Weeding Effect of Using Soybean Cake and Cultivating Weeder Together in Rice Bran Farming (쌀겨 이용 잡초관리시 대두박 혼합 및 중경제초기 병용 효과)

  • This study was conducted to improve weeding effect by rice bran farming technique. In the weeding effect experiment by application timing control of rice bran and soybean cake, weeding efficacy was the highest at the treatment of conventional application of rice bran. The treatment of soybean cake with rice bran was unfavorable, but Echinochloa crus-galli occurred little at the treatment of soybean cake at 5 days after transplanting, so it is thought that further study about inhibitor of early E. crus-galli occurrence in soybean cake is necessary. Cultivating weeder was effective at the treatments of rice bran and soybean cake together, of which weed occurrence was more than conventional rice bran, and precise experiments about cultivating weeding time and method will be necessary.

Quality Characteristics of Tteokgalbi with Black Rice Bran and Organic Acid to Substitute Synthetic Caramel Colorant

  • This study aimed to evaluate the quality characteristics of Tteokgalbi with 1% (w/w) black rice bran only (T1), or with black rice bran and one of the following four types of organic acid: ascorbic acid (T2), citric acid (T3), tartaric acid (T4), or maleic acid (T5) as a substitute for caramel colorant. Tteokgalbi with only black rice bran showed the highest (p<0.05) values of moisture content and water holding capacity (WHC), while there were no significant differences in protein content, fat content, ash content, and thiobarbituric acid reactive substance (TBARS) values in treatments and controls (p>0.05). All the treated samples with any one of the four organic acids showed lower pH than controls (p<0.05). The lightness and redness of Tteokgalbi treated with any one of the four organic acids and black rice bran were higher than those of T1. The volatile basic nitrogen (VBN) values of T4 and T5 were higher than those of the other treatments (p<0.05). With regards to sensory characteristics, T1 and T2 showed overall acceptability similar to that of the controls (p>0.05). The results reported in this study show that Tteokgalbi with black rice bran and any one of the four organic acids listed above not only improved quality characteristics in cooking loss, WHC, lipid oxidation but also could successfully replace the synthetic caramel colorant. Overall, the most satisfactory results were obtained by adding black rice bran and ascorbic acid.

Quality Characteristics of Garaedduk with Raw Rice Bran (생미강 첨가량에 따른 가래떡의 품질 특성)

  • This study examined the quality characteristics of Garaedduk with raw rice bran in addition of the control at 10%,20%,30% & 40% and to measure the mechanical and sensory quality characteristics in order to show the optimum addition ratio and production condition. As a result of supplement of raw rice bran with 10% up to 40% in all research groups, we have founded out as follows. First of all, moisture content decreased and the "L" score which represents the brightness of Garaedduk showed 68.89 in the control which was non supplemented Garaedduk. L-value decreased. However, a-value increased significantly and b-value increased except in the control group. In the experiment on hardness, it showed 0.69 in the control group and 0.92 in Garaedduk supplemented 10% of raw rice bran. Also, there was significant difference in hardness depending on supplement amount of rice bran and storage period. In the experiment on sensory evaluation of color and flavor in the panel test, all supplement groups showed higher scores than the control group. Also, there was significant difference in the taste depending on the amount of raw rice bran. As a test result, the overall acceptability by sensory evaluation was observed as 20%>10%>40%>30%> in the raw rice bran supplement group.

Effects of Rice Bran Dietary Fiber Extract on Gelatinization and Retrogradation of Wheat Flour (미강 식이섬유 추출물이 밀가루의 호화 및 노화에 미치는 영향)

  • Rapid visco-analyzer (RVA) and differential scanning calorimetry (DSC) were used to study the effect of rice bran dietary fiber extract on gelatinization and retrogradation of wheat flour. The addition of rice bran dietary fiber extracts from various heat treated bran into wheat flour caused to increase the pasting temperature, peak viscosity and final viscosity of RVA measurements. For gelatinization measured with DSC, mixtures of wheat flour and rice bran dietary fiber extract had slightly higher To (onset temperature) and Tp (peak temperature) values than those of control (wheat flour), and wheat flour/defatted rice bran dietary fiber extract mixture had the lowest enthalpy value. In comparison with gelatinization, the retrogradation endotherm of mixtures stored at $4^{\circ}C$ up to 4 weeks occurred at about $20^{\circ}C$ lower temperatures than gelatinization endotherm with broader shape and well-defined thermograms with storage time. The retrogradation of wheat flour was retarded greatly by addition of rice bran dietary fiber extract, and there was no big difference between 5% and 10% additions.

