뽕잎가루 배합비에 따른 뽕잎절편의 무기질 함량 및 품질 특성 (Mineral contents and Properties of Pongihp Julpyun Preparation by Adding Mulberry Leaves Powder)

  • Mulberry leaves Julpyun(a traditional Korean rice cake) was prepared by adding Mulberry leaves powder in the ratio of 0%, 3%, 6% and 9% of rice flour, and tested for inorganic nature, physical function, chromaticity, and rheological properties. As the ratio of mulberry leaves powder increased, both the amounts of major inorganic ingredients, calcium, magnesium, and sodium, and the amounts of minor inorganic ingredients, iron, copper, and zinc, were increased proportionally. Thus, one way to increase the amounts of inorganic ingredients appeared to add mulberry leaves powder. In physical function test, control cake(0% mulberry leaves) showed the highest value in appearance and the value decreased as the amounts of mulberry leaves increased. In color, 3%-mulberry leaves-Julpyun gave the highest value followed by 0%, 6%, and 9%-Julpyun in order. The values of texture and moisture were decreased as the ratio of mulberry leaves powder increased. In rheometer test, 9%-mulberry leaves Julpyun showed the high values in hardness, cohesiveness, and brittleness. Therefore, as the amounts of mulberry leaves powder increased, the amounts of inorganic ingredients increased, but the value of physical function test decreased. 9% mulberry leaves Julpyun has the highest value of rheometer test.

뽕잎분말 첨가수준에 따른 증편의 품질특성 및 무기질 함량변화 (Quality and Changes of Mineral Contents in Jeung-pyun according to the Addition Levels of Mulberry Leaves Powder)

  • Jeung-pyun added to mulberry leaves powder was tested to prove in inorganic ingredients, physical function, chromaticity and rheometer. For cake, mulberry leaves powder were added to rice flour in the ratio of 0%, 1%, 2%, and 3% respectively. In inorganic ingredients test, the amounts of calcium, magnesium and potassium were increased according to adding levels of mulberry leaves powder. But the amounts of iron, copper and zinc, were not correlated with it. Calcium, magnesium and potassium are anti-hypertension inorganic substances. Thus, it is considered that food with plenty amountsz of inorganic ingredients is an effective diet for the patients who suffer from cardiovascular disease. In physical evalution test, the ratio of mulberry leaves powder was not correlated with the appearance of Jeung-pyun. The value of color decreased as the ratio of mulberry leaves powder increases. In texture, Jeung-pyun. The value of color decreased as the ratio of mulberry leaves power increase. In texture, Jeung-pyun added with 2% mulberry leaves powder had the highest value. In moisture, as the level of mulberry leaves powder was increased, the value was decreased. In rheometer test, Jeung-pyun 0% mulberry leaves powder had the highest value in hardness. While the ratio of mulberry leaves powder was not correlated with cohesiveness. Jeung-pyun added to 1% mulberry leaves powder had the highest value. In gummines and brittleness, 0% Jeung-pyun had the highest value, but the ratio was not correlate with cohesiveness.

뽕잎발효주가 Helicobacter pylori에 대해 미치는 항균활성 (Antimicrobial Activity against Helicobacter pylori from the Korean Rice Liquor Fermented with Mulberry leaves(Morus Alba L.))

  • To develop a new traditional rice liquor by using Mulberry leaves, the optimal condition of fermentation was investigated by addition of different concentrations (1%, 3%, and 5%) of Mulberry leaves powder in the raw rice mash. The efficiency of ethanol production of all conditioned groups were not inhibited by addition Mulberry leaves. The acceptability and antimicrobial activity of the Mulberry leaves liquor with different concentrations of Mulberry leaves powder were tested. The 3% Mulberry leaves liquor showed the best acceptability in the sensory evaluation test and color test. The antimicrobial activity against Helicobacter pylori were increased according to added amount of Mulberry leaves. It was supposed that the antimicrobial activity were affected by phenolic compound extracted from Mulberry leaves with ethanol produced during the fermentation period. The results suggested that the Mulberry leaves can be useful source to develop a new traditional rice liquor.

오디용 뽕나무 시설재배 수형별 뽕잎생산량과 누에 사육량 분석 (Analysis of Mulberry Leaves Yields and Amount of Silkworms raising in the Mulberry Tree-shape of Vinyl-house)

  • 본 연구는 오디수확 후 버려지는 뽕잎을 이용하여 누에를 사육할 경우 추가 소득을 올릴 수 있다는 점을 고려하여 시설하우스 내 오디용 뽕나무 유인방법별 오디수확 후 뽕잎생산량과 적정누에 사육량을 구명하기 위하여 수행하였다. 먼저 오디용 뽕나무 수형별 뽕잎생산량을 조사한 결과, 뽕나무 1주당 관행은 4.75 kg 생산되는데 비해 T자형은 7.07 kg, Y자형은 6.55 kg으로 각각 49%와 38% 더 생산되었다. 그리고 오디용 뽕나무 시설재배에서 생산되는 뽕잎으로 누에 1상자를 사육할 때 소요되는 뽕잎량은 평균 302 kg으로 분석되었다. 한편 대부분 농가에서 선호하는 5령 3일 누에를 기준으로 오디용 뽕나무 시설재배 수형별 누에사육량을 분석한 결과, 10 a당 생산되는 뽕잎으로 관행 3.24 상자인 반면, T자형 4.17상자, Y자형은 3.83 상자였으며, 평균 3.74 상자 사육 가능한 것으로 분석되었다.

