유통 중인 패류 단순가공품의 세균학적 위해요소 분석 (Bacteriological Hazard Analysis in Minimally Processed Shellfish Products Purchased from Korean Seafood Retail Outlets)

  • The purpose of this study was to assess bacteriological hazards in the following 7 kinds of minimally processed shellfish products purchased from Korean seafood retail outlets: raw oysters stored with seawater in polyethylene bags, frozen oysters, raw mussels, frozen mussels, boiled mussels, raw short-necked clam, and frozen short-necked clams, obtained from Korean seafood retail outlets. The total coliform and Escherichia coli counts determined in all samples were detected below regulation limit of the Korean government guidelines (Food Code). In addition, the high-risk bacterial pathogens, Listeria monocytogenes, Salmonella spp., and E. coli O157:H7 were not detected in any samples. Low-risk pathogens such as Staphylococcus aureus and Vibrio parahaemolyticus were detected at levels above $1.0{\times}10^2$ colony forming unit (CFU)/g in some minimally processed shellfish products. Notably, S. aureus was detected in all samples. Raw oysters stored with seawater in polyethylene bags, frozen oysters, and boiled blue mussels are commonly ingested without heating, and therefore these minimally processed shellfish products pose bacteriological hazards. The detection of S. aureus in all shellfish products, an organism indicative of poor personal hygiene, which can grow and multiply during distribution, indicates the necessity of improving the food safety of minimally processed shellfish products.

  • Minimally processed and refrigerated(MPR) 셀러드의 미생물학적 안전성 및 저장성 증대를 위하여 이산화염소와 citric acid 처리를 이용하여 실험한 결과 총 호기성 세균을 3.75 log cycle, 효모와 곰팡이는 3.47 log cycle, 대장균은 3.41 log cycle, Listeria 속은 3.38 log cycle 감소시켰다. 물로 세척한 경우는 샐러드의 미생물을 효과적으로 제거하지 못한 반면 화학적 처리구는 생육 미생물을 3.3-3.7 log cycle 감소시킴으로써 식품의 미생물학적 안전성을 보장해 주었다. 또한 샐러드 저장 중 효소적 갈변 원인인 polyphenoloxidase의 활성을 감소시켜 대구조에 비해서 49.73%의 감소를 보였다. 따라서 이산화염소와 citric acid를 이용한 화학적 처리는 MPR 샐러드의 위생학적 안전성을 보장해 주고 또한 갈변 효소의 활성을 억제함으로써 저장성을 증대시키고 유통기간 연장에 도움이 된다고 판단된다.

신선편의화된 김치제조용 배추의 품질 유지 (Quality Maintenance of Minimally Processed Chinese Cabbage for Kimchi Preparation)

  • The objective of this study was to investigate the effectiveness of preservatives for extending storage life and maintaining the quality of minimally processed Chinese cabbage. Cut Chinese cabbage was treated with either 1% CaCl2, 1% NaCl, 3% sucrose, 1% Ca-lactate, 1% vitamin C, 0.05% chitosan+1% vitamin C, 0.1% Sporix+1% vitamin C or hot water(6$0^{\circ}C$) and then packed with polyethylene film(60${\mu}{\textrm}{m}$) and stored at either 2$0^{\circ}C$ or 4$^{\circ}C$. To evaluate biochemical changes and quality of minimally processed Chinese cabbage, the samples were tested to determine the amount of vitamen C, titratable acidity, organic acid and fiber contents. Changes in color were also examined. The quality of kimchi prepared form minimally processed cabbage was affected by the treatments. REsults indicate that the minimally processed Chinese cabbage treated with either 1% CaCl2 at 2$0^{\circ}C$ and 4$^{\circ}C$ or 1% NaCl at 2$0^{\circ}C$ minimized biochemical changes in plant tissue and those treatments were most effective in maintaining product quality. The cabbage treated with 1% vitamin C or 1% NaCl at 4$^{\circ}C$ resulted in kimchi with improved color, texture, flavor and the best overall acceptability, as determined by a sensory test.

