Effects of individual and combined doses of added nitrite and nitrate on the quality of dry-fermented sausage

  • Objective: We aimed to investigate the impacts of nitrate and nitrite on the salami fermentation process. Methods: Experimental groups of dry-fermented sausage were prepared with 100 ppm nitrite (T1), 150 ppm nitrite (T2), and 100 ppm nitrite+50 ppm nitrate (T3). Salami quality was evaluated after a 30-day fermentation-drying process. Results: There were no significant differences in residual nitrite levels between T1 and T2, while the T3 samples exhibited the highest residual nitrite. T2 (150 ppm nitrite) showed a significantly higher pH value compared to T1 (100 ppm nitrite). Water activity was lowest in the T2 sample. T1 had a higher thiobarbituric acid reactive substances value than other treatments. In the color analysis, the L* values of T1 and T2 were significantly higher than those of T3, whereas the a* values were significantly higher in T3. In the texture analysis, T3 exhibited a higher shear force than T1 and T2. In the microbial analysis, adding 50 and 100 ppm of nitrite did not reduce the total plate count (TPC) and lactic acid bacteria count. However, T3 had a lower TPC than T1 and T2. Conclusion: The results suggest that different levels of nitrite/nitrate affect salami quality. This study is a valuable resource for understanding how using nitrite and nitrate alone or in combination affects quality in salami production.

  • In recent years, the rapid development of IoT technology has led to the creation of various IoT devices, offering users a wide range of functionalities and conveniences. However, alongside this advancement, concerns about security threats such as personal information leakage have also grown. Therefore, detecting security vulnerabilities in IoT devices in advance is of utmost importance, and various vulnerability analysis studies are being conducted to address these concerns. However, the process of acquiring firmware and establishing an analysis environment for IoT device vulnerability analysis is not easily standardized, making it challenging for many researchers. In this paper, we propose a universal methodology for extracting firmware and establishing an analysis environment for SOP-type chips embedded in small IoT devices, such as IP cameras, which are widely used by consumers. Furthermore, through the application of the proposed methodology to commercial IoT devices and the process of building an analysis environment for real devices, we aim to provide IoT security researchers with a guideline for firmware extraction and analysis environment setup.

Risk Analysis for Protecting Personal Information in IoT Environments (사물인터넷(IoT) 환경에서의 개인정보 위험 분석 프레임워크)

  • In Internet of Things (IoT) era, more diverse types of information are collected and the environment of information usage, distribution, and processing is changing. Recently, there have been a growing number of cases involving breach and infringement of personal information in IoT services, for examples, including data breach incidents of Web cam service or drone and hacking cases of smart connected car or individual monitoring service. With the evolution of IoT, concerns on personal information protection has become a crucial issue and thus the risk analysis and management method of personal information should be systematically prepared. This study shows risk factors in IoT regarding possible breach of personal information and infringement of privacy. We propose "a risk analysis framework of protecting personal information in IoT environments" consisting of asset (personal information-type and sensitivity) subject to risk, threats of infringement (device, network, and server points), and social impact caused from the privacy incident. To verify this proposed framework, we conducted risk analysis of IoT services (smart communication device, connected car, smart healthcare, smart home, and smart infra) using this framework. Based on the analysis results, we identified the level of risk to personal information in IoT services and suggested measures to protect personal information and appropriately use it.

Isolation, Characterization and Whole-Genome Analysis of Paenibacillus andongensis sp.nov. from Korean Soil

  • The genus Paenibacillus contains a variety of biologically active compounds that have potential applications in a range of fields, including medicine, agriculture, and livestock, playing an important role in the health and economy of society. Our study focused on the bacterium SS4T (KCTC 43402T = GDMCC 1.3498T), which was characterized using a polyphasic taxonomic approach. This strain was analyzed using antiSMASH, BAGEL4, and PRISM to predict the secondary metabolites. Lassopeptide clusters were found using all three analysis methods, with the possibility of secretion. Additionally, PRISM found three biosynthetic gene clusters (BGC) and predicted the structure of the product. Genome analysis indicated that glucoamylase is present in SS4T. 16S rRNA sequence analysis showed that strain SS4T most closely resembled Paenibacillus marchantiophytorum DSM 29850T (98.22%), Paenibacillus nebraskensis JJ-59T (98.19%), and Paenibacillus aceris KCTC 13870T (98.08%). Analysis of the 16S rRNA gene sequences and Type Strain Genome Server (TYGS) analysis revealed that SS4T belongs to the genus Paenibacillus based on the results of the phylogenetic analysis. As a result of the matrix-assisted laser desorption/ionization-time-of-flight mass spectrometry (MALDI-TOF/MS) results, SS4T was determined to belong to the genus Paenibacillus. Comparing P. marchantiophytorum DSM 29850T with average nucleotide identity (ANI 78.97%) and digital DNA-DNA hybridization (dDDH 23%) revealed values that were all less than the threshold for bacterial species differentiation. The results of this study suggest that strain SS4T can be classified as a Paenibacillus andongensis species and is a novel member of the genus Paenibacillus.