뽕잎의 유산발효에 의한 Piperidine Alkaloid 함량 증진 (Enhancement of Piperidine Alkaloid Contents by Lactic Acid Fermentation of Mulberry Leaves (Morus alba L.))

  • This study was carried out to investigate solid-state fermentation method using cellulolytic lactic acid bacteria Lactobacillus plantarum TO-2100 in order to increase piperidine alkaloid contents in mulberry leaves. Piperidine alkaloid, one type of which include 1-deoxynojirimycin (1-DNJ), is known to inhibit ${\alpha}$-glycosidase activities. Using this strain, the optimal solid-state fermentation conditions on mulberry leaves powder were found as the following: initial moisture content, temperature and relative humidity were 20%, $30{\sim}35^{\circ}C$ and 60 ~ 70%, respectively, and the fermentation time was 72 hrs. The piperidine alkaloid contents in the fermented mulberry leaves were 2.86% on dry powder, which is 7-fold increase from that of non-fermented mulberry leaves. The 1-deoxynojirimycin contents after applying preparative thin layer chromatography were 2.02% on dry powder, which is 8 times higher than that of non-fermented mulberry leaves. ${\alpha}$-Glycosidase activities was inhibited by 65.7 ~ 84.7% with 3 ~ 5% treatments of hot-water extracts of the fermented mulberry leaves, compared to 16.2 ~ 40.2% with 3 ~ 5% treatments of hot-water extracts of non-fermented mulberry leaves. Therefore, the results suggest that solid-state fermentation method does indeed increase of piperidine alkaloid contents on mulberry leaves.

  • This study was conducted to investigate the effect of mulberry leaves on lipid metabolism in cho lesterol induced hypercholesterolemia rats. The mulberry treatment group showed decreases of serum lipid concentration compared with hyperlipidemic group. Also, Mulberry leaves inhibited the activity of HMG Co A reductase, increased lipase activity. In histopathological examination, abdominal aorta showed no critical lesions with mulberry leaves treatment. These results suggest that hypolipidemic effects of mulberry leaves on rats were the inhibition of cholesterol synthesis and acceleration of cholesterol catabolism in the liver. For human, serum triglyceride contents were more significantly decreased with treatment of mulberry leaves powder.

The Nutritive Value of Mulberry Leaves (Morus alba) and Partial Replacement of Cotton Seed in Rations on the Performance of Growing Vietnamese Cattle

  • The in vivo digestibility of mulberry leaves (Morus alba) and the effects of the partial replacement of cotton seed with fresh mulberry leaf in rations on the performance of growing Vietnamese cattle was investigated. For the in vivo digestibility trial, twenty castrated rams of Phanrang breed (a local prolific breed) with an initial weight of 23-25 kg, were first assigned to four groups according to weight and then randomly assigned to one of four dietary treatments to determine digestibility of nutrients in mulberry leaves (M. alba), natural Bermuda grass (Cynodon dactylon), elephant grass (Pennisetum purpureum) and buffalo grass (Panicum maximum cv. TD 58). All forages were cut and chopped daily before being offered (at 120% maintenance) to the sheep. In the feeding trial, 20 Laisind (Vietnam yellow cows${\times}$Red Sindhy bulls) crossbred bulls averaged 18 month old and 184 kg were used to investigate the effect of partial replacement of cottonseed in the diet by mulberry leaves on live weight gain and feed conversion rate. The experiment was a randomized complete block design with four levels of fresh mulberry leaves which varied from 0 to 15% of total dietary dry mater and five animals per treatment over an 84 day period. The in vivo digestion trial showed the superior quality of mulberry leaves compared with the grasses. Chemical analysis indicated that mulberry leaves had the highest CP and the lowest NDF contents (22.3 and 31.1% DM, respectively) among the four forages tested. Digestibility of DM and OM of the mulberry leaf (66.4 and 71.8%, respectively) was also the highest but that of CP (58.2%) and NDF (58.4%) was the lowest of the four forages evaluated (p<0.05). Consequently, the ME value and therefore net energy (NE) and unit feed for lactation (UFL) values of the mulberry leaves, which was estimated from chemical composition and digestibility values, were the highest among the forages investigated in the present study. Results of the feeding trial showed no treatment effect on average daily gain (ADG) of the cattle. The values were 554, 583, 565 and 568 g/d for animals in the diets of 0, 5, 10, and 15% mulberry leaves inclusion, respectively. Total DM intake of the animal was not affected by the treatment when expressed as kg/animal/d. However, when adjusted for metabolic weight of the animal the DM intake was reduced (p<0.05) as whole cottonseed was replaced by mulberry leaves in the ration. When the level of mulberry leaves in the ration increased from 5 to 15% of dietary DM at the expense of whole cottonseed, CP and ME intakes of the cattle were significantly decreased (p<0.05) and the feed to gain ratio reduced by 8 to 14% as compared with the control diet (p<0.05). Mulberry leaf is a good feed ingredient for ruminants because of its high level of crude protein and high digestibility of nutrients and energy. Mulberry leaves can be efficiently used as a source of protein supplement to replace cottonseed, a more expensive animal feeds ingredient, in the diet for Vietnamese cattle.

