식사대용 떡에 대한 주부들의 이용실태 및 기호도 조사 (A Study on the Housewives' Consumption Pattern and Preference of the Korean Rice Cake as a Substitute for Meal)

  • The purpose of this study was to investigate the housewives’ consumption pattern and preference of the Korean rice cake asa substitute for meal. The rate of housewives who had eaten rice cake as a substitute for meal were 75.30% and those who had not were 20.83%. Usually 62.03% of them ate rice cake for breakfast, and 34.21% did them within one time per a week. Reasons for eating rice cake for meal were investigated on ‘easy to eat(54.51%)’, ‘good taste (24.44%)’ and ‘healthy food(14.29%)’. The older housewives wanted healthy rice cake for meal and ate with tea and Kimchi(Dongchimi). The younger ones ate rice cake for meal with tea and milk. Thawing methods of frozen rice cake for meal were different between the older and the younger, respectively, steaming and using microwave. Kinds of rice cake as a substitute meal were Injeolmi(50.75%), Backsulgi(49.62%), Chaltteok (47.74%) and Yaksik(46.44).

  • 본 연구는 식사대용으로 떡의 소비촉진과 대중화를 위해 서비스, 품질 향상, 상품개발에 필요한 기초자료를 얻고자 서울지역에 거주하는 20세 이상의 성인 남녀를 대상으로 식사대용으로 전통떡류를 이용하는 현황과 구매에 미치는 선택속성을 분석하였다. 조사는 2013년 9월 23부터 9월 30일까지 약 7일간에 진행되었고 250부의 유효한 설문지를 최종분석에 사용하였다. 본 연구의 분석결과 인구통계학적 특성에서는 성별, 결혼, 연령대, 직업, 월평균 수입, 주거형태 등은 유의한 차이가 없었으나 대졸학력에서는 유의한 차이가 있었고 식사대용으로 전통떡을 구매 할 때에는 맛, 신선도, 매장의 편의성을 중요하게 생각하는 것으로 나타났다. 따라서 식사대용으로서 먹을 수 있는 다양한 상품이 개발된다면 전통 떡의 소비가 대중화되고 활성화될 것으로 기대된다.

메기, Silurus asotus 사료의 어분 대체 단백질원으로 대두박 및 실용사료 사육효능 평가 (Evaluation of Soybean Meal as a Partial Substitute for Fish Meal in Diet and Experimental Practical Diet for Growth in the Far Eastern Catfish (Silurus asotus))

  • Two feeding trials were conducted to evaluate the soybean meal as a substitute for the fish meal in diet (experiment I), and experimental practical diet and commercial diet (experiment II) for growth of far eastern catfish. In the experiment I, three replicate groups of juveniles (average weight 7.2 g) were fed one of diets containing 0, 10 and 20% soybean meals for 66 days. Survival and final mean weight were not significantly affected by dietary soybean meal levels. No significant differences were observed in feed efficiency, protein efficiency ratio and protein retention of fish fed between 0% (control diet) and 20% soybean meal diets. However, fish fed 10% soybean meal diet showed the lower feed efficiency, protein efficiency ratio and protein retention, and higher daily feed intake compared with fish fed control diet and 20% soybean meal diet. The contents of moisture, crude protein, crude lipid and ash in the whole body were not significantly affected by dietary soybean meal levels. In the experiment II, three replicate groups of juveniles (average weight 7.3 g) were fed either the formulated diet or commercial diet for 66 days. Survival and final mean weight were not significantly different among treatment. Significantly higher feed efficiency, protein efficiency ratio and protein retention, and lower daily feed intake were observed in fish fed experimental practical diet compared with fish fed commercial diet (P<0.05). Proximate compositions of the whole body were not significantly affected by diets. The results of these studies suggest that soybean meal can be used as a substitute for fish meal up to 20% in diet, and the dietary formulation used in the experiment II could be applied to the practical feed for far eastern catfish.

유청단백 함유 체중조절용 식사대체제를 이용한 4주 다이어트 프로그램이 과체중 및 비만 여성의 체중, 체지방 및 체성분에 미치는 영향 (Effects of Whey Protein-rich Meal Substitute in 4-Week Diet Trial on Body Weight, Body Fat, and Body Composition of Overweight or Obese Females)

  • The study was performed to investigate the effects of whey protein-rich meal substitute added with vitamins, minerals, and lactobacillus powder probiotics on weight loss, body fat, and body composition in 24 female volunteers for 4 weeks. Whey protein-rich meal substitute was consumed with low-fat, high calcium milk (1% fat, 260 mg/200 mL) twice a day. Subjects submitted 3-day diet records and a life-style questionnaire before the study. During the study, subjects were required to turn in a diet record every day and consume the meal substitute formula in the metabolic ward at C university for 4 weeks. Anthropometric measurements were carried out weekly by Inbody 7.0. The dietary intake and anthropometric data were analyzed to compare changes before and after the study by paired t-test with SPSS version 23.0. The subjects were mostly early 20's and either overweight or obese and highly motivated to lose weight. Most of the subjects consumed three meals per day regularly and spent mostly 10~15 minutes for a meal. Their caloric intake was relatively low and decreased from 1,360 kcal at week 0 to 1,100 kcal after 4 weeks. However, total protein intake increased while carbohydrate and fat intakes decreased (p<0.05) after the trial. Nine vitamin intakes after the study improved compared to those before the study (p<0.05). After the study, subjects showed lower body weight (-1.8 kg), body fat (-0.94 kg), percent body fat (-0.86%), as well as waist circumference (-4.52 cm), hip circumference (-0.44 cm), waist hip ratio (-0.05), and triceps skinfold thickness (-2.39 mm) compared to those at week 0 (p<0.05). Muscle mass tended to be less compared to week 0, although there was no significant differences between weeks 0 and 4. In conclusion, diet trial with whey protein-rich meal substitute induced weight loss and positively changed body fat parameters and body composition.

