Relationships between Actual Sanitary Management Practices during Production and Distribution, and Microbiological Quality of Dosirak Items Marketed in CVS (편의점 판매용 도시락 생산 및 유통과정시의 위생관리 실태와 시판제품에 대한 미생물적 품질간의 상관관계)

  • Sanitary management practices from 8 packaged meals (Dosirak) manufacturing establishments were surveyd during production and distribution and their microbiological quality of dosirak items marketed in CVS were analyzed. Correlation coefficients were calculated to deternine significant relationships between sanitary management practices and microbiological quality of packaged meals. The results of self evaluation on sanitary management practices indicated 'doing practice well' in personnel and equipment sanitation management but time-temperature control management were practiced satisfactorily only about 55% as compared with the managerial standard guidelines. Significant relationships between the status of actual sanitary management practices and microbiological quality of Dosirak items were not found, but general status of microbiological quality of Dosirak items revealed positive relationship with the size of operational structure and the status of time-temperature control management practices.

Effect of Reservoirs on Microbiological Water Qualities in a Drinking Water Distribution System

  • This study was undertaken to determine the effect of reservoirs on water quality and the distribution of pathogenic and indicator bacteria in a drinking water distribution system (total length 14km). Raw water, disinfected water, and water samples from the distribution system were subjected to physicochemical and microbiological analyses. Most factors encountered at each season included residual chloride, nitrate, turbidity, and phosphorus for heterotrophic bacterial distribution, and hardness, heterotrophic bacteria, sampling site, and DOC (dissolved organic carbon) for bacteria on selective media. No Salmonella or Shigella spp. were detected, but many colonies of opportunistic pathogens were found. Comparing tap water samples taken at similar distances from the water treatment plant, samples that had passed through a reservoir had a higher concentration of heterotrophic bacteria, and a higher rate of colony formation with 10 times as many bacteria on selective media. Based on the results with m-Endo agar, the water in reservoirs appeared safe; however, coliforms and opportunistic pathogenic bacteria such as Pseudomonas aeruginosa were identified on other selective media. This study illustrates that storage reservoirs in the drinking water distribution system have low microbiological water quality by opportunistic pathogens, and therefore, water quality must be controlled.

Distribution and Activity of Heterotrophic Bacterial Communities in Kyeonggi Bay, Korea (경기만의 종속영양 세균군집의 분포 및 활성)

  • The distribution of physicochemical environmental factors and microbiological factors was studied at 6 sampling sites in Kyeongge Bay of Yellow Sea from October 1989 to October 1990. The total bacterial number, saprophytic bacterial number, petroleum-degrading bacterial number, bacterial biomass, and bacterial secondary production were measured in the range of 0.09~1.24*10$^{7}$ cells/ml, 7~60000 CFUs/ml, 0~240 cells/ml, 14.16~301 .$\mu$g-C/l, and 0.13~11.82 mg-C/m$^{3}$/hr, respectively. The turnover times of $^{3}$H-glucose and $^{3}$H-acetate were in range of 6.5~6984 and 41~24897 hours, respectively. The spatial distribution of heterotrophic bacterial communities were hightly affected by influx of organic pollutants from the coastal area and the seawater exchange with offshore.

Distribution of bacterial biomass in the water column of Soyang lake (소양호 수중 생태계에서의 세균 생체물질량의 분포)

  • Microbiological parameters such as bacterial biovolume and biomass in Soyang Reservoir was statistically analyzed with the physico-chemical enviromental factors. Analysis of correlation and multiple regression showed that temperature affects most of microbiological parameters. Variations of total bacterial number, total bacterial biovolume and saprophyte number were highly correlatd with the concentrations of chlorophyll a and pheophytin a. Bacterial production by the $^{3}H$-thymidine incorporation rate was largely affected by Seston. It suggests that microbiological factors such as bacterial biovolume and bacterial biomass were controled by the concentration of seston and distribution of phytoplankton which acts as carbon and energy source for the bacterial community in the water column of Soyang Reservoir.

  • The distribution and excretion of DWC-751, a new cephalosporin, were examined in rats and mice following a single intravenous administration. DWC-751 in plasma and urine was determined by both HPLC and microbiological assay. The plasma concentration of the drug declined biexponentially. The initial and terminal half lives of the drug were 3.0 and 28.3 min, respectively. Binding of the drug to plasma proteins was 42.3%. The distribution volume at steacly-state ($Vd_{ss}$) was only 0.341 ι/kg, which is well correlated with the low n-octanol/water partition coefficient of the drug ($K_{o/w{\cong}0$) Actually, the drug was distributed to liver, kidney and lung with very low organ/plasma concentration ratio. The drug, was excreted mainly via renal excretion, i.e., the total($CL_T$) and apparent renal($CL_{R}$) clearances of the drug were 10.8 and 7.5 ml/min/kg, respectively.

  • Time-temperature relationship and microbiological quality were assessed and critical control points were identified through hazard analysis during the phases of production in two different packaged meals (Dosirak) manufacturing establishments (A, B:Kim Pab). Microbiological tests on foods, equipments and utensils were done according to standard procedures and included total plate count, coliforms and fecal coliforms. The results of the study are summarized as follows : time-temperature control management was needed because time-temperature abuse more than 8 hours at dangerous temperature zone (5-6$0^{\circ}C$) was observed from pre-preperation to distribution phase; Poor sanitary practices of employees were observed in hand washing and using disposable gloves; Microbiological analysis results of equirpments and utensils showed possible cross-contamination risks when foods were contacted with them; Kim Pab needed thorough quality control because it included various mixed ingredients of cooked and uncooked and had many apportunities of cross-contamination either by equipments or hands through whole production processes.

  • In order to investigate the distribution of an iron-oxidizing bacterium, Ferrobacillus ferrooxidans in Korea, the authors had carried out the chemical and microbiological analysis of mine water. The results obtained were as follows : 1. Ferrobacillus ferrooxidans concerned to leaching was isolated from 10 copper mine water out of 46 sites in Korea. 2. As the results of bacterial oxidation, the contents of sulfuric acid, ferric sulphate and copper in the bacteria-bearing solutions were higher than those in bacteria-free solutions.
