Effect of Substitution of Chicken Breast for Alaska Pollack on Physico-chemical Characteristics and Quality in Surimi-like Materials Contained Different Cryoprotectants

  • Surimi-like samples were divided into four groups (C, surimi-like material made from Alaska Pollack with all cryoprotectant ingredients; T1, surimi-like material made from chicken breast with sugar and a sorbitol-free cryoprotectant; T2, surimi-like material made from chicken breast with a sugar-free cryoprotectant; T3, surimi-like material made from chicken breast with all cryoprotectant ingredients). Water and protein content were lower in Alaska Pollack surimi-like material (C) than those in chicken breast surimi-like material. Centrifuge loss and cooking loss were higher in C than those in chicken breast surimi-like material. Lipid oxidation (thiobarbituric acid reactive substances) was lower in T3 than others during storage. In a sensory evaluation, overall acceptability was significantly higher in C than those in other samples during storage. As a result, we found that the raw material composition (Alaska Pollack or chicken breast) had a large influence on the physico-chemical characteristics and quality of surimi-like materials, whereas cryoprotectant composition may have less influence on the physico-chemical characteristics and quality of surimi-like materials.

  • Some physico-chemical properties such as surface area, moisture content, cation exchange capacity, swelling rate, pH, viscosity and liquid limit have been determined for evaluation of Cabentonite deposit occurring in four localities; Yonil, Gampo, Haseo and Pohang, in Gyeongsang-do. Montmorillonite contents can be derived from surface area measurement. Enhancement of liquid limit values and swelling volume were observed in the samples which had higher exchangeable Na ion and finer particle-size distribution. Identical results were observed even in the Na-exchanged samples. This suggests that aggregation effects have a great influence on physico-chemical properties. Aggregation of montmorillonite were controlled not only burial depth but also composition of exchangeable cation. Consequently, sample occurred in Yonil area where has the greatest burial depth in the area show somewhat lower physico-chemical properties than those of samples occurred in the other localities. However, the basic test applied in this study provides very useful preliminary information relating to its commercial potential.

  • The physico-chemical properties of sediment, the species composition and biomass of benthic diatoms were investigated in the intertidal zone of Kum river estuary, from July 1983 to May 1984. Sandflat sediment was more oligotrophic than mudflat one. The diatom composition was primarily associated with sediment grain size. The dominant epipelic diatoms belonged to the centric diatoms such as Paralia sulcata and Thalassiosira spp., while the epipsammic diatoms consisted mainly of Achnanthes haukiana and Amphora sabyii. Diatom flora of sandflat was more significantly diverse than that of mudflat. Mean yearly crop of sandflat diatoms was 2.8 times greater than that of mudflat diatoms and peaked at March reflecting the greater availability of ammonia.

  • The physico-chemical properties and characteristics after thermal treatment of natural zeolite from Kampo area were studied. The physico-chemical properties of natural zeolite were studied by investigating chemical composition, x-ray diffraction pattern(XRD), scanning electronic microscope(SEM), infrared spec-tra(IR), thermal analysis(TA), and cation exchange capacity(C.E.C.), and the characteristics of natural zeo-lite after thermal treatment from $400^{\circ}C$ to $900^{\circ}C$ were compared with the natural zeolite. This study showed that clinoptilolite was the predominant costituent in natural zeolite, and the natural zeolite contained a little amount of quartz and feldspar as impurities. Zeolite mineral was seen to develop slowly by the natural alternation of volcanic ash considering the almost amorphous crystal structure. The more temperature of ther-mal treatment increased, the more adsorption capacity decreased, considering the fact that the hydroxy peak diminished on infrared spectra, and that cation exchange capacity also decreased distinctly.

Physico-chemical Composition and Anti-Allegic Effects of Walnut Oil (호두 기름의 성분조성과 항알레르기 효과)

  • This study was conducted to investigate physicochemical properties and anti-allergic properties of walnut oil. pH, acid value and iodine value of walnut oil were respectively 4.9, 0.8 and 117. Most of general composition of walnut oil was crude fat(99.9%) Vitamin A and E were 0.06 and 10.25mg/100g and the major fatty acids of walnut oil was linoleic acid(62.8%). Total phenolics and antiallergic effects of walnut oil were estimated 27mg% and 62.82% at the concentration of 0.5% ethanol walnut oil. These results suggest that the walnut oil can provide one of the valuable resource for the functional foods.

