  • Effects of aqueous ammonia soaking treatments to yellow poplar (Liriodendron tulipifera L.) were investigated to focus on chemical compositional changes and enzymatic hydrolysis characteristics changes by this treatment. Treatment temperature and time were main variables. At 3 different levels of aqueous ammonia soaking temperature and time ($145^{\circ}C$ -1 h, $90^{\circ}C$ -16 h and $45^{\circ}C$ - 6 days), lower temperature and longer soaking time led to more xylan removal based on carbohydrate compositional analysis. However, at higher temperature treatment led to more enzymatic saccharification of cellulose to glucose by commercial cellulose mixtures (Celluclast 1.5L and Novozym 342 from Novozyme, Denmark). Cellulose hydrolysis was gradually increased with increasing enzymatic hydrolysis time but xylan hydrolysis was leveled out at early stage (less than 10 h) of enzymatic hydrolysis.

  • A cold temperature control system for the BAF(batch annealing furnace) has been established in order to reduce energy consumption to imrpove productivity and stabilize the properties of products. Therefore we confirmed a relation between annealing cycle time and atmospheric gas, changing annealing cycle time according to BAF temperature with time during heating and actual temperature measurements cold spot during soaking. The results of the temperature variation effect on the batch annealing are as follows. 1) Cooling rate is increasing gradually with increasing atmospheric gas flow, but heating rate is hardly increasing without atmospheric gas component. Heating time is reduced to one half with increasing atmospheric gas flow rate and changing of atmospheric gas component from HNx to Ax gas and annealing cycle time is reduce to 2.7 times. 2) With enlarging the difference between furnace temperature and soaking temperature at the HNx BAF, heating time becomes short, but cooling time is indifferent. 3) If temperature difference of 300.deg. C in the temperature change of cold spot according to the annealing cycle control temperature, Hi-CON/H2BAF is interchanging at each other at 26hours, but HNxBAF at 50 hours. 4) Soaking time at batch annealing cycle determination is made a decision by the input coil width, and soaking time for quality homogenization of 1219 mm width coil must be 2.5 hours longer then that of 914mm width coil for the same coil weight at Hi-CON/H2BAF. But, it is necessary to make 2 hours longer at HNxBAF.

  • Cobalt ferrite thin films on Corming glass substrate were fabricated by a sol-gel method. Cobalt ferrite thin films with the grain size of 20-35 nm and thickness of 50nm were obtained. Rapid thermal annealing (RTA) and Annealing processes were adopted for comparison of characteristics of the films. Coercivity values were changed with thermal condition and magnetization values were increased as a function of soaking time. With prolonged soaking time, however, it was decreased because of the diffusion of cations from the glass substrate. The RTA process in preparation of cobalt ferrite thin film was the effective way to prevent and to form a single spinel phase in reduced soaking time. The film heated at 600$^{\circ}C$ for 30 minutes by RTA had coercivity of 2,600 Oe, saturation magnetization 460 emu/㎤, and Mr$.$$\delta$ of 1.43 memu/$\textrm{cm}^2$.

  • To study the suitability of chestnut as a cask for ripening traditional liquors, the absorption property for pure water, liquor with 30% alcohol content and ethanol with 95% alcohol content were investigated for five species. Oriental oak had the greatest amount of liquid absorption while chestnut had the smallest amount. The absorption amount linearly increased with increasing soaking time. The absorption amounts for each section were greatest in RT plane, and the difference between LR plane and LT plane was very small for all soaking conditions. The anisotropy of absorption amount for five species was greatest in Japanese cedar and was smallest in white mulberry on the whole. And the change of absorption amounts according to soaking conditions tended to decrease in softwoods and increase in hardwoods, and the difference among wood species was not clear. From this result, it was found that chestnut with a small absorption amount, regarding of soaking behavior, was a good material as a cask for ripening traditional liquors, whereas small diameter oriental oak with a great absorption amount was not suitable in this purpose.

  • The objective of this study was to investigate the effect of soaking time on physicochemical properties of waxy rice, waxy rice flour and waxy rice starch. Waxy rice (WR), waxy rice flour (WRF), waxy rice starch (WRS) were soaked at $18^{\circ}C$ for 14 days and dried at $40^{\circ}C$. Dried samples were grounded and sieved using 180 mesh. Physicochemical properties of the three samples, such as swelling power, solubility, moisture sorption isotherms and pasting properties using rapid visco analyzer (RVA) and crystal pattern using X-ray diffractometer were determined. In all samples, soaking time greatly influenced moisture sorption isotherms but no typical pattern was shown. Swelling power was not greatly changed by soaking time in the three samples. Solubility increased with increasing soaking time in all three samples, indicating that some soluble particles were exuded during soaking. In RVA pasting properties, WR and WRF showed a similar pattern, while WRS showed different pasting properties, suggesting that rice protein plays a significant role in pasting properties. X-ray diffraction patterns of all three samples showed typical A-type crystal pattern suggesting that soaking did not affect crystalline region of samples.

