비지와 막걸리박을 이용한 고식이섬유 빵의 제조 (Preparation of High-Fiber Bread with Soybean Curd Residue and Makkolli(Rice Wine) Residue)

  • 비지는 59.0%의 식이섬유를 함유하였고 막걸리박은 26.0%의 식이섬유를 gakdb하였다. 밀가루에 비지나 막걸리박을 10% 혼합하여 빵을 만들어 제빵 특성을 100% 밀가루빵과 비교하였다. 비지나 막걸리박을 10% 혼합하였을 때 반죽의 수분 흡수율과 빵의 무게는 증가하였으나 빵의 부피는 40% 정도 r마소하였다. 관능검사 결과 비지빵과 막걸리빵의 색깔, 모양, 속결의 질감 등은 100% 밀가루빵에 비하여 품질이 떨어졌다. 비지빵의 단백질 함량은 밀가루빵의 13.5%에서 15.4%로 증가하였고, 막걸리빵의 경우 16.4%로 증가하였다. 빵의 식이섬유 함량은 비지빵의 겨우 밀가루빵의 3배, 막걸리빵의 경우 2배로 증가하였다.

현미(玄米)의 도정(搗精) 및 취반(炊飯) 과정중 BHC 잔류분(殘留分)의 제거(除去) (Elimination of BHC Residues in the Polishing and Cooking Processes of Brown Rice)

  • BHC를 살포하여 재배한 현미(玄米)(BHC잔류량 0.3 ppm)의 도정(搗精), 세미(洗米), 및 취반(炊飯)중 BHC 잔류량(殘留量)을 분석하여 그의 행방을 추적한 결과는 다음과 같다. 1) 현미의 도정(搗精)중 BHC는 10분도미에서 8%, 7분도미에서 20%가 잔류하였다. 2) 쌀의 세척(洗滌)중 10분도미에서는 34%, 7분도미에서는 31%가 잔류하였다. 3) 재래식 취반(炊飯)과 전기밥솥에 의한 취반중 10분도미에서는 각각 86%, 77%, 7분도미에서는 각각 69%, 41%가 잔류하였다. 4) 전체적으로 보아 현미로부터 밥으로의 BHC 이행률(移行率)은 10분도미에서 2.3%, 7분도미에서 4.3%에 불과하였다. 따라서 현미의 조리(調理), 가공(加工)중 발생되는 BHC의 제거량(除去量)을 잔류농약 허용량(許容量)설정에 반영(反映)하여 야 될 것이다.

생산단계 참나물의 Carbendazim 잔류특성에 따른 노출평가 및 농약 잔류허용기준 개선 (Residues and Exposure Assessment of Carbendazim in Chamnamul on Field Trials for Revising Maximum Residue Limit in Korea)

  • BACKGROUND: The residue dissipation pattern of pesticides for agricultural products during the pre-harvest period after the final application is important to prevent the maximum residue limit (MRL) violations in domestic and export markets. The MRL violations of carbendazim are observed more often in chamnamul by pesticide residue management surveys by the Ministry of Food and Drug Safety. The residue level at the pre-harvest interval (PHI) and the residue dissipation constant from the critical good agricultural practice (cGAP) trials could be estimated to meet the MRL and pose a health risk to consumers. METHODS AND RESULTS: Chamnamuls were harvested at 0, 1, 3, 5, 7, 10, and 14 days after application of carbendazim in accordance with critical GAP. The residue analysis in chamnanul was performed by HPLC-DAD with the C18 column. The limit of quantitation of carbendazim was 0.04 mg/kg, and the recoveries were 74.4 - 95.8% at the two spiked levels (LOQ and 10LOQ) of carbendazim. The dissipation rates in chamnamul were calculated from the residues at the sampling days by statistical method at a 95% confidence level. The biological half-lives of residual carbendazim in the field trials 1 and 2 were 4.9 and 4.4 days, respectively. CONCLUSION(S): In this dissipation study, the residue concentrations at the recommended PHI were higher than the established MRL in Korea. Therefore, the MRL is proposed based on the residue data sets from the trials conducted at the same cGAP and the dietary exposure assessment.

