Assessment of Dietary Intake of Preschool Children in Busan : Assessment Based on Food Group Intake (부산지역 학령전 아동의 식생활평가 : 식품군 식품섭취 상태평가)

  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively.   • o assess the food intake and the sodium and potassium intakes and urinary excretion of preschool children in Pusan and to evaluate the relationship among variables dietary behaviors food and nutrient intake and 24hr urinary sodium and potassium excretion were measured with 97 subjects. The mean sodium and potassium intakes were 1890. 1mg(82,2meq) and 1479.7mg(37.8meq) respectively. The mean urinary sodium and potassium excretion were 735.3mg(32.0meq) and 418.7mg(10.7meq) respectively. The mean sodium intake(p<0.01) and urinary excretion (p<0.001, p<0.001) energy intake(p<0.01) sodium intake and density (p<0.001, p<0.05) the food number and intake frequency of vegetable group consumed (p<0.01, p<0.01) dietary frequency score(p<0.05) and negative correlations with the food number and frequency of dairy group consumed (p<0.05 p<0.05) The urinary potassium excretion showed positive correlations with height and weight(p<0.05, p<0.01) urine volume and urinary creatinie excretion(p<0.01 p<0.001) potassium intake(p<0.05) food number and intake frequency of dairy group consumed (p<0.05, p<0.001). Based on the results urinary sodium excretion was related to age sodium intake and food intake of vegetable and dairy group and urinary potassium excretion was related to potassium intake and food intake of dairy group. So nutritional education is needed in order to decrease sodium intake especially from food intake of vegetable group when preschool children have less food intake of diary group,.

Nutrient Intake Assessment of Korean Elderly Living in Inje Area, According to Food Group Intake Frequency (인제지역 노인의 식품군 섭취 빈도에 따른 영양섭취량 조사)

  • The consumption of a wide variety of food groups is considered one of the key components of nutritional adequacy. The 2005 Dietary Guidelines for Koreans includes the consumption of a variety of foods from diverse food groups as a component of a normal diet. A survey was conducted to evaluate the relationship between the dietary diversity of food groups and nutrient intake in elderly patients (age 65 and above) at a rural area in Korea (Inje). 296 subjects (111 male and 185 female) were probed in a 3 day 24-recall dietary survey. Subjects were grouped according to food group intake frequency, based on six food groups (grain, meat/fish/legume/egg, vegetable, fat/oil, dairy, fruit). Nutritional quality was evaluated according to the numbers of nutrients under EAR (Estimated Average Requirements), and MAR (mean adequacy ratios). The frequency of elderly subjects consuming a meat/fish/legumes/egg food group less than once per day was 29.4%. The frequency of elderly subjects consuming fat/oil food group less than once per day was 65.8%. The percentage of subjects who did not eat dairy food was 88.8%, and that of subjects who did not eat fruit was 57.5%. A stepwise multiple regression analysis was used to develop models relating nutritional quality to possible food group intake frequency factors. Using the number of nutrients under EAR as a dependent variable, the meat/fish/legume/egg food group intake frequency explained 9.9% of variance, followed by the grain group, fat/oil group, dairy group, and vegetable and fruit group (Model $R^2$=0.260). For mean nutrient adequacy ratio as a dependent variable, the model $R^2$ was 0.326. The results of this study suggest that a highly varied diet in elderly might be associated with better nutritional quality, as assessed by nutrient intake. Accordingly, dietary guidelines should take into consideration nutritional characteristics in order to improve intake from all major food groups and to provide a variety of foods in the diet.

A Study on Nutrient Intake, Food Behavior and Health Conditions according to Food Intake Diversity in the Elderly in a Local City (식품 섭취의 다양성에 따른 중소도시 노인의 영양 및 식행동, 건강상태에 관한 연구)

  • This survey was carried out to study the difference of nutrient intake, food behavior and health condition according to food intake diversity in the elderly(age 65 year over and 74 year under) in a local city. A diet survey with one day 24-recall method was used for 216 subjects(65 male & 151 female). Based on a food intake diversity examination, including an evaluation of KDDS(Korean's Dietary Diversity Score ; counts the number of food groups consumed daily from total five food groups(cereal, meat, vegetable, dairy, and oil groups)), Meal Balance(apply the KDDS at breakfast, lunch and dinner), and DVS(Dietary Variety Score ; total number of foods consumed), subjects were clustered according to food intake diversity. Food intake diversity patterns of male and female clusters were classified each into threes(Male-low group(24.6%), middle group(33.8%), and high group(41.5%)/Female low group(41.7%) middle group(37.1%), and high group(21.2%). The averages of KDDS, Meal Balance and DVS were 3.0, 7.5, 14.8 in the male middle group, and 4.5, 10.2, 25.7 in the male high group, 2.7, 6.3, 14.3 in the female low group, 4.0, 8.6, 18.0 in the female middle group, and 4.5, 10.5, 25.7 in the female high group respectively. The average dairy intake of nutrients below the RDA were energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$and niacin in the male low group, energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$in the male middle group and energy, Ca, Vitamin B$_2$in the male high group but a little. Also the female low group had intakes of all nutrients except Vitamin C, the middle group had intakes of energy, protein, Ca, Fe, Vitamin A, Vitamin B$_2$, and the female high group had intakes of energy, Ca, Vitamin A below the RDA respectively. Food intake diversity increasing, nutrient intake, food behavior and health condition proved to be good. This study explored the usefulness of cluster analysis in identifying food intake diversity of three groups of the elderly in relation to their nutrient intake, food behavior and health conditions.

