fish fed the FO diet had significantly (P < 0.05) higher levels of monounsaturated fatty acids such as 18:1n-9 and 20:1n-9 than those of fish fed the SO and LO diets. Eicosapentaenoic acid (EPA; 20:5n-3) and docosahexaenoic acid (DHA; 22:6n-3) composition of body were not influenced by dietary lipid source. The results suggest that each of FO, SO, LO or LA can be used as a lipid source in the diets of Chinese longsnout catfish without any negative effects on growth and feed utilization and these data demonstrate the potential impact which dietary fat composition can change the body fatty acid profile.
Serum lipid levels and fatty acid composition of serum phospholipids(PL) were investigated in 24 healthy male subjects who consumed either corn oil(CO) rich In linoleic acid(LA), perilla oil(PO) rich in $\alpha$-linolenic acid($\alpha$-LNA), or canola oil acid(OA) as a major fat source fir 5 weeks. The PO and the CNO groups showed significant(P <0.05) increases in serum high density lipoprotein-cholesterol(HDL-C) levels and in ratios of HDL- C/total cholesterol(TC) compared with initial values measured at the beginning of the study. Significantly(p <0.05) increased concentrations of serum triglycerides(TG) ware observed after 5 weeks of the CO based diet compared with both its intial value and the concentration observed after 5 weeks with the PO-based diet. fatty acid composition of serum PL reflected changes in dietary fatty acid composition and metabolism. Compared with the initial levels, significandy increased contents of eicosapentaenoic acid(EPA) and docosahexaenoic acid(DHA) were observed in serum PL of the PO group and significantly increased contents of $\alpha$-LNA and EPA were observed in the CNO group. Arachidonic acid(AA) content of serum PL did not change in the CO group during the study period, although, the increase in LA was significant(P <0.05). Compared with the CO-based diet, both the PO and the CNO-based diets seem to have beneficial effects on atherosclerosis by influencing the serum lipid profile and fatty acid composition of serum PL.

The effects of potassium chromate (500ppm/500ppm), potassium dichromate (500ppm/500ppm), cobalt chloride (100ppm/10ppm), methylmercuric chloride (100ppm/10ppm) on the biosynthesis of phospholipid and their composition of fatty acids in E.coli and B.subtilis were analyzed. The contents of phosphatidylethanolamine, phosphatidylcholine, phosphatidylinositol, phosphatidylglycerol, cardiolipin and total lipids in treatment with metal compounds were lower to compare with the control. The major fatty acid utilized for biosynthesis of phospholipid was palmitic acid in control of E.coli and B.subtilis. However, in treatment with metal compounds, changes of fatty acid composition utilized for phospholipid formation were as follows. In E.coli major fatty acids were palimitic acid (ave. 26.26%) and cis-vaccenic acid (ave. 10.94%) in treatment with potassium chromate, palmitic acid (ave. 31.41%/31.42%) and stearic acid (ave. 17.92%/19.41%) in treatment with potassium dichromate and cobalt chloride. And in treatment with raethylmercuric chloride, palmitic acid (ave. 26.66%), stearic acid (ave. 15.50%) and cis-vaccenic acid (ave. 20.59%) were used in phospholipid formation. In B.subtilis, the major fatty acid was palmitoleic acid (ave. 15.29% /10.22%) in treatment with potassium chromate and cobalt chloride, and stearic acid (ave. 16.01%) in treatment with potassium dichromate. On the other hand, cis-vaccenic acid (ave. 9.09%), palmitic acid (ave. 17.23%), stearic acid (ave. 6.66%), myristic acid (ave. 6.34%) and lauric acid (ave. 4.75%) were analyzed into major fatty acids in treatment with methylmercuric chloride. As shown in results, specific fatty acid pattern was came out in treatment with metal compounds according to bacteria and treatments.
The effects of sardine oil(high in eicosapentaenoic acid : EPA) and tuna oil(high in docosahexaenoic acid : DHA, also high in EPA) on fatty acid composition of brain and learning ability were evaluated in male weanling Sprague-Dawley rats and compared with the effects of corn oil and beef tallow. Animals assigned by randomized block design to one of the four experimental diet groups containing dietary lipid at 15%(w/w) level were given ad libitum for 7 weeks. Food intake and body weight gain of the fish oil groups were significantly lower than those of the corn oil and beef tallow groups. However, brain weights of the groups were not significantly different. In the brain fatty acid composition, the corn oil group showed high concentrations of n-6 fatty acids, the fish oil groups of n-3 fatty acids, and the beef tallow group of saturated fatty acids. Brain EPA and DHA contents of the fish oil groups showed significantly higher than the other groups while the brain ratio of saturated/monounsaturated/polyunsaturated fatty acid was controlled in a narrow range. In a maze test, the fish oil groups appeared to arrive at the goal faster than the corn oil and beef tallow groups. It explained that EPA in diets might efficiently convert to DHA resulting in DHA accumulation in brain tissue and might increase the learning performance as DHA did.

