To evaluate an effect of acute ethanol pretreatment on the liver injury in toluene-treated rats, toluene(50% in olive oil) was intraperitoneally given four times at 0.3ml/100g body weight at interval of one day to the ethanol-pretreated rats(0.3ml of 50%/100g body weight). The increasing rate of liver weitht per body weight(%), serum levels of alanine aminotransferase (ALT) activity, liver lipid peroxide content was higher in toluene treated rats pretreated with ehtanol than those treated with toluene alone. Concomitantly the hepatic glucose-6-phosphatase activity was increased whereas glutathione content was decreased by ehtanol pretreatment before toluene administration in rats. In case of direct administration of acetaldhyde or benzaldehyde to the rats, the liver weitht per body weight(%) and serum levels of ALT activity were almost higher than the control group. There results indicate that the toluene treated rats showed the reversible injury of liver and intensified. however, by the ethanol treatment.

This study was done to evaluate the effectiveness of dietary calcium level(a diet which met 100% or twice the calcium level in AIN-76 diet) on preventing bone loss in ovariectomized rats. Forty female Sprauge-Dawley rats(body weight 200$\pm$5g) were divided into two groups. One group were ovariectomized(Ovx) while the others received sham operation(Sham). Thereafter, each rat group was further divided into normal calcium diet(NCD, 0.52%) and high calcium diet(HCD, 1.04%) sub-groups. All rats were fed on experimental diet and deionized water ad libitum for 8 weeks. Urinary pyridinoline & creatinine and serum estradiol, luteinizing hormone, calcium, phosphate, total protein, albumin, alkaline phosphatase and osteocalcin were determined. There were no significant differences in serum calcium. total protein and albumin in the two groups(Ovx vs Sham) of rats. Ovariectomized rats had significantly lower estradiol than sham operated rats. There was a highly significant correlation between total bone mineral density(TBMD) and overall level of esteradiol(r=0.59, p<0.05). Total bone mineral density did not correlate significantly with ALP or osteocalcin, although a negative trend was evident. However, the rats fed high calcium diet had a lower crosslinks value and osteocalcine than the rats fed normal calcium diet. An increased rate of bone turnover is usually associated with a decrease in bone mass bexause bone formation at each remodeling site is never as great as resorption. Ovariectomized rats fed high calcium diet had a lower crosslink value and osteocalcin; it means high cacium diet decreased bone turnover rate. The findings from the present study demonstrated that bone loss due to ovarian hormonal deficiency can be partially prevented by a high calcium diet. Futhermore, these findings support the strategy of the use of a high calcium diet in the prevention of estrogen depletion bone loss (postmenopausal osteoporosis).

This study was carried out as part of a basic works to improve the native chicken uses. The mechanical test on the native chicken boiled plain broth and the sensory test was surveyed the preference of three kinds of chickens(native chicken, whangchu, broiler) prepared with six different cooking methods-chicken boiled plain, chicken broiled in microwave, stewed chicken, chicken fried with spice, chicken cutlet, chicken curry using 120 Yeungnam University students and graduate students as the panel. The results were as follows; The panels preferred the viscosity of chicken boiled plain broth for two hous. The viscosity of chicken boiled plain broth for two hous with the spindle at 5, r.p.m. of 20.50.100 was 8.6, 13.6, 9.9 respectively, and salt concentration was 0.40wt%. In the wensory test by cooking mehtods, the results of preference are in the following order-chicken curry, chicken cutlet, chicken fried with spice, stewed chicken, chicken boiled plain and chicken broiled in microwave. The most preferred cooking method of the native chicken, whangchu and broiler is chicken boiled plain, broiled in microwave and stewed chicken resectively. They preferred the native chicken in texture and taste. But in color, aroma and appearence among the sensory characteristics, whangchuwas preferred by the panels.

Physicochemical characteristics of Cassia tora seeds roasted at different conditions were investigated. Intact Cassia tora seeds were composed of water 11.6% crude protein 13.1%, crude fat 4.4%, curde fiber 13.8%, N-free extract 47.2% and ash 4.9%. Stacking volume ratio was increased generally by swelling, but soluble solids were decreased by rosating process L and B values decreased conspicuously as roasting temperature increase, but $\Delta$E value increased. The content of anthraquinones was 1, 200mg% in unroasted Cassia tora seeds, it increased as roasting time and temperature increase and reached maxium amount at 19$0^{\circ}C$-30min, 21$0^{\circ}C$-20min. and 23$0^{\circ}C$-10min. agter that it decreased remarkably. Optimum roasting condition of Cassia tora seeds was 21$0^{\circ}C$-20min.

