Influence of Breed, Slaughter Weight and Gender on Chemical Composition of Beef. Part 2. Fatty Acid Composition of Fat in Rib Samples

  • The effect of slaughter weight and gender on fatty acid composition of homogenised rib samples of Hungarian Simmental (HS) and Holstein-Friesian (HF) cattle breeds was investigated. In the first experiment 22 Hungarian Simmental and 18 Holstein-Friesian cattle's meat, in the second experiment 15 females and 12 males Holstein-Friesian cattle's meat was analysed on fatty acid content. Saturated and mono- or polyunsaturated fatty acid profile did not seem to vary either by breed or by slaughter weight categories. The effect of gender, however, proved to be significant in influencing the quantity of polyunsaturated fatty acids, including linoleic and linolenic acids, as well as polyunsaturated fatty/saturated fatty acids (PUFA/SAFA) ratio. The amount of polyunsaturated fatty acids (PUFA) was higher in males than in females. Negative correlation was established between the quantity of PUFA and the amount of adipose tissue in rib samples.

Comparison between Berkshire and crossbreed on meat quality, and investigation of the relationship with fatty acid composition and meat quality

  • This study aimed to compare meat quality traits between Berkshire and crossbreed (Landrace × Yorkshire × Duroc), and to investigate the relationship between meat quality traits and fatty acid composition. 20 Berkshire and 20 crossbreed pigs were used to compare pork loin quality and to determine the relationship between measured variables. 23 variables were measured including proximate composition, pH, drip loss and cooking loss, Warner-Bratzler shear force, and fatty acid composition. Berkshire had higher moisture content, pH, water-holding capacity, saturated fatty acids, and redness than the crossbreed pig (p < 0.05). The fat content and polyunsaturated fatty acid were low (p < 0.05) in Berkshire. Correlation analysis showed a negatively correlation between moisture and fat content, and a positively correlation between saturated fatty acid and fat content. Moreover, saturated fatty acid and polyunsaturated fatty acid were negatively correlated. As a result of factor analysis and partial least square regression, saturated fatty acid and polyunsaturated fatty acid were estimated to be the main factors affecting quality characteristics of pork. Pig breed is associated with differences in meat quality, and fatty acid composition can have an effect on meat quality parameters.

  • Nutritive value of lipids was associated with composition of fatty acid. Unvalance diet may increase the incidence of diseases. Abundant of EPA and DHA, polyunsaturated fatty acid, were contained in fishes. Studies on 10 kinds of fishes, lipid components were determined. The results were as follows; 1. The content of crude fat 18.1% were high in eels, on the contrary the content of EPA 0.1% and DHA 0.1% were low. The content of crude fat were low in mackeral and sadrine, but the content of poly unsaturated fatty acid were high. 2. Iodine value 189 was high in sadrine, consequently, this results showed the interrelation between Iodine value and the content of polyunsaturated number. 3. The content of crude fat 1.3% in flounder(sole) were low and the content of cholesterol 20 mg% were lowest in present studies.

고도 불포화지방산으로 산화스트레스가 유도된 흰쥐의 뇌에서 비타민 E의 항산화효소 활성 및 CYP2E1 발현에 미치는 효과 (Vitamin E in vivo Studies on the Activity of Antioxidant Enzymes and CYP2E1 Expression in High PUFA-treated Brains)

  • 본 연구는 식이 불포화지방산으로 산화 스트레스가 유도된 쥐에게서 비타민 E의 항산화 효과를 알아보기 위해 4주령의 쥐 90마리를 1주일간 적응시킨 후, 정상식이를 섭취한 대조군(C), 식이 불포화지방산(올레산, 리놀레산, 리놀렌산, DHA)군, 식이 불포화지방산에 비타민 E를 첨가한 군으로 나누어 8주간 실시하였다. 체중변화는 대조군에 비하여 모든 군에서 증가하였고, 비타민 E 첨가군에서는 LA+비타민 E군을 제외한 모든 군에서 유의적인 체중증가가 나타났다. 뇌 마이크로좀의 지질과산화물 생성은 대조군에 비해 특히 LA, DHA 군에서 유의적으로 높은 경향을 보였다. 비타민 E 첨가 시 모든 군에서 첨가하지 않은 군에 비하여 지질과산화물 농도가 감소하였다. 뇌 세포질의 항산화 효소 SOD, GPx는 대조군에 비하여 모든 지방산 군에서 활성이 증가하였고 비타민 E 첨가 시 활성이 유의하게 감소하였다. 뇌 마이크로좀의 CYP2E1의 활성은 LNA군에서만 유의적으로 증가하고 비타민 E 첨가 시 LNAE군만이 유의하게 감소됨을 확인하였다. 이상의 실험결과, 식이 불포화지방산으로 유도된 뇌의 산화 스트레스는 비타민 E를 식이 불포화지방산과 같이 섭취함으로써 산화 스트레스 감소에 긍정적 영향을 미치는 것으로 나타났다.