상엽, 상지 및 잠분 에탄올 추출물의 품종별 세포독성 효과 (Cytotoxicity of the ethanol extracts of mulberry leaves, branches and silkworm feces)

  • The cytotoxicity of the ethanol extracts of varietal samples of mulberry leaves and branches and silkworm feces was measured using CT-26 cells originated from murine metastatic colon cancer, using dye uptake assay in order to find potential anticancer agents. Two ethanol extracts (varietal mulberry leaves and mulberry branches) were prepared from 16 varietal mulberries and used as partial extract materials for the activity assay. Among these, the ethanol extracts from Shinkwangppong leaves showed a little anticancer activity, and those from Sugaeppong, Cheongunppong and Gumsulppong branches showed some anticancer activity as well as cytotoxicity. In contrast, ethanol extracts from freeze-dried, the 3rd day of 5th instar feces showed more potent anticancer activity than that of other mulberry leaves, mulberry branches and other 5th silkworm instar larva feces on the basis of high UV absorbance at 665 nm.

뽕잎분말의 첨가가 국수의 조리특성에 미치는 영향 (Effects of Mulberry Leaves Powder on the Cooking Characteristics of Noodle)

  • 뽕잎분말이 국수의 제면과 조리특성에 미치는 영향을 조사하기 위해서 뽕잎분말의 첨가량을 달리한 국수를 제조한 후에 색깔, 조직, 조리특성, 관능검사를 실시한 곁과는 아래와 같다. 1. 뽕잎국수의 색깔은 뽕잎분말의 첨가량이 많을수록 어둡고 진한 녹색을 띠었으며, 이로 인해서 밝기를 나타내는 L값은 감소하였고. 녹색을 나타내는-a 값은 증가하였다. 황색을 나타내는 b값은 모든 뽕잎국수가 대조구보다는 높았으나, 2% 첨가국수에서 가장 높았고 뽕잎분말의 첨가량이 증가할수록 감소하였다. 2. 뽕잎분말의 함량이 높은 국수일수록 조리한 면의 중량과 부피가 높게 나타났으며, 조리액의 탁도나 조리손실도 증가하는 것으로 나타났다. 3. 뽕잎분말을 첨가한 국수는 대조구와 비교해서 견고성에는 별 차이가 없었으나, 응집성과 탄력성은 떨어지고 부착성은 증가하는 것으로 나타났다. 4. 관능검사 결과, 뽕잎분말을 4%와 6% 첨가한 국수는 대조구와 비교해서 색상, 조직, 맛, 향에서 비슷한 기호도를 나타내었으나, 8%와 10%는 모든 면에서 낮은 점수를 얻었다.

한국산 품종별 뽕나무 잎(桑葉)의 화학적 성분 특성 (Varietal Comparison of Composition Characteristics in Several Mulberry Leaves Produced in Korea)

  • This study was conducted to investigate the possible use of Mulberry leaf as a functional supplement for Mulberry leaves. Chemical characteristics of mulberry leaf were investigated in eleven mulberry varieties, including Suwon, Chongil, Gumseol, Sugae, Yongchun, Hongol, Daeryk, Kaerang, Donae, Chungol and Kuksang20 varieties. The chemical compositions of minerals, amino acids, rutin as flavonol glucoside were analyzed by AOAC methods, HPLC method, amino acid analyzer, respectively. The results are as follows: In case of KukSang Mulberry leaf with spring harvest, the content of general components was crude protein 16.28%, carbohydrate 69.12%, crude fiber 9.15%, crude ash 8.44% and crude fat 2.57% respectively. It is noteworthy that ferrious content of KukSang mulberry leaves contains twice as great as that in other variety of mulberry leaves. The content of alanine was the highest among amino acids in all variety mulberry leaf. Spring leaf contain more utin content than fall leaf, among the variety, spring HongAll leaf rutin contain 260mg/100g as higher than that of fall ChungAll leaf 70mg/100g).