Potato slices were dipped in calcium choreide ar chitosan solutions or and preheated in each of these solutions. In order to prevent the quality deterioration while they were refrigerated for 4 weeks at 5$^{\circ}C$ Changes in degree of browning and other quality factors were determined while they were refrigerated for 4 weeks at 5$^{\circ}C$ During refrigeration, L values were decreased and optical density (A420) were increased. But L values were increased and A420 were decreased by dipping or preheating. The contents of vitamin C were decreased. however, the loss of vitmin C were the lowest in calcium chloride treaed potato slices(CaPS). And there were no combined effects of dipping and preheating during refrigeration. However, protein content of CaPS increased but that of other treated potato slices were decreased compared to that of control. With respect to changes in other physicochemical qualit, pH increased in chitosan treated potato slices(ChPS) and loss of weight was the lowest in combined with preheating. From these results, it was considered that the shelf-life of potato slices could be increased by dipping or-and preheating.

This study was to investigate consumer recognition on food label of food package. The results of this study were as follows: 1. when shopping for food, the items considered the most were taste of family, food safety, nutrition and price, respectively. 2. 95.5% of respondents confirmed of the food label of food package when shopping for food. The items confirmed the most on food label were expiration date, manufacture date, manufacturer, food additives and nutrition, respectively. 3. 85.3% of respondents did not satisfy on the food label of food label of food package. 43.6% of respondents demanded food additives more detailed. 28.2% of respondents demanded nutrition information more detailed. 28.2% of respondents demanded food function more detailed. 4. The food which respondents satisfied on food label most were snack '||'&'||' cookies, nuddle, spices, can '||'&'||' bottled food, instant food, processed meat foo, frozen food and imported food, respectively. 5. The group with the most hphrases falling in the top rank was nutrition/calories. The phrases in the nutrition/calories group scored in the top rank were 3 "positive" nutritional characteristics(addition of vitamins, addition of DHA, high dietary fiber) and 5 "nagative" nutritional characteristics(no sugar, low sugar, low calories, low salt and low cholesterol). The group with the most phrases falling in the third rank was ingredient. The phrases in the ingredient scored in the third rank were add of food additives. 6. 55.5% of respondents did not know Recommended Daily Allowance(RDA) information and 61.9% of respondents did not understand the nutrition declaration(content) of food package but 65.7% of resspondents understood the nutrition claim of food package. From these result, respondents were more affected by nutrition claim than by nutrition declaration on food package when shopping for food.ood.

Addition of 0.5, 1.0 and 2.0g of succinic anhydride to 2g of sesame protein concentrates succinylated 44.9, 70.0and 83.1% of the available amino groups, respectively. Considerable amount of phytate were removed in all sesame protein concetrates and the highest reduction was obtained by addition of 2.0g of succinic anhydride. Among the minerals investigated, high amount of calcium and magnesium were presented in defatted sesame flour. In the case of calcium, magnesium and iron, the contents were decreased as the degree of succinylation was increased. Most amino acid content of sesame protein concentrates was not changed by succinylation but lysine was slightly decreased. Result of color measurement showed that the higher degree of succinylation, the higher values of L and B were founded.

Physicochemical properties of marketing and intensive persimmon vinegar were investigated, the results are as following; Total acidity in D, H, S, J, sweet persimmon(SP) and persimmon vinegar were 4.20, 3.03, 2.58, 3.30, 5.92 and 5.81%, respectively, and the value of intensive persimmon(IP) vinegars wre higher than that of others. SP sample was lower than any other vinegar as compared to L value in colors, no sample was lower than H and S vinegar inturbidity and browning. Brix of IP samples were lower than that of other vinegars, there was a little fructose in the all samples. Among the organic acids, galacturonic acid content except acetic acid was the highest, and ascorbic and malic acid were detected a little, Calium content was the highest of minerals in persimmon vinegars, phosphorus was detected a little. Alcohols of 5~6 types were analyzed in each samples, free amino acids of 17~24 dypes were analyzed, D and IP vinegars have more acohols and amino acids, and their contents were higher than the others. Volatile components of 6~9 types were analyzed in each samples, these have more ethanols except acetic acids than other volatile components, and the contents of IP samples were higher than that of marketing persimmon vinegars.

본 연구에서는 우리나라 영남 지방에 소재하는 네 가정을 표집하여 각 가정에서 행 하여지고 있는 유교적 차례와 제사에 차려지는 제물을 실증적으로 연구, 고찰하였으며, 또 이들을 문헌적으로 비교 검토하여 그 변천의 모습을 고찰하고저 하였다. 영남지방의 북부인 안동 하회마을과 영남의 중부지방이라고 볼 수 있는 양동 마을의 불천위제사에서 보이는 제 물조리에서의 공통점은 炙을 완전히 익히지 않고 진설하여 性으로서의 기원을 그대로 지키 고 있다는 사실이며 차이점은 바다가 가까운 양동마을에서는 하회마을보다 어물의 사용이 (대게와 생문어 등) 월등히 많다는 사실과 산골에 위치한 하회마을의 경우는 그 대신 닭을 생으로 한 마리 왼으로 쓰고 엽적에 또 한 마리를 사용하여 어물이 적은 데 비하여 닭을 더 많이 사용하고 있었다. 이러한 것은 의례가 매우 엄격한 제례에서도 지역적 특성이 많이 작 용하고 있다는 것을 나타낸다고 하겠다. 또한 진설에 있어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 불천위이지만 이러한 차이를 나타낸다고 하겠다. 또한 진설에 잇어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 불천위이지만 이러한 차이를 나타내고 있어, 이것에 있어서도 한 곳은 양위진설이고 다른 곳은 단설로 같은 물천위이지만 이러한 차이를 나타내고 있어 이것은 진설배열과 함께 가가체로 지켜져 내려 오는 것이라 하겠다. 양가 모 두 기제사 때보다 차려지는 제물의 종류가 다양하고 양도 많았다. 떡, 煎, 자반, 炙 및 나물 과 과일 등이 차려졌다. 여전히 제물을 조리할 때 사용되는 양념은 매우 제한되고 있으며, 또한 이용할 수 있는 채소의 종류는 가정마다 다양하게 다르게 제한되고 있다는 것이 특징 적이다. 사용되는 식품의 종류는 전통적으로 답습해오고 있음에 비추어, 과일은 매우 최근에 수입된 외래종의 것도 모든 가정에서 이용되고 있었다. 그러나 전체적으로 볼 때 유교식 제 사의례는 시대에 따라 거의 변화됨이 없이 지켜져 내려 오고 있었다.

