Sulfites Contents Survey on Dried Marine Products in Market (시판 건 해산물 중 아황산염류 함량 조사)

  • This study was performed to investigate the contents of sulfites in 2, 770 dried marine products in Seoul Chung-Bu market from March to October in 1999. Sulfites of the samples were determined by Zn powder reduction method and Monnier-Williams's modified method. Eight samples of 2, 770 (0.29%) were detected over 30ppm in SO2 contents by Monnier-Williams's modified method. In samples detected over 30ppm, six dried filefishes(130.2~573.4ppm) were imported from Vietnam, same kind of other one(114.2ppm) was from China and the other one Alaska pollack(196.3ppm) was domestic. By Zn powder reduction method, 259 dried marine products (259/2, 770=9.35%) were positive reaction (1-30ppm). These were 93 dried shrimps, 53 filefish meats, 34 dried squids, 33 slices of dried pollacks and 17 sea mussel meats. So sulfites must be use commonly to prevent black spot and preserve for many dried shrimps, filefishes meats, dried squids etc. According to results, the quality test for the imported dried marine products must be reinforced to supply safety food for the citizens.

Determining Method of Sulfites in Foods by Ion Chromatography

  • Anion chromatographic (lC) method was developed for the determination of sulfites infoods. Sulfites refer to sulfur dioxide that was separated from a food sample by addition of acid and heating, and carried into a trapping solution by distillation. The trapping solution was applied to IC system. Sulfites was separated on an anionic separator column, HPIC-AS4A with 0.75mM $NAHCO_3/2.25mM\;Na_2CO_3$ as the eluent and determined by the use of conductivity detector. The recoveries of sulfites added to water, carrot and apple at level of 1 ppm were 99.8%, 91.6% and 83.5%, respectively. The detection limit was 0.2 ppm in the case of a 10 g sample size. All experiment could be finished within 20 minutes

  • This study was performed to investigate the contents of sulfites in 1,063 dried seaweeds in Seoul Chung-Bu market from March in 1999 to August in 2000. Sulfites of the samples were determined by Zn powder reduction method and bonnier-Williams's modified method. Two samples of 1063 (0.19%) were detected over 30ppm in SO$_2$ contents by bonnier-Williams's modified method. In samples detected over 30ppm, 2 brown algaes were 171.4ppm and 295.7ppm. By Zn powder reduction method, 54 dried seaweeds (54/1063 = 5.08%) were positive reaction (1-30ppm). These were 28 dried lavers, 27 dried brown seaweeds and 2 sea cabbages. According to results, the quality test far the dried seaweeds must be reinforced to supply safety food for the citizens.

  • This study was aimed at obtaining elementary data on enzymatic browning of potato and potato products and examining the inhibitory method of browning. Therefore, we extracted polyphenol oxidase from potatoes(Solanum tubersum L.), and investigates its general properties and inhibiting effects of its activity with the different concentrations of sulfites($Na_2S_2O_4,\;Na_2SO_3{\cdot}7H_2O,\;NaHSO_3$). The optimum pH and temperature of polyphenol oxidase were observed to be 6.5 and $37^{\circ}C$ respectively. The polyphenol oxidase at PH5 was very stable, and the activity of polyphenol oxidase between pH $5.0{\sim}9.0$ was estimated to be relatively high, showing $72{\sim}75%$ of its activity at pH5. The polyphenol oxidase was very stable when heated at $40^{\circ}C$ for one hour, and almost 50% of enzyme activity was decreased when heated at $70^{\circ}C$ for twelve minutes. At 0.1mM concentrating of sulfites the relative activity of polyphenol oxidase was 98% in all the three cases of sulfites. Thus sulfites at 0.1mM concentration was found to have little inhibiting effect on polyphenol oxidase activity. At 1mM concentration of sulfites $NaHSO_3$ showed the lowest 36% relative activity among the three. At 5mM concentration of sulfites, the relative activity of $Na_2SO_3{\cdot}7H_2O$ was the lowest 14%.

The Study on the Migration of Sulfite in Commercial Wooden Chopsticks (국내 유통 나무젓가락 중 이산화황 이행량에 관한 연구)

  • The levels of sulfites in wooden chopsticks were analyzed using two different methods, distillation-alkali titration and ion chromatography. According to the two methods, Sulfur dioxide($SO_2$) was validated by 0.6 and 0.2 ${\mu}ml$ of limit of detection(LOD), 1.8 and 0.5 ${\mu}ml$ of limit of quantification, (LOQ) and a $R^2>0.998$ for linearity, respectively. The recoveries of $SO_2$ from food simulants spiked ar levels of 100 ppm were 70.2-100.2%. 158 samples of wooden chopsticks were monitored the migrated amounts of sulfites. Sulfites were detected in 30 samples in ranged of 0.6 to 15.5 ppm. Maximum migration level, 15.5 ppm of sulfites was considered giving no harmful effect to human since it was reached 5.5% of estimated SML.

  • Brownish discoloration develops very rapidly in the storage of dried oyster. This undesirable browning is mainly caused by the series of reactions of sugar-amino condensation, enzymatic oxidation of tyrosine and/or the oxidative rancidity of lipids in the tissue of oyster. Sulfites are commonly used as inhibitors for Maillard type browning reactions in agricultural products. The inhibitory effect of sulfite treatment on canned oysters was also confirmed in some investigations. The results suggested that sulfites not only work on blocking tile amadori rearrangement but also on the reduction of free tyrosine which retards the progress of enzymatic oxidation of tyrosine tyrosinase. In this paper, the effect of sodium sulfite treatment on the reduction of reducing sugar and free tyrosine as a function i)f browning inhibition in oyster was tested and other treatment with glucose-oxidase and yeast were also applied. In preparation of samples, fresh oysters were soaked in sodium sulfite solution by various concentration for different treating times, washed in running water to remove the sulfite residue, and finally dried in the shade. In the result, the treatment of sodium sulfite was certainly effective on the reduction of both free tyrosine and reducing sugars in fresh oyster. The best results were obtained by the treatment of 0.5M sodium sulfite solution for 60 minutes each for soaking and washing. Treatment with, glucose-oxidase and yeast solutions, however, did appear somewhat effective but it required so much time for a certain effect that it seemed not practically applicable.

Inhibition of Enzymatic Browning of Apple Juices by Benzoic Acid Isolated From Peach (Prunus persica Batsch) Seeds (복숭아씨로부터 분리된 안식향산에 의한 사과주스의 효소적갈변억제)

  • Previously , the methanolic extract of peach sees was found to have a strong tyrosinase inhibitory activity in an in vitro assay. Several phenolic compunds were isolated from the seeds by solvent fractionation , Sephadex LH-20 chromatography, and preparative HPLC , and one of them showing strong tyrosinase inhibition was identified as benzoic acid by UV, IR, $^1$H/$^1$$^3$C-NMR, and EI-MS spectrsopy. Benzoic acid (IC50= 250$\mu\textrm{g}$/ml) and L-ascorbic acid (IC50=28$\mu\textrm{g}$/ml), well-known tyrosinase inhibitors. In particular , benzoic acid inhibited markedly the enzymatic browing (melanosis) of apple juices at low concentration of 0.01% and 0.05, comparable to that of L-ascorbic acid (P<0.05). these results suggest that benzoic acid, one of an effective food preservatives, may be potentially useful as a functional alternative to sulfites for the control of melanosis in fruit juices.