T-spline Finite Element Method for CAD/CAE Integrated Approach (CAD/CAE 통합 접근을 위한 T-스플라인 유한요소법)

  • T-splines are recently proposed geometric modeling tools. A T-spline surface is a NURBS surface with T-junctions and is defined by a control grid called T-mesh. Local refinement can be performed very easily for T-splines while it is limited for B-splines or NURBS. Using T-splines, patches with unmatched boundaries can be combined easily without special technique. In this study, the analysis methodology using T-splines is proposed. In this methodology, T-splines are used both for description of geometries and for approximation of solution spaces. Two-dimensional linear elastic and dynamic problems will be solved by employing the proposed T-spline finite element method, and the effectiveness of the current analysis methodology will be verified.

  • The Internet of Things is a technology that makes it possible for objects made up of hardware and software to exchange information with one another via the Internet, thereby facilitating the servitization of the objects. An IoT service, which is composed of an IoT device and a web service, has recently been applied to the marketing field and is being used as a means to meet customer needs. However, applying appropriate marketing elements to IoT services is not easy. Therefore, analysis tools are needed to properly apply marketing elements to IoT services. This study aims to construct an analysis model for marketing evaluation of IoT services. In this study, the technical elements and marketing elements of IoT were derived through a literature review, and the analysis model for marketing evaluation of IoT services was established by exploring the relationship between the elements based on a service blueprint. We also applied real cases to verify the analytical model. This study is expected to contribute to the development of tools for evaluating IoT services.

A Study of the Quantitative, Qualitative Analysis on Optimizing Diagnostic Imaging Device Selection in Nasopharynx MRI (비 인두 자기공명 검사 시 최적의 진단영상 장치 선택에 관한 정량, 정성적 평가에 관한 연구)

  • The object of is this research is to find out the optimal Tesla by evaluating SNR and CNR, after testing 1.5 T and 3.0 T. The randomly selected patients tested by nasopharynx MRI transmitted in PACS were applied to the research. Two MRI units(1.5 T, 3.0 T) was used for analyzing the data. As a method of analysis, in T1W highlighting and T1 fat removal images, we set up a certain area of interest and evaluated the SNR and CNR on tongue, spinal cord, masseter muscle, fat, parotid gland, and tumor tissue. We evaluated the SNR and CNR by quantitative analysis of six tissue, measuring the quality of images for uniform fat removal, magnetic sensitivity artifact on a four-point scale by qualitative analysis. The statistical significance of this date analysis was based on independent sample verification and was accepted when the P value was less than 0.05. As a result of analysis of both devices, 3.0 T was high in the quantitative evaluation, while 1.5 T was high in the qualitative evaluation. Considering the advantages and disadvantages of each device, and if the device is selected complementarily and applied to patients, it is believed that it will provide the optimal information.

  • In this paper, the boundary element analysis of viscoelastic strain energy release rate G(t) for the cracked linear viscoelastic solids has been attempted. This study proposes the G(t) equation and the calculating method of G(t) by time-domain boundary element analysis for the viscoelastic solids. The G(t) is defined as the derivative of the viscoelastic potential energy II(t) with respect to crack length a. Two example problems are presented to show the applicability of the proposed method to the analysis of the cracked linear viscoelastic solids. Numerical results of example problems show the accuracy and effectiveness of the proposed method.

A locally refinable T-spline finite element method for CAD/CAE integration

Using T-splines, patches with unmatched boundaries can be combined easily without special techniques. In the present study, an analysis framework using T-splines is proposed. In this framework, T-splines are used both for description of geometries and for approximation of solution spaces. This analysis framework can be a basis of a CAD/CAE integrated approach. In this approach, CAD models are directly imported as the analysis models without additional finite element modeling. Some numerical examples are presented to illustrate the effectiveness of the current analysis framework.

Taxonomic examination of Typha angustifolia L. in Korea (한국산 애기부들에 대한 분류학적 검토)

  • One of Korean Typha species has been used two scientific names, T. angustifolia L. and T. angustata Bory et Chaubard without taxonomic examinations. Typha angustifolia has a longer females flowers than bracteoles and equal length of bracteoles and hairs in female flowers whereas T. angustata has equal length of female flowers and bracteoles and longer bracteloes than hairs in female flowers. In this study, the pattern of morphological variation of T. angustifolia in Korea is examined using numerical analysis to determine their taxonomical identities. Univariate analysis using morphological characters such as female flower length/bracteole length and bracteole lengh/hair length reveals that Korean T. angustifolia is composed of one group. The result of principal components analysis shows that Korean T. angustifolia is closely related to T. angustifolia distributed in Japan, Russia, and USA. Therefore, T. angustifolia L. (in Korea) is suggested as a legitimate scientific name.