Suppression of Fatty Acid Synthase by Dietary Polyunsaturated Fatty Acids is Mediated by Fat itself, not by Peroxidative Mechanism

  • This study examined the effect of dietary polyunsaturated fatty acids (PUFA) that were supplemented with vitamin E on lipid peroxidation, glutathione-dependent detoxifying enzyme system activity, and lipogenic fatty acid synthase (FAS) expression in rat liver. Male Sprague-Dawley rats were fed semipurified diets containing either 1% (w/w) corn oil or 10% each of beef tallow, corn oil, perilla oil, and fish oil for 4 wk. Alpha-tocopherol was supplemented in perilla oil (0.015%) and fish oil (0.019%). Hepatic thiobarbituric acid reactive substances, an estimate of lipid peroxidation, were not significantly different among the dietary groups. The glutathione peroxidase, glutathione reductase, and glutathione S-transferase activities were all elevated by the polyunsaturated fats, especially fish oil. The activity of FAS was reduced in the polyunsaturated fat-fed groups in the order of fish oil, perilla oil, and corn oil. The mRNA contents decreased in rats that were fed the 10% fat diets, particularly polyunsaturated fats, compared with the rats that were fed the 1% corn oil diet. Similarly, the inhibitory effect was the greatest in fish oil. These results suggest that lipid peroxidation can be minimized by vitamin E; PUFA in itself has a suppressive effect on lipogenic enzyme.

아마인유와 채종유 급여가 돼지고기의 n-3 지방산 함량에 미치는 영향 (Effect of Linseed Oil and Canola Oil Feeding on the n-3 Fatty Acid Content of Pork)

  • 본 연구는 아마인유와 채종유내에 들어있는 n-3 지방산의 돈육내 축적효과를 조사하기 위해 실시하였다. 3원 교잡종 수퇘지(체중 50 kg) 12마리를 이용하여서 4가지 실험사료중 한가지를 급여하였으며 실험사료는 우지, 아마인유, 채종유 또는 아마인유와 채종유의 혼합유를 함유하였다. 110 kg 시판 체중 도달시에 희생하였다. 아마인유와 채종유속에 들어있는 n-3 지방산은 돼지의 일당증체량, 사료섭취량 및 사료 효율에 아무런 영향을 미치지 않았다. 혈액 포화지방산 함량은 우지 첨가구가 가장 높았고 아마인유 첨가구, 채종유 첨가구 또는 혼합유 첨가구는 우지 첨가구보다 11.84%~16.54% 낮게 나타났다(p<0.05). 혈액 n-3 지방산 함량은 우지 첨가구에서는 거의 검출되지 않았으나 아마인유 첨가구, 채종유 첨가구 또는 혼합유 첨가구는 우지 첨가구보다 4.68%~12.83% 높게 나타났다(p<0.05). n-3 고도불포화지방산을 함유하는 3가지 지질 급원 모두는 우지 첨가구에 비교하여 돼지고기 삼겹살 내 $\alpha$-linolenic acid(18:3n-3) 함량을 9.43%까지 유의적으로 높였다(p<0.05). 아마인유 또는 채종유 급여는 삼겹살내 n-3:n-6 비율을 0.68로 높였으며 고도불포화지방산 :포화지방산 비율은 0.70으로 증가시켰다. 결론적으로 아마인유와 채종유 급여에 의해 n-3지방산이 강화된 새로운 기능성 돈육을 생산할 수 있음을 보여주었다.

  • Polyunsaturated fatty acids (PUFAs) play many important physiological roles on cellular process through the regulations of intracellular signaling. Recent clinical studies suggest that PUFAs such as n-3 fatty acids (docosahexaenoic acid, 22:6 and a-lnolenic acid, 18:3) may reduce the risk of incident Alzheimer's disease (AD). And also the reports regarding the decrease of n-3 fatty acids in AD brain support the correlation between PUFAs and AD. AD is a neurodegenerative disorder with pathological hallmarks of amyloid plaques and neurofibrillary tangles. (omitted)

Effect of Supplementing the Diet of Male Chickens With Oils Rich in n-6 Polyunsaturated Fatty Acids on the Fatty Acid Profiles of the Testis and Liver