  • In this study, we examined food intake, sodium intake, and satiety rate for different methods of consuming soup. Healthy young women (n=50) participated in this study. The subjects ate cooked rice and soup using a method that they preferred and then they were assigned into separate intake groups based on how they consumed their rice and soup. One group consisted of women that ate their soup and cooked rice separately (separate intake group, n=30). The second group consisted of the women who mixed the rice and the soup prior to consumption (mixed intake group, n=20). The mixed intake group consumed significantly more food (p<0.001) and sodium (p<0.05) than the separate intake group. Because of the high water content and ease of swallowing for the mixed intake method, the eating rate of the mixed intake group (42.5 g/min) was significantly higher than that of the separate intake group (28.8 g/min) (p<0.01). However, despite consuming 79.5 g more food at lunch, the rates of satiety were not significantly different before and after eating between the mixed intake and separate intake group. Therefore, eating rate, consumption norms and concept of "clean one's bowl" may influence food intake and sodium intake. Although more studies are needed, these data suggest eating cooked rice and soup separately may help to control obesity and hypertension.

Nutrient intake and dietary quality of Korean adults according to chronic obstructive pulmonary disease (COPD): Based on the 2012~2014 Korea National Health and Nutrition Examination Survey

  • Purpose: Food intake of COPD patients decreases because of appetite loss, depression, and breathing problems while eating, which increase the likelihood of patients becoming malnourished. This study investigated the nutrient intake and dietary quality of people with and without COPD in Korea. Methods: There were 2,160 adults aged 50 and over who participated in the $5{\sim}6^{th}$ Korea National Health and Nutrition Examination Survey. The subjects were divided into the COPD group and non-COPD group according to the rate of forced expiratory volume at 1 second (FEV1) against forced vital capacity (FVC). Consumption of food and nutrients were calculated based on the nutrition examination survey. Statistical analyses were conducted using SPSS 19.0. Results: Among individuals in their 50s, intake of vitamin $B_1$ in the COPD group was significantly less than the NCOPD group, while intake of sodium in the COPD group was significantly greater than the NCOPD group. Among individuals in their 60s, the energy intake of the COPD group was significantly less than that of the NCOPD group. The COPD group showed significantly less intake of vitamin $B_1$ and vitamin C, but greater intake of sodium than the NCOPD group. In the group aged 70 and over, The COPD group had significantly less intake of vitamin $B_1$ than the NCOPD group and showed lower nutrient adequacy ratio values in protein, vitamin $B_1$, vitamin $B_2$, and iron than the NCOPD group. Conclusion: The COPD group consumed less energy and certain nutrients, and their dietary quality was poor compared to the NCOPD group. Thus, more detailed research is required to understand the concrete relationship between COPD and malnutrition.

Variation in the Estimated Value of Dietary Pb Intake among the General Korean Population: Domestic Research from 2008 to 2018 (일반인의 납 경구섭취량의 경시적 변화: 2008-2018년 국내자료를 중심으로)

  • Objectives: The study aims to examine the variation over roughly the past 10 years (from 2008 to 2018) in the estimated daily dietary Pb intake (Pb-D) based on the variations of daily intake amount and Pb content in respective food groups. The following factors were considered: (1) variation of estimated value of Pb-D, (2) Pb contents in each food group and (3) the most influential food group for dietary Pb intake. Methods: Estimated values of Pb-D were taken from food consumption by the food groups reported in the Korean National Health and Nutrition Survey and the Pb content of each food group as reported in 19 previous publications. Variation from 2008 to 2018 of Pb intake was calculated from daily intake amount and Pb content in each food group. Results: The survey showed that main Pb intake sources were the food groups 'meats and poultry' and 'fish and shellfish'. These food groups showed gradually increased Pb exposure from 2008 to 2018. Estimated daily Pb intake was 42.18 to 57.68 ㎍/day for men and 30.97 to 42.54 ㎍/day for women. Both men and women showed slightly increased dietary Pb intake from 2008 to 2018. The food groups 'meats and poultry' and 'fish and shellfish' proved the highest Pb intake food groups. Estimated Pb intake from 'meats and poultry' was 8.47 to 12.98 ㎍/day and that of 'fish and shellfish' was 5.63 to 10.10 ㎍/day. Conclusion: Over the past ten years, daily Pb intake has slightly increased in men and women. The food groups 'meats and poultry' and 'fish and shellfish' might be the main variation factors of Pb intake.