넙치 치어 배합사료의 어분 대체 단백질원으로서 탈지 대두박 이용성 (Utilization of Defatted Soybean Meal As a Substitute for Fish Meal in the Diet of Juvenile flounder (Paralichthys olivaceus))

  • 넙치 배합사료의 어분 대체 단백질원으로서 대두박의 이용성을 조사하기 위하여 평균체중 359인 넙치를 각 수조마다 20마리씩 2반복 수용하여 대두박 함량을 $0{\%}, 10{\%}, 20{\%}$$30{\%}$로 조절한 사료로 45일간 사육실험하였다. 그 결과, 모든 실험구에서 $100{\%}$의 생존율을 나타내었으며, 증중량은 대조구와 대두박 $10{\%}$ 첨가구간에는 차이가 없었지만, 대두박 $20{\%}$$30{\%}$ 첨가구는 대조구보다 유의하게 낮았다 (P < 0.05). 사료효율과 단백질효율은 사료의 대두박 첨가수준이 높을수록 감소하는 경향을 보였으나, 대조구와 대두박 $10{\%}$$20{\%}$ 첨가구간에 유의한 차이를 보이지 않았다(P > 0.05). 이와 반대로, 일일사료섭취율과 일일단백질섭취율은 사료의 대두박 첨가수준이 높을수록 증가하는 경향을 보였다. 어체간의 일반성분은 각 실험구간에 유의차가 없었으나 (P > 0.05), 사료의 대두박 첨가수준이 높을수록 단백질과 수분함량은 증가하고, 지질함량은 감소하였다. 혈장 총 콜레스테롤 농도는 사료의 대두박 첨가수준이 높을수록 감소하는 경향을 나타내었으나, 대조구와 대두박 $10{\%}$ 첨가구간에 유의차가 없었다 (P > 0.05) 혈장 GOT는 사료의 대두박 첨가수준이 높을수록 증가하는 경향을 보였다. 이상의 결과로부터, 본 실험 사료 조성으로 넙치 치어를 사육하였을 때, 어분 대체단백질원으로서 대두박을 사료의 $10{\%}$까지 첨가할 수 있을 것으로 판단된다.

쥐노래미 사료의 어분 대체 단백질원으로서 대부박 및 우모분의 이용성 (Evaluation of Soybean Meal or Feather Meal as a Partial Substitute for Fish Meal in Formulated Dists for Fat Cod)

  • 쥐노래미 사료의 어분 대체 단백질원으로서 대두박 및 우모분의 이용성을 검토하기 위해 어분을 주단백질원으로 한 대조사료와 대두박을 5%, 10%, 15% 및 20% 첨가한 실험구, 대두박 20% 첨가구에 제한적인 필수아미노산 보충구, 우모분을 5%, 10%, 15% 및 20% 첨가한 실험구, 그리고 대두박, 콘글루텐 밀, 육분, 혈분 및 우모분을 혼합하여 첨가한 실험구를 설정하여 11종의 실험사료를 설계하여 제조하였다. 21g 전후의 쥐노래미 치어를 2개월간 2반복으로 사육 실험한 결과, 증체율, 사료효율 및 단백질효율은 대두박을 20%까지 첨가한 실험구들에서 대두박 첨가비에 따라 다소 그 값이 낮아지기는 하였으나 대조구와 유의한 차이는 없었다(P>0.05). 또한 대두박 20% 첨가구에 필수아미노산 보충구도 대조구와 차이는 없었다(P>0.05). 그러나 우모분 첨가구들은 그 첨가비가 10%까지는 대조구와 차이가 없는 (P>0.05) 반면에 그 이상 첨가구들은 대조구보다 유의하게 낮은 값(P<0.05)을 보였다. 식물성 및 동물성 단백질원 혼합구는 대조구와 유의한 차이를 보이지 않았다(P>0.05). 이상의 결과로부터 대두박을 20% 첨가할 때 대조구 어분총량의 22%까지, 동물성 및 식물성 단백질 혼합 첨가시에는 대조구의 어분을 44%까지 대체할 수 있을 것으로 나타났다.