시판 어류 단순가공품의 세균학적 및 화학적 위해요소 분석 (Bacteriological and Chemical Hazard Analysis in Commercial Fish Products Minimally Processed)

  • The objective of this study was to analyze bacteriological and chemical hazards in minimally processed commercial fish products, including Hwangtae (freeze-dried pollock), dried anchovy, fermented anchovy sauce, and salted and dried yellow croaker. Escherichia coli counts from all samples were below the regulation limits of the Korean Ministry of Food and Drug Safety Standards on Quality of Seafood and Seafood Products (Food Code). However, the food poisoning bacterium Staphylococcus aureus was detected at levels above $1.0{\times}10^2$ colony forming units (CFU)/g in Hwangtae, dried anchovy, and salted and dried yellow croaker, which are commonly ingested without heating and pose bacteriological hazards. The detection of S. aureus, an organism indicative of poor personal hygiene, which can be introduced by employees and multiply during distribution, indicates the necessity of improving the sanitary control of minimally processed commercial fish products. Histamine was not detected from dried anchovy or salted and dried yellow croaker, but was detected at some of the highest levels in fermented anchovy sauces. This result suggests that efforts to reduce the amount of histamine in fermented anchovy sauces are required.

갈변저해제 처리에 따른 최소가공 연근(Nelumbo nucifera)의 품질 변화 (Quality Changes of Minimally Processed Lotus Root (Nelumbo nucifera) with Browning Inhibitors)

  • Minimally processed lotus root was stored at 4$^{\circ}C$ followed by dipping in distilled water, 3% ascorbic acid, 1% citric acid, 1% acetic acid, 1% EDTA, 2% lactic acid and 3% malic acid. The weight loss, color, soluble solids, pH, vitamin C and sensory characteristic were measured during storage period. The rate of weight loss decreased in the minimally processed lotus root. ΔL was changed slightly after 1 week storage and 1% acetic acid and 1% EDTA especially retarded a little retardation in browning during storage. Soluble solids was changed slightly, but decreased after 2 week storage in lotus root treated with 2% lactic acid and 3% malic acid. pH increased but vitamin C decreased during storage. The organoleptic quality of lotus root treated 1% EDTA showed the best by sensory evaluation.

최소가공 처리에 의한 양상추의 갈변 및 미생물 증식억제 효과 (Effect of inhibition on Browning and Microbial Growth of Minimally Processed Lettuce)

  • 갈변과 미생물 증식으로 인해 저하되는 양상추의 품질을 향상시키기 위해 양상추를 최소처리하여 이들 품질저하요인을 제어하고자 하였다. 갈변억제방법으로는 다양한 침지수에 따른 화학적인 방법을 사용하였고, 미생물 증식억제방법으로는 염소처리법과 전기분해수 그리고 유기산 처리에 의한 방법을 사용하였다. 그 결과 양상추의 갈변은 색도에 있어서 ascorbic acid 1$\%$와 citric acid 1$\%$ 혼합침지수로 처리하였을 때 초기 L 값이 5$\%$ 수준에서 유의적으로 가장 높았고,a 값은 5$\%$ 수준에서 유의적으로 가장 낮게 나타나 갈변억제효과를 보였다. 갈변의 지표라 할 수 있는 PPO 활성에 있어서도 ascorbic acid 1%와 citric acid 1% 혼합침지수로 처리하였을 때 양상추의 PPO 활성이 대조구에 비해 1.5배 감소되었다. 미생물증식은 염소처리의 경우 차염소산 나트륨을200 ppm 농도로 처리한 침지수가 3 log cycle 감소시켰고, 전기분해수의 경우 무격막 처리수가 미생물 증식을 2 log cycle 억제하여 미생물 증식억제에 효과적임을 알 수 있었다 또한 갈변억제에 효과적인 ascorbic acid와 citric acid 처리수로 침지하였을 때 저장 2일째 까지는 미생물 증식이 없었으나 저장 4일째 대조구는 7 log cycle 인데 비해 처리구는 3 log cycle 로 나타나 강력하게 미생물 증식을 억제하는 것임을 알 수 있었다. 이상의 연구결과로 볼 때 양상추의 갈변과 미생물 증식에 있어서 ascorbic acid와 citric acid로 최소 가공하는 것이 가장 바람직하다고 생각된다.

