A Study on Development and Validation of Food Frequncy Questionnaire for Koreans (식품섭취도 조사지의 개발 및 타당도 검증에 관한 연구)

  • The purpose of this study was to develop and validate the Food frequency questionnaire (FFQ) for dietary studies of Koreans. One hundred and five food items for the Food frequency questionnaire were selected based on information of frequently consumed foods from National Nutrition Survey Reports and on raw data from a dietary survey on diabetic patients. Frequency of consumption was determined through nine categories ranging from more than three times a day to almost never to indicate how often the specified amount of each food item was consumed during the past month. Three portion sizes were given for each food item(small, medium or large) with respect to a stated medium portion. Seventy-three healthy women served for the validation study. They completed both the FFQ and a 3-day diet record. The FFQ estimate of mean nutrient intake was higher by 10-20% than that of the 3-days diet record and the Spearman correlation coefficients between the two methods ranged from 0.26 to 0.59 . The degree of agreement was from 36% to 38% when nutrients intake assessed by the FFQ and 3day diet record were classified within the same quintile. On the whole , the result of this study seemed to be in good agreement with other studies. Therefore the FFQ developed in this study is considered to be a reliable tool in assessing the dietary habits of Korean.

Comparison of Dietary Intakes by 24-hr Dietary Recall, Dietary Record and Food Frequency Questionnaire among Elderly People (회상법, 기록법 및 식품섭취빈도조사법을 이용한 노인의 영양소 섭취 수준의 비교)

  • Nutrient intakes estimated using a 24-hr recall, a dirt record and a food frequency questionnaire(FFQ) were compared in a group of ninety-four elderly people(21 males, 73 females) in Cheongju, a city in Chung-Buk province. Mean intakes for energy, protein, Ca, p, Na, K thiamin and niacin obtained from the diet record were higher than those from the 24-hr recall. Mean intakes for energy, protein, Ca, P, Na, K thiamin, niacin and vitamin C from the FFQ were higher than those obtained from the 24-hr recall or the diet record. Correlation coefficients between the nutrient intake values from the 24-hr recall and those from the diet record ranged from 0.84 to 0.95 and were significantly correlated(p < 0.001). About 80% of the subjects in the lowest quintile by the 24-hr recall were also in the lowest two quintiles by the diet record. While the percentage fallen into the opposite category ranged from 0% to 15%. For most nutrients, at least 65% of the subjects when classified by the 24-hr recall fell into the same quintile when classified by the diet record, and the mean kappa value was 0.7. About 52% of the subjects in the lowest category by the 24-hr recall fell into the lowest two categories by FFQ. The mean percentage of the subjects in the lowest quintile by the diet record or in the lowest two quintiles by the FFQ was 51%. For most nutrients, at least 24% of each of the subjects when classified by both the 24-hr recall and the diet record fell into the same category when classified by the FFQ. The kappa values between the 24-hr recall or the diet recall and the FFQ were 0.17. These data indicate that in elderly subjects the 24-hr recall can provide very similar information to that obtained from the diet record but the FFQ can not provide good information if the right FFQ method is not used for only elderly subjects.

Validity for Classifying the Stages of Change among the Dietary Assessment Methods on Eating Fruits and Vegetables for American College Students

  • The objective of this study is to establish outcome validity for three instruments that assess whether subjects met recommendations for daily servings of fruits and vegetables for“Stage of Change”research. A convenience sample of 294 college students was recruited from introductory nutrition classes at Michigan State University in the United States. To measure servings of fruits and vegetables, separately, three types of methods (self-rated intake, 24-hour recall and food frequency) were used in comparison to the servings from a three-day food record, the criterion used. The outcome validity was assessed based on whether or not at least two servings of fruits and three servings of vegetables were reported. Validity was assessed by sensitivity, to measure the ability to detect low intakes, and by specificity, to measure ability to detect adequate intakes. Cohen's kappa was used as well to examine the agreement between the three methods and a three-day food record. The results showed, for fruits, the 24-hour recall had the best agreement (recall 0.54, self-rated : 0.31, food frequency : 0.29) with a three-day food record for servings consumed by people in pre-action or post-action stages. Sensitivity for fruit was also best using a recall (0.81). For vegetables, however, all three methods had low agreement (food frequency : 0.27, recall : 0.21, self-rated : 0.17) with the results of the three-day food record. Self-rated intakes for vegetables had the best sensitivity (0.66) and the food frequency had the best specificity (0.73). Therefore, researcher can use the 24-hour recall method to identify people who consume inadequate servings of fruit. To detect adequate vegetable intake, the food frequency was best of the three methods. Accuracy may be improved by probing for vegetables in mixed dishes and on sandwiches. Zine Status of Adult Female in the Taegu Region as Assessed by Dietary Intake and Urinary Excretion (섭취량과 배설량에 근거한 대구지역 성인여성의 아연 영양상태)