SESAME MEAL AS SOYBEAN MEAL SUBSTITUTE IN POULTRY DIETS II. LAYING HEN

  • The study on the nutritive value and the potential use of two kinds (local vs. import) of sesame meal (SSM) in layer diets as substitute for soybean meal (SBM) at 25, 50, and 75% was carried out. Three hundred and thirty six layers were kept individually on a battery cage and fed isonitrogenous diets, 16% crude protein (CP), for 252 days. The local and the imported SSM contained on air dry basis 35.7 and 36.3% CP, 24.7 and 9.1% ether extract (EE), respectively. Their amino acid contents are all lower than those reported by NRC (1984). The local material contained remarkably lower lysine (0.44 vs. 0.94), methionine + cystine (1.06 vs. 1.75) and threonine (0.52 vs. 1.22) than the imported meal. Imported SSM could be substituted for SBM as high as 50% in layer ration without statistically adverse effect on egg production, feed intake, body weight gain, average egg weight and egg size, while local SSM was inferior to the control in all aspects. However, when production performance of the groups fed either kind of SSM was compared, no significant difference was found at the two lower substitution levels.

FUNCTIONAL PROPERTIES OF SAENGSIK (SUBSTITUTE MEAL) FORMULATED WITH UNCOOKED CEREALS FERMENTED BY LACTIC ACID BACTERIA

  • The objective of this study was to improve the qualities of Saengsik (substitute meal formulated with uncooked cereal powder) such as functionality, safety and sensory preference by using Lactic Acid Bacteria (LAB). The optimum formulation of fermented Saengsik (substitute meal) was verified as $40\%$ of fermented brown rice, $13\%$ of fermented job tears, $5\%$ of yellow soybean, $5\%$ of waxy rice, $5\%$ of sorghum, $3\%$ of Seumok bean, $1\%$ of sesame, $3\%$ of barley, $2\%$ of red bean, $5\%$ of prosomillet, $2\%$ of foxtail millet, $9%$ of black rice, $3\%$ of buckwheat, $1\%$ of chestnut, $2\%$ of pumpkin, $3\%$ of peanut. Fermented Saengsik decreased significantly serum glucose in STZ-induced diabetic rats. However, serum lipid levels were not affected by fermented Saengsik. In rats fed with high-fat diet, serum triglyceride level was slightly decreased and the contents of liver triglyceride were significantly decreased by supplementation of fermented Saengsik.

치어기 넙치(Paralichthys olivaceus)의 저어분 사료 내 어분 대체원으로써 동애등에(Hermetia illucens)와 갈색거저리(Tenebrio molitor) 이용성 평가 (Evaluation of Black Soldier Fly Hermetia illucens and Mealworm Tenebrio molitor as a Fish Meal Substitute in a Low-Fish Meal Diet for Juvenile Olive Flounder Paralichthys olivaceus)

  • This study aimed to evaluate the effectivity of full-fat black soldier fly Hermetia illucens (BSF) and defatted mealworm Tenebrio molitor (MW) larvae meal as a fish meal (FM) substitute in a low-fish meal (LFM) diet for juvenile olive flounder Paralichthys olivaceus. The LFM diet comprising 45% FM with tankage meal, poultry byproduct meal, soy protein concentrate and wheat gluten was the control diet. Three experimental diets were 10% FM in Con with BSF, MW and a mixture of both at the same ratio (designated as B10, M10 and B5M5, respectively). Four hundred and forty-fourth juvenile P. olivaceus (34.3±0.1 g) were randomly distributed into 12 tanks (425 L) in three replicate groups per treatment and fed the experimental diets for 15 weeks. At the end of the feeding trial, growth performance, survival, biological indices (condition factor, viscerosomatic index, hepatosomatic index), non-specific immune responses (lysozyme, myeloperoxidase) and intestinal histology (villi length and goblet cells) were not significantly affected by treatments. Feed utilization was significantly decreased in M10 compared to the control group. Alanine aminotransferase level was significantly higher in M10 than in the control group. Glucose level was significantly lower in B10 than in the control group. These results suggest that BSF and MW can be used as FM substitutes. However, considering feed conversion ratio and AST level, MW availability is thought to be lower than that of BSF, and feeding fish with a diet containing MW for an extended period is thought to adversely affect fish growth.

Effect of Substitution of Groundnut with Soybean Meal at Varying Fish Meal and Protein Levels on Performance and Egg Quality of Layer Chickens

  • Two hundred and sixteen single comb white egg layers of the White Leghorn hens of 24 weeks of age were randomly allocated to 12 groups with three replications of six hens in each. Hens were fed in a factorial arrangement 2${\times}3{\times}$2, on diets containing either 16 or 18% crude protein with 0, 3 or 6% fish meal, replacing groundnut meal with soybean meal. Soybean meal incorporation improved (p<0.05) egg production, feed intake, feed conversion efficiency and egg weights. Egg quality traits of specific gravity, shape index, albumen index, yolk index and shell thickness remained unchanged. Laying performance was significantly (p<0.05) better at 18% than on 16% dietary protein level. Use of fish meal linearly improved egg production and feed conversion efficiency on diets supplemented with groundnut meal and fish meal incorporation showed quadratic improvement on feed conversion efficiency with SBM diets at 16% dietary protein level. Therefore, use of soybean meal as substitute of groundnut meal is recommended in layer diets, at 16% dietary protein level and fish meal incorporation could be beneficial for layers.
