Effect of Uncooked Food on the Hyperlipidemic Rats (생식이 고지혈증 흰쥐에 미치는 영향)

  • The hypolipidemic effect of the diet containing uncooked food was evaluated in hyperlipidemic rats. Body weightgain, food intake and food efficiency ratio were not significantly different among the diet groups examined. Significant decrease in plasma total cholesterol(8.8%), triglyceride(10.0%) and LCL-cholesterol(34.8%) were observed in uncooked food diet groups, and the liver total cholesterol and triglyceride level to the extent of 8.7% and 16.7%, respectively. Uncooked food groups substantially increased the plasma HDL to total cholesterol ratio(47.2%) and decreased the atherogenic index(37.6%) as well. Gut transit time for uncooked food was significantly higher, up to 104 minutes, compared to that of control diet group. These results suggest that uncooked food may have beneficial effects on blood lipid level and gut transit time in hyperlipidemc rats.

Monitoring of Alcohol Fermentation Condition with Brown Rice Using Raw Starch-Digesting Enzyme (생전분 분해효소를 이용한 현미 알콜발효조건의 모니터링)

  • This study was carried out to set up alcohol fermentation condition for uncooked brown rice. Response surface methodology(RSM) was applied to optimize and monitor of the alcohol fermentation condition with uncooked brown rice. The optimal yeast strain for fermentation of uncooked brown rice was S. cerevisiae GRJ. The polynomial equation for alcohol contents, brix pH and total acditiy showed 0.8828, 0.8409, 0.9431 and 0.9280 of R$^2$, respectively. Optimum range of uncooked alcohol fermentation for maximum alcohol contents were 0.34%(w/w) of enzyme concentration and 350%(w/w) of added water content, respectively. Predicted values at optimum alcohol fermentation condition agreed with experimental values.

Changes in the Physicochemical Properties and Functional Components of Uncooked Foods Treated with Electrolyzed Water

  • In this study, changes in the physicochemical properties and functional components of uncooked foods, including carrots, cabbage, shiitake (Lentinus edodes) and white button (Agaricus bisporus) mushrooms, sea mustard, and laver treated with electrolyzed water were investigated. No changes were observed in the primary compositions of any of the materials that were hot air- or freeze-dried after being treated with electrolyzed water. The lightness (L), redness (a), and yellowness (b) values of the carrots, shiitake, and laver were not affected by drying, while changes did occur in the cabbage (L-, a-, and b-values), mushrooms (a-value), and sea mustard (b-value) specimens that were hot air- or freeze-dried following the treatments with electrolyzed water. The dietary fiber contents of all the materials increased when they were hot air-dried. Vitamin C content decreased when the samples were treated with alkalic electrolyzed water. No changes occurred in the lectin, $\beta$-carotene, or total phenolic compound contents after the electrolyzed water treatments, suggesting that electrolyzed water could be used effectively as a pasteurization step for uncooked carrots, cabbage, shiitake and white button mushrooms, sea mustard, and laver.

In Vitro Digestibility of Rice and Barley in Forms of Raw Flour and Cooked Kernels

  • Digestion properties of 3 types of cereals, white rice, brown rice, and barley, were measured after cooking or grinding. Regardless of the processing methods, white rice showed the highest rate and the greatest extent of digestion, whereas barley showed the lowest values. During the early digestion period, cooked white rice kernels had a larger k (kinetic constant) value than uncooked white rice flour, indicating that cooking induced faster digestion than grinding. In the case of brown rice and barley, the cell wall in cooked kernels remained intact and resulted in a lower k values than those of uncooked flour. However, after 3 hr of digestion, the total digestion extent was greater for the cooked brown rice and barley than that for uncooked flours. The high content of slowly digestible starch (SDS) in cooked brown rice and barley might be due to the starch fraction which was protected by the cell wall. The resistant starch (RS) content, however, was greater for the uncooked flours than that for cooked kernels. The cooked kernels of 3 cereal samples tested showed higher glycemic index (GI) values than the uncooked flours.

The Effects of Uncooked Grains and Vegetables with Mainly Brown Rice on Weight Control and Serum Components in Korean Overweight/obese Female (현미로 주원료로 한 생식이 과체중/비만 여성의 비만도와 혈액 성분에 미치는 영향)

  • This study was designed to investigate the effects of weight control and changes in serum components using a commercial uncooked food diet on 36 obese women over a period of 8 weeks. The subjects had uncooked food (40 g) with milk or soymilk twice a day instead of meals. The mean body weight and height measurements of the subjects at the outset were 69.1 $\pm$ 9.3 kg and 159.5 $\pm$ 4.4 cm, respectively. Initial daily calorie intake was 103.6 % of RDA, but was significantly lower at 4 and 8 weeks. The subjects showed a significant reduction in weight, body fat mass (p<0.05), anthropo-metric value and skinfold thickness during the experimental period. Hip and upper thigh girth were 102.7 $\pm$ 6.4 cm and 61.7 $\pm$ 4.3 cm at the outset, and fell to 99.3 $\pm$ 5.0 cm and 58.8 $\pm$ 4.1 cm after 8 weeks. The most significant reduction was in abdomen skinfold thickness (p < 0.05) , which went from 32.4 $\pm$ 8.7 mm at first to 24.2 $\pm$ 8.3 mm in after 8 weeks. Serum albumin levels were higher at 4 and 8 weeks than initially but the figures for all of the subjects were within the normal range. Hemoglobin and blood glucose levels were also within the normal range during the experimental period. Initial serum triglyceride level was 110.5 $\pm$ 49.5 mg/dl but fell to 93.2 $\pm$ 48.5 mg/dl after 8 weeks. Our results show that uncooked foods are effective in the diet therapy of obese women.

  • This study was carried out to set up alcohol fermentation condition for uncooked corn. Response surface methodology(RSM) was applied to optimize and monitor the alcohol fermentation condition with uncooked corn. The optimal yeast strain for fermentation of uncooked corn was Saccharomyces cerevisiae GRJ. The polynomial equation for alcohol contents, brix, pH and total acidity showed 0.8852, 0.9202, 0.8806 and 0.9940 of R$^2$, respectively. The optimal rendition for maximum alcohol contents were 0.18%(w/w) of enzyme concentration and 180%(v/w) of added water content. Predicted values at optimum alcohol fermentation condition agreed with experimental value.