As a result, accelerated senescence and enzymatic browning OCCUI', Recent l'esearch on minimally processed fl'uits and vegetables has mainly focused on methods to inhibit browning, due to ban on use of sulfur dioxide, In order to retard or prevent these physiological changes, val'ious al ternatives, reducing agents. acidulants, chelating agents and inol'ganic sal ts have been evaluated for use on fresh cut fl'ui ts. Al though some agents were effective replacement for sulfur dioxide. consum$\textregistered$I'S demandless use of chemical on such products. Shel~ life of minimally processed products has been extended by inhibition of metabolic reactions associated with loss of quality and by inhibition of aerobic spoilage caused by wide variety of microorganisms. Appl ication of ~I.-\ packaging, including vacuum packaging, retards the rate of respiration, prevents growth of aerobic spoilage organisms, inhibits oxidation and color deterioration. Tissue softening is another major problem in minimally processed products because enzymes re 1 a ted to ce 11 wa 11 degrada t i on are not inactivated. Various treatments have been investigated for retardation of the softening of sliced products. Some studies have concentrated on the application of an active packaging system with ~I, l. packaging and calcium infi 1 tration as possible measures to retain firmness of processed products. In my opinion, one important step for production of minimally processed frui ts wi th favorabl e color of cut surface and firm texture is the selection of better cultivar. As the view, changing tendency of fresh color by apple cultivars and relationship between the tendency and PPO activity will be discussed in the seminar. In addition to the topic, research result on quality enhancement of fresh apple slices by heat shock treatment will be introduced.

MA포장 기술을 이용한 신선한 과실 및 채소류의 품질보존에 대한 연구 (Studies on Quality Maintenance of Fresh Fruit and Vegetables Using Modified Atmosphere Packaging)

  • The objective of this study was to investigate the methods of quality maintenance using modified atmosphere packaging with various quality preservatives at ambient and low temperatures. Ethylene(<1.0ppm) accumulated during modified atmosphere storage of Chinese cabbage using polyethylene film(60$\mu\textrm{m}$) caused quality deterioration such as yellowing and abscission. The addition of potassium permanganate reduced ethylene level and thus extended storage life of l00% at 20$^{\circ}C$ and 140% at 0$^{\circ}C$. To establish the storage conditions of minimally processed sit and vegetables, the experiment was conducted with various quality preservatives and packaging materials. Ceramic film(Zeolite 7%, 60$\mu\textrm{m}$) showed increasing storage life of 50%, reducing total microbial counts of 50% and keeping high appearance quality of minimally processed pears stored at 20$^{\circ}C$ and 0$^{\circ}C$. Minimally processed Chinese cabbage treated with l% CaCl2 at 20$^{\circ}C$, and 1% CaCl2 and 1% NaCl at 0$^{\circ}C$ has a longer storage life of 90% with good maketable quality. Treatment of 1% NaCl for cut Asian penis appeared increased storage life of 100%, decreased cut surface browning and the best overall acceptability by a sensory panel.

수확시기 및 가공전 보관기간이 신선 편이가공 양송이의 갈변에 미치는 영향 (Browning of Minimally Processed Mushrooms (Agaricus bisporus Sing.) as Affected by Picking Season and Postharvest Holding Time)

  • 원료 양송이의 수확시기 및 보관 기간에 따른 신선편이 가공적성을 비교키 위하여 계절별로 수확한 양송이를 각각2$^{\circ}C$ 에 보관하면서 주기적으로 일정량씩을 취하여 각각 절단한 후 5$^{\circ}C$ 에 방치하면서 표면의 갈변진행정도와 총 페놀화합물 함량 변화를 조사하였다. 원료 양송이의 호흡률은 여름철 및 가을철에 수확한 것이 9.55$\~$10.47 mLCO$_{2}$kg$\cdot$hr로 봄철 및 겨울철에 수확한 것에 비해 낮았고, 중량감소율은 봄에 수확한 양송이가 가장 낮았다. 원료상태로 보관한 양송이의 표면색은 여름철 양송이가 가장 빨리 변하였으며 봄, 가을 및 겨울철에 수확한 양송이는 비슷한 수준을 나타내었다. 절단 처리시 여름철 수확한 양송이가 다른 계절양송이에 비해 표면색 변화가 가장 심하였으며, 7일 이상 보관한 원형 양송이는 절단처리 전 표면색 열화 및 절단처리 후 빠른 갈변으로 인하여 가공적성이 낮았다.