고농도 paraquat 잔류 과원토양에서의 콩과 보리 생육 및 작물 잔류 (Growth and crop residue of soybean and barley grown at high paraquat level of the orchard soil)

  • 작물 생육에 끼치는 토양 잔류 Paraquat의 영향을 검토하고, 더불어 작물 재배 전후의 paraquat 토양 잔류량 변화와 작물체 중 잔류량을 조사하였다. 1996년도 우리나라 과원 paraquat 토양 잔류량 조사에서 최고 수준인 30.2 ppm을 나타낸 사과원 토양에서 생육시킨 콩(품종: 알천콩)과 보리(품종: 사천6호)의 약해, 입모수 및 초장에 대한 paraquat의 영향은 없었다. 토양 잔류량은 파종일에 약 $9{\sim}9.8$ ppm 수준이었으며, 90일간의 재배기간 중 약간 더 감소되었다. 또한 작물체내 paraquat 잔류량은 모두 0.5 ppm 검출한계 미만이었다. 한편 파종일에 토양잔류량을 약 $27{\sim}32$ ppm으로 강화시켰던 토양에서의 콩(품종: 단엽콩)과 보리(품종: 탑골보리)의 생육도 paraquat에 의하여 영향을 받지 않았으며, 작물체내 잔류량도 0.5 ppm 검출한께 미만이었다. Paraquat 토양 잔류량은 파종후 30일 동안 크게 변하지 않았다. 이상의 실험 결과는 paraquat 토양 잔류량 30 ppm 수은 후 작물 생육에 영향을 끼치지 않으며, 또한 현재 우리나라 과원 토양에서의 작물이 재배될 경우 작물 생육 및 잔류에 있어서 문제가 없음을 시사하여 주었다.

  • 수도용 제초제 butachlor의 작물잔류성을 조사할 목적으로 주산단지 및 광주, 대구, 부산지역의 시장에서 쌀, 보리, 마늘 양파, 딸기 등 106점의 시료를 채취하여 잔류량을 분석하였다. 제초제 butachlor가 등록되어 있는 작물의 수확물 중 쌀 27점과 보리 15점에서 butachlor가 검출되지 않았으며, 또한 벼 재배 후 이모작으로 재배되는 작물인 마늘21점, 양파 18점, 딸기 18점에서도 검출되지 않았다.

밀감과피의 식이섬유 및 Bioflavonoid 정제 중 Phenthoate 잔류분의 제거 (Removal of Phenthoate Residues During the Preparation of Dietary Fiber and Bioflavonoid from Mandarin Peels)

  • Mandarin orange fruits were artificially contaminated with an organophosphorus insecticide phenthoate by dipping and the residue level of phenthoate was investigated during the purification steps of dietary fiber or bioflavonoid. The removal rate of phenthoate at 8 and 0.5 ppm levels was 98% in the total dietary fiber, 99% in the insoluble dietary fiber and 99.8% in the soluble dietary fiber preparations. Kuring the preparation of biflavonoid from peels at a 5 ppm pesticide level, the removal rate was 90% in the intermediate extract and 99.9% in the final extract. In conclusion, phenthoate residues in the peels of mandarin orange were mostly removed during the preparation processes of dietary fiber of bioflavonoid and its residue level would not raise any problem in safety aspects of the purified products.

Effects of dietary levels of tapioca residue on growth performance and carcass characteristics in Hanwoo steers

  • Objective: This study was conducted to investigate the effects of dietary levels of tapioca residue on growth performance, carcass characteristics, and meat composition in Hanwoo steers. Methods: Twenty-eight steers were randomly assigned to one of four dietary groups; T0 (0% tapioca residue), T6.7 (6.7% tapioca residue), T9 (9% tapioca residue), and T12 (12% tapioca residue). Results: Supplementation with tapioca residue had no effect on overall growth performance. The concentration of plasma total cholesterol was higher in T6.7 than in other treatments (p<0.05). Dietary levels of tapioca residue did not affect carcass yield or the quality traits of Hanwoo steers. The lightness, redness, and yellowness of the longissimus muscle of Hanwoo steers were higher in T6.7 than in other treatments (p<0.05). Cohesiveness, gumminess, chewiness, and resilience were lower in T6.7 than in other treatments (p<0.05). Conclusion: The results of the present study indicate that supplementation with tapioca residue does not exert any negative effects on growth performance, carcass characteristics, and meat composition in Hanwoo steers. However, as the dietary level of tapioca residue increased, the intake of concentrate intake decreased, and tapioca supplementation greater than 6.7% did not substantially improved the marbling score.

