증편 반죽의 냉동 가능성에 관한 연구 (A Study on Freezing Possibility of Jeung-Pyun Batter)

  • This study was carried out in order to investigate the possibility of frozen rice batter for the manufacturing of Jeung-pyun. Despite of its unique taste and texture, Jeung-pyun is not consumed much because it needs long time to make. The physicochemical, sensory, rheological and surface characteristics of Jeung-pyun were analyzed to develop the easy manufacture method. The storage condition of rice batter was used at -2$0^{\circ}C$ up to 4 weeks. Statistical data analysis was completed using a SAS program. The results are summarized as follow: The pH brix% and sugar content of all samples which added low-temperature tolerance raw yeast or regular raw yeast decreased during the fermentation. Kind of yeast did not influence on the moisture content of the Jeung-pyun batter. Specific volume and carbon dioxide evolution of Jeung-pyun batter were highest when the rice batter was frozen for 1 week regardless of the kind of yeast. Overall quality of frozen batter of Jeung-pyim at -2$0^{\circ}C$ for 4 weeks had the highest score among different samples. As the test results of mechanical characteristics, cohesiveness, gumminess, brittleness, hardness and springiness did not show any significant differences statistically. The result clearly suggests that freezing the rice batter is a possibile way to manufacture Jeung-pyun.

전통조리법으로 제조한 연근, 김, 깻잎 부각의 지방질과 색소 특성 (Characteristics on lipid and pigments of lotus root, dried laver, and perilla leaf bugak (Korean fried cuisine) made by Korean traditional recipe)

  • 찹쌀풀과 생참기름 또는 밀가루풀과 콩기름을 사용하여 제조한 연근, 김, 깻잎 부각의 텍스쳐, 지방질 산화, 색소를 평가하고 튀김유의 변화를 평가하였다. 찹쌀풀과 생참기름으로 제조한 연근, 김, 깻잎 부각이 밀가루풀과 콩기름으로 제조한 부각에 비하여 유의하게 높은 경도를 나타냈으며, 기름 흡수량은 다소 높았으나 공액이중산값과 아니시딘값으로 평가한 지방질 산화는 적었다. 부각 지방질의 산화 정도는 튀김유의 산화에 의해 결정되었으며 부각의 지방산 조성은 튀김유의 지방산 조성과 유사하였다. 김 부각과 깻잎 부각은 클로로필과 카로티노이드를 다량 함유하였으며 찹쌀풀과 생참기름 또는 밀가루풀과 콩기름 등 제조 방법은 부각의 색소 함량에 큰 영향을 주지 않았으며 찹쌀풀과 밀가루풀 등의 튀김옷은 김과 깻잎 색소가 기름으로 용출되는 것으로부터 보호해 주었다.

냉동 증편 반죽의 저장 온도 차이에 따른 증편의 품질 특성 (Quality Characteristics of Jeung-pyun Made Rice Batter Stored at Different Freezing Temperatures)

  • The quality of Jeung-pyun made with frozen rice batter was evaluated according to variations in the freezing temperature of the batter. The physicochemical sensory and rheological characteristics of Jeung-pyun were analyzed. The rice batter was stored at -20$^{\circ}C$, -40$^{\circ}C$, and -70$^{\circ}C$ for up to 4 weeks. Statistical data analysis was completed using the SAS program. The pH, and brix percentage of Jeung-pyun batter decreased during the fermentation. In carbon dioxide evolution during fermentation, the levels of the sample stored at -40$^{\circ}C$:, and -70$^{\circ}C$ for 3$\sim$4 weeks were significantly higher than that of the sample stored at -20$^{\circ}C$. The Jeung-pyun moisture content was not significantly affected by freezing temperature or storage times. Specific volume of Jeung-pyun made with rice batter stored at -40$^{\circ}C$, and -70$^{\circ}C$ for 4 weeks was significantly higher than that stored at -20$^{\circ}C$. In sensory evaluation of the stored sample for 4 weeks, the overall quality of Jeung-pyun was not significantly different between with the control and the -20$^{\circ}C$ sample, and between the control and the -40$^{\circ}C$ sample. Among the rheological properties measured with a rheometer on Jeung-pyun made with batter stored sample for 4 weeks at -20$^{\circ}C$, -40$^{\circ}C$ and unfrozen batter, the hardness was increased over the storage time, but the difference was not significant. In conclusion, the most suitable freezing temperature of the rice batter for the manufacture of Jeung-pyun was proposed to be -40$^{\circ}C$.