Effects of Soil Amendment Application on Soil Physico-chemical Properties and Yields of Summer Forage Crops in the Sukmoon Reclaimed Tidal Land in Korea (석문 간척지에서 돈분액비 및 석고처리가 여름철 사료작물 수량 및 토양이화학성에 미치는 영향)

  • Soil physico-chemical properties and microbial densities are affected by organic sources and soil amendment applied to improve soil environments or quality. Generally organic fertilizer effects on forage crops yield and soil properties are partly due to changes of soil composition. We investigated the effects of swine slurry (SS), swine slurry composting-biofilteration(SCB) and chemical fertilizer(F) with gypsum(G) combinations on soil physico-chemical properties and yields of summer forage crop in the Sukmoon reclaimed tidal land in Korea. The forage crops used in this experiment were corn and sorghum$\times$sudangrass hybrid(hereafter sorghum). Our results showed that the soil physico-chemical properties in the combined (F+G, SS+G, SCB+G) treatments increased contents of organic matter and exchangeable $Ca^{2+}$, but exchangeable $Na^+$, $K^+$ and $Mg^{2+}$ reduced to 1-10% for two forage crops, compared to non-combined (F, SS, SCB) treatment. The density of soil microorganism such as bacteria, actinomycetes and fungi, increased significantly by SS+G and SCB+G treatments. This means that treatment of combined organic fertilizer with G lowered salinity levels and improved with microbial growth. The combined treatments also increased the total yields 2.3-6.2% for corn and 2.0-8.7% for sorghum, compared with non-combined treatment. This experiment suggests the combined treatments could increase the total yields of summer forage crops and change of soil physico-chemical properties in the Sukmoon reclaimed tidal land in Korea.

  • The Korean fresh pork loins in vacuum packaged were obtained from three different Korean export companies and investigated for their proximate composition and physico-chemical characteristics. The fresh pork loins were stored at 2$^{\circ}C$ for 50 days and analyzed with an interval of 5∼10 days. In proximate analyses, the moisture contents of pork loins from the company I were higher, the protein contents from the company II were higher, and fat contents from the companies II and III were higher compared to those from the other companies. The pH of loins increased as storage period increased. The shear value of loins from company II showed significantly lower level and tended to decrease during storage. However, the water holding capacity and the purge loss of loins from company II increased during storage periods.

  • A series of settling tests and physico-chemical property tests on Saemankeum fine-cohesive sediments has been conducted in order to investigate the correlation between settling properties and their physico-chemical properties which are represented as grain size distribution, mineralogical composition, and percentage of organic contents. Experimental results of physico-chemical property tests show that Saemankeum sediments are relatively large in average grain size(52${\mu}{\textrm}{m}$), and contain very small organic materials(2%), and are dominantly composed of Quarts in mineralogical aspect which has relatively low cohesion. Thus, Saemankeum sediments might be specified as the sediments whose settling properties are more influenced by the gravity than the cohesion. This characteristics of Saemankeum sediments are found to lead to relatively small settling velocity in flocculated settling region in which increasing cohesion results in increasing settling velocity, while relatively large settling velocity in hindered settling region in which settling velocity decreases with increasing cohesion.

Evaluation of Biological and Physico-chemical Detoxification Methods for the Removal of Inhibitors in Lignocellulose Hydrolysate (목질계 바이오매스 가수분해물 중 발효저해 물질에 대한 생물학적 및 물리화학적 무독화 방법의 평가)

  • In this study, the detoxification methods were evaluated for the removal of fermentation inhibitors from synthetic solution containing the composition similar to the lignocellulosic hydrolysate. The enzyme peroxidase and laccase were used as a biological treatment method. The physico-chemical methods such as adsorption and ion exchange were applied by using activated charcoal and ion exchange resins. The enzyme peroxidase showed a excellent removal of phenolic compounds. The 5-HMF and furfural were completely removed by activated charcoal. The anion exchange resin showed a good result for detoxification of acetic acid. The activated charcoal and ion exchange resins lead to a loss of sugars more or less. The choice of detoxification method must be made after considering the composition and inhibitors in hydrolysates.

Studies on the Variation of Physico-Chemical Characteristics During Storage and Frying (고추씨 기름의 저장 및 가열에 따른 이화학적 변화에 관한 연구)

  • To observe the propability as the frying oil and oxidative stability of red pepper seed oil, some physico-chemical tests of the oil were examined during 21 days storage period at 5$^{\circ}C$, 15$^{\circ}C$ and 30$^{\circ}C$, and AOM value determined and after heating the oil at 180${\pm}$5$^{\circ}C$ for 40 hours with or without antioxidants. The analysis storage stability of red pepper seed oil showed that the quality of storage group at 5$^{\circ}C$ was almost as good as fresh oil, and the storage group at 30$^{\circ}C$ showed certain degree of rancidity. Change of physico-chemical characteristic during storage were so small so that storage stability of red pepper seed oil was found to be good. AOM stability of red pepper seed oil was 7 hours which is lower than other vegetable oil, but the degree of stability grew greatly after adding phenolic antioxidants, such on TBHQ or PG. As for the chemical change after heating continuously for 40 hours, acid value, peroxide value and refractive index increased, but iodine value decreased as the heating processed. The fatty acid composition also showed the remarkable reduction of linoleic acid. The addition of antioxidants resulted in the delay of oxidation, the degree of which was greater in TBHQ than in PG.