커피박과 목섬유를 이용한 중밀도섬유판의 제조 및 성능 평가 (Manufacture and Performance Evaluation of Medium-density Fiberboard Made with Coffee Bean Residue-Wood Fiber)

  • 본 연구에서는 수분 흡착효과가 있다고 알려진 커피박을 첨가하여 중밀도섬유판을 제조한 다음 물성과 강도특성을 조사하여 커피박의 중밀도섬유판 원료로써의 가능성을 확인하고자 하였다. 커피박은 주로 인스턴트커피 제조 시 많이 발생하는 찌꺼기인데 가수분해된 것을 전건무게 기준 3, 6, 9% 수준에서 목섬유와 혼합해 중밀도섬유판을 제조하였으며, 이 때 사용한 접착제는 요소수지접착제였다. 커피박과 목섬유를 섞은 중밀도섬유판에 대해 물성과 강도 특성 및 포름알데히드 방산량을 측정하였다. 커피박과 목섬유를 무작위로 섞어 제조한 중밀도섬유판의 휨강도와 박리강도는 모두 KS 기준보다 높게 나타났으며 커피박을 층으로 구성한 적층 성형구조 경우에는 모두 기준에 미달하였다. 제조된 중밀도섬유판의 흡수 두께팽창률은 시판용 중밀도섬유판보다 낮아 물리적 특성 면에서 현저히 개선됨을 보여주었다. 포름알데히드 방산량은 시판용 중밀도섬유판과 유사한 것으로 나타났으며 모두 KS 기준상의 $E_1$급에 부합하였다. 이런 결과는 커피박이 친환경 중밀도섬유판 제조 시 원재료로 활용될 수 있음을 보여주고 있으며 중밀도섬유판의 성능 향상을 위해서는 접착제와 커피박 간의 상호 접착성 및 커피박의 흡착성능 향상을 위한 전환방법에 대한 추가 연구가 요구된다.

Prevalence of Antibiotic Residues and Antibiotic Resistance in Isolates of Chicken Meat in Korea

  • The aim of study was to investigate the correlation between the level of 17 antibiotic residues and 6 antibiotic resistances of Escherichia coli isolates in chicken meats. A total of 58 chicken meats were collected from retail grocery stores in five provinces in Korea. The total detection rate of antibiotic residues was 45% (26 out of 58). Ten out of 17 antibiotics were detected in chicken meats. None of the antibiotics exceeded the maximum residue level (MRLs) in chicken established by the Ministry of Food and Drug Safety (MFDS). The most detected antibiotics were amoxicillin (15.5%), followed by enrofloxacin (12.1%) and sulfamethoxazole (10.3%). In a total of 58 chicken meats, 51 E. coli strains were isolated. E. coli isolates showed the highest resistance to ampicillin (75%), followed by tetracycline (69%), ciprofloxacin (65%), trimethoprim/sulfamethoxazole (41%), ceftiofur (22%), and amoxicillin/clavulanic acid (12%). The results of study showed basic information on relationship between antibiotic residue and resistance for 6 compounds in 13 chicken samples. Further investigation on the antibiotic resistance patterns of various bacteria species is needed to improve food safety.

Immune Responses in Broiler Chicks Fed Propolis Extraction Residue-supplemented Diets

  • This study was conducted to evaluate the effect of inclusion of propolis extraction residue in the feed of broilers from 1 to 21 d of age on phagocytic activity of macrophages, cutaneous basophil hypersensitivity response to phytohemagglutinin, antibody production against Newcastle disease, lymphoid organ weight and hematological profile and to determine the optimal level of inclusion. 120 chicks, reared in metabolism cages until 21 days of age, were distributed in a completely randomized design, with five treatments (0%, 1%, 2%, 3%, and 4% of propolis residue) and six replications. The relative weight of thymus and monocyte percentage were affected by propolis residue, with a quadratic response (p<0.05) and lowest values estimated at 2.38% and 2.49%, respectively. Changes in relative weight of cloacal bursa and spleen, percentage of lymphocyte, heterophil, basophil, eosinophil, and heterophil:lymphocyte ratio, antibody production against Newcastle disease, phagocytic activity of macrophages and the average number of phagocytosed erythrocytes were not observed. The nitric oxide production with regard to positive control (macrophages+erythrocytes) decreased linearly (p<0.05) with increased doses of propolis residue. The remaining variables of nitric oxide production (negative control - macrophages, and difference between the controls) were not affected by propolis residue. The cutaneous basophil hypersensitivity response to phytohemagglutinin as determined by the increase in interdigital skin thickness exhibited a quadratic response (p<0.05), which predicted a lower reaction response at a dose of 2.60% of propolis residue and highest reaction response after 43.05 hours of phytohemagglutinin injection. The inclusion of 1% to 4% of propolis extraction residue in broiler diets from 1 to 21 days of age was not able to improve the immune parameters, despite the modest changes in the relative weight in thymus, blood monocyte percentage, nitric oxide concentration, and interdigital reaction to phytohemagglutinin.