콩의 종류에 따른 증편의 품질특성 (The quality characteristics of Jeung-pyun made with different kinds of beans)

  • Jeung-pyun, a very popular fermented rice cake consumed in Korea, consists mainly of rice, rice wine (Tak-Ju), and sugar. The effects of addition of different beans on the quality characteristics of the batter and Jeung-pyun were investigated. Six different beans were mixed with the rice flour at levels of 5% and 10% of the rice flour weight, respectively. The addition of Back-tae, Huk-tae, Sori-tae, which are types of soybeans, and black gram significantly increased the batter volume and viscosity. However, the fermented Back-tae (Cheongguk-jang) was not effective at increasing the batter volume and viscosity. The buffering effect of the beans was very significant on the fermented batter, and the decrease in pH of the fermented batter made with beans was less than that of the control batter without beans. Additions of the soybeans and Cheongguk-jang were most effective for the buffering effect in the fermented batter. Although the Back-tae, Huk tae, and Sori-tae were different colors and shapes, they were all soybeans and exhibited similar effects on the Jeung-pyun batter. However, the effects of the beans were not significant on the Jeung-pyun. The volume and moisture content of the Jeung-pyun made with beans were not significantly different from the volume and moisture of the Jeung-pyun made without beans. The above results suggest that the addition of different soybeans, mung beans, and black gram significantly effects on the properties of Jeung-pyun batter, but not Jeung-pyun itself.

Study of quality characteristics in gluten-free rice batter according to ultra-high speed conditions

  • When baking, the proper blending or mixing of materials will affect the quality of the product. The mixing strength is important when establishing the optimal conditions for batter, and control of the mixing condition is accordingly an important factor. This study investigated the effects of the mixing speed and time on the quality characteristics of a gluten-free type of rice batter. The batter samples manufactured for this purpose are as follows: control (+) (wheat flour), control (-) (rice flour), T1 (1,800 rpm, 1 min), T2 (1,800 rpm, 2 min), T3 (1,800 rpm, 3 min), T4 (3,600 rpm, 1 min), T5 (3,600 rpm, 2 min), T6 (3,600 rpm, 3 min). In this study, rice flour was used in the T1 to T6 samples. The pH of the batter tended to be higher when the mixing speed was slower and the time was shorter depending on the ultra-high mixing conditions. The moisture content of T3 was highest, and there was no difference according to the ultra-high speed conditions. The specific volumes of the ultra-high mixing treatments were higher than those of the control samples. The relationship between the specific volume, hardness and springiness of rice bread according to the mixing speed and time was weak. Therefore, it is considered that the application of ultra-high speeds when manufacturing gluten-free batter can have a positive effect on improving the production efficiency by reducing the processing time.

품종별 쌀가루로 제조한 퀵 브래드 쌀 머핀의 가공성 비교 (A Comparative Study of the Processing Aptitudes of the Muffins Produced by Rice Cultivars)