The main purpose of this study is to investigate the effect of housewives' dietary awareness and habits on the reduction and recycling of food waste products. We have done statistical analyses of 501 questionnaires answered by housewives living in Taegu city. The results are as follows: The dietary awareness is significantly different according to the housewives' ages. The group of above 50's age and the group of housewives and their husbands with a lower education level have a more traditional awareness and eating up habits. Also the younger group, and those with a higher education level who grew up in a big city have a more progressive dietary awareness. But the younger, higher income, small family, higher education level groups, and also employed housewives, produced more food waste products than the other groups, The groups thsose have traditional or rational awareness concerning dietary awareness, and those with good eating up and accurate cooking habits turned out to have more affirmative effects on the reduction and recycling of food waste products.

This survey was carried out as part of a basic works to improve the extention of native chicken uses. A sample of 282 housewives living in the downtown area of Taegu city were examined using an original questionnaire about their awareness and uses of a native chicken. The results were as follows: The awareness for a chicken dish is significantly different according to the housewives' ages and many respondents evaluated the nutritive value of a native chicken. The housewives preferred chicken boiled plain, spice fried chicken and stewed chicken, in the order. But family members preferred chicken boiled plain, spice fried chicken and french fried chicken, in the order. The frequencies of chicken cooking and buying chicken dishes of the housewives were once permonth and they regarded a native chicken as one of traditional, health and natural foods. They appreciated the taste of a native chicken highly and recognized the price of a native chicken expensive. Also 52.5% of housewives could distinguish a native chicken from the others.

This survey was carried out to investigate the usage of traditional fermented foods. Questionaries were answered by 283 female adults ranging from 20 to 60 ages in Daegu city and Kyungbuk province. 39.72% of total subjects answered that they made Meju and soybean paste by themselves. There were significant differences according to income, residential area, deucation level, and family size, In the results of the preference and consumption study on traditional soybean pastes, Kimchi and salted sea foods, preference of salted sea foods was the highest, whereas the consumption of salted sea foods was the lowest. The recognition of soybean pastes and traditional foods was remarkably low. However the consumption frequency of traditional fermented foods and the recognition of soybean pastes and traditional foods were significantly increased with age.

The purpose of this study is to provide the basic data for Dietary Lifary Life and Culture. The frequency and percentage, x2-test and one-way ANOVA and scheffe-test for post-hoc analysis is used to evaluate our purpose by running SPSS/PC+ program. The major results are as follows: Most of the Traditional rites, Custome, and Foods are still remain as day used to be. But a few of those are changing now. The purpose of this study was to investigate of the dietary life and nutritional status of the Buddhist priests. Dietary life, the state of prepare a meal and menu are carried out through the questionnaire and the nutritional status is carried out through the analysis of the constituents of the blood. The results of this study can be summarized as follows. 1. The traditional temple's foods undergo a change with the variety and westernization of dietary life. 2. Buddhist priests take a carbohydrate centered meal and the intake of protein and lipid is tendency to lack, but the intake of vitamin and mineral is sufficient with various vegetables. 3. The content of the lipid compoents and glucose of blood are low and they are free from the danger of geriatric diseases but the content of triglyceride is very higher than the healthy general adults. Therefore it is necessary to improve the nutritional status of the buddhist priests with decrease the intake of rice and increase the various side dish and to develop the standard menu for the Buddhist priests.

This study was designed to observe the degree of dietary llife, nutritional knowledge and health condition in the elementary student. The subject of this study is 5th grade students of elementary school that provided meals and not. The results of this \ulcorner요 are summarized as follows. \circled1 The dietary life of subjects is relatively regulat and they took Korean style as meals. \circled2 The nutritional knowledge of subjects was not significantly different between providing school meal and non-providing school meal. \circled3 The phsical condition of students with non providing school meal was significantly better than providing school meal. \circled4 In the mental condition of subjects they were not significant difference between providing school meal and non-providing school meal. It is necessary to develop the nutrition education program to recognize the importance of nutrition and health.