The present study was carried out in atheroscleorotic New Zealend white(NZW) rabbits. to evaluate the effect of dietary supplementation with Korean pinenut oil, on plasma total fatty acid composition. In study I, NZW rabbits were fed 10 weeks on a commercial chow diet supplemented with 5% of energy as fats(soybean oil or pinenut oil) or 10% of energy as fats(soybean oil or pinenut oil) with the addition of 1% cholesterol to the diet. Nineteen fatty acids ranged from myristic acid (14:0) to cervonic acid (22:6 ${\omega}3$) were identified in all the samples. The c5, c9, $c12{\sim}18$ : 3 acid was not reported in the fatty acid methyl ester profiles of each group because it was included in the linoleic acid peak. The major constitutent fatty acids in the chow diet group were linoleic acid, oleic acid, palmitic acid and ${\alpha}$-linolenic acid. In the cholesterol group, oleic acid, linoleic acid and palmitic acid were the major fatty acids. In plasma of cholesterol-fed animals, the levels of 16:1 ${\omega}$ 7 and 18:1 1 ${\omega}$ 9 were increased. Linoleic acid was the major fatty acid in soybean oil/cholesterol and pinenut oil/cholesterol groups. Plasma linoleic acid levels were significantly incresed from 4 to 6% by the supplementation of 5% soybean or 5% pinenut oil in the cholesterol diet for 5 weeks, compared to cholesterol group. Plasma 16 : 1 ${\omega}$ 7 levels in animals fed with 5 or 10% pinenut oils were significantly lower than in those fed cholesterol for 5 weeks. After 10 weeks on the soybean oil and pinenut oil diet there were no significant differences in the fatty acid composition. In study II, the fatty acid composition was not affected by the types or levels of oils supplemented for 5 weeks. After 10 weeks on the oil diets 16:1 ${\omega}$ 7 and 18:1 ${\omega}$ 9 were decreased in 10% soybean in oil/cholesterol and 10% pinenut oil/cholesterol groups, compared to cholesterol group.
The effects of dietary n-3 fatty acids, ${\alpha}$-linolenic acid (18:3), eicosapentaenoic acid (EPA, 20:5), and docosahexaenoic acid (DHA, 22:6), on brain phospholipid content and fatty acid composition were compared in rats fed with a diet containing constant ratios of saturated fatty acid/monounsaturated fatty acid/polyunsaturated fatty acid (PUFA) and n-3/n-6. The dietary fat in each diet was added at the level of 10%. In each diet, n-3 PUFA comprised two-thirds of the PUFA and the remaining one-third was linoleic acid (18:2). Dietary fat containing linoleic acid as the sole source of PUFA was also given to the control group. The content of brain phospholipid in the three n-3 PUFA groups was significantly lower than that of the linoleic acid group. This reduction was greater in the EPA and DHA groups than in the ${\alpha}$-linolenic acid group. The decrease in phospholipid content in rats fed n-3 fatty acid-rich diets was largely due to the decrease in the phosphatidylethanolamine fraction. Each dietary n-3 PUFA was found to affect the fatty acid composition of brain phospholipids; the most pronounced alteration was observed in phosphatidylethanolamine fraction. Furthermore, the proportion of DHA in the phosphatidylethanolamine fraction tended to be higher in the DHA group than in other PUFA groups. In conclusion, dietary ${\alpha}$-linolenic acid, EPA and DHA can influence the phospholipid content, phospholipid subclass, and fatty acid composition in rat brain.
This study was conducted to compare the lipid content and fatty acid composition of the Korean breast milk produced at 1, 2 and 3 months postpartum with the infant formula produced in Korea. The content of total lipids of the breast milk was low compared with the other data of Korean as well as foreign breast milk, and the content tended to reduce during the progress of lactation. The composition of fatty acids of the breast milk was characterized by low saturated fatty acids(SFA) and high $\omega$3 series of polyunsaturated fatty acids (PUFA), especially 20:5 and 22:6, so the P/S and $\omega$6/$\omega$3 rations were high. The formulas had more total lipids, triglycerides(TG) and phospholipids and less cholesterol(CHOL) and free fatty acids than the breast milk. The cholesterol content of the formulas was around 50% of that of the breast milk, so the CHOL/TG ratio was low. Although the formulas varied in fatty acid composition, the formulas had more SFA and $\omega$6 series of PUFA, but less monounsaturated fatty acids and $\omega$3 series of PUFA than the breast milk. This study shows that there are some differences in lipid content and fatty acid composition between breast milk and infant formula. Therefore, further studies needed to investigate the physiological effect of this difference on lipid metabolism of infants.