Dietary Behavior and Food Intake of Korean Farmers in Relation to Farmers' Syndrome and Gastro-Intestinal Problem

  • The purpose of this study was to compare dietary behavior and food intake in relation to physical complaints, such as farmer' syndrome(FS) and gastro-intestinal(GI) problem among Korean farmers. The questionnaire was composed of 24 Cornell Medical Index (CMI), 8 farmers' syndrome, and 5 GI problem questions. Food intake data was gathered by the semi-quantitative food frequency method. The subjects(male 226, female 415) who had FS and Gi problem were 12./8% and 8.3%, respectively. The physical complaints were higher in female and the elderly group. In the FS group, lower activity was seen that in normal groups. The lower health status and fatigues were found in the physical complaint groups. Dietary behavior showed low appetite in the physical complaint group, irregular lunch in FS, and irregular breakfast in GI problem group. Changes in dietary behavior were shown in the aspects of lower amount of intake quantity(40.8%), lower consumption in fat(32.8%) and salty(38.8%) foods, and diverse food items(47.8%). Quantity of food consumed was significantly different withing groups with FS. Kinds of food consumed, intake of protein source foods, milk and calcium and total animal foods were lower in the FS group. But milk and calcium source food and all animal food intakes were higher in the GID problem group. The results suggest that dietary behavior and food intake differ within the group of physical complaints.

A Study on the Influence of School Lunch Program on the Cariogenic Snack Food Intake of School Chilldren (학교급식이 아동의 우식성 간식품 취급에 미치는 영향에 관한 연구)

  • The objective of school lunch program is make a student to understand the basic knowledge on the diet through improved food patterns. Diet is an important factor in the development of dental caries. Generally, snack foods contain much sugar and cause dental caries to children. The diet education in the school lunch program should involve the control of snack food intake. In this study, the anlysis of influence of school lunch program on the cariogenic snack food intake of school children was carried out. The questionarie was given to 1,441 sixth-grade children of 5 school lunch group and 1,443 sixth-grade children of 5 non-school lunch group in Pusan on the intake of snack foods and toothbrushing after meals. Its were as follows : 1. No differences were observed snack food intake per day between school lunch group and non-school lunch group. 2. The snack food intake frequency at home in school lunch group was more frequent than that of non-school lunch group. However, in school, the result was reverse. 3. No difference was observed the frequency between school lunch group on the intake of cariogenic, foods, detergent foods, protective foods, cariogenic foods alone and cariogenic and detergent foods between meals. 4. The frequency of toothbrushing per day and the ratio of toothbrushing after meals in school lunch group was a little higher than that of non-school lunch group. 5. No difference was observed on the ratio of toothbrushing after snack food intake between school lunch group and non-school lunch group. 6. The influence of school lunch program on the cariogenic food intake in school children was little significant for its goodness. 7. The improvement of education on snack food take and toothbrushing after meals to shool children was recommended.

Dietary Self-Efficacy and Dietary Behaviors by Eating Areas according to Perceived Dietary Habit Levels related to Sodium Intake (나트륨 섭취 인지수준에 따른 식사 장소별 식행동 및 식이 자아효능감)

  • The purpose of this study was to compare dietary self-efficacy for sodium intake reduction and dietary behaviors by eating areas. Subjects (797 males and 767 females) were classified according to perceived dietary habit levels related to sodium intake (lowest: ${\leq}10$ (n=434), low: $11{\sim}{\leq}13$ (n=471), high: $14{\sim}{\leq}15$ (n=360), highest: $16{\leq}$ (n=299)) using an online survey with a sample that was geographically representative of the population. The highest group was significantly younger and had a higher student proportion than the lowest group. Dining contexts regarding home led to a significantly higher sodium intake in the highest group, but it was eating out for the lowest group. The highest group had a significantly lower intention to reduce sodium intake compared to the lowest group. In the home cooked meals, the highest group displayed a significantly lower cooking frequency, less effort with respect to a low sodium diet and cooking habits related to sodium intake as compared to the lowest group. Also, regarding eating out and food service, the highest group exhibited significantly lower efforts and dietary behaviors to reduce sodium intake than the lowest group. The dietary score for sodium reduction behavior in the highest group was significantly lower compared to the lowest group, for home cooked meals, eating out, as well as food service. Thus, dietary guidelines and nutrition education for the reduction of sodium intake by eating areas need to be developed and provided.