  • This study was intended to examine the zinc status of free-living adult women living in the Taegu region. Zine intake of 102 female subjects was measured by food frequency method for 3 consecutive days. Urinary zine was assessed from urine samples collected fir twenty four hours. Average dietary zinc intake of adult female subjects using food record was 5.9$\pm$1.8mg which was 49$\%$of Korean RDA. When zine intake by frequency method was higher than by food record. Average urinary zine intake by frequency method was higher than that by food record. Thus, it appeared that zinc intake by frequency method was higher than that by food record. Average urinary zinc excretion of 102 adult female subjects was 0.28$\pm$0.16mg, which belonged to marginal zinc deficiency range. Fifty nine of 102 subjects showed marginal zinc deficiency as assessed by urinary zinc excretion. If we compare the zinc status of adult female subjects by age group, zinc intake in the 50s was significantly higher than any other age groups. However, there were no significant differences in zinc status according to BMI groups and BMI groups. Significant correlations were found between zinc intake and energy, protein, carbohydrate and fat intake. Based on dietary zinc intake and urinary zinc, we concluded that zinc status of adult female living in the Taegu region is marginally deficient.

Development and Validation of Computerized Semiquantitative Food Frequency Questionnaire for Koreans with High-Risk of Hypercholesterolemia

  • Cardiovascular disease has the highest mortality rate in South Korea. Previous studies have reported that serum cholesterol level relates to intake of dietary fat and cholesterol. Therefore, in this study we developed a semiquantitative food frequency questionnaire (FFQ) for Koreans with a high-risk of hypercholesterolemia and to validate the FFQ. Semiquantitative FFQ, which includes 160 food items, reflects intakes of energy, fat, saturated fatty acid (SFA), monounsaturated fatty acid (MUPA), polyunsaturated fatty acid (PUPA) and cholesterol. We chose food items from the previous study of our research group (Suh 1999) which reported a nutritional status of Korean adults with normocholesterolemia, borderline and hypercholesterolemia. To validate the FFQ, we compared the results of the FFQ with those of a 3-day food record using a paired t-test. In addition, we calculated Pearson's and Spearmen's correlation coefficients. Intakes assessed by the FFQ and a 3-day food record were classified into quartile and the degree of agreement was obtained. Fifty-five participants responded for the validation study by completing both the FFQ and a 3-day food record. Pearson's correlation coefficients between estimated intakes by respective methods for energy, fat, SF A, MUPA, PUPA and cholesterol were 0.32,0.41,0.37,0.41,0.37 and 0.21, respectively. Spearman's correlation coefficients of energy, fat, SF A, MUPA, PUPA, cholesterol were 0.31, 0.44, 0.39, 0.46, 0.46, and 0.37, respectively. Nutrient densities in 1000kcal were compared. Pearson's correlation coefficient of cholesterol density increased and other values were similar with original values. The average degree of agreement was 67% that intakes of energy, fat, SF A, MUPA, PUPA and cholesterol assessed by the FFQ and 3-day food records were classified within the same and the adjacent quartile. On the average, 8% were misclassified into the extreme opposite quartile. The average of weighted kappa was 0.46. In conclusion, the FFQ developed in this study is considered to be a reliable tool to assess nutrient intakes for Koreans with a risk of hypercholesterolemia because the FFQ reflects the intakes of energy, fat, SFA, MUFA, PUPA, and cholesterol.