  • During soaking of 4 varieties of Korean soybeans in water at $4-98^{\circ}C$, an equilibrium state was reached after 3 hr at $60-98^{\circ}C$ but no equilibrium state was observed at $4-40^{\circ}C$ during soaking for 10 hrs. The moisture gain of soybeans held a linear relation with the square root of soaking time regardless of soaking temperatures, which indicated that the basic mechanism of water absorption was diffusion of water. The log time to reach a fixed moisture content showed a linear relation with the soaking temperature during soaking of soybeans at $4-60^{\circ}C$. The z-value decreased in proportions to the increase of hydration. The z-value to reach 50% hydration was the same in all soybeans.

  • A cold spot temperature control system for the batch annealing furnace has been established in order to reduce energy consumption which is essential to improve productivity and stabilize the properties of products. A relationship between annealing cycle time and gas flow rate is developed and also for the variation of coil cold spot temperature with time during heating, and actual temperature measurements at mid-width of each coil during soaking. The results of the temperature variation effect on the cold rolled steel sheet batch annealing are as follows. (1) Cooling rate increasing gradually with increasing atmospheric gas flow, but heating rate is hardly increasing without atmospheric gas component change. (2) In case of short time heating, the slowest heating part is the center of B coil and in case of ling time heating, the low temperature point moves from the center of coil to inside coil. (3) The outside of top coil is the highest temperature point under heating, which becomes the lowest temperature point under cooling. (4) Soaking time determination depends on the input coil width, and soaking time for quality homogenization of 1214 mm width coil must be 2 hours longer than that of 914 mm width coil.

  • This experiment was conducted to investigate changes of soybean curd yield according to the extension of soaking time during manufacturing of soybean curd. To investigate those changes systematically, transmission electron microscopy and disc-gel electrophoresis were used. The soybean curd yield was increased from 45.0% to 50.5% and 55.4% respectively as soaking time is extended from 5 hours to 10 and 24 hours. The solid extraction and soybean milk coagulation were also increased according to the extension of soaking time. From disc-gel electrophoresis patterns of soybean milk protein and soybean curd protein, numbers of band were increased and major band thickened by expending the soaking time. Most of high molecular bands of soybean milk protein were transfered to soybean curd. Crude 7S proteins of soybean milk and soybean curd in dis-gel electrophoresis were appeared to be 4 and 5 bands respectively, and crude 11S proteins of soybean milk and soybean curd were appeared to be 9 and 8 bands respectively. Of soybean milk bands, most of 11S component transfered to soybean curd. Transmission electron photomicrographs revealed that the dimension of each protein body became larger and the numbers of spherosome around the protein bodies in unit area fewer by extending the soaking time of soybean.

  • In this study, the effects of varying the amount of water, soaking time at $25^{\circ}C$ and drying time after soaking at $45^{\circ}C$ on the induction of resveratrol were evaluated to optimize the soaking treatment by response surface methodology (RSM). After response surface regression (RSREG), the second-order polynomial equation was fitted to the experimental data. The analysis of variance showed that the model appeared to be adequate $(R^2=0.9547)$ with no significant lack of fit (p>0.1). From statistical analysis, amount of water and soaking time were found to be significant factors. On the other hand, drying time was not significant. Ridge analysis showed that the optimized parameters were $67.15\%$ for amount of water, 19.58 hr for soaking time, 65.56 hr for drying time. It was confirmed that resveratrol content was increased from $0.1\;{\mu}g/g$ to $4.55\;{\mu}g/g$ under the optimized conditions. In addition, the experimental values at the optimized condition agreed with values predicted by ridge analysis. The analytical method validation parameters such as accuracy, precision, and specificity were calculated to ensure the method's validity.

  • This study was conducted to investigate the effect of soaking and blanching of chicken- head on the quality of chicken-head broth. The longer soaking time, the lower the contents of free amino acids and nucleotide and its derivatives in chicken-head broth. Sensory panel showed that increased soaking time led to decreases in the degree of darkness, yellowness, turbidity and the intensity of bloody flavor and organ meat-like flavor. Optimal soaking time was determined to be 30 min according to the result of sensory evaluation. While the broth using unblanched chicken-head contained more free amino acids, nucleotide and its derivatives than the broth using blanched one, sensory test revealed no significant difference between two broths. Therefore, blanching was found to be unnecessary process for the preparation of chicken-head broth.