  • This study was performed to compare the processing aptitudes of the rice muffins produced from the seven rice varieties, including Goami, Goami 2, Deuraechan, Baegjinju, Seolgaeng, Haiami and Hanareum, along with the use of hydroxypropyl methylcelluloses (HPMCs) as a replacement for the egg white. The water binding capacity of rice flours was significantly higher than that of wheat flour, but its fat binding capacity was lower than that of wheat flour (p<0.05). In the viscosity of the batter, Goami and Baegjinju were lower than that of the wheat flour. There was no significant difference in the specific gravity of Seolgaeng and the batter of wheat flour. The pH of all varieties except Goami 2 was higher than batter of wheat flour(p<0.05). Haiami flour produced higher muffin volume and specific volume compared with the wheat flour muffin. The textural characteristics, the muffins produced by Haiami and Hanareum flours had significantly lower hardness than the wheat flour muffin after 30 hours. All rice varieties except Gaomi 2 showed no significant difference compared to the wheat flour muffin in color, taste and texture (p<0.05). Furthermore, flavor of muffins produced from the Seolgaeng, Haiami and Hanareum flours tested higher than the wheat flour muffin. It was concluded that the rice varieties of Seolgaeng, Goami, Haiami and Hanareum were considered to be the most suitable rice cultivars for the rice muffins.

미강 추출 식이섬유 혼합물을 첨가한 돈육 유화물의 품질특성 (Quality Characteristics of Meat Batters Containing Dietary Fiber Extracted from Rice Bran)

  • 본 연구는 미강 추출 식이섬유 혼합물을 첨가하였을 경우 돈육 유화물의 이화학적 품질 특성을 조사하여 미강을 이용한 기능성 육제품의 활용성에 대한 연구를 실시하였다. 돈육 유화물의 일반성분은 첨가되는 미강 추출 식이섬유 함량이 높을수록 수분함량이 낮아지고 단백질, 지방, 회분함량은 증가하였으며, 식이섬유 첨가량이 적정 수준 이상 되면 수분함량이 낮아지고, 단백질과 회분함량이 높아졌다. pH는 가열 전과 가열 후 모두 처리구들이 대조구와 비교하여 높은 pH를 나타내었고, 가열 후 pH가 가열 전 pH보다 높게 나타났다. 색도는 가열 전 돈육 유화물의 명도와 적색도는 대조구와 비교하여 미강 추출 식이섬유를 첨가한 처리구들이 유의적으로 낮았으며, 황색도는 대조구가 처리구들보다 낮은 값을 나타내었다. 가열 후 돈육 유화물의 명도는 대조구가 미강 추출 식이섬유를 첨가한 처리구들과 비교하여 높은 값을 나타내었고, 황색도는 대조구가 처리구들보다 낮은 값을 나타내었다. 가열감량과 유화안정성도 수분리와 유분리 모두 대조구와 비교하여 모든 처리구에서 유의적으로 낮았으며, 점도도 미강 추출 식이섬유 6% 첨가구가 유의적으로 높은 것으로 나타났다. 경도, 응집성, 검성, 씹음성은 대조구와 비교하여 미강 추출 식이섬유 첨가구가 유의적으로 높게 나타났다. 따라서, 미강 추출 식이섬유 혼합물을 첨가하였을 때 이화학적 품질 특성이 우수한 결과를 보여, 최근 건강에 대한 높은 관심을 반영한 웰빙 식품에 활용한다면 현대인들이 선호할 것으로 기대된다.

올리고당이 쌀스폰지케이크의 특성에 미치는 영향 (The Effects of Oligosaccharides on the Quality Characteristics of Rice Flour Sponge Cakes)

  • 설탕의 50%를 이소말토올리고당 또는 프락토올리고당으로 대체한 쌀스폰지케이크의 품질 특성을 검토하였다. 올리고당을 사용한 스폰지케이크는 설탕만 사용한 대조군 스폰지케이크에 비해 반죽의 점도는 높고 비중은 낮았다. 올리고당 사용시 스폰지케이크의 굽기 손실은 감소하고 수분함량, 비체적, 부피 지수는 증가하였다. 스폰지케이크 표면 및 내부의 L값은 올리고당을 사용한 스폰지케이크가 대조군에 비해 낮아 더 어두운 스폰지케이크가 만들어진 것을 알 수 있었다. 올리고당을 사용한 스폰지케이크는 대조군에 비해 견고성, 씹힘성, 부서짐성이 낮아졌다. 관능검사에 의하면 올리고당을 사용한 스폰지케이크는 대조군에 비해 표면의 색이 진하고 단맛이 약하며 더 부드럽고 더 촉촉한 것으로 평가되었다. 선호도는 올리고당을 사용한 스폰지케이크가 대조군에 비해 높았으며 이소말토올리고당을 사용한 스폰지케이크가 가장 높은 선호도를 나타내었다.