Brassinosteroids in Rice Bran and Polished Rice (미강과 백미의 Brassinosteroid 활성물질)

  • To investigate the presence of brassinosteroids in rice bran and pㅐlished rice, they were extracted with MeOH. The extracts were purified through sequential procedure of solvent fractionation, silica gel adsorption chromatography, Sephadex LH-20 column chromatography and charcoal adsorption chromatography. The activity of brassinosteroids was monitored by the rice inclination test and its presence was confirmed in each purification step. The purified active components were further separated by TLC and HPLC. Brassinosteroids in active fractions of rice bran were identified as castasterone and teasterone by HPLC. We acknowledge that our work is probably the first report of brassinosteroids in mature seeds of rice The more amount of brassinosteroids was confirmed in rice bran than polished rice. The contents of castasterone and teasterone which were identified in rice bran were 0.15 ng/g and 0.37 ng/g, respectively.

  • Microwave treatment was studied to investigate the antioxidant ability of rice hull and rice bran. The color changes were related to the intensity of microwave and to the treated time on rice bran. However, the electron donating abilities of rice hull and rice bran extract were not much affected by microwave intensity. Rice hull extract treated with a 100 W microwave showed 80% inhibition of lipid peroxidation when fish oil was treated with $H_2O$$_2$. Also inhibition activity against lipid peroxidation in rice hull is more stable than that of rice bran when treated with microwave. Overall, rice hull extract showed better antioxidant activity than rice bran. It seems that rice hull contains higher antioxidant components as well as the browning reaction products having anti-oxidant activity during microwave treatment.

Production of Weak Acid by Anaerobic Fermentation of Soil and Antifungal Effect

  • Acetic acid and butyric acid were produced by the anaerobic fermentation of soil mixed with wheat or rice bran. The concentration of acetic acid produced in the wheat and rice bran-treated soil was 31.2mM and 8mM, respectively, whereas the concentration of butyric acid in the wheat and rice bran-treated soil was 25.0mM and 8mM, respectively. The minimal fungicidal concentration (MFC) for all the fungal strains was 40-60mM acetic acid, 20-40mM butyric acid, and 40-60mM mixture of acetic acid: butyric acid (1:1, v/v). Consequently, the efficacy of mixing wheat-bran with soil to control soil diseases was demonstrated.

Processibility aptitude of Dobyeong with pigmented rice bran extract (유색미 미강층 추출물을 첨가하여 제조한 도병의 제병 적성 검정)

  • This study was performed to examine the processibility aptitude for the addition of Dobyeong to pigmented rice bran extract. Dobyeong from pigmented rice was less bulky and coarser than Dobyeong-added pigmented bran extract. The viscosity and degree of retrogradation in Dobyeong-added Pigmented bran extract were lower than Dobyeong from pigmented rice, indicating that the inhibitory action of retrogradation was higher in Dobyeong-added pigmented bran extract. The scores for springiness, adhesiveness, cohesiveness, gumminess, and chewiness were increased in Dobyeong-added pigmented bran extract. Dobyeong-added pigmented bran extract showed a decreased natural flavor of pigmented rice and degree of retrogradation, but had higher scores in color values. Dobyeong-added pigmented bran extract was more acceptable in sensory evaluation. Based on these results, the use of rice-added pigmented bran extract instead of pigmented rice in rice-processed food has advantageous effects in terms of the palatability of polished rice and phytochemicals of pigmented non-polished rice. This study will help develop new health-promoting rice products.

COMBUSTION CHARACTERISTICS OF ESTERIFIED RICE BRAN OIL AS AN ALTERNATIVE FUEL IN A DIESEL ENGINE

  • The smoke emission of diesel engines is being recognized as one of the major source of the air pollution problems. This study investigates the potential of esterified rice bran oil to reduce smoke emission as an alternative fuel for diesel engines. Because the esterified rice bran oil has approximately a 10.5% oxygen content, the combustion of the diesel engine improved and exhaust smoke decreased. Gas chromatography was used to analyze not only the total amount of hydrocarbon but also the amount of hydrocarbon components from $C_1$ to $C_6$ in the exhaust gas to determine an exact source responsible for the remarkable reduction in the smoke emission. The number of individual hydrocarbon($C_1{\sim}C_6$) as well as the total amount of hydrocarbon of esterified rice bran oil reduced significantly compared to that of hydrocarbon of diesel fuel.