The Development and Validation of a Food Frequency Questionnaire to Assess Diets of Korean Adolescents (청소년용 식품섭취빈도 조사지의 개발 및 타당도 검증)

  • The purpose of this study was to develop and evaluate the validity of a food frequency questionnaire for Korean adolescents (FFQ-A) which could be used in clinical and epidemiological studies of the lifestyle and health of young people. The FFQ-A was designed to reflect the eating pattern of Korean adolescents, and was based on the 1998 Korean National Health and Nutrition Survey Reports. The FFQ-A had 25 (food categories. A total of 125 subjects (aged 13 to 15 years) was recruited from a randomly chosen middle school in a middle-income neighborhood in Anyang, South Korea. Each subject completed a FFQ-A, as well as a three-day dietary record. Data from 117 subjects (boys 47, girls 70) was used in the final analyses. Data on the nutrients was analyzed to estimate the Pearson correlations, Spearman rank-order correlations and agreement with categories. The validity of the FFQ-A was assessed relative to a three-day dietary record. The Pearson correlation coefficients for all the subjects were 0.94, 0.87, 0.77, 0.79, 0.49 and 0.68 for energy, carbohydrate, protein, fat, calcium, and iron, respectively. Similarly the Spearman rank-order correlation coefficients were 0.94, 0.85, 0.79, 0.81, 0.46, and 0.77 for energy, carbohydrate, protein, fat, calcium and iron, respectively. The Kappa values for energy, carbohydrate, protein, fat, calcium, and iron were 0.88, 0.67, 0.63, 0.67, 0.26, and 0.59, respectively. The percentage for misclassification of the lowest quartile into the highest quartile or vice versa ranged from 0% (energy, carbohydrate, or fat) to 16.7% (Vitamin C). Therefore the FFQ-A has a reasonable ability to assess the energy, carbohydrate, protein and fat intakes as estimated from a three-day dietary record of Korean adolescents. Development and Validation of a Semi-Quantitative Food Frequency Questionnaire to Evaluate Nutritional Status of Korean Elderl (노인의 영양상태 평가를 위한 반정량 식품섭취빈도조사지의 개발 및 타당도 검증)

  • Evaluation of nutritional status of the elderly imposes different problem from the other age groups. It is essential to use right instrument to assess food consumption. In Korea, the food frequency questionnaire has not been applied widely to elderly people. The purpose of this study is to assess the possibility of employing a semi-quantitative food frequency questionnaire(FFQ) for the Korean elderly to estimate nutrient and/or food intakes. In this study the FFQ for the elderly was developed and validated. The subjects were 144 free-living old women aged from 65 to 90. The FFQ was designed with 4 items for cereals and 86 items for other foods and with frequency of 12 intervals. Three portion sizes were given to select : 1/2 of standard amount, standard amount, and 11/2 of standard amount. ach subject was interviewed with newly developed FFQ form and same subjects were also involved to complete 3-day diet record. Nutrient intake was calculated using software program developed by our group. The nutrient intakes by the FFQ was validated by comparing the results with 3-day diet record. The FFQ estimated significantly higher mean intakes of energy, carbohydrate, protein, fats and vitamin C than did the diet reconrds(p<0.05). Pearson's correlation coefficients between two methods ranged from 0.21 for vitamin Q to 0.69 for alcohol(mean r=0.53). From 32% to 42% of the subjects were classified in the same quintile of nutrient intake by two methods, and 63% to 84% were classified in the same or adjacent quintile. On average, only 4% of the subjects were misclassified into extreme quitiles. The results indicate that the FFQ developed for the elderly in this study is useful for classifying individuals by rank and identifying groups at extremes of nutrient intakes.

An Evaluation of the Nutritional Status and the Desirable Time and Period for Dietary Record in Male High School Taekwondo Athletes (일부 남자 고등학교 태권도 선수들의 영양상태와 식이 조사 시점 및 조사 일수의 평가)