  • Since the n-6 polyunsaturated fatty acid, docosatetraenoic acid (22:4n-6), is a major functional constituent of avian spermatozoa, the effects of two dietary oils rich in fatty acids which are metabolic precursors of 22:4n-6 on the fatty acid profiles of testicular lipids were investigated during a 39 week period of supplementation from 21 to 60 weeks of age. The effects on liver lipids were determined for comparison. Dietary supplementation of male chickens with Arasco Oil, which provides a large amount of arachidonic acid (20:4n-6), increased the proportion of 20:4n-6 in liver phospholipid by almost 2.5-fold. Although liver phospholipid normally contains very little 22:4n-6, this proportion was significantly increased as a result of Arasco feeding, indicating that the conversion of 20:4n-6 to 22:4n-6 was occurring. The phospholipid of the testis contains much higher proportions of 20:4n-6 and particularly of 22:4n-6 than the liver; supplementation with Arasco Oil significantly increased the proportions of both these polyunsaturates in testis phospholipid but the magnitude of this effect was much lower than that which occurred in the liver. Dietary supplementation with Evening Primrose Oil which contains ${\gamma}-linolenic $ acid (18:3n-6) resulted in significant increases in the proportions of 20:4n-6 and 22:4n-6 in liver phospholipid, although the extent of this increase was less than that produced by the Arasco Oil. By contrast, the feeding of Evening Primrose Oil did not alter the fatty acid composition of phospholipid in the testis. The findings raise the possibility that dietary supplementation with Arasco Oil may modulate the fatty acid profile of avian spermatozoa in a way which could potentially be beneficial for fertility. Moreover, the weights of the testes were almost doubled as a result of supplementation with Arasco Oil or Evening Primrose Oil.

Dietary Manipulation and Increase in Plasma Unsaturated Fatty Acids in Sheep

  • Forty three 7-month old, Barbados Black $Belly{\times}Malin$ crossbred sheep were used for the trial. They were allotted into three treatment groups fed varying levels of oil palm (Elaeis guineensis) frond pellets and commercial sheep pellets. Treatment diets were 80% commercial pellet+20 % (% w/w) oil palm frond pellet (CON group, n=15), 50% commercial pellet+50% oil palm frond pellet (% w/w) (HAF group, n=14) and 80% oil palm frond pellet+20% (% w/w) commercial pellet (OPF group, n=14). The plasma fatty acid profiles from these animals were compared before and after 14 weeks of feeding. Results showed that total unsaturated fatty acid content in the CON group had increased by 10% (p<0.01) from the pre-treatment values. All three treatment groups had significantly different plasma n-6 and n-3 polyunsaturated fatty acid contents at the end of the trial. In fact, the CON group had significantly (p<0.01) more n-6 polyunsaturated fatty acid content compared to its own initial values, and also the values from the HAF and OPF groups. However there was a significant (p<0.01) decline in plasma n-3 polyunsaturated fatty acids in all groups. The final total unsaturated to saturated fatty acid content ratio was significantly (p<0.01) highest in the CON group, demonstrating the high plasma unsaturated fatty acid content in these animals. This study shows the plasma unsaturated fatty acids in sheep can be increased by dietary manipulation.

Membrane Lipids of a Marine Ciliate Protozoan Uronema marinum

  • Lipid composition and fatty acid composition were characterized in the membrane of a marine ciliate protozoan (Uronema marinum). Phospholipids accounted for 70% of total lipid, and the remainder was neutral lipids. Total phospholipids were separated as phosphatidylcholine $(24.26\%)$, phosphatidylethanolamine $(22.21\%)$, phosphatidylinositol $(6.14\%)$, phosphatidyl­serne $(5.11\%)$, cardiolipin $(3.07\%)$ and unidentified phospholipids $(28.72\%)$ through high performance liquid chromatography (HPLC). Fatty acid composition of neutral lipids and phospholipids was determined by gas chromatography (GC), based solely on comparision of retention times. In neutral lipids, the most abundant fatty acid group was monounsaturated fatty acid $(48.3\% of total fatty acids)$ with oleic acid (18:1) and nervonic acid (24:1). Saturated fatty acids comprised $29.6\%$ of total fatty acids, with palmitic acid (16:0), stearic acid (18:0) ane myristic acid (14:0), and polyunsaturated fatty acid accounted for $33.0\%$ with $Di-homo-\gamma-linolenic$ acid (20:3) and linoleic acid (18:2). Wherease phospholipids predominantly contained the fatty acid group in the following order: polyunsaturated fatty acids $(52.7\%\;of\;total\;fatty\;acids)$ with linoleic acid (18:2) and $\gamma-linolenic$ acid (18:3) > monounsaturated fatty acids $(28.5\%\;of\;total\;fatty\;acids)$ with oleic acid (18:1) and palmitoleic acid (16:1) > saturated fatty acids $(25.5\%\;of\;total\;fatty\;acids)$ with palmitic acid (16:0), stearic acid (18:0) and myristic acid (14:0).
