A Study on Odor-Savor and Microbiological Changes of Mineral Water Depending on the Storage Period (생수의 저장기간에 따른 이·취미 및 미생물학적 변화에 관한 연구)

  • As people seek a healthy, wealthy, and quality life more than before, interests in mineral water are picking up and the consumption continues to increase accordingly. In an experiment to examine changes in the water quality after mineral water on the market was kept indoor and outdoor for four weeks, there seemed to be no problem in external appearance. Water kept in an outdoor storage contained more odor-savor than water kept in an indoor storage. Odor was not detected in 90% of the sample, and savor not in 80% of it. As for the mechanism of odor-savor generation, the elution of chemical substances from a container may be taken into consideration. In general, odor and savor have turned out to be in close correlation to each other. The average number of bacteria in the sample mineral water was $200{\pm}10CFU/mL$, and such factors as area of storage and ozone post-treatment did not cause significant effects on the reproduction of common microbes. Hence, it is thought that strict regulations on a production process and reduction of the period of circulation will contribute to customers consumption rates.

Effect of Dietary Cinnamon Powder on Savor and Quality of Chicken Meat in Broiler Chickens (닭고기의 품질 및 맛에 관한 계피 급여효과)

  • A 35-day trial was carried out to determine the influence of dietary cinnamon powder (CNP) on the sensory evaluation and quality of chicken meat, carcass characteristics, plasma lipid level and growth performance of broiler chickens. There were 5 treatment groups: control; CNP 2.0%; CNP 3.0%; CNP 4.0%; and CNP 5.0%. The body weight of the broilers fed the diets containing 3.0% CNP was higher than the broilers fed the control feeds (p<0.05). The concentration of triacylglyceride, HDL-C was higher in the plasma from broiler chickens fed diets with CNP (p<0.05) but the concentrations of total cholesterol and LDL-C were significantly lower (p<0.05) compared to the control group. The carcass percentage, chicken breast and thigh weight were not different between the CNP and control groups. The WHC was significantly higher in the chickens fed 4% CNP diet, while the TBARS was significantly lower (p<0.05) in the chickens fed 3% CNP diet compared to the control group. The color of the breast muscle from the chickens fed 3% CNP diet was lighter than those from the control groups (p<0.05). The sensory evaluation of the taste and savor related to CNP in fried or boiled chicken meat were significantly better from the broiler chicken fed diets containing CNP than the control group (p<0.05). These results suggest that dietary cinnamon powder may improve savor and quality of chicken meat in broiler chickens.

COVID-19 and changes in Korean consumers' dietary attitudes and behaviors

  • BACKGROUND/OBJECTIVES: The coronavirus disease 2019 (COVID-19) outbreak has dramatically changed nearly every aspect of our lives. Although Dietary lifestyle includes attitudes and behaviors to meet their most basic needs, but few studies have examined the pattern of changes in dietary lifestyle driven by COVID-19. This study explores changes in dietary attitudes and behaviors among Korean consumers after COVID-19. SUBJECTS/METHODS: An online survey was conducted with 549 Korean adults aged 20 and older to identify general demographics and changes in dietary attitudes and behaviors. Data were collected from Oct 12 to Oct 18, 2020. Frequency, percentage, and mean values were calculated and a K-means cluster analysis was performed to categorize consumers based on the 5S of dietary attitudes (i.e., savor-oriented, safety-oriented, sustainability-oriented, saving-oriented, and socializing-oriented). RESULTS: Findings indicate consumers considered safety, health, and freshness to be most important when choosing groceries and prepared meal such as home meal replacement and delivery food. Among the types of services, a large proportion of consumers increased their delivery and take-out services. Regarding retail channels, the increase in the use of online retailers was remarkable compared to offline retailers. Finally, consumers were classified into four segments based on changes in dietary attitudes: "most influenced," "seeking safety and sustainability," "abstaining from savor and socializing," and "least influenced." Each type of consumer exhibited statistically significant differences by sex, age, household composition, presence of disease, and perceived risk of COVID-19. CONCLUSIONS: This exploratory study provides initial insights for future research by identifying various aspects of dietary attitudes and behaviors among Korean consumers after COVID-19.

EN 1991-2 traffic loads design charts for closed rib orthotropic deck plate based on Pelikan-Esslinger method

  • Charts for the bending moments in the closed rib orthotropic deck plate are derived, based on the method originally introduced by Pelikan and Esslinger. New charts are done for EN 1991-2 traffic load distribution schemes. The governing Huber plate equation is solved utilizing Fourier series for various bridge deck plate boundary conditions. Bending moments are given as a function of deck plate rigidities and span length between cross beams. Old diagrams according to DIN 1072, the new ones according to EN 1991-2 and FE analyses results are compared. For typical bridge orthotropic deck plates, it can be concluded that the new EN 1991-2 traffic loads produce larger mid-span bending moments when two lane schemes are used, then those of DIN 1072. For support moments, DIN 1072 gives larger values for any number of lanes, especially under span lengths of 5m. The relevant differences are up to 25%.