  • This study was done to evaluate the nutritional status and the desirable time and period for making dietary records in male high school Taekwondo athletes. Nutrient and flood intake was investigated using dietary record method during usual training (UT, for 29 days) and special training (ST, for 17 days) periods in nine Taekwondo athletes. Nutrient intake by 7-d and 3-d dietary record were compared to the standard nutrient intake, which was computed from dietary record during total period of UT or ST. Total mean energy intake was 2278 kcal, 84% of RDA, and mean intakes of riboflavin, Ca and Fe were less than 77% of RDA. Mean intakes of energy, carbohydrate, protein, fat, cholesterol, thiamin, riboflavin, and P decreased during ST (p < 0.05 or p < 0.01). Mean intakes of vegetables and grains ware the highest in the two periods and following were beverages and instant floods in UT, and meats and fruits in ST. During ST, mean intakes of mushrooms, meats and their products, and instant floods decreased, and sugars and sweets increased (p < 0.05 or p < 0.01). The contribution of grains and their products, instant floods, and meats and their products to mean intakes of energy, carbohydrate, protein and fat were high. In snacks, the contribution of instant floods, breads and confections and beverages was high. During UT, cholesterol intake at weeks 1 and 3, and intakes of protein, fat, thiamin, riboflavin and niacin at week 4 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Intakes of VA, Ca and Fe at week 1, and intakes of carbohydrates, cholesterol rind crude fiber at week 4 by 3-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). During ST, VC intake at week 5, and energy intake from carbohydrate and cholesterol intake at week 6 by 7-d dietary record were different from their standard intakes (p < 0.05 or p < 0.01). Cholesterol intake at week 7, and energy intake from carbohydrates and fat, and intakes of protein, fat, cholesterol and riboflavin by 3-d dietary record were different from their standard intakes (p < 0.05 o. p < 0.01). In conclusion, empty-calorie floods can be a main source of diet and snacks for Taekwondo athletes, and education about desirable nutrients and floods intakes is needed to help them control their weight. When investigating the nutritional status of Taekwondo athletes in the future, the 7-day or 3-day dietary record is desirable provided they are conducted in the milddle of each period artier distinguishing UT from ST period.

Selecting items of a food behavior checklist for the development of Nutrition Quotient (NQ) for children (어린이 영양지수 (NQ, Nutrition Quotient) 개발을 위한 평가항목 선정)

  • The objective of this study is to select a simple and easy measurable food behavior checklist for the development of Nutrition Quotient (NQ) for children, which reflects children's diet quality, as well as to evaluate the validity of the items in the food behavior checklist. The first 36 items in the checklist were established by an expert review, modifying the preliminary 50 items in the checklist, which had been selected by a literature review and the Korean National Health and Nutrition Examination Survey data. 341 children in 5th and 6th grades at an elementary school participated in a one-day dietary record survey, and later responded to 36 food behavior questions of the checklist. Pearson's correlation coefficients between the responses to the food behavior checklist items along with the mean nutrient intakes of the children were calculated. From the result, in which responses of food frequency and food behavior items showed certain association with the dietary record data, a second checklist with 22 items was selected. A survey was conducted by using the second checklist. 1,393 children in the 5th and 6th grades at 12 elementary schools in metropolitan cities, such as Seoul, Busan, Gwangju, Daegu, Daejeon, and Incheon, participated in the survey. Further, an exploratory factor analysis was performed. After the analysis, 19 items (10 items from food frequency and 9 items from food behavior) were finalized as the food behavior checklist items for the NQ. The final 19 food behavior checklist items were composed of 5 factors: 'Balance', 'Diversity', 'Moderation', 'Regularity', and 'Practice'. This study is a significant first trial to establish a comprehensive system for evaluating children's food habit and diet quality. This checklist might need continuous modification and revision reflecting the change of children's dietary life and the social environment.

An Analysis of the Causal Relationship between Knowledge and Behavior towards Food Hygiene among Child Consumers (아동소비자의 식품위생에 대한 지식과 행동의 인과관계 분석)

  • The purpose of this study was to investigate the levels of knowledge and behavior towards food hygiene among child consumers, examine the factors influencing them, and analyze the causal relationship between them. The data were collected from 521 elementary school students in Youngnam area by a self-administered questionnaire. Frequencies, Pearson's correlation analysis, multiple regression analyses, and path analysis were conducted by SPSS Windows. The results from this study were as follows. First, the level of knowledge towards food hygiene was not particularly high, and the level of behavior was somewhat more than the average. Second, the factors influencing the level of knowledge towards food hygiene were school record (upper and middle), and concerns about food hygiene. In addition, concerns about food hygiene, the frequency of food hygiene education in the family, and the level of knowledge towards food hygiene had an effect on the level of behavior towards food hygiene. Third, in the analysis of the causal relationship between the knowledge and behavior towards food hygiene, school record indirectly influenced the behavior towards food hygiene, and the frequency of food hygiene education in the family directly affected the behavior towards food hygiene. On the other hand, concerns about food hygiene had direct and indirect influence on the behavior towards food hygiene. In addition, the knowledge towards food hygiene showed a direct effect on the behavior towards food hygiene. These results imply that knowledge towards food hygiene is a very important factor to improve the children's behavior towards food hygiene and that parents' concerns and guidance for children are needed.