증편반죽의 발효시간에 따른 이화학적 특성 변화 (Changes in Physicochemical Properties of Jeungpyon(Fermented and Steamed Rice Cake) Batter during Fermentation Time)

  • 증편반죽의 발효에 따른 해면상의 조직(망상구조)형성능의 mechanism을 조사하기 위하여 반죽의 구성성분의 경시적 물성 및 효소(diastase 및 protease) 활성의 변화, 구성 전분 분획의 glucose chain length 변화 및 1% SDS에 의해서 용출되는 단백질 분획의 변화에 대해서 검토하였다. 발효가 진행됨에 따라 증편반죽의 pH는 감소한 반면 점성 및 부피는 발효경과 10시간가지 증가하다가 그 이후로는 약간 감소하는 경향을 보였다. 발효의 진행과 더불어 diastase의 활성은 증가하였으며, 쌀전분 분획 중 amylose의 함량은 약간 감소하였다. 그리고 전분분자의 $\alpha-1,6-glucoside$ 결합을 isoamylase(debranching enzyme)로 가수분해시킨 후 Sephadex G-75를 이용한 chromatogram 분석에 의하면 쌀가루 전분 분획과 증편반죽 전분 분획의 glucose chain length 분포는 거의 유사하지만 발효가 진행됨에 따라 중합도가 낮은 부분이 우선적으로 diastase의 작용을 받은 것이라고 생각되어진다. 한편, 발효가 진행된에 따라 protease의 활성은 증가하고 있었음에도 불구하고 증편반죽의 당에 의한 단백질 분획의 고분자화가 Suprose CL-12 column chromatogram 상에서 관찰되었는데, 이것은 아마도 발효과정 중 증편반죽에 공존하는 미생물들의 발효산물인 당질(gum질)을 매개로 한 단백질 분자의 회합에 의한 결과라고 생각되어진다. 따라서 이러한 결과를 미루어 볼 때 증편반죽의 망상구조 형성능은 발효과정 중 일어나는 당과 단백질간의 상호작용에 의한 결과라 생각되어진다.

단백질과 트란스글루타미나제 첨가 글루텐 프리 쌀빵의 품질에 대한 친수콜로이드의 효과 (Effects of Hydrocolloids on the Quality of Protein and Transglutaminase Added Gluten-free Rice Bread)

  • Purpose: To improve the quality of basic gluten-free rice bread composed of white rice flour, salt, sugar, yeast, skim milk powder, olive oil, and water, the effects of transglutaminase (TGase), whey protein (WP), propylene glycol alginate (PGA), and hydroxypropylmethylcelluose (HPMC) were investigated. Methods: TGase, WP, PGA, and HPMC were added to rice flour cumulatively. The pasting properties of rice flour blends as well as volume, shape, color value, textural properties and sensory evaluation of basic rice bread (RB1) RB1+TGase (RB2), RB1+TGase+WP (RB3), RB1+TGase+WP+PGA (RB4), and RB1+TGase+WP+PGA+HPMC (RB5) were compared. Results: Consistency of rice batter increased upon addition of TGase, WP and PGA, and RB3 and RB4 had higher specific volumes than others. PGA improved volume, crumb air cell uniformity, and resilience but lowered elasticity and moistness of RB. HPMC increased, hardness, moistness and softness, and slightly reduced volume. Conclusion: Therefore, it is suggested that hydrocolloids, PGA and HPMC may be necessary to improve volume, crumb structure, textural properties and overall eating quality of gluten-free rice bread.