  • The Ritz method is known as very successful strategy for discretizing continuous problems, but it has never been used for solving systems of algebraic equations. The Iterated Ritz Method (IRM) is a novel iterative solver based on the discretized Ritz procedure applied at each iteration step. With an appropriate choice of coordinate vectors, the method may be efficient in linear, nonlinear and optimization problems. Additionally, some iterative methods can be explained as special cases of this approach, which helps to understand advantages and limitations of these methods and gives motivation for their improvement in sense of IRM. In this paper, some ideas for generation of efficient coordinate vectors are presented. The algorithm was developed and tested independently and then implemented into the open source program FEAP. Method has been successfully applied to displacement based (even ill-conditioned) models of structural engineering practice. With this original approach, a new iterative solution strategy has been opened.

  • The purpose of this research is to understand the view on people(百姓) and Lee Won-ik(李元翼)'s view on politics, comparing with Seonjo(宣祖)'s view on them. They as political actors sufficiently cognized the condition of life of people had been very desperate. Seonjo had approached from politics to the life of people, while Lee from the life of people to politics. The former has the precariousness of transformation and instrumentalisation of the life of people. The latter has the possibility of the life of people to lead the politics. Lee's stance was on the latter aspect. He had tried to conceive the people as they are, in other words as reality, not as they should be, in other words as idea. He refrained the elucidation of people from confining it within dichotomy structure of ruling-ruled. He had tried to conceive the organic relationship between people and other existences within community. He did not give knowledge-centered question of what is the life of people, but gave situation-phenomenon-centered question of how people has been living. This approach eulciates Lee's focus on the problems of Gongyi(工役), military service(軍役), Labour service(?役), the reduction and exemption of the tax, and the appointment of provincial officer(守令). As for Lee Won-ik, the best form of life of people is to make people have mind to deserve to live, to economize their power(寬民力), to make them savor their life(樂民生), and to make their life easy(安民).

Analysis of Ash and Trace Metals in Korean Native Bee Honey

  • Trace metals in honey have an influence on the taste of honey along with pollens. Western bee honeys, which are mostly collected from acacia, have less than 0.1% of ash. Savor of Korean native-bee honey is thought to be due to the difference of the contents of trace metals. Korean native-bee honeys collected from Jirisan District, which is the greatest producing area of native-bee honey in Korea, showed high contents of ash. Korean native-bee honeys from the districts other than Jirisan District also showed similar results($0.44{\sim}0.83%$ of ash) to those from Jirisan District. Potassium was found to be the principal factor of high content of ash with over 85% of trace metals in ash.

  • Comic book has a different story structure from western movies, i.e. New Character->reaction->food->master mediation->effect of food->disappearance ->conclusion. Comic book is full of media traits. The master is like a shaman, who console people with food of memory. Food also is a media, which carries message of memory instead of savor itself. Restaurant is a media, in which many events occur and rhetoric of rumor pervade. Foods of memory massage our feeling sense, like a media. In conclusion, comic book has a analogous role to that of Marshal Mcluhan's Media theory.

A Study on the Consumption Pattern of Aquacultured Marine Fishes (양식어류의 소비 패턴에 관한 연구)

  • This paper is to analyze the past and present consumption pattern of fishes aquacultured in marine waters and thus to draw the policy direction to enhance the competitiveness of marine fish aquaculture in Korea. At present, the volume of meat consumption is surveyed to be more than that of marine fish, but it is revealed that fish consumption will become more increasing in the future according to the rise of the income. The survey shows that the consumption of fish is highest in the fall, and among the various patterns of consumption, live fish, so-called susi, is surveyed to be highly dominant. It is revealed that fish is enjoyed because of the special savor, diverse nutrients, and the prevention of adult diseases. Natural fish Is revealed to be more preferred to aquacultured one due to the sticky flesh quality and the low probability of the remained after the production process antibiotics, so that it is necessary to enhance the taste quality and make a clean cultivation to capture more market demand. Consumption of high-quality fish seems to become high in more than middle class and consumption of fish are estimated to increase in the future, more than that of meat if income level of the people increases. Also, if we try to make our high-quality fish become popular among the public and competible with the imported fish from abroad, it is recommended that they must lower production price by cost reduction and try to differentiate it by taste and environmental safety, etc. It was revealed that the significant factor in demand function for fish is income and it is almost the only factor affecting that demand. Also, it was revealed that the most significant factor affecting preference of fish is income and it Is almost the only factor affecting the preference. Therefore, we can ascertain that if proper goods can be distributed, demand for and preference of fish may increase according to the increase of income in the future.