This study was designed to observe the effects of the feeding Platycodon grandiflorum, Codonopsis Ianceolata, perilla oil and safflower oil on the fatty acid composition in serum and liver of dietary hypercholesterolemic rats. Experimental groups mixed with 5% cellulose +10% lard (group 1, control group), 2% cholestyraemine +10% lard (group 2), 5% C. ianceolata+ 10% perilla oil (group 3), 5% P. grandiflorum+10% perilla oil (group 4), 5% C. ianceolata+10% safflower oil (group 5) and 5% P. grandiflorum+10% safflower oil (group 6) were administered to the male rats of the Sprague Dawley for 3 weeks. In the fatty arid compositions of serum total fatty arid, phospholipid, triglyceride and cholesteryl ester, the linoleic acid content was most in the PUFA and it was major fatty acid. Particularly, the other components except the phospholipid fraction in serum lipids were influenced by the fatty acid composition of the test lipids from the fact that linoleic acid content was remarkably more in the groups 5 and 6. In the fatty arid compositions of liver total fatty acid, phospholipid, triglyceride and cholesteryl ester, the linoleic acid content was more in the PUFA and so it was major fatty acid. Particularly, the arachidonic and eicosapentaenoic acid contents of phospholipid fraction in liver lipids were rather more. from the above research, fatty arid composition of serum and liver lipid components were influenced by the fatty acid composition of the test lipids from the fact that linoleic acid takes up the highest percentage.
Conjugated dienoic derivatives of linoleic acid(CLA) are a mixture of positional and geometric isomers of linoleic acid(LA). We previously found that CLA changes the fatty acid profile in chicken eggs and serum by decreasing monounsaturated fatty acids. Studies were conducted to explore the effects of CLA on fatty acid composition. Rabbits were fed a semisynthetic diet with or without CLA(0.5g CLA/rabbit/day) for 22 weeks. Compared to the control, rabbits fed CLA had significantly lower monounsaturated fatty acid levels(palmitoleic acid Cl6 : 1 by 50% and oleic acid Cl8 : 1, by 20%) in plasma lipids. We found similar differences in fatty acid composition in the liver and the aorta. The inhibitory effect of CLA on $\Delta$9 desaturation was confirmed in a human hepatoma cell line, Hep G2. CLA significantly decreased $\Delta$9 desaturation in 4-5 hours as shown by an increase in the ratio of Cl6 : 0 to C 16 1, This is apparently due to a decrease in $\Delta$9 desaturase(stearoyl-CoA desaturase, SCD) activity ; it was decreased more than 50%. These results, along with our previous findings, indicate that CLA is an inhibitor of $\Delta$9 desaturase in the liver.
This study was done to investigate whether dietary fats differing in their fatty acid compositions change hepatic mitochondrial lipid composition and thereby change adenine nucleotide translocase activity. Male Sprague-Dawley rats were fed 5 different wxperimental diets for 6 weeks, which were different in their fatty acid compositions. The dietary fats were beef tallow(BT), olive oil(OO), corn oil(CO), perilla oil(PO) and sardine oil(SO) as a source of saturated fatty acid, oleic acid, n-6 linoleic acid, n-3 $\alpha$-linolenic acid and n-3 eiocosapentaenoic acid+docosahexaenoic acid respectively. Body weight of PO group was significantly higher than that of either BT or SO group. This increase in body weight of PO group was due to the increase of food intake. Although there was no difference in liver weight, % liver weight per body weight of SO group was significantly higher than BT and OO groups. Analysis of mitochondrial lipid composition showed that dietary oils differing their fatty acid compositions altered mitochondrial fatty acid patterns, especially n-6/n-3 ratio, cholesterol/phospholipid ratio and phopsholipid composition. The n-6/n-3 ratio was highest in CO group but lowest in SO group whereas the ratio of Chol/PL was highest in SO group but lowest in CO group. Such changes in mitochondrial lipids did not lead to a significant alteration in the activities of adenine nucleotide translocase, which is embedded in mitochodrial inner membrane.
